Grilled Chicken and Avocado Sandwich

March 20, 2024

There’s something so satisfying about a well-made sandwich, especially when it’s loaded with flavor and made with wholesome ingredients. This grilled chicken and avocado sandwich is a go-to for lunch or dinner, it’s easy, filling, and packed with the kind of fresh, feel-good ingredients that make every bite worth it.

Start with the star of the show: the grilled chicken breast. A quick marinade of olive oil, lemon juice, garlic, and herbs will take your chicken from basic to bursting with flavor. Grill it until it’s beautifully seared on the outside and juicy on the inside. While the chicken rests, you can prep the other layers.

Creamy avocado plays the perfect counterpart to the savory chicken. Slice or mash it with a little lemon juice, salt, and pepper to enhance its buttery richness. Next, choose your bread. A crusty ciabatta roll, hearty whole grain, or sourdough slice works wonderfully. Toast it lightly for a golden crunch that holds up well to the fillings.

Now it’s time to build. Start with a swipe of mayo, pesto, or even a light garlic aioli if you’re feeling fancy. Layer on your grilled chicken, avocado, and crisp toppings like lettuce, tomato, and red onion. Add a slice of cheese, like Swiss, provolone, or mozzarella, for extra indulgence, or keep it dairy-free for a lighter take.

This sandwich is not only delicious but also well-balanced. You’ve got lean protein, healthy fats, fiber, and just the right amount of carbs to keep you energized without feeling heavy. It’s also endlessly customizable. Swap the chicken for turkey or tofu, or add a spicy element with sliced jalapeños or a chipotle spread.

Serve it with sweet potato fries, a side salad, or just a handful of chips for a satisfying plate. Whether you’re enjoying it hot off the grill or packing it for lunch, this grilled chicken and avocado sandwich delivers all the flavor you crave in a no-fuss meal.

Avocados are often referred to as a “superfood” due to their numerous health benefits. In addition to being heart-healthy, avocados contain antioxidants that can help reduce inflammation, promote eye health, and support healthy aging.

Chicken and avocado sandwiches have gained popularity in recent years due to their healthfulness, flavor, and Instagram-worthy appearance. They are frequently featured on restaurant menus and food blogs, often with creative variations and presentations.

I found the chicken a bit dry. Maybe cook it less? Not sure if I’ll try again.

Idk about this recipe, if its grilled chicken I prefer it with BBQ sauce. This is just plain.

This turned out way better than I expected—juicy chicken and the avocado with mayo is such a good combo. I followed the timing and it was spot on.

This is my new go-to. Quick weeknight meal, and avocado makes it feel fancy. Also the toast step makes a huge difference. 10/10!

Love this! The avocado + toasted bread combo really does make it feel way more “restaurant” than a regular chicken sandwich.

Kids love anything with chicken! But mayo is the best part tho. Are you sure it was tasty without it?

I dunno, do people really put mayo on sandwiches? Seems weird…I used mustard and it worked fine!

I get what you mean! Mayo can be overwhelming sometimes. I love using mustard instead for a tangy kick!

Pretty solid. I used a little more pepper than it asked and it turned out great. Only thing: my chicken took closer to 9 minutes per side, so watch your thickness.

It was alright, but I feel like something was missing. Maybe a little spice? Just not that flavorful for me.

Yummy! But why use whole wheat? White bread is tastier!

I don’t have a grill, can I bake the chicken instead? Seems like it could work too.
