Greek Style Zoodles with Tomatoes

August 8, 2023

Greek-style zoodles with tomatoes is a fresh, healthy, and vibrant dish that brings together the lightness of zucchini noodles with the classic flavors of Greek cuisine. The zoodles (zucchini noodles) serve as a perfect, low-carb substitute for traditional pasta, and when paired with juicy, sweet tomatoes, tangy feta cheese, and a drizzle of olive oil, this dish becomes both satisfying and refreshing.

To make this dish, start by spiralizing fresh zucchini into noodles. You can either leave the zoodles raw for a crisp texture or sauté them briefly in olive oil for a slightly tender bite. If you prefer a softer texture, you can cook them a little longer, but be careful not to overcook them, as they can become too watery.

For the tomato component, use ripe, juicy tomatoes – cherry tomatoes work wonderfully here, as they burst with flavor when cooked. Sauté the tomatoes in olive oil, adding a bit of garlic for depth and seasoning with salt, pepper, and dried oregano to capture that Mediterranean flavor. As the tomatoes cook down, they release their juices, creating a light, flavorful sauce for the zoodles.

Once the zoodles are ready, toss them in the pan with the cooked tomatoes, allowing the flavors to meld. A sprinkle of crumbled feta cheese adds a creamy, salty contrast to the fresh vegetables, and Kalamata olives bring a briny kick that enhances the overall flavor profile. For an extra burst of freshness, garnish the dish with chopped fresh herbs like basil or parsley.

Greek-style zoodles with tomatoes are not only quick and easy to make but also customizable. You can add a protein such as grilled chicken, shrimp, or chickpeas to turn it into a more substantial meal. You can also add other vegetables like cucumber, red onion, or bell peppers for more color and crunch.

This dish is light, nutrient-packed, and full of Mediterranean flavors. It’s perfect for a quick weeknight dinner or a refreshing summer meal when you’re craving something light but flavorful. With minimal ingredients and a lot of taste, Greek-style zoodles with tomatoes offer a delightful and healthy twist on traditional pasta dishes.

This was just okay. The zoodles were too soggy for my liking. I think I prefer regular pasta.

I don’t know about zoodles. Isn’t real pasta way better? But hey, if you like it, more power to you.

I don’t know, zoodles seem kinda weird to me. Just not the same as pasta. 🤔

Could use some kinda sauce. Zoodles are bland on their own, ya know?

    2. 2 stars
I tried it too, but my zoodles turned out soggy. What did I do wrong?

  12. User avatar Phylis Luettgen says:

    5 stars
I tried it cold as suggested and it was actually great—almost like a salad. I’ll do that again for meal prep.

  13. 5 stars
Greek flavors are my weakness, so I had to try. The olives + feta are a great pairing. I’d eat this even without the parsley.

  14. 5 stars
This recipe is amazing! I love the zoodles – they are sooo tasty.

  15. User avatar andreas.dubuque53 says:

I followed it but it was kinda bland until I added extra black pepper + a pinch of salt. After that, it was good.

  16. User avatar Pizpot Gargravarr says:

    5 stars
This tastes like Greek salad but in noodle form. I added some dried oregano and red pepper flakes and it took it to another level. Will definitely make again!

  17. 1 star
This sucks! Zucchini for pasta? No thanks.

  18. User avatar tamesha.lynch10 says:

    4 stars
Pretty good, but my zoodles turned watery after 3-4 minutes. Next time I’ll cook them a little less and make sure the zucchini is dry.

    1. User avatar Chaurus Hunter says:

      3 stars
Watery zoodles means you needed hotter pan? Or cook the tomatoes shorter. I kinda did mine 5 min and they were soupy too. Still tasted good tho 😅

    2. User avatar qiana.stoltenberg22 says:

      5 stars
That makes sense—zoodles can totally weep once they hit heat. I’ve had luck salting them for a few minutes, then squeezing out the extra water before cooking. Also, I don’t stir too much while they cook.

  19. 3 stars
I made this but wasn’t a big fan of the olives. They kinda ruined it for me. 3 stars.

    1. User avatar ian.fahey9 says:

      4 stars
I totally understand! Olives can be pretty strong in flavor. Maybe next time try leaving them out or using a milder ingredient. Glad you gave it a shot anyway!

  20. User avatar carmen.hauck says:

    2 stars
Took way longer than 10 mins. Are you guys chefs or what? Still turned out okay tho. 2 stars.

    1. User avatar rodger.abshire91 says:

      3 stars
10 mins?! Are they kidding? I’m not a chef but my zoodles took like 25 mins! Still tasted good tho, so 2 stars seems harsh.

    2. User avatar raul.goyette11 says:

      4 stars
I totally understand! Cooking always takes longer than they say. But glad it turned out okay! Maybe next time try prep everything in advance.

  21. User avatar latrina.leannon94 says:

Nice idea, but I think it needs a little extra seasoning. I added some dried oregano and it tasted way more “Greek.” Also my zoodles got a bit soft, so next time I’ll cook them closer to 3 minutes.

  22. User avatar mireya.boyer says:

I followed the steps and it came out great! One thing though: my garlic burned a little because my stove runs hot. 30 seconds should do, not 1 minute.

Fast? I don’t know about that… I mean, zucchini takes a while to prep, right? 🤔

Zoodles? More like ZOODLES OF NAH! Didn’t taste like pasta at all. 🤨

  26. User avatar sheldon.macgyver84 says:

Why is feta even used in this? It tastes weird, ruin the whole dish!

  27. 5 stars
This was delicious! I didn’t have feta, so I used goat cheese instead. Still turned out great!

    1. 5 stars
Goat cheese is a great substitute! Glad it worked out for you.

  28. User avatar gino.dibbert says:

This is the best zoodle recipe! So fresh and light, perfect for summer meals. I loved it!

    Zoodles = NO.

  30. User avatar ward.sanford56 says:

    2 stars
Eh, it was alright. The flavors didn’t really pop for me. Needed some more spice maybe? Or chili flakes or sumtin.

  31. User avatar Dianne Donnelly says:

    4 stars
I’m skeptical about cooking zoodles in a skillet—usually I end up with soggy noodles. Surprisingly, it came out tender for me.

    1. User avatar Eddie the Computer says:

      5 stars
Same here—my zoodles always get watery. But if you cook them only 3-4 min and don’t overcrowd the pan, I guess that helps a lot. Glad it worked for you!

  32. User avatar chimpanzee says:

    3 stars
I followed the recipe but my zoodles were still kinda crunchy after 4 minutes… maybe my skillet was too low heat? Still ate it though because it smelled amazing.

  33. User avatar dalia.beer says:

    3 stars
I think I put too much salt, lol. Next time I’ll be careful.

    1. User avatar geoWizard says:

      4 stars
Haha, salt can be tricky! Just try adding a bit of lemon juice next time to balance it out. 😊

  34. 5 stars
This tastes like a summer salad dressed up as dinner. The feta makes it—like instantly Greek vibes.

  35. User avatar Trin Tragula says:

    3 stars
I tried it but i think my zucchini was too small? The spiral turned into more like shreds. Still tasted good, just not pretty.

  36. User avatar Michael83 says:

    4 stars
Wasn’t sure about zoodles, but they were pretty good! Will make again.

    1. User avatar abram.durgan89 says:

I was skeptical too, but they’re awesome! Love how light and fresh they feel.

  37. User avatar wade.williamson99 says:

Zoodles?? Are we trying to pretend its pasta? 😂

  38. User avatar perry.ziemann says:

    5 stars
Made it for dinner and honestly didn’t expect it to feel so “Greek.” Olives really pop. I used regular parsley and added a pinch of oregano—next time I might add lemon too.

    1. User avatar jeanice.volkman says:

      5 stars
Yesss! The olives + feta combo is exactly what makes it taste “Greek” without much effort. Lemon would probably brighten it up nicely—did you add it at the end or cook it in?

    2. User avatar Roderick Roberts says:

      3 stars
I don’t know… I made something like this and my zoodles got watery fast 😅 Maybe cooking longer like 10 mins would help? Also I used dill instead of parsley once and it was kinda weird but not terrible.

  39. 3 stars
This is a nice recipe, but I forgot to buy feta, so I used mozzarella. Still turned out okay!

  40. 3 stars
The zoodles were a bit too crunchy for me. I thought they’d be softer.

    1. 3 stars
Crunchy zoodles are kinda perfect tho. They still have that veggie crunch! Just needs more cook time, I think.

    2. User avatar steven.frami24 says:

      4 stars
I totally get you! Zoodles can be a bit tricky with the texture. Maybe try cooking them a bit longer next time? 🤔
