Ingredients
  

  • 1 medium eggplant sliced into 1/4-inch rounds
  • 2 tablespoons butter softened
  • 1 tablespoon miso paste preferably white
  • 1 teaspoon soy sauce low sodium
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 2 tablespoons green onions sliced

Instructions
 

  • Preheat a grill or grill pan over medium heat.
  • In a small bowl, mix the softened butter with the miso paste, soy sauce, sesame oil, and sugar until smooth.
  • Brush the eggplant slices lightly with oil and grill for about 4-5 minutes on each side until tender and grill marks appear.
  • Remove the eggplant from the grill and immediately spread the miso butter mixture over the hot eggplant slices.
  • Garnish with sliced green onions and serve warm.
