Ingredients

  • 1 tbsp vegetable oil

  • 2 tbsp soy sauce
  • 1 tbsp mirin Japanese sweet rice wine
  • Salt and pepper to taste

    I followed it pretty closely, but my omelette tore when I flipped it. Still tasted amazing though. Next time I’ll use a larger pan and cook a touch longer to set it more.

      I think you should just not flip it. Omelettes tear because the eggs aren’t fully cooked, and non-stick or not they still stick. Also 3-4 minutes seems too short—try like 8 minutes. I’d try lower heat too.
