Ingredients
  

  • 2 lobsters cooked and meat removed
  • 1 red bell pepper roasted and sliced
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 1/2 cup parsley chopped
  • 1 pound penne pasta
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions
 

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic cloves. Saute until the onion is translucent.
  • Add the cooked lobster meat, roasted red peppers, and heavy cream to the skillet. Stir well to combine.
  • Bring the mixture to a simmer and let it cook for about 5 minutes, until the sauce thickens slightly.
  • Add the grated Parmesan cheese and chopped parsley to the skillet. Stir until the cheese is melted and the sauce is smooth.
  • Season with salt and pepper to taste.
  • Add the cooked penne pasta to the skillet and toss to coat the pasta with the lobster and red pepper sauce.
  • Serve hot and garnish with additional Parmesan cheese and parsley, if desired.
