Eh. 20-25 minutes wasn’t enough for my tray. Also, I didn’t have Parmesan so I used mozzarella—doesn’t crisp the same.
Yeah, 20–25 min can be tight depending on how crowded your tray is and how thick the sprouts are. I’ve had better luck with a quick flip at ~15–18 min and then another 10 minutes until they actually brown. Also, mozzarella won’t crisp like Parmesan—Parmesan has that dry, salty crusting thing going on. If you’re out of Parmesan, maybe try pecorino or even a parmesan-style blend (or just roast a little longer).
This recipe is a total fake. Real Italians don’t use these ingredients together.
