A simple and comforting homemade miso soup that is perfect as a starter or light meal.

Ingredients
  

  • 2 cups dashi stock homemade or instant
  • 2 tablespoons miso paste white or yellow
  • 1/2 cup soft tofu cut into small cubes
  • 2 tablespoons sliced green onions thinly sliced
  • 1 tablespoon wakame seaweed dried, soaked and drained

Instructions
 

  • Heat dashi stock in a small pot over medium heat until it just starts to simmer.
  • Add tofu and wakame seaweed to the pot and cook for about 2-3 minutes.
  • Turn off the heat. Place miso paste in a ladle or small strainer, dip it into the soup, and stir until dissolved.
  • Add sliced green onions to the pot and gently stir.
  • Serve immediately in bowls and enjoy your homemade miso soup.

    I’m not sure about soaking wakame vs just tossing it in. I did soak it like the recipe said and it expanded nicely, so that part checks out. Flavor is light but satisfying.

      Totally with you—soaking wakame is the move. I’ve tried tossing it in dry and it never rehydrates right, more chewy than silky.

    The instructions say turn off the heat before adding miso—important! I accidentally left it on low and the miso tasted a bit “flat,” like it lost some of the aroma. Still edible, but I learned my lesson.

    Good base recipe, but I think the green onions need to go in at the end for maximum flavor. I simmered mine too long and they got kinda dull.

      Huh, I always boil mine for like 5 minutes (oops) and it still tastes good though. Maybe that’s why mine ends up kind of bland? I’ll try adding them at the end next time.

    Not bad, but “2-3 minutes” felt a little short for my tofu. I cooked it 5 minutes and it was better. Also wish the recipe mentioned adjusting salt.

      Maybe you just added a bit too much miso, it can be salty if you overdo it. I usually start with less and add more to taste. Don’t give up! Try again with less next time.
