Grilled Beef and Pepper Skewers with Pita

August 9, 2023

There’s something about grilled food that just feels right when the weather is warm. These beef and pepper skewers are a perfect example of a dish that’s easy to make, fun to eat, and packed with flavor. When served with soft, warm pita, they turn into a satisfying meal that works for lunch, dinner, or even a casual get-together with friends.

The key to delicious skewers is all in the marinade. Beef needs time to soak up flavors like garlic, lemon, olive oil, and herbs. Once it’s had that time to rest, it becomes tender and flavorful, ready to grill to perfection. Pair that with the natural sweetness of bell peppers, and you have a colorful combination that’s both balanced and delicious.

Grilling adds a slight char and smoky edge that takes everything to the next level. When the beef gets those crisp edges and the peppers soften just enough, you know it’s time to pull them off the heat. Wrap it all in a pita, add a little tzatziki or hummus, and maybe toss in some fresh cucumber or crumbled feta.

This dish is great because it doesn’t try too hard. It’s casual, fresh, and totally adaptable. You can eat the skewers straight off the stick, pull them apart for a build-your-own pita wrap, or even toss them into a salad bowl if you’re feeling something lighter.

Whether you’re grilling in the backyard or using a grill pan indoors, this is one of those meals that brings people together. It’s bold without being fussy and feels like a mini escape to the Mediterranean. Plus, cleanup is easy and the leftovers (if there are any) are just as good the next day.

Keep it simple, keep it fresh, and let the grill do the work. This one’s a keeper.

Not bad, but I think my beef was overcooked. Maybe next time I’ll try less grilling time.

Didn’t work out for me. The beef was chewy and my peppers got burnt. Tres disappointed.

Quick and easy! I marinated the beef overnight and it was fantastic. Recommend!

Great for the family! Took longer than expected to cook, but still yummy. Definitely gonna make again.

These skewers were a hit! The marinade smelled amazing, and the beef stayed juicy. I also liked the char on the peppers and onion—great combo with warm pita.

Nice! I tried this but mine was a little dry—maybe I overcooked it (or my grill runs hot). Still tasty though. Do you think 10 min marinating is enough or should I do longer?

    2. 5 stars
Totally agree—my marinade smelled like it should be illegal 😄 The char on the peppers and onion really makes it. Also, warming the pita on the grill is such a simple upgrade.

Salt and pepper “to taste” is kinda vague 😅 I basically guessed and it was okay, but I’d love exact amounts. Other than that, easy and tasty.

    1. 5 stars
Totally agree—“to taste” is annoying when you’re trying to be consistent 😅 I usually do about 1 tsp kosher salt and 1/2 tsp black pepper for this amount of meat, then adjust next time. Glad you still liked it!

    2. User avatar joe_banana says:

      3 stars
I think exact amounts depend on the salt type tho. Like if it’s table salt, 1/2 tsp might be plenty. Also why not use 2 tsp? I never measure pepper, I just go ham 😄

  7. User avatar Peregrin Took says:

    3 stars
Not bad at all, but mine came out a little dry. Next time I’ll cube the beef smaller and check earlier—maybe my grill runs hot.

  8. 4 stars
Good idea with the skewers, but 5 minutes per side felt a bit optimistic with my grill. I had to add a few extra minutes to get the beef done.

  9. User avatar prince.hamill says:

    4 stars
Simple and delicious! Just what I needed for a quick dinner. Thanks!

  10. User avatar ashton.nicolas15 says:

I’m not sure about 5 minutes per side. My skewers took closer to 7-8 since the beef cubes were bigger. Once I adjusted, though, it was really good and flavorful.

    1. 3 stars
Hmm 5 min per side felt short to me too. Mine took longer like 7ish, and I think my grill was hotter than “medium-high” lol. Still tasty, but I don’t trust that exact timing.

    2. User avatar Quickbeam says:

      5 stars
Totally makes sense—bigger cubes = more time. I’ve had the same issue when I cube mine too chunky. Glad you got the timing dialed in though!

  11. User avatar florentino.lebsack says:

    3 stars
I’m not sure about the marinade—10 minutes feels a little short for sirloin cubes. Next time I’ll try longer and see if it changes the flavor.

    1. User avatar randolph.cole says:

      5 stars
Totally get you—10 minutes can be pretty quick for sirloin cubes. I usually marinate closer to 30–60 minutes (or overnight if I’m planning ahead). Might deepen the garlic/oregano flavor a lot.

    2. User avatar Tricia McMillan says:

      4 stars
I think 10 minutes is enough if the beef is cut small, like tiny cubes. Also 5 min per side on medium-high cooks it fast so the marinade doesn’t need to sit long, imo. But yeah try longer next time!

  12. User avatar anthony.thompson33 says:

    3 stars
I’m skeptical about the timing—5 minutes per side feels short for sirloin. Mine needed closer to 7-8 minutes to be properly cooked.

beef and pita? lol sounds weird but I try it!

    1. User avatar ching.schuppe82 says:

      4 stars
Weird? Nah, it’s yummy! I love beef in pita. You should definitely try it, trust me!

    2. User avatar kerri.mraz says:

      5 stars
You won’t regret it! The flavors blend really well together. Give it a shot!

This recipe is missing something… maybe a sauce?

    1. User avatar Gaius Helen Mohiam says:

      3 stars
Nah, I think it’s fine without sauce. The marinade should be enough flavor.

    2. User avatar michael.sipes36 says:

      5 stars
I totally agree! A nice tzatziki or a chimichurri would really elevate this dish!

  15. User avatar vernon.kautzer says:

    4 stars
I love how simple the ingredients are. The oregano + garlic combo is classic, and it didn’t overpower the meat. Will make again for sure.

  16. User avatar rodrick.bogisich88 says:

    4 stars
Umm, didn’t have beef so I used chicken instead, still tasted good. I think the recipe can work with any meat!

  17. User avatar dennise.morar69 says:

    5 stars
These turned out so flavorful! The garlic + oregano marinade really makes the beef taste legit, and the peppers were nice and charred.

  18. User avatar lucius.green84 says:

    4 stars
Pretty solid recipe. I followed it pretty much exactly, but my beef took longer than 5 minutes per side. Still tasted great though!

    1. User avatar walter.lynch says:

      3 stars
Hm I’m not sure 5 minutes per side is enough. I’d check internal temp—also my pita always gets burnt if I leave it too long lol. Still though, sounds like a tasty combo.

    2. User avatar w00d_ch0p says:

      5 stars
Glad you liked it! 5 min/side can definitely be optimistic depending on cube size and how hot your grill runs. Next time, either cut smaller or give a couple extra minutes and trust the doneness test.

  19. User avatar herschel.sipes says:

    3 stars
I tried this and the pita kept burning before the skewers were ready… timing is tricky. Still, the flavors are solid.

    1. User avatar brain.emmerich says:

      2 stars
See I cooked mine “5 min per side” and the beef was still pink—also my pita was totally black. Maybe my grill temp was too high? I think the garlic also burns quick. But the taste was decent, ngl.

    2. User avatar Angella Price says:

      4 stars
Totally agree—pita burns fast on medium-high. I now put the pitas on at the very end (or in a foil packet) and keep the grill closer to medium. Flavors are still so good though!

  20. User avatar jesica.schultz says:

    5 stars
Yummy!!! Just made this and my family loved it. Thanks for sharing!!

  21. User avatar Pizpot Gargravarr says:

So many skewers in one recipe! I just wanted a few, but that was too much for my grill. Gonna halved it next time.

    1. 4 stars
I get that! Sometimes less is more, especially on a small grill. Just adjust it to your liking next time!

  22. User avatar hilton.collier72 says:

    4 stars
I used chicken instead and it still worked great with the marinade. Not the recipe, I know, but it was tasty.

    1. User avatar Super Saiyan Vegeta says:

      5 stars
Nice! Chicken is a solid swap—marinades usually hold up well like that. Did you adjust the cook time much, or did you stick to the ~5 minutes per side?

  23. User avatar michele.cruickshank1977 says:

    4 stars
Grilling these skewers is so fun! Did it with my friends and we all enjoyed it a lot. 😊

  24. 2 stars
I forgot to buy pita bread. Now I just have beef and veggies… what a mistake.

  25. User avatar Spider Worker says:

    3 stars
Pretty tasty, but I think the seasoning might need more salt than “to taste” since sirloin can be kinda bland. Next time I’ll be more generous.

  26. 5 stars
These skewers are amazing! The flavour is incredible, I added some chili flakes to spice it up. Loved it!

  27. User avatar milda.hauck1971 says:

    2 stars
idk man, the instructions were kinda confusing. Had to look up a video.

  28. 3 stars
Not a fan. The marinade was too strong for my taste. Gonna try a different recipe next time. Makes me sad!

  29. User avatar lloyd.schmeler20 says:

    4 stars
Super easy to make! Even my kids liked it and they’re picky eaters. Thanks for sharing!

  30. User avatar basementDweller says:

Too much onion for my taste! Should have kept it simple. Next time I’ll just skip the onions.

  31. User avatar mikki.konopelski61 says:

    4 stars
Pretty solid recipe, easy to follow. I marinated mine closer to 45 minutes and it tasted even better. I did find the salt/pepper measurement is vague, so I went a little heavier—next time I’ll taste more carefully.

  32. User avatar sidney.carter1957 says:

    5 stars
These skewers are fantastic! My whole family loved them. Will definitely make again.

  34. User avatar son.durgan says:

These were amazing! The beef was so juicy and flavorful. Definitely making again!

  35. User avatar reda.crist1954 says:

Followed it pretty closely, but I marinated closer to 30 minutes and grilled a little longer. Beef stayed juicy. Pita was a great call.

  36. User avatar tammera.kilback7 says:

    5 stars
So good! Grilled pita is the move.

  37. 5 stars
Followed it pretty much exactly. Marinated longer (like 45 min) and it definitely tasted better. 5 min per side was spot on for medium.

  38. User avatar w00d_ch0p says:

    5 stars
Just like at the fair! Best dinner ever! 😍

    1. User avatar fallon.armstrong says:

      5 stars
I totally agree! These skewers remind me of those summer fairs. Can’t wait to try this at home! 🥳

  39. User avatar edwin.osinski says:

    1 star
This was an absolute disaster! The beef was too chewy. Never making this again.

    1. User avatar smartestRedditor says:

      3 stars
Chewy beef? That’s a bummer! Maybe try a different cut next time? Sirloin can be tough if not cooked right.

    2. User avatar chantel.maggio32 says:

      4 stars
I’m sorry to hear that! Did you use enough oil or let it marinate longer? I’ve had great luck with these skewers!

  40. 4 stars
The pita warming step is underrated. I forgot it once and the meal felt a little sad without the warm bread. Now I do it every time.
