Ingredients
  

  • 1 pound penne pasta
  • 1/4 cup vodka
  • 1 can crushed tomatoes 28 ounces
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 1/4 cup basil chopped fresh
  • 1/4 tsp red pepper flakes
  • Salt and pepper to taste

Instructions
 

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large saucepan, heat the vodka over medium heat until it starts to simmer. Add the crushed tomatoes and stir to combine.
  • Reduce the heat to low and simmer the sauce for 15 minutes, stirring occasionally.
  • Stir in the heavy cream, Parmesan cheese, basil, red pepper flakes, salt, and pepper. Simmer for an additional 5 minutes.
  • Add the cooked penne pasta to the sauce and toss to coat. Cook for an additional 5 minutes, until the pasta is heated through.
  • Serve the Penne alla Vodka hot, garnished with additional Parmesan cheese and basil, if desired.

      15 minutes?? I think the recipe is missing time or you should use tomato paste first or something. I followed it and it was kinda bland like straight jar sauce. Maybe my tomatoes were the problem though.

      I tried this once and mine wasn’t creamy at all… I think I cooked the sauce too long? Also I always forget when to add the basil, so I just simmer it with the tomatoes 😅 still good though.

      Just dump it 😂 like it’s vodka pasta—more booze = more flavor. The alcohol cooks off anyway, right? I’d say go for like 1/2 cup and you’ll be fine.

      I get the temptation, but I wouldn’t dump it all in. The vodka helps flavor and keeps the sauce smooth, and too much can make it taste a bit harsh/alcohol-y or even thin the balance with the cream. Start with a small bump and taste as you go.
