Fried Chicken and Bell Pepper Frittata

February 7, 2024

Frittatas are the unsung heroes of the kitchen, quick to make, endlessly customizable, and perfect for breakfast, brunch, or even a casual dinner. This Fried Chicken and Bell Pepper Frittata is comfort food with a twist, taking your leftovers or freshly fried chicken and turning it into something completely new.

The real charm of this dish lies in the contrast of flavors and textures. You’ve got juicy, crispy pieces of fried chicken nestled into a fluffy egg base, all balanced by the sweetness and slight crunch of sautéed bell peppers. It’s rich and savory, with just the right amount of color and lift to keep it feeling fresh.

Start by prepping your ingredients. If you’re using leftover fried chicken, just cut it into bite-sized pieces. For fresh chicken, go the extra mile and fry up a couple of boneless thighs or tenders, a golden, crispy crust goes a long way here. Then, slice up red, yellow, or green bell peppers, or a mix for extra color, and give them a quick sauté in a skillet with a bit of olive oil.

Once the peppers are soft and slightly charred, whisk up a few eggs with a splash of milk or cream. Season with salt, pepper, and a pinch of garlic powder or smoked paprika if you want an extra punch. Pour the eggs over the peppers in the pan, then nestle in the chicken pieces.

Let the frittata cook gently on the stove until the edges set, then transfer it to the oven to finish under the broiler or in a hot oven until puffed and golden. Sprinkle with fresh herbs like parsley or chives before serving.

This Fried Chicken and Bell Pepper Frittata is hearty enough to stand alone, but you can also pair it with a simple green salad or roasted potatoes. It’s comfort food done smart — using simple ingredients and big flavor to create something that feels indulgent, yet is totally doable any day of the week.

I don’t get it. 10-15 minutes plus 5 more? That’s basically forever for me. I cooked it like 30 mins and it was way more firm than expected. But flavor was solid!

Delicious and filling! I added some spicy sausage for extra flavor. Will make again!

Using leftover fried chicken is genius. I was skeptical about how it would work in a frittata, but it held together and didn’t get too greasy.

    1. User avatar greta.waelchi says:

Totally agree—leftover fried chicken in a frittata sounds risky, but your timing makes it work. Glad it didn’t turn greasy; I always worry that with eggs. I might add a little extra cheese next time though.

I tried this recipe but it didn’t turn out right. The frittata was too watery. Maybe I added too much milk?

    1. User avatar jung.bogisich56 says:

      3 stars
Not sure what went wrong, I made it and it was perfect! Maybe check the cooking time?

    2. 4 stars
I think maybe the milk was too much! Try less next time, it should help.

Tried this for brunch and it was a hit—savory, filling, and the bell pepper/onion combo really brightens the chicken. I cooked a bit longer so the center set more, but otherwise followed it closely. Definitely making again!

    1. User avatar nigel.wiza0 says:

So happy it worked for you! The bell pepper/onion really does wake up the whole thing—also love that you stretched the cook time to get the center set. Makes sense.

    2. 4 stars
I tried something similar once but my middle stayed runny, so I guess I just need to cook longer like you did. Did you cover it the whole time after adding the eggs?

  8. User avatar Andy Structible says:

I can’t believe how great this is! Who knew fried chicken in a frittata would be so delicious? You gotta try it!

  9. User avatar chery.yundt16 says:

I dont like bell pepper so I left it out, but it still turned out good! Just wish it had more flavor.

I totally agree! This sounds amazing! Can’t wait to try it myself!

Fried chicken in a frittata? Really? Sounds a bit weird to me. Not sure about that mix.

  11. User avatar hannelore.gerhold says:

    2 stars
Cheddar on top is the move. But covering it with foil—does that make the bottom soggy? I’m nervous lol.

  12. 3 stars
Can I swap chicken for turkey? Never tried fried chicken in eggs – sounds too weird!

  13. User avatar maribeth.donnelly says:

    4 stars
What kind of chicken can I use? I only have leftovers from a rotisserie. Will it work?

  14. User avatar vivien.buckridge6 says:

    5 stars
I added some garlic powder and it was amazing!! Thank you for this recipe! 👍

  15. User avatar lelia.rodriguez98 says:

I made this and it tasted fine, but my eggs didn’t really “set” at the edges until later. Also I forgot the lid for the cheese part and it didn’t melt as nicely. Still ate it all 😅

  16. 3 stars
Easy recipe but I’m not a big fan of bell peppers, maybe next time I’ll skip them. Still worth a try.

    1. User avatar flo.mayer87 says:

      4 stars
I get that! Bell peppers can be strong in flavor. You might try replacing them with some spinach or mushrooms instead. Good luck!

  17. User avatar Elisha Brakus says:

Frittata? More like failed taco! It’s all mushy. Near impossible to cook it just right.

  18. 4 stars
I dont like bell peppers, so I omitted them. Taste is still vari good!

    1. User avatar emanuel.effertz says:

      4 stars
That’s cool! Bell peppers aren’t for everyone. I usually throw in some spinach instead. Yum!

  19. User avatar lorraine.schaefer42 says:

This was good but I added too much salt by accident. Next time I’ll pay more attention!

    1. User avatar Keneth Dibbert says:

      3 stars
Too much salt? That’s no biggie! Just use less next time! But honestly, who doesn’t like a bit of flavor, right?

    2. User avatar ArabianNights says:

      4 stars
Glad you liked it! Salt can be tricky. Just a pinch goes a long way. Next time, try tasting as you go!

  20. User avatar mathWizard says:

Meh. It’s just eggs and chicken. What’s the big deal? I’ll stick to cereal.

    1. User avatar catalina.beatty11 says:

      3 stars
I dunno… cereal is easy but this sounds kinda good too! Maybe I’ll give it a shot someday.

    2. 5 stars
Honestly, it’s way more than just eggs and chicken! The peppers and cheese really take it up a notch. Give it a try!

  21. User avatar Francisco Muller says:

Frittata? Sounds fancy! I just called it scrambled eggs with chicken haha. So good!

    1. User avatar tomeka.veum64 says:

      4 stars
Haha, right? It’s basically just eggs with a twist! But frittata sounds fancier for sure!

  23. User avatar gwyneth.wunsch1992 says:

    5 stars
Tried this for brunch and it was honestly super filling. The bell pepper + onion combo made it taste fresh even with the fried chicken. I think next time I’ll add a pinch of paprika for extra kick.

    1. User avatar wilber.vandervort63 says:

      5 stars
That’s exactly how I feel about it—fried chicken in a frittata somehow makes it feel like a whole meal. Love the bell pepper + onion combo!

    2. User avatar penni.rutherford says:

      4 stars
Hmm paprika sounds good, but I feel like 1/4 cup onion is too little? Maybe I’m just used to onion-heavy frittatas. Still, “super filling” convinced me to try it.

  24. User avatar Barry Manilow says:

    4 stars
My eggs kinda stuck to the pan even though it was non-stick, so I had to be gentle slicing. Still tasted great—cheese melted perfectly.

  25. User avatar kevin.monahan says:

Fried chicken in a frittata? Sounds kinda weird, but I’m intrigued. 😅

    1. 5 stars
I thought the same! But I made it last night, and it was surprisingly delicious! 😍

  26. User avatar lesha.wintheiser11 says:

    2 stars
Tried it and it turned out okay, but I think I prefer regular omelets.

  27. User avatar maggie.kohler79 says:

    5 stars
This was super easy to make! My kids loved it, especially with the cheese on top. Definitely making it again. 🤗

  28. User avatar elwood.raynor31 says:

    4 stars
Pretty good! I had to swap out the bell pepper for zucchini but it still turned out fine.

  29. User avatar rich.landlord says:

    2 stars
Eh, not really my thing. Frittatas are too fancy for my taste. I prefer my chicken in a sandwich. 😒

  30. User avatar Ollie Medhurst says:

    2 stars
Not sure this should even count as a frittata. Where’s the seasoning? Slightly boring.

  31. 3 stars
I tried it and my center never fully set. I think I needed to cook longer or used too big of a skillet. Still tasty though!

  32. User avatar lemuel.rohan19 says:

    4 stars
    yum

    1. User avatar Miss Jeff Mann says:

      5 stars
yum indeed 😋 the fried chicken + bell pepper combo sounds so good. I’m definitely trying this!

    2. User avatar wilburn.kuvalis says:

      4 stars
Yup looks tasty, but 10-15 min + 5 min seems like a lot for eggs. Mine would probably overcook unless the heat is super low… still, I’d eat it.

  33. User avatar lucienne.roberts14 says:

    1 star
Hmm. Sounds weird. Eggs, chicken, and peppers? I would never mix them. Frittatas shouldn’t have meat, that’s what omelets are for, right? 🤔

  34. User avatar Deep Thought says:

    5 stars
This is such a clever way to use leftover fried chicken. The bell pepper + cheddar combo makes it taste way more “brunch” than I expected. I kept it on until the center barely jiggle—perfect.

  35. User avatar Hildegarde Gibson says:

    1 star
Sounds good but what’s a frittata? Is it like a quiche? I dunno, I just like eggs. 🍳

  36. 3 stars
This frittata was just okay. I thought it needed more spices or something to bring out the flavor.

  37. User avatar Brooks Balistreri says:

    1 star
Y’all, this is not a real frittata, you gotta use whole eggs not just the whites! 😒

  38. User avatar dawn.wolff2012 says:

    5 stars
My kids devoured this! They usually hate veggies, but the bell peppers were a hit. Thanks!

    1. User avatar sherrie.fadel says:

      5 stars
That’s awesome! My kids are picky too, but I’ll try it for sure!

    2. User avatar jeraldine.howell says:

      2 stars
Veggies are still veggies. I don’t get how kids can like peppers in eggs. Sounds weird to me!

  39. User avatar Prostetnic Vogon Kwaltz says:

    3 stars
How come y’all use fried chicken? Shouldn’t it be fresh chicken? Seems weird.

  40. User avatar Reg Nullify says:

    4 stars
I was skeptical about the fried chicken in a frittata… sounds weird, but I gave it a shot. Surprisingly tasty!
