Mom’s Meatloaf

September 4, 2024

There’s something incredibly nostalgic and comforting about Mom’s Meatloaf. This classic dish has been a staple in family kitchens for generations, offering a hearty and satisfying meal that brings everyone together. Made with ground beef, breadcrumbs, and a blend of savory seasonings, Mom’s Meatloaf is tender, flavorful, and topped with a delicious glaze that caramelizes as it bakes. Whether it’s a busy weeknight or a Sunday family dinner, this meatloaf is the ultimate comfort food.

The base of Mom’s Meatloaf starts with ground beef, which provides the rich, savory foundation for the dish. Breadcrumbs are mixed in to help keep the meatloaf moist and tender, while eggs bind everything together. The seasoning mix often includes onions, garlic, salt, pepper, and a splash of Worcestershire sauce, creating a well-balanced flavor profile that’s comforting and familiar. Some variations might include grated cheese or finely chopped vegetables for added texture and flavor.

The meat mixture is shaped into a loaf and topped with a glaze made from ketchup, brown sugar, and a touch of mustard. This glaze is spread over the meatloaf before baking, creating a sweet and tangy crust that adds a perfect balance to the savory interior. As the meatloaf bakes, the glaze caramelizes, giving each slice a deliciously flavorful finish.

Mom’s Meatloaf is incredibly versatile and easy to customize. You can swap out the ground beef for ground turkey or chicken for a lighter version, or add herbs and spices like thyme or parsley for a more aromatic touch. For an extra layer of flavor, try serving the meatloaf with mashed potatoes and roasted vegetables, or pair it with a simple green salad.

This dish is perfect for meal prepping, as leftovers are just as delicious, if not better, the next day. Whether you’re making it for the family or sharing it with friends, Mom’s Meatloaf is a timeless classic that never fails to satisfy.

I was skeptical about using saltines, but wow. Also, 1 hour 20 min at 350 worked great for my pan size. Super easy.

    yuck. Never again. Too mushy.

  3. 2 stars
The bell pepper amount seems random? Like 1/4 cup is not enough to taste. But I guess it adds sweetness. I dunno.

I don’t see how just a few saltines can hold this together. Seems weird.

I messed up and put too much sugar. Gross! Never again.

Ketchup on top is… controversial? But honestly it caramelized a little and made a nice crust. I’m converted.

  7. 5 stars
This is just like my grandma used to make! Delicious!

Meatloaf is supposed to be with breadcrumbs, not saltines!!! Just saying.

I think saltines can add a nice texture! But yeah, traditional recipes often use breadcrumbs. It’s all about what you like! 😄

Honestly, I don’t get the hype around meatloaf. This one was okay, but I’ve had better. Just my opinion!

Meatloaf is an art! You just haven’t found the right one yet. Try adding some spices next time, it could change everything!

Nah, meatloaf is what it is. It’s not exciting but it hits the spot sometimes. Just don’t expect it to be gourmet!

  10. 3 stars
Not sure about the hot sauce dash—like, I couldn’t taste it at all. Might be my hot sauce was too mild? Still tasted okay though.

  11. 2 stars
Sound good, but why is there sugar in meatloaf? Seems kinda strange.

This meatloaf is fantastic! Just like my mom used to make. The ketchup on top is a must! 5 stars!

Meatloaf is usually dry, but this was moist! Did I do something wrong? 😂

  18. 1 star
Meatloaf?? More like meatbrick. Couldn’t even cut it without a chainsaw. Sorry 😕

  19. 2 stars
Way too much saltines for my taste. Mine came out a little bready. Next time I’ll use fewer and add a splash more milk.

Can I swap ketchup for barbeque sauce? Not sure if it works…

    1. User avatar rudolf.pollich37 says:

      5 stars
Yeah, you can swap ketchup for BBQ sauce! It’ll give it a smokier flavor. I do that all the time!

    2. 2 stars
I dunno, that sounds kinda weird. BBQ sauce is sweeter. Might mess up the taste.

  21. 4 stars
My ketchup topping slid right off when I sliced it. Maybe my pan was greased too much or I didn’t let it rest. Flavor was great regardless!

  22. User avatar rosena.rempel96 says:

Very tasty! Would recommend maybe doubling the ketchup though.

  23. 3 stars
I dunno, it feels like too much ketchup. Maybe it’s just me?

Really easy recipe! Just wish it didn’t take so long to bake. But it was tasty in the end!

    1. User avatar glen.bernhard24 says:

      2 stars
Tasty? More like a brick! Took forever and was too salty for my taste. Not my fav.

    2. User avatar sandra.funk says:

      5 stars
Glad you enjoyed it! I think the long bake time adds to the flavor. Worth the wait, right?

  25. User avatar eduardo.kertzmann12 says:

I tried this but I’m skeptical that 20 saltines is enough moisture. My loaf seemed a bit tight until I added an extra splash of milk at the end.

  26. 4 stars
Meatloaf is the best! But why use saltines? I’ve always used bread crumbs. Tasty anyway. 4 stars!

    1. 5 stars
I totally agree! Meatloaf is so good! I like using saltines because they add a nice crunch. But bread crumbs are fine too! 😊

Ketchup on top? Genius! Never thought of it till now. Loved this recipe!

  28. 5 stars
Great flavor overall, I added some garlic for extra oomph!

  29. 4 stars
One hour and 20 min feels long—my oven runs hot so I pulled it at 1 hour and it was right. Keep an eye on it.

  30. User avatar carline.predovic says:

This tastes exactly like what I grew up on. The ketchup on top makes the crust so good. I did 10 extra minutes just to be safe—still perfect.

    1. User avatar dwain.halvorson83 says:

      5 stars
That ketchup crust detail is spot on—my family does the same and it really makes the whole thing feel “comfort food.” I also give it a little extra time if the center seems tight, so I’m glad yours came out perfect!

  31. User avatar vania.padberg says:

Meatloaf is the best comfort food! My mom used to make this all the time, brings back good memories.

    1. User avatar NAFO.SUPREMACY says:

  32. User avatar noah.emard21 says:

    3 stars
I dunno, I thought it was kinda bland. Might need more seasoning next time.

  33. 3 stars
My husband loves it! He said it’s just like his mom used to make. I’m not a big fan but he gobbled it up.

    1. User avatar claude.zemlak2022 says:

      5 stars
That’s awesome! Nothing beats a good old mom’s recipe. I’m sure he appreciates it even more because it reminds him of home.

    2. 2 stars
Meatloaf? That’s like a brick in the oven. I wouldn’t be able to eat that, seems kinda dry.

  34. 5 stars
This meatloaf is the best I have ever made! My family loved it. Will definitely cook it again! 😍

  35. User avatar miguel.rosenbaum74 says:

    2 stars
I don’t know about the brown sugar… doesn’t sound right. My family likes savory, not sweet. 2 stars!

  36. 4 stars
Good flavor, but my loaf came out a little dense. I think I overmixed like a dummy 😅 Next time I’ll mix just until combined.

  37. 3 stars
Easy to make! But I think it need more seasoning. I’ll try adding garlic next time.

  38. User avatar major.botsford says:

Why 80/20? I used 93/7 and the whole thing was dry. The recipe is fine, just need fattier meat for the texture I guess.

  39. User avatar frances.kessler says:

Imma try this, looks simple! Hope it comes out right!

Meatloaf is boring. This was okay but nothing special. Probably won’t make it again.
