Ingredients
  

  • 2 chicken breasts cut in half lengthwise
  • artichoke hearts
  • Capers
  • lemon juice
  • Pepper
  • 1/2 cup white wine
  • 1/2 cup flour
  • bread crumbs
  • 2 eggs

Instructions
 

  • Cut chicken diagonally into 1/4-inch pieces.
  • In a bowl, mix breadcrumbs, salt, and pepper.
  • Beat the eggs in a separate bowl.
  • Coat the chicken pieces with flour.
  • Dip the floured chicken into the beaten eggs.
  • Coat the chicken with the breadcrumb mixture.
  • In a fry pan, heat about 4 tablespoons of oil.
  • Brown the chicken in the hot oil until almost cooked. Remove and set aside.
  • In the same pan, add white wine, capers, and 2 cans (14 ounces each) of artichoke hearts.
  • Bring to a boil.
  • Add the browned chicken back to the pan.
  • Cover and simmer until the chicken is fully cooked.
  • Serve with angel hair pasta, rice (any kind), or a vegetable of your choice.
  • Enjoy!

      Capers in wine? Uh ok lol. I used more lemon juice than called for and it was a bit too tangy for me… but the smell while cooking really does slap. Next time I’ll measure better.

    1/2 cup flour and 1/2 cup breadcrumbs—pretty heavy for two chicken breasts in my opinion. I liked the crunch, but it felt like there was too much breading on some bites. Would likely reduce by like 1/4 cup next time.

      Yeah I agree—salt amount in the breadcrumb mix is super vague. I usually go with like 1/2 tsp salt plus a few grinds of pepper, but it would be nice if the recipe said it outright.

      I drained mine too, but honestly it probably doesn’t matter too much. Those artichokes hold water—could thin the sauce. Next time I’ll drain and maybe squeeze lightly.

      Totally agree—1/4-inch diagonal is so much knife work. I usually just slice thinner and still get great results. The breadcrumb/egg coating makes it worth it!

      Yeah the steps are a bit fussy, but I think it’s mainly so the coating sticks. I didn’t even use 1/4 inch—just bite-size—and my sauce still came out good. Flavor is decent for sure.
