Ingredients
  

  • 12 whole jalapeño peppers seeded and finely chopped
  • 2 cups apple cider vinegar
  • 6 cups sugar
  • 1.75 ounce powdered pectin

Instructions
 

  • Combine chopped jalapeños and apple cider vinegar in a large saucepan.
  • Stir in sugar and bring the mixture to a boil over high heat. Continue boiling for 10 minutes, stirring constantly.
  • Stir in the powdered pectin and return to a hard boil for 1 minute.
  • Remove from heat and skim off any foam using a spoon.
  • Pour hot jelly into sterilized jars, leaving ¼ inch headspace. Seal jars with lids and process in a boiling water bath for 10 minutes.

      Totally agree—jelly is one of those things where timing really matters. 1 minute hard boil after adding pectin sounds right; too short and it won’t set, too long and you can mess up the texture.

      Totally get it—12 jalapeños can go nuclear. If you want to dial it back, try cutting the count in half (or even 4–6 peppers) and keep the rest the same. Also, make sure you really scrape/scrape the ribs and seeds until it looks “white/clean” inside.
