Instructions
Preheat a grill or grill pan over medium heat.
In a small bowl, mix the softened butter with the miso paste, soy sauce, sesame oil, and sugar until smooth.
Brush the eggplant slices lightly with oil and grill for about 4-5 minutes on each side until tender and grill marks appear.
Remove the eggplant from the grill and immediately spread the miso butter mixture over the hot eggplant slices.
Garnish with sliced green onions and serve warm.
