Healthy Mexican Quinoa

January 29, 2025

If you’re looking for a healthy, filling meal that’s bursting with flavor, look no further than healthy Mexican quinoa. This dish combines the nutty goodness of quinoa with vibrant Mexican-inspired ingredients, creating a colorful, protein-packed bowl that’s perfect for lunch or dinner. Packed with fiber, vitamins, and minerals, it’s a great choice for anyone seeking a nutritious, yet satisfying meal.

Quinoa is a superfood that’s often praised for being a complete protein, meaning it contains all nine essential amino acids. It’s also high in fiber, making it a great choice for digestion and maintaining energy levels throughout the day. This healthy Mexican quinoa recipe takes advantage of quinoa’s versatility while adding the bold flavors of classic Mexican ingredients.

To make this dish, start by cooking the quinoa in vegetable broth for added flavor. The quinoa will absorb the broth, giving it a rich taste. While the quinoa is cooking, prepare a variety of fresh vegetables, such as red bell peppers, onions, corn, black beans, and cherry tomatoes. These colorful veggies not only provide a burst of nutrition but also add texture and crunch to the dish.

Once the quinoa is cooked and fluffy, toss it with the veggies, and season the mixture with classic Mexican spices such as cumin, chili powder, garlic, and lime juice. These spices bring the dish to life with their earthy and zesty flavors. For an extra kick, you can add some diced jalapeños or hot sauce. To finish off the dish, garnish with fresh cilantro, avocado, and a sprinkle of crumbled feta or cotija cheese for an added creamy, salty contrast.

This healthy Mexican quinoa is as versatile as it is delicious. You can enjoy it as a main dish, or serve it as a side with grilled chicken, fish, or tacos. It’s also perfect for meal prep, as it holds up well in the fridge for a few days, making it an excellent option for busy weeks.

Packed with plant-based protein, fiber, and vibrant flavors, healthy Mexican quinoa is a meal you can feel good about enjoying, whether you’re vegan, vegetarian, or simply craving a wholesome, satisfying dish.

I mixed it up a bit and used chicken broth instead of veggie. Not sure if that’s like cheating but it was delish! 😂

I don’t know about using quinoa… Can I just use rice instead? 🤔

    1. User avatar herschel.bode93 says:

      4 stars
You can use rice, but quinoa is way healthier! Why not give it a try? 😊

  5. 2 stars
I don’t know why everyone raves about quinoa. It’s just tasteless beads with a crunch. Not for me.

  6. User avatar toya.bogisich55 says:

This was such a refreshing dish! Perfectly balanced flavors! Will definitely make again.

    1. User avatar houston.klein63 says:

Totally agree! I love how healthy and flavorful it is. Have you tried adding avocado? It takes it to the next level!

    2. User avatar Wispmother says:

      3 stars
Sounds great, but isn’t quinoa kinda bland? How do you make it taste good?

  7. User avatar zita.satterfield38 says:

Used brown rice instead, and it still worked fine. Not sure how it compares but was yummy!

    1. User avatar lauran.orn96 says:

      4 stars
Glad to hear brown rice worked for you! I’ve been tempted to try variations too.

    2. 3 stars
But brown rice takes longer to cook than quinoa, right? How was the texture?

  8. User avatar zelda.keeling86 says:

    4 stars
I liked the flavor, but mine was a little dry—next time I’ll add a splash more broth. Still tasty though, and the quinoa texture was perfect.

    1. User avatar sharilyn.quitzon says:

      5 stars
Glad you liked it! Dry quinoa/mixture usually means it needed a bit more liquid or time—adding a splash more broth makes total sense. 😊

    2. 3 stars
Hmm I think you might’ve overcooked it. Mine came out perfect at like 15 min. Also did you rinse good? Dry quinoa is usually from not enough rinsing or too much heat.

  9. User avatar elnora.hand9 says:

    2 stars
Quinoa? More like quinoa… not my thing. Also, what’s with the cilantro? Too strong! 🌿

  10. 3 stars
I didn’t rinse the quinoa because I was in a rush… and it tasted kinda bitter. Lesson learned. Rinsing matters.

  11. User avatar Deep Thought says:

    2 stars
I dunno, I thought it would be spicier. It was kinda bland. 🤷‍♂️

  12. User avatar devon.predovic12 says:

Can I substitute black beans with chicken? Just curious, since I’m not a bean person.

  13. 5 stars
So healthy and easy. Makes me feel like I’m eating superfoods! 🥗

  14. 4 stars
I added a little cheese (because I can’t help myself) and it tasted more like a taco bowl. Otherwise, I think it would be a bit bland for my family.

    1. User avatar Arwen Evenstar says:

      5 stars
Haha taco bowl vibes is a win in my book 😄 The cheese probably adds some richness—though I totally get wanting more flavor for family. Next time try a pinch more cumin or chili powder too.

  15. 3 stars
Eh, it was okay. My kids wouldn’t eat it. Maybe it’s a taste thing?

  16. User avatar rodney.rogahn says:

    3 stars
Why is this healthy? It’s just beans and rice? I don’t get it.

    1. User avatar samella.thompson78 says:

      2 stars
Hmm, I dunno. Sounds bland. Just a bunch of beans and rice. I like my food spicy!

    2. User avatar stephen.bins says:

      5 stars
Actually, beans and rice are a complete protein, especially when combined with quinoa. Plus, all those veggies are packed with nutrients! So, it’s not just beans and rice.

  17. User avatar cheryl.dare says:

    5 stars
This is a surprisingly filling quinoa bowl. The lime + cilantro at the end really makes it pop. I’ll make it again for sure!

  18. User avatar michell.pouros16 says:

    3 stars
Can I use chicken broth instead? I don’t have veg brot. Pls respond!

  19. User avatar berenice.yost77 says:

Way too many ingredients that feel random. Like why add both tomatoes AND corn? I guess it’s fine, but I’d simplify next time.

    1. User avatar alishia.lang44 says:

      4 stars
Yeah I get what you mean. Tomatoes and corn together can feel a little “random,” but I think they balance each other—tomatoes for acidity and corn for sweetness/texture. Totally agree though: you could keep it simpler by either skipping the corn or using just one. Thanks for the suggestion!

  20. User avatar Lanie Lesch says:

    4 stars
Followed the steps exactly, and mine came out a little dry—next time I’ll add a splash more broth. Flavor is still solid though.

  21. User avatar malik.ritchie75 says:

    3 stars
Could you cook the quinoa in the skillet instead of separate? I tried mixing everything together at step 6 and it got a bit mushy. Recommend sticking to the order.

  22. 5 stars
Yesss! I’m a fan of anything Mexican! Can’t wait to try this!

  23. User avatar emery.corwin74 says:

    1. User avatar Mila and her father says:

    2. User avatar francesco.runolfsdottir says:

Avocado? Really? I dunno if that’d taste good. The dish is fine without it, right?

  24. User avatar Lumberjack says:

Real Mexican food has meat in it. This is not authentic, just sayin.

  25. User avatar smartestRedditor says:

Is olive oil necessary? Can I just use butter? Sounds good tho.

    1. User avatar antonia.quitzon49 says:

      5 stars
Nah, olive oil is way healthier than butter, plus it adds a unique taste.

    2. User avatar joe.metz10 says:

      4 stars
You can totally use butter! It’ll give it a different flavor but should be fine.

  27. User avatar Max Quordlepleen says:

    4 stars
I used brown rice instead of quinoa because I like it better. It turned out great! 🤷‍♀️

    1. User avatar trista.bayer99 says:

      5 stars
Brown rice is a good substitute! Glad it worked out for you! 👍

  28. User avatar titus.osinski1979 says:

    3 stars
I thought it would be a lot more flavorful. The cumin and chili powder didn’t do much for me. Maybe needs more spices?

  29. 4 stars
Great way to use quinoa! I added some avocado on top. Yummy!

    1. 5 stars
Sounds delicious! I love the idea of adding avocado, it must add a nice creaminess. Can’t wait to try it!

  30. User avatar julienne.graham39 says:

Delicious and healthy! I added avocado on top, amazing!

  33. User avatar erich.white says:

    3 stars
Kinda bland. Needed more spice or something. I add some hot sauce next time.

  34. User avatar smartestRedditor says:

    4 stars
I followed it pretty much exactly, but my quinoa took closer to 20 minutes to get tender. Flavor was still solid though—tastes like a lighter chili.

  35. User avatar joy.hettinger1 says:

    3 stars
It’s good, but maybe add more spices next time? Felt a bit bland!

  36. 4 stars
Loved it! Even my kids ate it which is a miracle! Thanks for sharing!

  37. User avatar donnie.mills says:

    4 stars
Super easy and the ingredient list is pretty forgiving. I added a diced bell pepper too and it tasted even more Mexican-y (if that’s a thing).

    1. User avatar crista.lang40 says:

      5 stars
Ooh adding bell pepper sounds delicious—totally counts as more “Mexican-y” in my book 😄. I’ll try that next time.

  38. User avatar elwood.schaefer1982 says:

    4 stars
My kids loved it! We served it with tortilla chips. Will be making this recipe regularly. Thanks!

    1. 5 stars
So glad your kids enjoyed it! It’s a great way to sneak in healthy ingredients. Do you think they would try it without the tortilla chips?

  39. User avatar roscoe.zulauf says:

    3 stars
Healthy Mexican quinoa sounds like a great idea, but quinoa can get kinda bland. I wish there was more heat or smoked paprika or something.

    1. User avatar smartestRedditor says:

      5 stars
Totally get you—quinoa can be bland. I usually add smoked paprika (like 1/2 tsp) plus an extra pinch of chili powder and it tastes way more “Mexican.” Also letting it sit 5-10 min after cooking helps the flavor soak in.

    2. User avatar ali.douglas13 says:

      3 stars
I tried this and thought it was still kinda mild. I added a chopped jalapeño and a little hot sauce at the end (and more lime). Maybe 15 minutes is too short? Mine was better once I simmered a bit longer.

  40. User avatar Ilban Richese says:

    4 stars
Not gonna lie, I thought quinoa would taste weird here, but the chili powder and cumin made it work. Good weeknight meal.

  41. User avatar Ice Wraith says:

    2 stars
Not what I expected. It was kinda bland. Needs more seasoning!

  42. User avatar Duncan Idaho says:

    4 stars
Just made this, tastes like hippie food! 😂 But it’s good for my diet.

    1. User avatar MAGA2024.Trumpster says:

      5 stars
Hippie food? 😂 I get that, but healthy stuff can taste good too! Love quinoa!

    2. User avatar dennis.schultz says:

      2 stars
Tastes good? Really? I thought quinoa was just for health freaks lol.

  43. User avatar eun.bauch47 says:

    5 stars
I made this for dinner and it was gone in minutes! My kids gobbled it up! ❤️

    1. 3 stars
Sounds nice, but my kids don’t like quinoa. Maybe they will eat it if I add cheese?

    2. User avatar Demon King Piccolo says:

      5 stars
This looks so good! I’m definitely trying it for my picky eaters. Thanks for sharing!

  44. User avatar Restless Draugr says:

    5 stars
This tastes like something I’d get at a healthy bowl spot, but honestly it’s way cheaper. The lime + cilantro at the end makes it pop. Will make again!

  45. User avatar suspiciousCommentator says:

    4 stars
My cousin said quinoa is like… wheat’s fancy cousin 😅 Not sure about that, but the lime + cilantro combo probably slaps.

    1. User avatar sonny.greenholt17 says:

      5 stars
Haha “wheat’s fancy cousin” made me laugh 😄 Quinoa’s definitely not wheat though—more like its own thing, but I agree the lime + cilantro is a flavor cheat code.

  46. User avatar Galaxia Woonbeam says:

    5 stars
Easy to make! I added jalapeños for a kick. Yummy! 😊

  47. User avatar Cucco Keeper says:

    2 stars
I dunno, it didn’t turn out like I thought. The quinoa was kinda mushy. Not great.

    1. User avatar darin.dubuque1990 says:

      3 stars
Maybe you overcooked the quinoa? It should be fluffy, not mushy. Try rinsing it better next time!

  48. User avatar Owen Cash says:

    5 stars
This was so good! Super easy to make and my family loved it. Definitely making it again!

    1. User avatar jermaine.walker87 says:

This is amazing! So flavorful and healthy. Will make it again for sure!

    1. 5 stars
I totally agree! This recipe is so good and easy to make. I’m glad you enjoyed it too!

  51. 2 stars
I don’t know about this recipe. Quinoa tastes funny to me. Maybe it’s just me?

  52. 5 stars
This turned out way better than I expected—fresh, filling, and the lime + cilantro really wakes everything up. I’ll definitely make it again for meal prep.

    1. User avatar smartestRedditor says:

      5 stars
Glad it worked for you! The lime + cilantro combo is seriously the finishing touch.

  53. User avatar jay.marquardt39 says:

    5 stars
Five stars! I meal-prepped it for the week and it holds up really well. Cold leftovers even slap with a squeeze of extra lime.

    1. 5 stars
Five stars too! I meal-prep this every week—packs so well and the flavor gets even better after a day or two. That lime + cilantro combo is everything.

    2. User avatar annemarie.schuster3 says:

      4 stars
I tried it but mine came out a little bland. I ended up adding extra chili powder and a pinch more salt, and then it was way better. Still a good base recipe though!

  54. User avatar lacy.franecki10 says:

    5 stars
Okay wow. I didn’t expect it to taste this good. The cumin smell while it cooks is insane.

  55. 5 stars
This was sooo good! Had it for dinner and my kids loved it. 🤩😋

  56. User avatar Zaphod Beeblebrox says:

    2 stars
I don’t get it. Why would you use quinoa? Rice is way better. This dish didn’t wow me.

  57. User avatar kimberly.connelly60 says:

    5 stars
Great dish! I added some avocado on top, made it even better! Yum!

  58. User avatar Piccolo says:

    3 stars
Too many beans! Can I cut it down to half? But overall it’s not bad.

  59. User avatar steve.oberbrunner63 says:

    4 stars
I don’t like cilantro but I used parsley—still good. Also, rinsing quinoa made a difference. Thanks for the clear steps.

  60. User avatar arthur.emmerich2019 says:

    3 stars
I accidentally used way too much cumin (oops). Still tasted good, but it was more “cumin-forward” than I expected. Next time I’ll measure better 😅

    1. User avatar Cyrus Schimmel says:

      4 stars
Oof but honestly cumin-forward is kinda the point sometimes 😄 If you like it, you could just dial back chili powder or add a little extra lime/cilantro next time to balance.

  61. User avatar jody.hickle33 says:

    1 star
Meh. I prefer my tacos over this quinoa stuff.

  62. 2 stars
Healthy is great and all, but it lacked flavor for me, had to add hot sauce to make it edible. 🌶️

    1. User avatar Gurney Halleck says:

      4 stars
I can see where you’re coming from! I usually spice it up too. Maybe add more seasoning next time? ❤️

    2. 2 stars
I dunno, I thought it had a good taste. Maybe you need to try a different recipe?

  63. User avatar roxann.hahn14 says:

    3 stars
Is it really healthy? Quinoa is kinda high in carbs. What’s the deal? 😏

  64. User avatar Eddie the Computer says:

    3 stars
Looks legit, but 15 minutes for quinoa seems short? Mine usually takes longer. I guess maybe my stove runs hot or something.

    1. 5 stars
Yeah, 15 minutes can feel fast. I’ve found quinoa usually finishes closer to 15–18 min depending on the kind and how vigorously it’s simmering. If your stove runs hot, it might still be perfect—just watch for the liquid getting absorbed.

  65. User avatar lindsay.auer says:

    5 stars
Not gonna lie, I’m skeptical about recipes that say “healthy” and still taste good. This one actually does! Great balance and not heavy.

  66. User avatar stevie.watsica25 says:

    3 stars
I followed it pretty closely, but my quinoa took longer than 15 minutes to get tender. Might be my stove. Flavor was still good though—nice and hearty.

  67. User avatar Harland Muller says:

    4 stars
5 stars! Easy meal prep. I doubled it and it reheats well, quinoa doesn’t turn mushy. Also the whole kitchen smelled amazing.

    1. 5 stars
Totally agree—this is such a solid meal prep base. I also found the quinoa stays fluffy when reheated.

  68. User avatar darnell.roberts says:

    5 stars
This was sooo good! My family loved it and it was super easy to make. Will definitely make again!

  69. User avatar NAFO.SUPREMACY says:

    3 stars
Not gonna lie, “healthy Mexican quinoa” feels a bit generic. Also 1 cup quinoa to 2 cups broth—seems fine, but it should say if it’s white or tri-color quinoa.

  70. User avatar irwin.fay14 says:

    4 stars
I accidentally used chicken broth instead of vegetable broth. It still turned out fine lol!

  71. User avatar Arthur Dent says:

    3 stars
Not bad, but I’m skeptical about quinoa taking the place of rice. Texture was okay, just felt more “healthy” than “Mexican comfort.”

    1. User avatar tanya.lind2015 says:

      2 stars
I tried it once and it was kinda dry. I think 15 min is not enough? Also I didn’t rinse the quinoa well… maybe thats why. Rice is rice, but this was at least edible. 🙂

    2. 4 stars
I get what you mean—quinoa can feel “healthier” no matter what. But honestly the chili powder/cumin + lime/cilantro helps it taste more like actual Mexican flavors than a bland grain bowl.

  72. User avatar penny.torphy77 says:

    5 stars
This was absolutely delicious! I added some avocado on top and it was perfect. Highly recommend!

  73. User avatar Maxwell Douglas says:

    2 stars
Okay but like… does rinsing quinoa really matter that much? I skipped it once and it turned out fine, so I guess I don’t get the fuss.

    1. 4 stars
Honestly it *can* matter—rinsing helps remove quinoa’s natural saponins, which can make it taste a bit bitter/soapy. If it turned out fine for you once, that doesn’t mean the fuss is totally imaginary, just that you might not have noticed (or the batch was milder). Try rinsing next time and you’ll probably taste the difference.

  74. 5 stars
Making it again tonight! So easy and healthy. Love this.

    1. User avatar Clara Nett says:

      5 stars
I made this last week and my whole family loved it! Super easy for a weeknight.

  75. User avatar beth.hoppe4 says:

Easy recipe. My husband said he doesn’t like quinoa, but he ate a whole bowl. 🌽👍

  76. User avatar melvina.russel2022 says:

I don’t like cilantro. Can I leave it out or does it HAVE to be in there?

    1. User avatar Falmer Shaman says:

      5 stars
You can definitely leave out the cilantro! The recipe will still be great without it. Just add a bit more lime for freshness!

  77. User avatar Princess Ruto says:

    4 stars
What the heck is quinoa? I just used rice instead and it still turned out fine. Doesn’t seem that hard.

  78. User avatar anonymous_hacker says:

    4 stars
Pretty solid, I like that it’s not overly complicated. I used fresh corn and added a pinch of smoked paprika too—highly recommend.

  79. User avatar max.deckow96 says:

I’ve never heard of quinoa before. Can you even eat that? Sounds weird.

    1. User avatar Franklyn Bernhard says:

      2 stars
Yeah, I’ve heard of it. It’s just a grain, right? But I don’t know if I’d eat something that looks like tiny balls.

    2. User avatar alex.bernier31 says:

      5 stars
Quinoa is actually super healthy! It’s packed with protein and easy to cook. You should give it a try!

  80. User avatar tyesha.gottlieb says:

This tastes like it’s supposed to be burrito filling. I added hot sauce and it was perfect. 10/10 for meal prep.

  81. User avatar jeane.mcclure1990 says:

    2 stars
Sooo no cheese? I mean, I guess. I followed the steps once and it was bland until I added more salt. Maybe “to taste” should be like, 1 tsp? lol

  82. User avatar MAGA2024.Trumpster says:

    4 stars
Healthy and filling! I added some avocado on top, it was bomb. 🌱

  83. User avatar chinchilla says:

    4 stars
I’m not gonna lie, it sounded healthy and kinda boring, but the chili powder and cumin actually gave it a nice kick. Would make again, especially for meal prep.

    1. User avatar shaun.morar1986 says:

      5 stars
Totally agree—those spices make it way more interesting than it sounds. I also love it for meal prep.

  84. User avatar oPandariaNo says:

    2 stars
Honestly pretty boring… I followed the recipe exactly and it tasted flat until I added more salt and extra lime. Next time I’ll adjust seasoning earlier.

  85. User avatar Arthur Dent says:

Yummm! But I think it’s missing something, like cheese or sour cream. Just my opinion though. 😊

    1. User avatar garnet.reinger says:

      3 stars
Cheese? I dunno, sounds like it might ruin the healthy stuff? But hey, do what you like.

Yum! I substituted the black beans for kidney beans. It’s still tasty! 🍛

    1. 5 stars
That sounds great! I’ve never tried it with kidney beans, but I might give it a shot. Thanks for the tip! 😊

  87. User avatar paulita.berge32 says:

This is fine, but why do they always add cumin to everything lol. Also I only had lemon so I used that—still okay, just not the same vibe.

  88. 4 stars
Came out pretty good! Might try this again, but with more spice next time. 📈

  89. 4 stars
I made something similar but my quinoa always ends up a little mushy. Any tips on keeping it fluffy? Still, the flavors here look great.

  90. User avatar Lumberjack says:

    3 stars
Not bad, but I felt like it was missing something. Next time I’ll add smoked paprika or maybe a bit of jalapeño. Also, 1 clove garlic felt like not enough.

    1. User avatar guillermo.champlin32 says:

      5 stars
I get what you mean—this definitely benefits from more “smoke.” Smoked paprika or a touch of jalapeño would make it pop. Also agreed on the garlic: one clove disappears fast in this kind of dish.

  91. User avatar MAGA2024.Trumpster says:

    4 stars
This is pretty solid. Also, I used cumin like the recipe says but I accidentally added the salt way early—still came out tasty somehow. 🤷‍♂️

  92. User avatar maragaret.schaefer64 says:

    5 stars
Yum! I can’t believe how quick it was to make. Will def try again. 👍

    1. 5 stars
Glad you enjoyed it! It’s super healthy too! 😊

Best meal ever! This is going in my recipe book! 🌟

  94. User avatar donnell.schulist says:

    3 stars
Pretty good, but the chili powder/cumin ratio feels a bit strong. I’d use a little less cumin next time.

  95. User avatar Macie Hoeger DDS says:

Delicious! My kids loved it too. Even picky eaters ate it. 😊

  96. User avatar kimberly.olson says:

Super simple and quick! Perfect for a weekday dinner.

  97. User avatar mohammed.conn2015 says:

Healthy??? I mean its quinoa, but all the beans and corn make it kinda high in carbs. Not sure about the healthy part.

    1. User avatar lynetta.cole says:

      5 stars
I think it’s still healthy! Quinoa is super nutritious, and beans have protein. Plus, those are whole foods!

    2. User avatar lonna.dooley says:

      2 stars
Yeah, but too many carbs can lead to weight gain. I’d rather stick to salads.

  98. User avatar terminatorXYZ says:

Healthy food is fine but… where is the cheese?? 😅 It’s still decent though.

  99. User avatar ellsworth.schroeder says:

Doesn’t look like the pic. Should’ve used more seasoning or somethin. 😕

    1. User avatar ashley.schowalter11 says:

      4 stars
I thought the same! A bit more spice would’ve been awesome. Maybe next time add some jalapeños? 🌶️

  100. 2 stars
This was meh. Too many steps for a weeknight meal and I didn’t taste much difference after the 5 minutes extra cooking. Next time I’ll add broth to simmer longer.

    1. User avatar romelia.carroll43 says:

      2 stars
Totally get it—quinoa can take forever and this feels more like a weekend project. “5 extra minutes” didn’t convince me either.

  101. 3 stars
I followed it mostly, but I forgot to rinse the quinoa once (oops). Still ate it… just not as fluffy. Next time I’ll do it right.

  102. 3 stars
I don’t get why people love quinoa so much. This recipe was just alright for me. 3 stars.

  103. User avatar fidel.brown29 says:

    5 stars
This turned out surprisingly flavorful for something “healthy.” The lime + cilantro at the end makes it taste like it came from a real taco place.

  104. User avatar darryl.halvorson2007 says:

    5 stars
This quinoa recipe is amazing! So tasty and healthy!

  105. 1 star
I made dis for lunch and now my stomach hurt. Maybe too much corn? 🤢

  106. 1 star
Healthy meals are boring! I need more flavor in my food, but I guess people like this kind of stuff.

  107. User avatar david.lemke2006 says:

    1 star
1 cup quinoa + 2 cups broth felt like too much liquid—mine was like soup at first. I kept cooking and it got better, but I was stressed the whole time.

  108. 3 stars
I thought this was a little bland. Needs more spices or maybe salsa!

  109. User avatar Dominic Vernius says:

    3 stars
I dunno, quinoa sounds weird. Can I use rice instead? Will it work?

  110. User avatar mauricio.klein1976 says:

    2 stars
I tried making it but I think I overcooked the quinoa… kinda mushy 🙁

  111. User avatar Spider Worker says:

    3 stars
I followed the steps but my quinoa was a little chewy, not tender. Maybe I needed more simmer time or my broth ratio was off? Still tasty though.

    1. User avatar eryn.hansen says:

      5 stars
Honestly I think 15 min is kinda short. I always do it like 20 mins and let it sit covered off heat for 5. But hey if it was still tasty, you’re probably fine 😄

    2. User avatar Galaxia Woonbeam says:

      4 stars
That sounds frustrating. Chewy quinoa usually means it needed a bit longer to soften or it didn’t get enough liquid—your quinoa might have been a little older/drier. Next time I’d try simmering closer to 18–20 minutes (and make sure it’s fully covered). Also double-check your broth is really 2 cups for 1 cup quinoa.

  112. User avatar Brand-shei says:

    5 stars
This was surprisingly filling for something “healthy.” The lime + cilantro combo really brightened it up. I followed the steps pretty much exactly and it turned out great.

  113. User avatar Ford Prefect says:

    5 stars
I made this tonight and it actually tastes like something you’d get at a casual Mexican place—love the lime + cilantro finish. Super filling too!

  114. User avatar roderick.schinner says:

    5 stars
This sounds like a really solid, not-too-complicated weeknight meal. I like that it’s quinoa + beans—fills you up without being heavy.

  115. User avatar louie.herzog says:

    4 stars
The instructions are straightforward and the ingredient list is simple. I’m trying to eat healthier and this fits. 10/10 for an easy weeknight meal.

    1. 5 stars
Yes! This is exactly the kind of simple, filling meal I love for busy nights. The quinoa + black beans combo is great for staying full. I’ve made something similar and it always turns out flavorful.

  116. User avatar barney.shanahan52 says:

    3 stars
I followed it exactly but it came out watery. Maybe I didn’t rinse quinoa well enough? Next time I’ll use less broth or simmer uncovered a bit longer.

    1. 4 stars
I’ve had that happen too—quinoa can be weird if it’s not totally drained after rinsing. Also your simmer time might be on the short side if your pot isn’t actually keeping a steady low simmer.

  117. User avatar lavone.parisian says:

    4 stars
I used fresh garlic but only like half a clove because I’m not brave 😅 Came out good. Would work as a side or main depending on portion size.

    1. User avatar rey.waters24 says:

      3 stars
Not sure I buy the “healthy” part with a can of tomatoes + beans + quinoa, but it does sound tasty. Would’ve liked clearer timing for the skillet step—did you cook the beans/corn long enough?

    2. User avatar Li Shenlong says:

      5 stars
Half a clove is still braver than my garlic experiments 😅 Glad it came out good! Totally agree it could be a great side or a filling main.

  118. 5 stars
This is a game changer recipe! So healthy and delicious. My fam loved it! 🌱

  119. 3 stars
I don’t get why you rinse the quinoa that long—mine runs clear fast. Still turned out fine. Probably unnecessary for some people.

    1. User avatar elroy.bashirian says:

      4 stars
I’ve always rinsed mine too, but yeah—like you said, mine usually goes clear pretty fast. Maybe it depends on the quinoa brand.

  120. 3 stars
Not bad, but I’m not sure I’d call it “Mexican” enough. More like a quinoa bowl with taco seasoning. Could use jalapeño or cheese.

  121. User avatar major.kshlerin15 says:

    4 stars
Made it tonight and it turned out great! Quinoa cooked perfectly in 15 min for me. I was worried it’d be bland but the lime + cilantro at the end makes it pop.

  122. User avatar anthony.walker says:

    5 stars
I followed it pretty much exactly—only added a pinch of smoked paprika. Texture was great and not mushy. Will make again.

  123. User avatar maddie.beer says:

    5 stars
Easy to follow and a great lunch idea. Thanks for sharing! 🙌

  124. User avatar keena.conroy says:

    3 stars
The measurements are clear, but I think you should mention how much water actually reduces—15 minutes was short for me. Otherwise decent. Would cook again maybe with extra chili powder.

  125. 5 stars
This is actually super flavorful for being “healthy.” The cumin + chili powder combo is doing a lot of work. I added a pinch of smoked paprika too—would recommend.

    1. 5 stars
Totally agree—this combo tastes way more “real” than I expected. I didn’t even think quinoa could hit like this, but the cumin + chili powder is perfect. Smoked paprika is such a good call.

    2. User avatar cayla.casper75 says:

      3 stars
I tried it but mine came out a little bland? 😕 I used cumin and chili powder like the recipe says, but maybe I needed more salt or lime. Next time I’ll add smoked paprika too.

  126. 4 stars
Pretty good, but I think 15 minutes for quinoa might be a bit short depending on the brand. I added a splash more broth and it came out perfect.

    1. User avatar julius.pfeffer8 says:

      5 stars
That makes sense—quinoa timing really does vary by brand and how fine it is. I usually keep an eye on the liquid too, not the clock.

  127. User avatar Demon King Piccolo says:

    3 stars
Not bad, but my quinoa took longer than 15 minutes to get tender. Maybe my stove runs hot? Still ate it all though—comfort food vibes.

  128. 4 stars
My family liked it but I added chicken and it became a whole thing. The base recipe still worked great—just saying I’m not convinced without extra protein.

  129. User avatar tien.gleason6 says:

    3 stars
I’m skeptical about “Mexican quinoa” without cheese. Like, it’s good, but it’s missing that melty magic. If I add queso would it ruin it? lol

  130. User avatar delorse.reichel1987 says:

    4 stars
Honestly, quinoa can be kinda bland but with the chili powder/cumin it had good flavor. I wish it had more salt though—next time I’ll adjust.

  131. User avatar darrick.cole34 says:

    2 stars
Quinoa takes foreverrr—why is it always kinda crunchy? I simmered 15 mins like it says but meh. Could be my stove.

  132. User avatar elliott.ryan41 says:

    5 stars
This turned out way better than I expected—flavor is bold but still feels light. The lime + cilantro at the end is the move.

    1. User avatar larue.heller says:

      4 stars
Mine was kinda bland until I added extra salt and maybe more chili powder. Still good tho. Does it really need rinsing the quinoa—like does that make a huge difference?

    2. 5 stars
Agreed! I was skeptical about “healthy” quinoa but the lime + cilantro really brightens it. Tastes like it has way more going on than the ingredient list.

  133. 1 star
Quinoa is gross. Also I forgot the lime and cilantro and it tasted like sadness—could not finish.

    1. 4 stars
Aw, that’s a bummer 😭 Quinoa can be kinda bland, and skipping lime + cilantro would totally flatten the flavor. I’m glad you tried it though—maybe give it another shot with a good lime squeeze and fresh herbs at the end.

    2. User avatar lacy.connelly says:

      3 stars
I dunno… quinoa gross is a strong opinion. I bet you didn’t rinse it long enough—if it’s not rinsed, it can taste bitter/soapy. Also lime + cilantro should’ve helped, but adding them late matters. Still, sorry you couldn’t finish.

  134. User avatar ira.luettgen18 says:

    5 stars
Quinoa in Mexican flavors? Kinda genius tbh. I added some diced jalapeño too and it was fire.

  135. User avatar Wonko the Sane says:

    2 stars
Wasn’t that good. The quinoa was so soggy. Maybe I did it wrong.

  136. User avatar marquerite.kuvalis92 says:

    4 stars
I used canned corn (not frozen) and it was still fine. The prep is easy but I wish it listed cooking time for the quinoa more clearly—mine took closer to 18 min.

  137. User avatar efren.dicki says:

    3 stars
I followed it pretty closely, but mine came out a bit dry. Next time I’ll use slightly more broth or maybe cook the quinoa a couple minutes less then fold it in.

  138. User avatar mendy.flatley says:

    4 stars
Pretty good, but I think 15 minutes simmer for the quinoa might depend on the brand. Mine was a little chewy at first, so I added 5 extra minutes of broth and it fixed it.

  139. 5 stars
Really tasty and way healthier than my usual rice bowl. The lime + cilantro at the end is what makes it pop. Will make again!

    1. 5 stars
Totally agree—lime and cilantro make it taste way brighter. I’ve been doing that for years but this combo sounds spot on. 😄

  140. User avatar jacquie.connelly43 says:

    2 stars
My quinoa turned out bitter? I’m not sure if I rinsed it enough. Also I accidentally used onion powder instead of fresh onion (whoops), but it still ate well.

  141. User avatar shayla.feest95 says:

    3 stars
Not bad, but mine turned out kind of dry. Maybe I didn’t measure the liquid correctly or I cooked too long. Still tasted good though.

  142. 2 stars
Meh. Quinoa texture wasn’t for me, and the flavors felt a little flat. If I make it again I’ll probably double the chili powder.

  143. User avatar halflife4 says:

    4 stars
Not gonna lie, “healthy Mexican quinoa” sounds a little boring to me, but the chili powder + cumin combo actually works. I’d add hot sauce next time.

  144. User avatar aubrey.schowalter23 says:

    4 stars
Pretty good, though I think 15 minutes for the quinoa might be slightly short depending on the brand. I added a couple extra minutes and it came out perfect. Flavor is solid.

  145. 2 stars
Not gonna lie, I’m skeptical about quinoa in “Mexican” dishes. This one was edible but kinda bland unless I overdid the lime and chili powder.

  146. User avatar joe_banana says:

    5 stars
Love how easy this is. One pot quinoa, then skillet for the toppings—perfect. I served it with avocado and it was legit.

  147. 3 stars
Quinoa cooks way too fast for me sometimes… mine ended up a little crunchy. Maybe I didn’t simmer long enough, but otherwise the flavors were okay.

  148. User avatar quinn.reinger94 says:

    4 stars
Idk why people like quinoa so much lol. But this recipe made it taste way better than plain quinoa. I did use canned corn instead of frozen.

  149. User avatar janise.boyle2005 says:

    2 stars
Way too salty for my taste and the corn got kind of mushy, maybe because I used thawed corn? Otherwise the texture was fine. Would adjust seasonings.

  150. User avatar Lumberjack says:

    2 stars
Honestly not my vibe. Quinoa texture is kinda weird with beans and tomatoes, like it never fully gels together.
