Ingredients
  

  • 4 zucchini large, spiralized

Instructions

  • Add the cherry tomatoes to the skillet and cook until they start to soften, about 5 minutes.
  • Add the spiralized zucchini to the skillet and cook for another 3-4 minutes until the zoodles are tender.
  • Remove the skillet from the heat and stir in the olives, feta cheese, and fresh parsley. Season with salt and black pepper to taste.

      That makes sense—zoodles can totally weep once they hit heat. I’ve had luck salting them for a few minutes, then squeezing out the extra water before cooking. Also, I don’t stir too much while they cook.
