Ingredients
  

  • 4 eggs large,
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 pound ground beef
  • 1/2 cup red bell pepper diced
  • 1/2 cup green bell pepper diced
  • 1/2 cup onion diced
  • 1/4 cup feta cheese crumbled
  • 2 tbsp parsley chopped fresh

Instructions
 

  • In a medium bowl, whisk together the eggs, milk, salt, and black pepper.
  • Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 5 minutes. Remove beef from skillet and set aside.
  • In the same skillet, add diced bell peppers and onion. Cook until vegetables are tender, about 5 minutes.
  • Return the cooked ground beef to the skillet and mix with the vegetables.
  • Pour the egg mixture into the skillet. Cook for 3-4 minutes, or until the edges start to set.
  • Sprinkle feta cheese and chopped parsley over the omelette.
  • Using a spatula, fold one side of the omelette over the filling. Cook for another 2-3 minutes, or until the center is cooked to your liking.
  • Slide the omelette onto a plate and serve hot.

      I tried it once and mine was kinda bland, not sure why. Maybe I didn’t use enough feta? Also I think 4 eggs feels like a lot for one pan… but I’ll try oregano next time.

    I don’t trust omelettes that cook only 3-4 minutes then fold—mine was still runny. I had to cook it longer and it got a little dry.

      Weird, mine comes out fine with that timing 🤷‍♀️ Maybe your heat was too low or your eggs were bigger? Also I would definitely not say “runny” until you see it set around the edges—if it stays liquid in the middle, it needs longer. Dry happens when it goes too long after folding.

      Yeah, 3–4 min then fold can totally be too fast depending on your pan heat and thickness. I usually keep cooking until the center looks just about set (like still slightly jiggly) and then fold. Sounds like you nailed the adjustment—next time just give it a minute or two more before folding.

      Totally fair—this one’s more “Greek-ish” than aggressively Greek. Oregano + a little garlic (or even garlic powder) would definitely kick it up. I’d also add a tiny squeeze of lemon at the end.

    Not gonna lie, I found it a bit bland with just salt/pepper. Maybe because I’m heavy-handed with seasoning normally. Also 3-4 minutes for eggs seems short—mine was still runny in the middle.

      Totally get that—this one can go from fold to scramble fast. I’d try cooking on a slightly lower heat and keeping an eye on when the edges set. Also make sure your skillet is truly nonstick (or well-seasoned) and don’t over-stir the eggs once they hit the pan.
