Eggplant is gross. No matter how you cook it, it still tastes like… eggplant. But my friend liked it.
Not bad, but 4–5 minutes per side seems short for my thick slices. I ended up grilling longer and then the butter started to smell burnt. I’d suggest thinner slices or lower heat.

Yo this is gonna sound dumb but I mixed the miso with cold butter and it stayed kinda chunky 😅. I think the idea is right though—just soften the butter more. Flavor was still solid after heating.
Mine did that too once 😬 I think miso kinda grabs onto the butter if it’s too firm. Next time I’d warm the butter slightly or even mash the miso with a spoon first. Also “low sodium” soy sauce maybe changes the thickness? Not sure.
Not dumb at all—miso + cold butter can totally seize up. I usually microwave the butter like 5–10 seconds until soft/pliable, then mix. Glad the flavor still held up though!
