Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp turmeric ground
  • Salt and pepper to taste
  • 1 cup hummus
  • 1 cucumber diced
  • 1 pint cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1/4 cup parsley chopped fresh
  • 1/4 cup mint chopped fresh

Instructions
 

  • Preheat grill to medium-high heat.
  • In a small bowl, combine olive oil, cumin, coriander, paprika, turmeric, salt, and pepper. Rub the spice mixture all over the chicken breasts.
  • Grill the chicken for 6-8 minutes per side, or until cooked through and juices run clear. Remove from grill and let rest for a few minutes.

    Honestly, grilled chicken for 6-8 minutes per side depends on thickness a ton. Mine was thin so it was over by a minute. Still tasty, just not my best cook.

    I made something similar once and hummus + grilled chicken is a great combo. But I’m not sure 1 cup hummus for 4 bowls is enough—maybe I just like thicker layers 😅

      Looks good, but cumin + coriander + paprika together is a lot for me. I think I’d cut back on one of the tsp maybe… Also do you rinse the chicken after salting? Never know with spices.

    Seems good but I dont have mint so I used dill. Was it the same? no. Also I grill on high normally so medium-high confused me lol—anyway still ate it.

      That happened to me once—resting really makes the difference. But glad it was still tasty! Next time just tent it with foil for a few minutes, and the juices will stay in.

    Grill to ‘medium-high’ is kinda vague. Also ‘juices run clear’ isn’t always reliable—chicken can be done and still look a little pink. Still, the recipe seems solid.

      Yeah “medium-high” is the kind of vague that makes me overcook stuff. I usually aim for a good sizzle and then check temp—165°F in the thickest part—way less guessing than “juices run clear.”

      I get your point, but I’ve done this and the juices did run clear and it was great. Also with my grill, “medium-high” is more like 400°F? Maybe that helps. Still, rest time matters too.

      I get what you mean. I’ve also used store-bought seasoning before and it was fine, just less “authentic” tasting. Your method is honestly practical though.

    I didn’t have ground coriander, so I swapped with something random (curry powder… don’t judge) and it was still good. Probably not authentic though.

      Hey honestly if it tasted good, that’s what matters 😄 Curry powder can totally carry a similar vibe—just less “specific” to coriander. I wouldn’t stress. Want to be more authentic next time? Toast cumin + coriander seeds in a dry pan and grind it up.
