Kipfler Potato Salad

August 11, 2024

Kipfler potato salad is a fresh and earthy variation of the beloved potato salad, made with uniquely flavorful Kipfler potatoes. These small, finger-shaped potatoes have a firm, waxy texture and a slightly nutty taste that makes them perfect for salads. They hold their shape beautifully when cooked, allowing for a satisfying bite in every forkful.

Unlike the heavier, mayo-laden versions of traditional potato salad, a Kipfler potato salad leans more toward a rustic, European-style dish. Think tender slices of golden potatoes tossed with a light vinaigrette, fresh herbs, and maybe a hint of mustard or tangy capers for contrast. The simplicity of this salad is what makes it stand out—it lets the natural flavor of the potatoes shine.

The salad typically includes thinly sliced red onions or shallots for a bit of sharpness, while ingredients like fresh parsley, dill, or chives add brightness. A warm dressing made with olive oil, whole-grain mustard, white wine vinegar, and a touch of honey or lemon juice coats the potatoes gently, soaking in as they cool for maximum flavor.

Kipfler potato salad can easily be customized. You might add in crispy pancetta or bacon for a savory crunch, soft-boiled eggs for richness, or green beans for a bit of snap and color. It also pairs beautifully with grilled meats, roast chicken, or fish, making it a go-to side for picnics, barbecues, and family dinners.

One of the best things about this salad is that it tastes even better after it sits for a bit. The potatoes absorb the dressing and the flavors meld together, making it a great make-ahead option for gatherings. It’s a dish that feels familiar yet a little more refined-simple, nourishing, and always welcome on the table.

Honestly, who puts vinegar in potato salad? I didn’t even follow this and it turned out fine.

  4. 2 stars
Where are the pickles? A potato salad without pickles ain’t a potato salad! 2/5 for me.

  5. 3 stars
Kipfler potatoes? Never heard of them. Can I just use regular ones? Not sure if it’s worth the effort.

  6. 1 star
Potatoes? Yum. Salad? Meh. I don’t get the whole salad thing. 1 star.

This salad was super tasty! My family loved it and I will make it again. Thanks!

So glad to hear that! It’s one of my favorites too. The dill really makes it special!

I don’t know, a potato salad with mayo seems kinda gross to me. But if you liked it, cool I guess.

  8. User avatar beverly.cruickshank1971 says:

    3 stars
Not bad, but I found the vinegar a bit strong right at first—after it chilled it mellowed though. Next time I’ll start with 2 tsp vinegar instead of 1 tbsp.

  9. User avatar Elbert Hickle says:

    5 stars
This dressing feels fancy for potato salad. The vinegar keeps it bright. I’d happily serve it again.

  10. User avatar marguerite.terry1957 says:

Good recipe, but could use a bit more salt! My grandma adds bacon to hers.

  11. 5 stars
5 stars lol—dill makes everything better. I didn’t have apple cider vinegar so I used regular, still worked.

    1. User avatar Nakia Smitham says:

      5 stars
Haha same! Dill really elevates it—fresh, bright, not heavy. I also love that onion bite. Great tip about using regular vinegar too.

    2. 4 stars
Wait… so you swapped apple cider vinegar with regular and it still came out good? I always thought that tang had to be exact. Might try it—though I might add a little extra dill.

  12. User avatar tamara.murazik says:

    5 stars
yummy!!! 5 stars for sure! Will make this again for my cookout!

  13. 5 stars
Wow, who knew potatoes could be so fancy? Love it. Perfect for summer BBQs!

But why kipfler potatoes? Aren’t regular potatoes good enough? Anyway, I guess it’s worth a shot.

  14. User avatar loren.reynolds says:

Tasted a bit bland, maybe needs more seasoning?

  15. User avatar stanley.jenkins17 says:

Made something similar before, but I always forget to chill it. 30 minutes is doable—definitely trying this so the flavors can meld.

  16. 2 stars
I don’t get why everyone loves dill with potatoes… it’s like eating grass. The texture was good, but I might swap dill for parsley next time.

  17. 5 stars
    Best potato salad ever!!! !

  18. User avatar patsy.prosacco62 says:

Honestly, I don’t see what the fuss is about. It’s just another potato salad. Maybe too much mayo, idk.

  19. 2 stars
Not a fan. The vinegar taste was way too strong for me, and I love mayo but it felt off here.

      Right?!

  21. User avatar bella.waters74 says:

    3 stars
Mine came out bland at first—salt/pepper really does matter. I re-seasoned and it fixed it. Also I used dried dill because I had no fresh, and it was okay.

  22. User avatar calista.cartwright75 says:

    4 stars
Pretty solid. I used light mayo and it still tasted great, though next time I’ll add a touch more vinegar for zing. Chilling for 30 mins wasn’t enough for me—I let it sit longer.

    1. User avatar grant.schaden says:

      5 stars
Nice! I’m glad the light mayo still worked. I’ve found extra chilling makes it taste more “together” too—like the dressing really gets into the potatoes.

  23. User avatar rena.williamson30 says:

    5 stars
    Best. Salad. EVER!! 😍

  24. User avatar bernardo.klocko says:

    3 stars
Not sure if I like the mustard in there. It kinda overpowers everything. Maybe just a little less next time?

  25. User avatar catheryn.harris42 says:

    3 stars
Not bad, but I think the mustard is too strong. Maybe try it with less next time?

5 stars! My kids loved it and it was easy to make. Will bring this to my next BBQ!

  28. 5 stars
First time making potato salad, and it turned out great! I omitted the onion tho. Yum! 5/5.

  29. User avatar alphonso.schuppe2026 says:

    2 stars
Why do you have to chill it?? I just want to eat it warm! I did it anyway but it was so-so… 2 stars.

  30. User avatar loise.corwin says:

    3 stars
I didn’t have kipfler potatoes, used regular ones instead. Still turned out okay I guess.

  31. User avatar ArabianNights says:

    4 stars
I followed it mostly, but my potatoes soaked up the dressing and it got thick. Still good, just looked different than expected. Next time I’ll toss while warm.

    1. 5 stars
That makes sense—potatoes can drink up dressing, especially once they’re cooled. Tossing them while warm helps the mayo cling better. Glad it was still tasty!

    2. User avatar rikki.stoltenberg2001 says:

      4 stars
Mine did the same, but I think I waited too long to mix it. Also I used light mayo and it seemed to thicken more? Next time I’m doing warm toss like you said. 🙂

  32. 4 stars
Super easy and tasty! My kids loved it. Thanks for sharing!

  33. User avatar collette.abbott1998 says:

    2 stars
The mayo in this was too much for me. I prefer using yogurt instead. Not my thing. 2.

  34. User avatar Lashanda Marquardt says:

    2 stars
Um, is apple cider vinegar really necessary? I think it messes with the flavor. 🤔

  35. User avatar kaila.rolfson48 says:

    5 stars
Made this for lunch and it’s honestly so creamy without being heavy. The dill + Dijon combo is perfect. Mine needed a little extra salt after chilling, but still 10/10.

  36. User avatar emmitt.lesch81 says:

    4 stars
The timing is off for me: 10 min boil wasn’t tender enough for my potatoes. I had to go closer to 15. Still delicious, just watch them.

  37. 2 stars
I don’t get why people use mustard in potato salad. Mayo already tastes good—sorry just my opinion. But I’d try with less dill maybe.

  38. User avatar nicol.white16 says:

    4 stars
The vinegar amount felt a tiny bit strong at first, but after chilling it mellowed out. Next time I might use slightly less cider vinegar though.

  39. User avatar terrell.deckow37 says:

    3 stars
Dill? Really? I think it’s too much in this recipe. That’s just my opinion tho.

    1. User avatar ward.schulist says:

      3 stars
I dunno… I think dill should be there. But you do you, I guess. Maybe it’s just ur taste.

    2. User avatar guy.klocko says:

      5 stars
I actually love dill in potato salad! It adds such a nice flavor. Give it another try!

  40. User avatar sheri.nitzsche1962 says:

    4 stars
Wait, 600g potatoes and only 2 tbsp dill?? That seems like not enough herb for the whole bowl. I doubled the dill and it was way better.

  41. 5 stars
I dont even like potatoes that much but this recipe made me a fan!

  42. User avatar scotty.macgyver5 says:

    1 star
Eh, didn’t really like it. My mom’s potato salad is way better, just saying.

  43. User avatar doreatha.lowe0 says:

  44. User avatar lanie.runolfsson67 says:

    5 stars
Made this for a BBQ and it disappeared fast. The dijon + apple cider vinegar combo is *chef’s kiss*. I used light mayo and it still tasted rich.

    1. User avatar raymond.lebsack90 says:

      5 stars
That sounds exactly like what I’m looking for—fast-disappearing potato salad is the best kind 😄 The dijon + vinegar tang is such a good combo, and using light mayo still coming out rich is a win!

  45. 3 stars
I don’t know, it was just okay. The mayo was too much for me. I’m not a fan of mustard in salads. 3 stars.

    1. 4 stars
I totally get where you’re coming from! The mayo can be overwhelming. I usually use less or substitute with yogurt. Maybe give that a try next time!

    2. User avatar renato.feest15 says:

      3 stars
Yea, too much mayo can ruin it! But mustard gives a nice kick, I like it! Just different tastes I guess!

  46. User avatar felipe.casper41 says:

    5 stars
This salad was sooo good! The dill gave it a nice twist. Will definitely make again!

  47. User avatar elwood.block97 says:

    5 stars
I love this recipe! Makes me think of my grandma’s cookin’. Definitely making this for our family BBQ! 🌟🌟🌟🌟🌟

  48. 4 stars
So easy to make! I added some boiled eggs for protein. Thumbs up!

  49. 5 stars
    Delish!

  50. User avatar Trin Tragula says:

    2 stars
Seems too complicated for a potato salad. Why use so many ingredients? Just boil and dressing!

    1. User avatar tracie.bartoletti2002 says:

      5 stars
I disagree! The flavors mix well with different ingredients, that’s what makes it special! 🤷‍♂️

    2. User avatar lou.collins says:

      4 stars
I get that! Sometimes simple is better. But this sounds tasty if you like flavors! 😋

  51. User avatar Michael83 says:

    5 stars
This potato salad is super delicious! I loved the dill in it. Best side dish ever!

  52. User avatar eula.schmidt78 says:

    1 star
This has too many ingredients for potato salad! Why dill? Just keep it simple! 1 star.

  53. 4 stars
The instructions are straightforward but I cooked my potatoes for more like 15 minutes since my chunks were bigger. Turned out fine—just don’t undercook.

    1. User avatar lean.effertz says:

      5 stars
Yeah, that makes sense—bigger chunks definitely need a bit longer. I’m glad it still turned out good! Totally agree on not undercooking.

  54. User avatar lola.prohaska says:

    4 stars
Quick question: do you boil the potatoes with the peel on or off? The recipe says peeled—just making sure. Either way, looks legit.

  55. User avatar Pandora Wolff says:

    5 stars
Yum! I love a good potato salad. This one is refreshing with the vinegar.

  56. 2 stars
This is just potato salad, nothing special. I thought it was overrated. 2 stars.

  57. 2 stars
I’m sorry but dill?? It tastes like I accidentally ate a salad dressing. My kids didn’t touch it. Would not make again.

  58. User avatar kurtis.lynch0 says:

    2 stars
Ehh, potato salad with no eggs seems wrong to me. I know dill is good but this felt kinda flat. I might add celery or something next time.

  59. User avatar smartestRedditor says:

    3 stars
easy and quick recipe but not my fav. I prefer Italian dressing.

    1. User avatar maire.kuhlman1970 says:

      4 stars
I totally get that! Italian dressing has such a nice zing to it. But I really enjoy this potato salad during summer BBQs. 😋

  60. User avatar bethany.west says:

    5 stars
Such an easy recipe—like 15 minutes of work then wait. I served it with grilled chicken and everyone asked for the recipe.

  61. User avatar Jeni Streich says:

    3 stars
Tasted okay, but it was missing something. Maybe cumin next time? 3/5.

  62. User avatar Gabriella says:

    4 stars
I’m skeptical about mayo potato salad without eggs or anything else. But honestly the flavor balance is good and the texture was nice after chilling.

    1. User avatar Jeni Hegmann III says:

      5 stars
Same! I was sure it would taste “missing” without eggs, but I tried it and the Dijon + vinegar really covers it. Glad you mentioned the chill—mine got way better after 45 min too.

  63. User avatar len.hagenes18 says:

    2 stars
Yall forgot to tell how to peel the potatoes! I had a rough time with that. Only gave 2 stars.

  64. User avatar NAFO.SUPREMACY says:

    4 stars
I’m not usually a potato salad person, but this one surprised me. The sauce is creamy without being heavy. Fresh dill makes a difference.

  65. User avatar herschel.stracke58 says:

    3 stars
Potatoes good. Dressing, idk, not my fave.

  66. User avatar penelope.schuppe1978 says:

    4 stars
SO easy to make and it tastes great! I might add bacon next time for some crunch. Yum!

  67. User avatar ursula.purdy64 says:

    5 stars
Five stars! I added a little extra chopped onion because I love crunch. Also, chilling really helps—don’t skip it.

    1. 4 stars
Good tip about chilling—mine used to taste kinda “meh” right away. I’ll try adding more onion too. Also, is it okay if I use regular yellow mustard instead of Dijon?

    2. 5 stars
Love this! Extra onion + the chill time is spot on. The dill really comes through after it sits.

  68. User avatar tissues_with_issues says:

    2 stars
Not bad but the ratios feel a little off. 100g mayo for 600g potatoes seems low to me. Mine came out drier than I wanted.

  69. User avatar ezekiel.gutmann30 says:

    4 stars
Pretty solid. I added a couple chopped hard-boiled eggs because I’m basic like that. Could use a bit more salt though—mine needed it.

    1. User avatar Gag Halfrunt says:

      5 stars
Hard-boiled eggs is such a good idea—totally not basic 😂. And yeah, kipflers can be a little stubborn with seasoning, so adding salt at the end (or even a pinch to the water) makes sense. Did you end up needing more mustard or just salt?

  70. User avatar tracee.lueilwitz94 says:

    5 stars
This potato salad is so good! I love the dill flavor. Will definitely make again.

    1. User avatar Yooden Vranx says:

      2 stars
Honestly, I think this recipe is too basic. Where’s the flavor? I don’t get all the hype around potato salad.

    2. User avatar Alia Atreides says:

      5 stars
I’m glad you loved it! The dill really makes a difference, doesn’t it? I added some chopped celery for a crunch, too!

  71. User avatar Prostetnic Vogon Kwaltz says:

    2 stars
Not sure about the apple cider vinegar—tasted a bit sharp to me. I might cut it down to 2 teaspoons next time. Otherwise it was okay.

  72. 5 stars
This came out super creamy and not too tangy. The Dijon + vinegar combo is perfect. I chilled it longer than 30 mins and it tasted even better.

  73. User avatar scottie.terry says:

    5 stars
Made this last night—so good. The Dijon + cider vinegar combo is perfect and the dill makes it feel fresh. I let it chill a full hour and it tasted even better.

  74. User avatar ArabianNights says:

    5 stars
This is the first potato salad I’ve liked in years. I was skeptical about the olive oil in the dressing, but it adds a nice smoothness. Will repeat.

  75. User avatar mercedes.streich says:

    5 stars
This potato salad is a game changer! I never thought Dijon mustard would go so well with potatoes. Will def make again!

  76. User avatar NAFO.SUPREMACY says:

    4 stars
Had to add some garlic and it turned out amazing! Not sure how it would be without tho.

    1. User avatar sheridan.dubuque says:

      5 stars
Garlic always makes everything better! Good call. 😄

  77. 2 stars
Meh. Tastes kinda like regular potato salad, nothin special. Mightve been my red onion—was too strong.

  78. 2 stars
Honestly didn’t care for it. The vinegar flavor was kind of sharp and the mustard was overpowering. Maybe my mayo was old?

    1. 2 stars
Ugh, that sounds exactly like what would happen if the mustard/vinegar are too strong or if the mayo was off. I’d try using a bit less Dijon (maybe 1 tbsp) and only 1 tsp vinegar next time—also make sure the mayo is fresh and not too tangy already. Still tastes great once it chills, too.

    2. 3 stars
I actually love the tang, but yeah—2 tbsp mustard + 1 tbsp vinegar is pretty punchy. If your mayo was old it could’ve gone sharper and then the mustard really took over. Try swapping to wholegrain mustard or cutting the vinegar in half, and chill longer like an hour.

  79. User avatar oliver.vonrueden38 says:

    2 stars
i dont know about the olive oil in potato salad?? that just seems wrong lol but its okay i guess

    1. 4 stars
I was skeptical too, but trust me, the olive oil adds a nice richness! You should give it a try. 🙂

  80. 4 stars
I used light mayo and it still tasted great. Chilling for 45 minutes helped a lot. The kipfler bite size makes it feel fancy for such an easy recipe.

    1. User avatar vivienne.schaden73 says:

      5 stars
Love that! Light mayo can be hit-or-miss for some salads, so good to hear it still worked. And yeah, the 45 minutes of chilling really does make the flavors click—also “fancy” is exactly how I feel about kipfler potatoes 😄

  81. 5 stars
Yummy!! I could eat this every day. It’s super easy and perfect for summer BBQs!

    1. 2 stars
Looks good but isn’t it just potatoes and mayo? Seems kinda bland to me.

    2. User avatar arlie.altenwerth1954 says:

      5 stars
Totally agree! This salad is such a hit at my summer BBQs too. Can’t wait to make it again!

  82. 5 stars
This potato salad was an amazing side dish! The flavors mixed so well together, especially the dill! Highly recommend!

  83. User avatar florencia.luettgen1972 says:

    2 stars
This tasted kinda bland to me. Like… where’s the potato flavor? I think it needed more salt, and maybe I should’ve chopped the onion smaller. Also my potatoes were a little mushy even though I only boiled 10 min. Could be my timing.

  84. 3 stars
Not sure about kipfler potatoes. I swapped in baby potatoes and they stayed a little too firm—maybe I didn’t boil long enough.

  85. 4 stars
I followed it exactly and it tasted bland at first, but after chilling it improved a lot. Salt and pepper to taste matters more than I thought.

  86. 1 star
Potato salad? More like potato sad! 😒 Not a fan, sorry. Maybe I’m just picky…

  87. User avatar Prostetnic Vogon Kwaltz says:

    3 stars
Not bad, but I think it needs more vinegar or something. Mine tasted a bit bland.

    1. User avatar mayra.corwin74 says:

      4 stars
I think you might be onto something! A bit more vinegar could really liven it up. I’ve added lemon juice in the past and it turned out great!

  88. 2 stars
Dijon mustard is a bit weird in potato salad, isn’t it? I’d rather not mix flavors like that.

  89. User avatar delana.witting64 says:

    3 stars
Why apple cider vinegar? Regular vinegar is better, trust me. 🤷‍♂️

  90. 5 stars
Made this for a BBQ and it disappeared fast. The dill + Dijon combo is spot on, and the potatoes stayed nice and firm. Would definitely make again!

    1. User avatar Treena Bins says:

      5 stars
Love hearing that! The dill + Dijon combo really does something special, and kipfler holding firm is a big win. Glad it disappeared fast—BBQ proof 😄

  91. User avatar aubrey.christiansen75 says:

    3 stars
The instructions are simple, but I kinda overcooked the potatoes and they fell apart. Taste was decent, texture was tragic. Still, will try again carefully.

  92. 5 stars
Absolutely love it! My aunt would make this all the time. Brings back memories! 🥰

  93. 5 stars
This is the kind of potato salad that actually tastes fresh. Apple cider vinegar is a win.

  94. 3 stars
I followed it pretty closely, except I didn’t have fresh dill so I used dried. Big mistake 😅 The flavor was flat. Texture was fine, but it didn’t have that fresh herby punch. Will try again with fresh dill.

    1. User avatar artie.haley54 says:

      3 stars
Hmm I kinda disagree—dried dill can work, I’ve done it before. Maybe you needed more salt/pepper or a bit extra vinegar to wake it up? Also did you let it chill long enough?

    2. User avatar dave.becker says:

      5 stars
Totally makes sense—fresh dill really brings the “pop.” Dried usually needs a lot more and still can taste flatter. Glad you’re going to retry it!

Oh, I totally get that! I once forgot the vinegar too. It still turned out tasty but way different. Next time I’m going to remember it for sure!

  98. User avatar ali.herzog22 says:

I followed it pretty much, but my potatoes soaked up too much dressing and got kinda heavy. Cooling them longer might help.

    1. User avatar suspiciousCommentator says:

      5 stars
That makes sense—kipflers are so good but they can really drink up the dressing. I’ve found that letting them cool more (and even slightly drying them after draining) helps a lot, plus tossing while they’re just warm instead of hot.

  99. User avatar Marlon Gerhold III says:

    4 stars
Super easy to make! My kids helped out and they ate it all. Success!!

  100. 5 stars
This is how you make real potato salad, people! Forget the store-bought stuff.

  101. 3 stars
I struggled a bit with the boiling part. My potatoes turned mushy! Might try with less time next time.

  102. User avatar gretchen.jenkins says:

    3 stars
Not sure about the kipfler part—where I live they’re hard to find. I used baby potatoes and it came out fine, but the texture was a bit different.

  103. 1 star
A bit too complicated for me. I just want simple potato salad without all these fancy stuff. 🤷‍♂️

  104. User avatar faviola.witting97 says:

    2 stars
Kipfler potatoes? Never heard of them! Can I use regular ones? Seems like too fancy.

  105. User avatar caryl.labadie60 says:

    5 stars
This looks right up my alley. The Dijon + apple cider vinegar combo sounds like it’ll cut through the richness of the mayo perfectly. I’ll probably add a little extra dill too.

  106. 4 stars
    Cool salad

  107. 4 stars
Solid recipe, but I think it needs a bit more salt than “to taste.” Also I used regular yellow onion and it was still good. Chilling helped a lot.

  108. User avatar odelia.hane70 says:

    2 stars
I tried it and the sauce felt kinda thick, like paste. I might add a splash more vinegar next time to loosen it.

    1. User avatar winford.yundt says:

      5 stars
That sounds like it might be an emulsification thing—if the mayo thickened up as it cooled, a tiny bit more vinegar (or even a splash of warm water) usually loosens it. Glad you’re thinking of adjusting; you can add it a teaspoon at a time.

    2. User avatar kenton.kemmer84 says:

      3 stars
Maybe you used too much mayo? Mine never turns into paste though. I’d also add more oil instead of vinegar—vinegar makes it sour. Or maybe your potatoes were mashed a little? Idk lol but I love this salad.

  109. User avatar fairy.dicki2006 says:

    5 stars
Made this for a weekend BBQ and it actually tasted bright and creamy—loved the dill + Dijon combo. The potatoes stayed nice and tender too. Will do again!

  110. User avatar nedra.mayert says:

    5 stars
Kipfler potatoes are a pain to prep but worth it. Dill makes it taste fresh, and the vinegar keeps it from feeling heavy. Would recommend to anyone.

  111. User avatar Miss Eldridge Ratke says:

    3 stars
Too much mayo for my taste… I like a lil less creaminess! Maybe try it with yogurt instead? 🤷‍♀️

  112. User avatar isiah.mosciski92 says:

    2 stars
Why is there mayo + olive oil? Seems redundant. I’d cut one next time, but flavor is decent.

  113. User avatar lashandra.pouros says:

I’m glad it was a hit! I love how the dill adds flavor. Definitely trying this at my next BBQ.

    2. User avatar jc.tromp92 says:

      3 stars
Hmm, sounds good, but isn’t mayo kinda heavy for a salad? I prefer lighter dressings.

  114. 4 stars
I used yellow potatoes instead and it still worked! Just sayin’

  115. User avatar gianna.haag0 says:

Big fan of dill! This was my first time making potato salad and it turned out great. Gonna make again for sure! 4 stars.

  116. User avatar vincenzo.okeefe12 says:

I don’t know what all the fuss is about. It was just a basic potato salad. Maybe it’s better with different potatoes?

    1. User avatar Alyse Nader says:

I think you’re missing out! Kipfler potatoes have such a unique flavor. Maybe you should try it again with fresh dill. It makes a huge difference!

Not sure about peeling the kipflers (or is it kipflers?). Also, 600g is a lot for just me, but the sauce seems simple enough. Might halve the onion and mayo.

    1. 4 stars
600g *is* a lot for one, unless you’re planning leftovers for days 😅. I’d peel if you don’t like the texture of the skin, but honestly I’d just wash well and boil. The sauce looks too basic though—add a pinch of sugar or more vinegar if it tastes flat.

    2. 5 stars
I’d keep the peeling optional—kipflers are thin-skinned, so usually no need. Also “kipflers” is the common spelling 👍. Halving the onion/mayo sounds like a solid adjustment for one person.

  119. User avatar ArabianNights says:

    3 stars
Not sure about the mayo + Dijon ratio. I felt like it needed a bit more salt and maybe less mustard? Still ate it though.

  120. User avatar tod.harris67 says:

    3 stars
Where’s the garlic? 😅 Also I don’t get why olive oil is necessary when mayo already exists. But yeah it came together and tasted decent.

  121. User avatar oPandariaNo says:

    4 stars
Good, but I used too much pepper and now it’s kinda spicy. Next time I’ll be calmer. Still will make again.

    1. User avatar alesia.pouros52 says:

      5 stars
That’s happened to me too 😅 Pepper can sneak up on you. Next time try adding it in stages (and maybe a pinch less) — glad you still plan to make it again!

  122. User avatar Shirley Knot says:

    3 stars
I followed it pretty closely but mine was a little bland. Maybe I under-salted the potatoes? Also, the dressing felt thick until I mixed it with the warm potatoes.

    1. User avatar Draugr Wight says:

      4 stars
Totally get it—kipflers can be a bit tricky. If it tasted bland, you probably nailed the under-salting idea. I usually salt the potato water pretty generously and then do a second round of seasoning right after mixing (while the potatoes are still a little warm). The thick dressing thing also makes sense; mixing it with warm potatoes helps it loosen and coat better. Next time, try a bit more salt/pepper and maybe add a tiny splash more vinegar if you want it to pop.

  123. User avatar galen.hodkiewicz says:

    3 stars
I followed the steps exactly and mine turned out kind of… bland until I added extra salt. After that it tasted great.

    1. User avatar Mr. Harmony Padberg says:

      5 stars
Glad you figured it out! Potato salad definitely needs a bit of salt adjustment—potatoes can be weirdly bland depending on the batch. Next time try tasting the sauce before mixing so you don’t have to guess.

  124. User avatar valerie.mraz36 says:

    2 stars
I’m gonna be honest: mayonnaise in potato salad is overrated. But I do like vinegar, so maybe this won’t be too heavy. Could use more herbs, though.

  125. User avatar brett.wilderman7 says:

    4 stars
Not bad! I used light mayo and it was a bit tangier than I expected, but still enjoyable. Next time I’ll chop the onion smaller so it blends better.

  126. User avatar Charles Darwin says:

    4 stars
I’m confused about the potatoes. Can I use the tiny ones? Will it taste different?

  127. User avatar antoine.labadie1978 says:

    3 stars
Not bad, but mine turned out a bit too tangy even though I followed the measurements. Maybe my vinegar was stronger? Could use more mayo or less vinegar.

  128. User avatar marlin.mann says:

    5 stars
Dijon mustard + vinegar + mayo = chef’s kiss. I served it with grilled chicken and everyone went back for seconds.

  129. User avatar gene.hill61 says:

    4 stars
Loved the tangy taste from the mustard and vinegar. Will definitely make this again!

    1. User avatar sylvester.wintheiser17 says:

I’m glad you enjoyed it! The mustard really adds a nice kick, doesn’t it? 😊

  130. User avatar Hillman Hunter says:

Wow, best potato salad I’ve ever had! Who knew just a few ingredients could be so good! 😍

    1. User avatar Ilban Richese says:

Really? I’ve tried better recipes with more ingredients. Just a few things don’t always mean better!

    2. User avatar geoWizard says:

      5 stars
I totally agree! This potato salad is a game changer. It’s so easy to make too! 🤤

  131. 4 stars
Kipflers are the move for potato salad. I used light mayo and it was still creamy. Might add a little extra pepper next time though.

  132. User avatar emelda.stiedemann says:

    4 stars
Just tried this recipe, it’s super easy! I might have added too much salt though lol.

  133. User avatar dewayne.cummings1991 says:

Pretty good overall. I used regular yellow onion and it still worked, but I think the dill could be a bit more (I like it strong).

  134. User avatar Prostetnic Vogon Kwaltz says:

    2 stars
Sounds fancy but ain’t nobody got time for boiling. Also, what if y’all don’t like mustard? 🙄

    1. User avatar tiana.robel says:

      4 stars
I get that, boiling can be a hassle. But you can skip the mustard if you don’t like it! Just add more mayo or some herbs for flavor. 😄

  135. User avatar mckinley.swift73 says:

    5 stars
This turned out creamy but still fresh—Dijon + cider vinegar is a great combo. I added a little extra dill and it tasted super bright. 👍

    1. User avatar edmund.cummerata40 says:

      5 stars
Love that combo—Dijon + cider vinegar really does make it pop. Extra dill is such a good call 👏

  136. 5 stars
Made this for lunch and it was honestly so good—creamy without being heavy. The dill really shines, and the vinegar keeps it from tasting bland.

    1. User avatar Shizue Olson DVM says:

      5 stars
Yes!! I had the same experience—creamy but not heavy, and the dill/vinegar combo is *chef’s kiss*. I used red wine vinegar once and it was still great. Will make again.

    2. 3 stars
I tried it but for me it came out kinda bland… maybe I didn’t chop enough dill? Also I used regular vinegar not apple cider, not sure if that matters. Still ate it tho lol.

  137. User avatar ahmad.okuneva99 says:

    3 stars
Way too much mayo for my taste, sorry. I halved it and it was more balanced. Otherwise the method is easy.

  138. User avatar ashlie.zieme27 says:

    1 star
Yikes, salad made with cream? Not healthy. No thanks.

  139. User avatar rupert.turcotte92 says:

    3 stars
I thought the mustard was too strong. Next time, I will use less.

    1. 4 stars
I totally get you! Mustard can be really overpowering. I usually go light on it too.

  140. User avatar jolanda.halvorson25 says:

    4 stars
Not bad! I used light mayo and it still tasted good, but I think I under-salted at first. The red onion was a little sharp until it sat in the fridge. Next time I’ll probably add a bit more pepper.

    1. User avatar Juan Nightstand says:

      5 stars
Glad it worked for you! Under-salting is such a common thing with potato salad—letting the onion sit and chilling it definitely helps mellow everything out. Your tweaks (more pepper/another pinch of salt) are totally on point.

  141. User avatar bernarda.bergstrom61 says:

    3 stars
I don’t know, I used regular potatoes and it didn’t taste as good. Maybe kosha potatoes are better?

  142. User avatar gita.hand23 says:

    4 stars
Really nice flavor. I used light mayo and it still worked. Next time I’ll chop the onion a bit smaller because I got some bites that were very onion-y.

    1. 5 stars
Glad you liked it! Light mayo surprises me sometimes—in a good way. And yes, smaller onion pieces usually fix that “one bite is all onion” problem. 😄

  143. User avatar dion.beier says:

    4 stars
I followed it pretty closely but used regular potatoes and it still worked. Next time I’ll chop the onion finer—mine had a couple big bites.

    1. User avatar suspiciousCommentator says:

      3 stars
Regular potatoes? Hmm I guess boiling a potato salad is hard to mess up 😅. I would still maybe parboil longer if they’re not the same texture as kipflers, but the onion advice makes sense. Dill sounds key.

    2. User avatar Amos Medhurst says:

      5 stars
Glad it still worked! Chopping the onion finer is a great call—bigger chunks can make it a bit punchy in every bite. I usually go super small too.

  144. 4 stars
I’m skeptical about putting apple cider vinegar in potato salad… but okay, the acidity actually helps. Mine came out a tad too tangy though—probably because my dijon was extra strong. Still edible and honestly kind of addictive.

  145. 3 stars
Is 30 minutes chilling enough? I feel like potato salad needs an hour+ to really come together. Flavor was nice but not super “integrated.”

  146. User avatar julius.blick1999 says:

    4 stars
Sounds good, but 30 minutes chilling isn’t enough for my taste. I left it overnight and it was way better the next day.

  147. User avatar demarcus.jacobs says:

    4 stars
Okay, but 30 minutes chilling isn’t enough—mine needed like an hour to really come together. Still tasty though!

  148. User avatar lee.mills says:

    3 stars
Can I just say… dill feels weird in potato salad. I might be wrong but I used parsley instead and it was still yummy. Maybe next time I’ll try dill again.

    1. User avatar dannie.jacobson says:

      5 stars
Totally get that—dill can feel “odd” with potatoes if you’re not expecting it. But your parsley swap sounds delicious; I think it depends how bold your dill is. Fresh dill (and not too much) usually works better for me—glad you found a tasty alternative!

  149. User avatar gerard.kozey26 says:

    4 stars
I’m skeptical about chilling only 30 minutes—potato salad needs time to develop flavor IMO. I waited overnight and it was way more balanced.

  150. User avatar Randa Kassulke says:

    3 stars
I think 10 minutes boiled is too short? Mine were still a little firm. Maybe my potatoes were bigger. But once I baked them a few more minutes they turned out alright.

  151. User avatar irving.reynolds2003 says:

    5 stars
Made this for a BBQ and it was a hit—creamy without being heavy. The Dijon + vinegar combo is spot on.

  152. User avatar erich.stanton says:

    3 stars
I followed it exactly and it was… ok? Like, mayo + mustard is always good, but mine turned out a little bland. Maybe my dill wasn’t fresh enough.

    1. User avatar abby.emmerich2006 says:

      4 stars
“Ok” is still better than “why did I do this” 😄 I think you’re right about the dill—fresh dill can really change the flavor. Also, did you salt the potatoes well enough and then season after chilling? A pinch more salt/pepper (or a bit more vinegar) usually fixes the blandness for me.

  153. User avatar elwood.rutherford says:

    3 stars
I followed it mostly, but I forgot to peel (oops). It was still fine—more rustic. I think the Dijon amount is on point though.

  154. User avatar grady.considine says:

    5 stars
Made this last night—so creamy without being heavy. The dijon + vinegar combo is spot on, and the dill makes it taste “real” (not just mayo). I chilled it longer than 30 mins and it got even better. 10/10 would bring to a BBQ again.
