Lebanese Beef Sambousek

August 9, 2023

Lebanese Beef Sambousek are savory pastries filled with spiced ground beef, wrapped in delicate, flaky dough. These delicious little pockets are a popular appetizer or snack in Lebanese cuisine, often served during festive occasions or as part of a mezze spread. Their crispy, golden exterior and flavorful filling make them an irresistible treat.

The filling for sambousek is typically made from ground beef, which is sautéed with onions, garlic, and a blend of aromatic spices like cinnamon, allspice, and cumin. Some recipes may also include pine nuts or raisins for added texture and a hint of sweetness. The beef is cooked until browned and well-seasoned, then allowed to cool slightly before being stuffed into the dough.

To assemble the sambousek, you can use ready-made phyllo dough or make your own dough from scratch if you’re feeling adventurous. The dough is rolled out into small circles, and a spoonful of the beef filling is placed in the center of each. The dough is then folded over to form a crescent or triangle shape, pinching the edges tightly to seal the filling inside. Some people like to brush the top with a little egg wash for extra shine and color.

These pastries are typically deep-fried until golden and crisp, although they can also be baked for a lighter option. Whether fried or baked, Lebanese Beef Sambousek are best served warm, with a side of yogurt or tahini for dipping.

Sambousek can be made ahead of time and frozen before frying, making them a great option for meal prep or special occasions. Once fried, they are crispy on the outside, while the beef filling remains tender and flavorful on the inside. Perfect for gatherings or as a snack, these savory bites bring the essence of Lebanese cuisine to your table with every delicious bite.

Ingredients

  • For the Filling: Filling
  • 1 lb ground beef
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp allspice ground
  • Salt and pepper to taste
  • For the dough:
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup unsalted butter melted
  • 1/2 cup warm water
  • 1/4 cup plain yogurt
  • 1 egg lightly beaten

Instructions

  • In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic and cook until softened, about 5 minutes.
  • Add the ground beef to the pan and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  • Add the ground cumin, ground coriander, ground cinnamon, and ground allspice to the pan. Stir well to coat the meat with the spices. Season with salt and pepper to taste.
  • Remove the pan from the heat and let the meat filling cool completely.
  • In a mixing bowl, combine the all-purpose flour, salt, and baking powder. Mix well.
  • Add the melted butter, warm water, plain yogurt, and lightly beaten egg to the bowl. Stir until a dough forms.
  • Transfer the dough to a floured surface and knead it for about 5 minutes, until smooth and elastic.
  • Divide the dough into 12 equal pieces and roll each piece into a small circle.
  • Place about 1 tablespoon of the cooled meat filling in the center of each dough circle. Fold the dough in half to enclose the filling and press the edges to seal.
  • Repeat with the remaining dough circles and filling.
  • Heat vegetable oil in a deep pan or fryer to about 350°F (180°C).
  • Fry the sambousek in batches for about 3-4 minutes, until golden brown and crispy.
  • Remove the sambousek from the oil and drain on a paper towel to remove excess oil.
  • Serve hot and enjoy!

Wow—simple and delicious. Kids asked for seconds. 350°F worked for me, and frying 3 minutes was perfect. Gonna make these for guests.

I’m not a great cook, so I appreciate the clear steps. Folding and sealing was kinda messy, but after frying they held together enough.

Five stars! Fast, delicious, and smells like a Middle Eastern bakery.

Five stars for sure—made these last night and they smelled EXACTLY like a bakery. Crispy outside, juicy inside.

I followed it pretty much and they came out great! The spice mix is spot on. Only thing: my dough needed a tiny bit more water.

I tried making these for the first time and honestly it’s a lot of steps for something you might eat once and forget. BUT my family didn’t complain, so that’s something.

Not gonna lie, 12 pieces + frying batches sounds like a whole project. I’d rather just do like, hand pies and bake them—same flavor, less mess. Did you try an oven version?

Totally get that—there are a lot of steps the first time. But once you’ve done it, it’s almost like an assembly line. And yeah, if your family didn’t complain, that’s basically a win 😄

I was skeptical about the baking powder + yogurt dough, but it actually worked. Next time I’ll add a tiny pinch more salt to the filling, but overall really good.

Not gonna lie, I was skeptical about frying 3-4 minutes—felt short. But they came out golden and crispy, so I guess the timing is right. Love the Lebanese vibe.

Same! I thought 3–4 mins would leave them pale, but once they’re golden you know they’re done. That Lebanese vibe hits every time 😄

I mean… 350°F for 3 mins sounds kinda fast, unless the dough is super thin. Still, if they were golden + crispy then your oil temp was probably on point. Nice!

This is the best thing I made all week. Lebanese food hits different. Also the smell while frying?? unreal. 10/10 would do again.

Love Lebanese food, so I was excited—but the dough felt a bit weird at first. After kneading 5 min it came together though. Frying time took me longer than 3-4 minutes.

I don’t know about all these spices, seems excessive. Can I just use salt and pepper?

Made these for my family and they disappeared fast. The filling is super flavorful—cumin + allspice combo is on point. I did need a little extra sealing pressure so they didn’t pop, but otherwise perfect.

    1. 5 stars
Yes! That cumin + allspice combo is the whole vibe. Glad they stayed sealed for you too 👏

Aww, that’s so sweet! Food really does bring back memories. My grandma made them too! Can’t wait to try this recipe!

Looks good but sambousek should have more spices! I think there’s not enough flavor in here. Anyone else think so?

I tried this and they were greasy. I drained on paper towel but still… maybe my oil temp wasn’t 350°F? I’ll try again with a thermometer.

Sambousek is my favorite! Wish I could say they turned out as good as the ones back home.

    1. 4 stars
Maybe it’s the ingredients? I did it straight from my grandma’s recipe and they came out perfect! You gotta give it another try!

I followed the recipe but mine came out a little doughy. Maybe I didn’t knead long enough? Should’ve cooked them longer.

These sambouseks are amazing! Just like my grandma used to make. 😍

I don’t know about the spices, too much cumin for my taste. Not my favorite.

  18. 3 stars
The spices are really fragrant, but I found it a little too heavy on cumin for my taste. Next time I’ll cut cumin in half and add a pinch more cinnamon for balance.

Delicious!! 🤤 I could eat these every day! Best sambousek ever!

I don’t get why you have to fry them. Can’t you just bake them instead? Seems like a lot of oil.
