Preheat grill to medium-high heat.
In a small bowl, combine olive oil, cumin, coriander, paprika, turmeric, salt, and pepper. Rub the spice mixture all over the chicken breasts.
Grill the chicken for 6-8 minutes per side, or until cooked through and juices run clear. Remove from grill and let rest for a few minutes.
Slice the grilled chicken into strips.
To assemble the bowls, divide the hummus among four bowls. Top with grilled chicken, cucumber, cherry tomatoes, red onion, parsley, and mint.
