Greek spinach and feta stuffed mushrooms are a bite-sized tribute to Mediterranean flavors. Packed with savory, tangy, and herbaceous notes, they’re a delicious appetizer that feels both comforting and elegant. Whether served at a party or as a small plate before dinner, these mushrooms are always met with enthusiasm.
At the center of this dish is the filling, a flavorful mixture of sautéed spinach, creamy crumbled feta, garlic, herbs, and often a touch of lemon zest. The combination captures the essence of classic Greek cooking: fresh ingredients, bold yet balanced flavors, and a focus on simplicity done well. The earthiness of the mushroom caps complements the bright, salty filling in a way that feels effortless and natural.
Texture plays a big role here, too. As the mushrooms bake, they become tender and juicy, soaking up all the flavors of the filling. The feta slightly softens without fully melting, creating pockets of creamy tang that pop with each bite. Some variations include a light sprinkle of breadcrumbs on top for added crunch, giving a nice contrast to the soft mushroom and creamy center.
What makes this dish stand out is its versatility. It’s vegetarian-friendly and can be made gluten-free with the right breadcrumb choice, or skipped entirely if you’re after a lighter version. You can prepare them ahead of time and pop them in the oven just before guests arrive. They hold up well at room temperature, making them ideal for gatherings where people are mingling.
These stuffed mushrooms also tap into the growing desire for globally inspired, plant-forward dishes. They deliver big flavor without feeling heavy, and they fit just as comfortably at a cocktail party as they do on a meze platter.
If you’re looking for a way to bring the taste of Greece to your table in a simple, elegant format, these stuffed mushrooms are a perfect choice. Full of Mediterranean charm and satisfying in every bite, they might just become your go-to appetizer for any occasion.

Ingredients
- 12 mushrooms large
- 2 tbsp olive oil
- onion small, finely chopped
- 2 cloves garlic minced
- 8 ounces spinach fresh
- 1/2 cup feta cheese crumbled
- 1/4 cup parmesan cheese grated
- 1/4 cup breadcrumbs
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Remove the stems from the mushrooms and finely chop them.
- Heat the olive oil in a skillet over medium heat. Add the chopped mushroom stems, onion, and garlic. Cook until the onion is translucent and the mushrooms have released their moisture, about 5 minutes.
- Add the spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the cooked spinach mixture, feta cheese, Parmesan cheese, breadcrumbs, dried oregano, salt, and pepper.
- Stuff each mushroom cap with the spinach and cheese mixture, mounding it slightly.
- Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
- Serve hot and enjoy!
I followed the recipe exactly but they turned out soggy. Not sure what I did wrong. 😩
Soggy? I don’t get it. I made them twice and they were perfect! You must’ve done something wrong.
I’m sorry to hear that! Maybe the mushrooms had too much moisture? Try squeezing them out next time!
Delicious!! 🤤 Best stuff I’ve ever made. Thanks for sharing!
Why do they keep saying these are healthy? Mushrooms are fungi!!
Mushrooms are fungi, but they’re low in calories & packed with nutrients. They can be healthy! Don’t judge a book by its cover.
Not all fungi are bad! Lots of people love mushrooms & say they’re good for you. Give ’em a chance!
I don’t like mushrooms, but my wife made this and I actually enjoyed it! Shocked!
Skeptical at first, but wow, these turned out really good! I didn’t have fresh spinach, so I used frozen. Still great!
The directions are confusing. I just mixed everything and shoved it in the mushrooms. Still turned out decent, I guess.
These are AMAZING! I made them for a party and they were gone in minutes. Will definitely make again!
So glad to hear you loved them! They’re a huge hit at parties, right? 🍄✨
Too much feta for me, it overpowered everything. Next time I’ll use less cheese.
I get what you mean! Feta can be really strong. Maybe just mix in some cream cheese next time to balance it out?
Too much cheese is never a problem lol! But I guess it’s all personal taste. Just make it how you like it!
My mushrooms turned out soggy. I think I did something wrong? I even baked longer but never golden like in pic.
I could eat these every day! The spinach and feta combo is killer.
Delish! Everyone should try this! 😍
I dunno… they were kinda bland for me. Maybe too much spinach?
Too much spinach? I thought that’s what made them healthy! But hey, everyone has their taste, I guess.
I actually loved them! Maybe you just need to add a bit more seasoning? Garlic powder can work wonders too!
they was so yum! Easy and quick, love it love it love it!
Greek? Neva heard of this combo! Why no meat? Think it needs it.
Very good recipe! Needed a bit more cheese though, maybe next time I’ll add more feta.
I totally agree! Cheese makes everything better! Next time, try adding some mozzarella too. Yum!
I dunno… more feta? I thought the recipe was perfect. But hey, everyone has their taste, right?
Yum! Big mushrooms with gooey cheese = happiness.
Honestly, I was skeptical about spinach and mushrooms together. But these actually turned out pretty good! I might make them again.
Sooo good! I might try with different cheese next time. Goat cheese maybe?
Not my favorite. Mushrooms are weird texture if you ask me.
Yummy! My kids loved it! Finally got them to eat mushrooms. 😋
I dunno… kinda bland. I added some red chili flakes and it helped a bit, but I expected more flavor.
I get what you mean! They could use a little extra kick. Maybe try adding some lemon zest next time? That’s a game changer!
I followed this recipe to the letter and my filling was too runny! 🤔
Simple and delicious! I used frozen spinach since that’s what I had on hand, still worked out great.
This is just another mushroom recipe. I don’t see what the hype is about. Mushrooms are only okay.
These were amazing! Packed with flavor and so easy to make.
I didn’t have parmesan. Can I use cheddar instead?
Why would you use cheddar? It won’t be the same at all! Stick to the recipe for best results.
Cheddar might not taste the same, but it could work! Just make sure it melts well.
These were fantastic! My family loved them, especially with a bit of extra feta on top. Will definitely make again!
This recipe is too complicated for me. Why all the steps? Can’t you just mix and bake??
These mushrooms were a hit at the party! Everyone kept asking for the recipe!
That’s awesome to hear! These mushrooms are definitely a crowd-pleaser. 🍄❤️
I can’t stand feta, so I used mozzarella instead. Tastes good but not sure I can call it Greek now! 😂
My kids loved these! They thought they were pizza bites.
Such an easy recipe! I whipped these up for a party and they disappeared within minutes. Highly recommend!
Glad you liked it! These mushrooms are a crowd-pleaser for sure. Perfect for parties! 🎉
Super easy to make and delicious! Used Greek yogurt instead of sour cream for a twist.
Sounds yummy! I wanna try it. But is it really that easy? I can’t cook much. 😅
I tried using cream cheese instead of feta. It was ok but not as good! Greek yogurt sounds interesting tho. Did it change the flavor a lot?
These stuffed mushrooms are heavenly! I made them for a party and they disappeared in no time. So delicious!
These were amazing! So tasty and easy to make! I added extra garlic, and my family loved it!
Wow, these are a hit a my party! Everyone wanted the recipe, thanks!
Not as good as I expected. The filling was too salty for my taste.
I think I messed up the oven temp I set it for 450°F by mistake, but they still tasted alright, lol.
450°F?! That’s way too high for mushrooms! I don’t get how they were ok. Are you sure you didn’t burn them? 🤔
Hey, accidents happen! I’m glad they still tasted good. Sometimes it’s the mistakes that make the best meals. 😊
I used different mushrooms, what are those called? Like the little ones, uh mini ones or somethin. Still tasty though!
These turned out amazing! I’m definitely making them again. My family loved them!
They sound good, but mushrooms? Really? I don’t know, I’d rather have meat. But good for you!
I’m so glad you loved it! These mushrooms are a hit in my house too. Gonna try adding some sun-dried tomatoes next time!
I don’t like mushrooms, but my friend made them and said they were awesome. So maybe good for mushroom fans?
I used to hate mushrooms too, but these stuffed ones are just so good! You should at least give them a try.
I dont know, they were okay but kinda bland. Maybe I put too much spinach in?
Best thing I ever made! I had to hide them from my kids, they wanted to eat them all.
Wow, they sound delicious! I gotta try this recipe for sure. Hiding them from kids is smart! 😂
Yum! I added some jalapeños for a kick, and now I’m hooked!
My cousin said he could taste the spinach while I was winin’ and dinin’, not for me.
It says to use large mushrooms, but I only had small ones. They still turned out ok, but more filling would be good.
Large mushrooms are better for stuffing, but I guess small ones are better for health. Good to hear they turned out okay.
I think small mushrooms could actually work fine! Maybe just adjust the filling a bit. More cheese never hurts, right?
I dunno, they tasted kinda bland. Maybe i should’ve added some spices?
Great party appetizer! Just make sure to bake them long enough.
Absolutely! The longer you bake them, the more flavour they get. Can’t wait to try this recipe again!
