Mom’s Meatloaf

September 4, 2024

There’s something incredibly nostalgic and comforting about Mom’s Meatloaf. This classic dish has been a staple in family kitchens for generations, offering a hearty and satisfying meal that brings everyone together. Made with ground beef, breadcrumbs, and a blend of savory seasonings, Mom’s Meatloaf is tender, flavorful, and topped with a delicious glaze that caramelizes as it bakes. Whether it’s a busy weeknight or a Sunday family dinner, this meatloaf is the ultimate comfort food.

The base of Mom’s Meatloaf starts with ground beef, which provides the rich, savory foundation for the dish. Breadcrumbs are mixed in to help keep the meatloaf moist and tender, while eggs bind everything together. The seasoning mix often includes onions, garlic, salt, pepper, and a splash of Worcestershire sauce, creating a well-balanced flavor profile that’s comforting and familiar. Some variations might include grated cheese or finely chopped vegetables for added texture and flavor.

The meat mixture is shaped into a loaf and topped with a glaze made from ketchup, brown sugar, and a touch of mustard. This glaze is spread over the meatloaf before baking, creating a sweet and tangy crust that adds a perfect balance to the savory interior. As the meatloaf bakes, the glaze caramelizes, giving each slice a deliciously flavorful finish.

Mom’s Meatloaf is incredibly versatile and easy to customize. You can swap out the ground beef for ground turkey or chicken for a lighter version, or add herbs and spices like thyme or parsley for a more aromatic touch. For an extra layer of flavor, try serving the meatloaf with mashed potatoes and roasted vegetables, or pair it with a simple green salad.

This dish is perfect for meal prepping, as leftovers are just as delicious, if not better, the next day. Whether you’re making it for the family or sharing it with friends, Mom’s Meatloaf is a timeless classic that never fails to satisfy.

I was skeptical about using saltines, but wow. Also, 1 hour 20 min at 350 worked great for my pan size. Super easy.

  2. User avatar mario.halvorson1976 says:

    1 star
    yuck. Never again. Too mushy.

  3. 2 stars
The bell pepper amount seems random? Like 1/4 cup is not enough to taste. But I guess it adds sweetness. I dunno.

  4. User avatar smartestRedditor says:

    2 stars
I don’t see how just a few saltines can hold this together. Seems weird.

  5. User avatar odessa.johns says:

    2 stars
I messed up and put too much sugar. Gross! Never again.

  6. User avatar carey.hartmann says:

    4 stars
Ketchup on top is… controversial? But honestly it caramelized a little and made a nice crust. I’m converted.

  7. User avatar Ford Prefect says:

    4 stars
Okay… this is pretty good. Ketchup glaze + brown sugar is a weird combo on paper but it works. My kids asked for seconds, so I’ll take it.

  8. 5 stars
This is just like my grandma used to make! Delicious!

  9. User avatar maribeth.beier82 says:

    2 stars
Meatloaf is supposed to be with breadcrumbs, not saltines!!! Just saying.

    1. User avatar cristy.schinner94 says:

      4 stars
I think saltines can add a nice texture! But yeah, traditional recipes often use breadcrumbs. It’s all about what you like! 😄

  10. 3 stars
Honestly, I don’t get the hype around meatloaf. This one was okay, but I’ve had better. Just my opinion!

    1. User avatar voncile.heathcote says:

      4 stars
Meatloaf is an art! You just haven’t found the right one yet. Try adding some spices next time, it could change everything!

    2. User avatar Earl Lee Riser says:

      3 stars
Nah, meatloaf is what it is. It’s not exciting but it hits the spot sometimes. Just don’t expect it to be gourmet!

  11. 3 stars
Not sure about the hot sauce dash—like, I couldn’t taste it at all. Might be my hot sauce was too mild? Still tasted okay though.

  12. 5 stars
Classic meatloaf vibes—80/20 plus saltines is a combo I trust. I added a little extra ketchup on top and it came out juicy. Would make again!

  13. User avatar betsey.schaden1955 says:

    3 stars
Why do people always say “don’t overmix” like we’re in a fancy kitchen? I mixed it a lot and it was kinda dense. Flavor was good though—saltines actually helped. Won’t make that mistake again.

    1. User avatar Alfred Ebert says:

      3 stars
Wait, saltines helped? I thought saltines make it dry… maybe I’m doing it wrong. Also I always mix mine a lot and it’s still fine? Maybe your bake time was off. Next time try just mixing till it looks even, not like you’re kneading bread.

    2. User avatar Amado Kessler says:

      5 stars
Totally feel you—“don’t overmix” sounds like they’re assuming everyone has a pastry chef on standby 😅 But with meatloaf, overmixing can make it tighter/denser because the meat gets worked too much. Glad the flavor still came out good though!

  14. User avatar pearl.dibbert93 says:

    2 stars
It tasted fine, but I found it a little too salty. I wonder if the “1 teaspoon salt” is meant for the whole batch—because I almost never measure that much for meatloaf.

  15. 2 stars
Sound good, but why is there sugar in meatloaf? Seems kinda strange.

  16. User avatar Frank N. Beans says:

    3 stars
I’m not sure about the saltines—mine turned out a bit too dense. Maybe I didn’t crush them fine enough? Still edible though, just not my favorite texture.

    1. User avatar Hasimir Fenring says:

      5 stars
Totally possible—saltines can make meatloaf go from “springy” to “brick” pretty fast. If they weren’t crushed really well (or if there were bigger pieces), they can soak up moisture unevenly and leave it dense. Next time you might crush them finer and even let the mixture sit 5–10 minutes before baking so everything hydrates. Also, don’t overmix after adding the saltines—too much mixing can tighten the loaf up too.

  17. User avatar lula.hayes25 says:

    5 stars
This meatloaf is fantastic! Just like my mom used to make. The ketchup on top is a must! 5 stars!

  18. User avatar verdell.pagac2 says:

    4 stars
Yum! I added some garlic and it turned out fantastic!

  19. User avatar adolph.gulgowski1992 says:

    5 stars
This meatloaf is a big hit in our house! My kids love it, and it’s super easy to make. Thanks for sharing!

  20. 4 stars
Easy recipe to follow, even for me who usually burns water. Thanks for sharing!

    1. User avatar smartestRedditor says:

      5 stars
Glad to hear it! Meatloaf is a classic, you can’t go wrong with mom’s recipe!

  21. 5 stars
This meatloaf was a hit at dinner! So moist and flavorful. Will definitely make again!

    1. User avatar Frost Giant says:

      2 stars
      Meatloaf? Really? Seems kinda basic, I don’t know… 🤔

    2. User avatar isadora.mccullough60 says:

      5 stars
I totally agree! This looks so good! Gonna try it this weekend!

  22. 5 stars
Tried this last night and it came out so moist—like, really comforting. The ketchup topping at the end is a nice touch. I used a little extra onion because… you know. Definitely a keeper!

  23. User avatar alexandria.pollich1965 says:

    4 stars
Meatloaf is usually dry, but this was moist! Did I do something wrong? 😂

  24. 1 star
Meatloaf?? More like meatbrick. Couldn’t even cut it without a chainsaw. Sorry 😕

  25. 2 stars
Way too much saltines for my taste. Mine came out a little bready. Next time I’ll use fewer and add a splash more milk.

  26. User avatar darwin.fadel43 says:

    3 stars
Can I swap ketchup for barbeque sauce? Not sure if it works…

    1. User avatar rudolf.pollich37 says:

      5 stars
Yeah, you can swap ketchup for BBQ sauce! It’ll give it a smokier flavor. I do that all the time!

    2. 2 stars
I dunno, that sounds kinda weird. BBQ sauce is sweeter. Might mess up the taste.

  27. 4 stars
My ketchup topping slid right off when I sliced it. Maybe my pan was greased too much or I didn’t let it rest. Flavor was great regardless!

  28. User avatar rosena.rempel96 says:

    4 stars
Very tasty! Would recommend maybe doubling the ketchup though.

  29. 3 stars
I dunno, it feels like too much ketchup. Maybe it’s just me?

  30. User avatar cherlyn.cartwright61 says:

    4 stars
Really easy recipe! Just wish it didn’t take so long to bake. But it was tasty in the end!

    1. User avatar glen.bernhard24 says:

      2 stars
Tasty? More like a brick! Took forever and was too salty for my taste. Not my fav.

    2. User avatar sandra.funk says:

      5 stars
Glad you enjoyed it! I think the long bake time adds to the flavor. Worth the wait, right?

  31. User avatar eduardo.kertzmann12 says:

    3 stars
I tried this but I’m skeptical that 20 saltines is enough moisture. My loaf seemed a bit tight until I added an extra splash of milk at the end.

  32. 4 stars
Meatloaf is the best! But why use saltines? I’ve always used bread crumbs. Tasty anyway. 4 stars!

    1. 5 stars
I totally agree! Meatloaf is so good! I like using saltines because they add a nice crunch. But bread crumbs are fine too! 😊

  33. User avatar enrique.wuckert says:

    5 stars
Ketchup on top? Genius! Never thought of it till now. Loved this recipe!

  34. 5 stars
Great flavor overall, I added some garlic for extra oomph!

  35. 3 stars
Meatloaf is meh but this one was alright. The ketchup on top was sweet though. I’m not sure about the brown sugar amount—felt like dessert vibes.

    1. 4 stars
Totally get what you mean—ketchup + brown sugar can swing it toward “dessert-ish” if it’s a sweet tooth. I usually reduce the brown sugar to like 1 tbsp and keep the ketchup just a light layer so it stays more classic.

  36. 4 stars
One hour and 20 min feels long—my oven runs hot so I pulled it at 1 hour and it was right. Keep an eye on it.

  37. User avatar carline.predovic says:

    5 stars
This tastes exactly like what I grew up on. The ketchup on top makes the crust so good. I did 10 extra minutes just to be safe—still perfect.

    1. User avatar dwain.halvorson83 says:

      5 stars
That ketchup crust detail is spot on—my family does the same and it really makes the whole thing feel “comfort food.” I also give it a little extra time if the center seems tight, so I’m glad yours came out perfect!

  38. User avatar Tyesha Moen says:

    5 stars
I added garlic and a splash more hot sauce because why not. The flavor was bold and savory, not bland like some meatloaf. Would recommend customizing, but the base is solid.

    1. User avatar rickey.wilkinson1960 says:

      5 stars
That’s the way to do it—bold meatloaf for the win. Love that you kept it solid and just customized it.

  39. User avatar vania.padberg says:

    4 stars
Meatloaf is the best comfort food! My mom used to make this all the time, brings back good memories.

    1. User avatar NAFO.SUPREMACY says:

      5 stars
I totally agree! There’s just something so comforting about a good meatloaf. It’s like a warm hug on a plate! 😋

  40. User avatar lettie.lemke10 says:

    2 stars
Not gonna lie, I think 20 saltines is too much. My loaf turned out a bit bready, like it was more meatloaf-flavored crackers than meatloaf. Next time I’d cut them down and see.

  41. User avatar noah.emard21 says:

    3 stars
I dunno, I thought it was kinda bland. Might need more seasoning next time.

  42. 3 stars
My husband loves it! He said it’s just like his mom used to make. I’m not a big fan but he gobbled it up.

    1. User avatar claude.zemlak2022 says:

      5 stars
That’s awesome! Nothing beats a good old mom’s recipe. I’m sure he appreciates it even more because it reminds him of home.

    2. 2 stars
Meatloaf? That’s like a brick in the oven. I wouldn’t be able to eat that, seems kinda dry.

  43. 5 stars
This meatloaf is the best I have ever made! My family loved it. Will definitely cook it again! 😍

  44. User avatar miguel.rosenbaum74 says:

    2 stars
I don’t know about the brown sugar… doesn’t sound right. My family likes savory, not sweet. 2 stars!

  45. 4 stars
Good flavor, but my loaf came out a little dense. I think I overmixed like a dummy 😅 Next time I’ll mix just until combined.

  46. User avatar Regena Hagenes says:

    4 stars
I don’t get why people cover it with ketchup—seems like it would burn. But honestly it turned out great and sweet-savory. Super easy.

  47. 3 stars
Easy to make! But I think it need more seasoning. I’ll try adding garlic next time.

  48. User avatar major.botsford says:

    3 stars
Why 80/20? I used 93/7 and the whole thing was dry. The recipe is fine, just need fattier meat for the texture I guess.

  49. User avatar Rito Chieftain says:

    4 stars
I used a little less onion because I don’t want it too sweet, but otherwise followed the recipe. Next time I’ll watch the bake time closer—mine browned faster, but flavor was still great.

    1. User avatar indira.mante71 says:

      5 stars
That makes sense about the onion—meatloaf can get kinda sweet with too much. Also good catch on the bake time; ovens vary a lot. Next time, maybe start checking around the 60–70 minute mark so it doesn’t brown as quick. Glad the flavor was still great!

  50. User avatar frances.kessler says:

    4 stars
Imma try this, looks simple! Hope it comes out right!

  51. User avatar eun.mckenzie76 says:

    2 stars
Meh. 350 for 1h20 was too long in my oven—dry edges and the center was just okay. Next time I’ll tent with foil earlier.

  52. User avatar kiana.anderson1958 says:

    3 stars
Meatloaf is boring. This was okay but nothing special. Probably won’t make it again.

  53. User avatar brook.prosacco87 says:

    4 stars
Meatloaf with ketchup on top? Yum! I added some garlic too. Recommend for sure!

  54. 4 stars
I’m skeptical about the “do not overmix” part, but I tried it. Texture was better than my usual (less dense). Only tweak: next time I’ll dice the onion smaller so it blends more.

  55. User avatar Tahm Kench says:

    1 star
Meatloaf’s just mushy meat, guys. Not worth it.

    1. 4 stars
I get what you mean, but meatloaf can be so tasty if made right! Try adding some herbs or spices next time. 🙂

    2. User avatar Pearl E. Whites says:

      5 stars
Nah, I love meatloaf! It’s comfort food, not mushy meat. Your taste buds need to broaden!

  56. User avatar tonja.johnston49 says:

    4 stars
LOL my mom used to make something like this but with oats instead of saltines. Still, this is good too!

  57. User avatar chase.ferry87 says:

    4 stars
I was skeptical about the saltines, but wow! It added a nice crunch. I will never make meatloaf without it again.

  58. User avatar Hasimir Fenring says:

    2 stars
450°F next time? 350°F seems too low for an hour and twenty. I’m skeptical but I’ll try it once. If it’s dry I’m blaming my time management 😅

  59. User avatar Malphite says:

    2 stars
Too salty for my taste… Anyone else think it’s too much salt? I followed the recipe exactly.

  60. 1 star
Yasss! My kids are gonna hate this, haha!

    1. User avatar patrick.kohler2000 says:

      4 stars
Kids never know what’s good for them! 😂 This meatloaf looks delicious though, and I’m sure they’ll come around eventually!

  61. 4 stars
Pretty solid meatloaf recipe. I followed it mostly, but I added a tiny bit of garlic powder because… why not? Next time I’ll chill the mix for 10 minutes before baking.

  62. 5 stars
Easy to make and good for leftovers! 🙂

  63. User avatar Joseph Wisoky says:

    5 stars
This tasted just like I remember from childhood. The saltines make it so tender, and the ketchup on top is *chef’s kiss*. I used a meat thermometer and pulled it at 160°F—perfect.

  64. User avatar karl.brakus77 says:

    2 stars
I tried it but the texture was kinda weird. Maybe I overmixed it? Not sure if I’ll make it again.

  65. User avatar Random Dent says:

    5 stars
Meatloaf is always a win. Period. 10/10.

    1. 5 stars
100% agree—meatloaf is comfort food gold. The ketchup top is a must 😄

    2. 3 stars
I mean… meatloaf is fine, but “always a win” seems dramatic. I’d use a little more seasoning though—also is 32 oz the same as 2 lbs? Never trust my conversions lol.

  66. User avatar charline.oconnell46 says:

    4 stars
Pretty solid meatloaf, especially for a “no fuss” recipe. I did add a little garlic because I can’t help myself, but the base is great.

  67. User avatar Michael83 says:

    3 stars
I think I’ve made this wrong, mine crumbled everywhere!

  68. User avatar laverne.king says:

    4 stars
I was skeptical about the crushed saltines + milk combo, but it actually held together really well. Not dry at all.

  69. User avatar berenice.carroll1963 says:

    5 stars
Made this exactly as written and it came out super comforting. The ketchup top is a great touch and the inside stayed juicy. I’m definitely putting this in the rotation.

    1. 5 stars
Yes!! I had the same experience—comforting and juicy. The ketchup top really does something, doesn’t it? This is in my rotation too.

    2. User avatar stephnie.jacobs2 says:

      4 stars
I tried it once but I feel like 1 hour 20 min was a bit long for my oven. Mine came out more browned than I expected, still tasty though. Next time I’ll check earlier. Ketchup on top was good.

  70. User avatar lonnie.witting51 says:

    3 stars
350°F seems too low to me for a loaf. I baked it the full time and it was still a little soft in the center—maybe my pan was deeper. Could use a higher temp or more bake time.

  71. User avatar Chaurus Hunter says:

    4 stars
I don’t use loaf pans, so I shaped it free-form. Bake time might need adjustment—mine took closer to an hour and a half.

    1. User avatar chauncey.bogan98 says:

      5 stars
Totally makes sense—free-form meatloaf usually takes longer and browns differently than one packed into a loaf pan. I’d start checking around 1 hour, then every 10–15 min. I’ve also found covering with ketchup can help keep it from drying out.

  72. User avatar rickiestmorty says:

    5 stars
This is the best meatloaf I’ve ever made! Super tasty and my family loves it.

    1. User avatar chong.grady2025 says:

      2 stars
Best? Really? I tried it and it was just ok. Maybe I overcooked it? Anyway, the ketchup was too sweet for my taste.

    2. 5 stars
I’m glad your family enjoyed it! Meatloaf is such a classic. I think the brown sugar is a nice touch. I’ll have to try this recipe!

  73. 5 stars
I didn’t have bell pepper, so I used some diced celery instead (don’t judge 😅). It still tasted awesome and the hot sauce made it pop. My family asked for seconds.

    1. User avatar mitsuko.olson1997 says:

      5 stars
Haha celery instead of bell pepper is actually not the worst swap—glad it worked! 😄 Love that your family went for seconds. The hot sauce + ketchup combo sounds perfect.

  74. User avatar Shadout Mapes says:

    3 stars
Honestly it turned out kinda bland for me, and the loaf was a little crumbly even though I used 80/20 like the recipe says. Maybe I needed more milk or less saltines?

  75. User avatar johnny.gerhold2022 says:

    4 stars
I followed it but my ketchup layer slid off lol. Maybe I should’ve thickened it more. Flavor still good, just not the prettiest slice.

  76. User avatar aracely.mclaughlin says:

    3 stars
Not gonna lie, the saltines ratio seems odd to me. I guess they work as filler, but I was skeptical. Turned out okay once mixed well.

  77. 5 stars
Just made it. super easy. would make again.

    1. User avatar shayla.cole97 says:

      5 stars
Same here—so simple and it actually tastes like meatloaf should. I used regular saltines and it came out great. Definitely making again.

    2. 4 stars
Easy is right, but I’m wondering—mine turned out a little dense. Next time I might not pack it so tight in the pan. Still good though.

  78. 4 stars
Pretty solid basic meatloaf. I was a little nervous about 1 hour 20 min with 80/20, but it cooked through fine. Only thing: my loaf stuck to the pan a bit, so next time I’ll grease it more.

  79. User avatar lizbeth.hayes says:

    5 stars
Family approved! I added a bit of garlic powder and Worcestershire and it was like restaurant meatloaf. Would make again.

  80. User avatar bradly.casper28 says:

    3 stars
I used milk can measurement wrong and did like 1/3 cup milk but too lazy to fix it. Still tasted good. Would try proper measurements next time.

  81. User avatar arla.wisozk says:

    3 stars
Do you really mean 20 saltines? I thought that sounded off, so I did 15 and hoped. It was still okay, but I think I under-crushed the crackers, so the loaf didn’t hold together as well.

    1. User avatar ilse.marvin18 says:

      5 stars
20 saltines is for sure a lot, but meatloaf is pretty forgiving. If it held together better with more crushed crackers, that tracks—crackers basically act like the binder. Next time try fully crushing them (almost a fine crumb), and let the mixture sit 5–10 minutes before baking so it hydrates.

  82. 2 stars
I followed it exactly and it was bland 😕. Maybe my hot sauce was too weak or I used low-salt ketchup. Needs more seasoning in my opinion.

    1. User avatar dion.klocko51 says:

      4 stars
Ugh, I’m sorry it came out bland 😕 I think your instincts are right—“dash hot sauce” is *tiny*. I usually bump it up and add a touch more pepper (or even garlic powder) to the mix before baking.

    2. User avatar demetrius.parisian says:

      5 stars
I always do the same recipe and it’s never bland for me… might be the saltines? If they’re old/stale, the flavor is kinda meh. Also 1 tsp salt seems low-ish with 32oz meat—maybe your ketchup wasn’t salty enough? Next time try slightly more salt and Worcestershire if you have it.

  83. User avatar oPandariaNo says:

    4 stars
Pretty classic meatloaf. I followed the cook time but my oven runs hot, so I pulled it closer to 65 min. Still tasty—sweet/savory balance is nice with the brown sugar + ketchup.

  84. User avatar Blade Brothers says:

    3 stars
Mine came out a bit dry after 1 hr 20 min. Next time I’ll cover it with foil for part of the bake. Still tasty though.

  85. User avatar jaleesa.pacocha58 says:

    5 stars
Meatloaf? More like comfort. 10/10 😄

  86. User avatar ethan.brekke says:

    5 stars
SO GOOD. The loaf stayed tender and the ketchup top made a nice glaze. My kids went back for seconds. Don’t change a thing.

    1. User avatar Joanna Hand says:

      5 stars
Love hearing that! And yep—the ketchup top really does make it extra tasty. I won’t change a thing either 😄

  87. User avatar mathWizard says:

    4 stars
The hot sauce dash?? I barely tasted it, but it still gave a little something. I’d keep it in for sure.

  88. 2 stars
This is basically classic meatloaf, but I’d rather not mix in that much milk. Felt kinda watery before baking. Turned out edible, just not my favorite.

I loved the flavor balance: sweet (brown sugar), salty (saltines + salt), and peppery. My only change: I used ketchup + a tablespoon of mustard for the top glaze.

I followed it exactly and it was… fine. Family said “okay” which is the saddest review lol. Maybe my oven runs hot.

This is the mom meatloaf I remember 😭 the hot sauce dash makes it pop. Simple ingredients, big comfort. 10/10!

Not bad, but the saltines were kinda bland for me. I’d consider adding some garlic powder or Worcestershire. Texture was decent.

Totally get that. Those saltines can be a little muted depending on the brand—next time I’d add a pinch more salt/pepper or even a bit of onion powder. Garlic powder sounds like a great upgrade too.

Hmm I think the saltines are fine. Maybe you’re just using low-salt saltines? I’d rather add extra ketchup or a splash of soy sauce before I add Worcestershire—also don’t overmix or it gets tough.

Made this for my family last weekend and it was a hit. The ketchup top is such a nice touch—sweet/savory balance is perfect.

I’m confused about the ‘can’ in milk. Like how much is that? I used 1/3 cup and it was okay, but the wording makes me worry people will mess up measurements.

Not bad, but mine came out a little dry. I think my oven runs hot, because 1 hour 20 min felt like too long. Would try 60–70 min next time.

Mine turned out a bit dense, but I think I overmixed. Next time I’ll mix just until combined like the recipe says. Flavor was still good though.

This tastes like my childhood! I can smell it already. Thank you for posting the “Mom” version.

Made this for Sunday dinner and it came out so moist! The crushed saltines really do the trick. I used a little extra ketchup on top and everyone went back for seconds.

Meatloaf is the bestest!!! Family loved it, even the picky eater. I didn’t have bell pepper so I used celery and it still worked. 10/10

Worst meatloaf ever, I’m sorry. Mine stuck to the pan even though I greased it. Also the texture was kinda mushy, maybe I overmixed?
