Ingredients
  

  • 2 cups chicken broth
  • 1 cup long-grain white rice
  • 2 pieces chicken breasts skinless and boneless
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat.
  • Season the chicken breasts with salt, pepper, garlic powder, and onion powder, then add them to the skillet. Cook until golden brown on both sides.
  • Remove the chicken from the skillet and set aside.

      Totally agree—my chicken wouldn’t brown either until I cranked the heat a bit and let the pan really preheat. I also noticed 20 minutes is kinda tight depending on your rice; I usually add a few extra minutes and it turns out great.

      I followed it exactly and my rice was fine, but I also used chicken breasts that were thinner. If your breasts were thick, 20 minutes might not be enough for both rice + chicken.
