Eggplant and Zucchini Gazpacho

August 8, 2023

When the weather is warm and you’re craving something light, refreshing, and full of flavor, Eggplant and Zucchini Gazpacho is the perfect dish. This chilled vegetable soup is a creative twist on the traditional Spanish gazpacho, incorporating the smoky depth of roasted eggplant and the bright freshness of zucchini. It’s a vibrant, healthy, and satisfying option that’s as perfect for summer as it is for a light appetizer or side dish year-round.

The base of this gazpacho starts with fresh, raw vegetables, but roasting the eggplant and zucchini first adds a rich, smoky flavor that takes this soup to the next level. The vegetables are tossed with olive oil and a pinch of salt, then roasted until soft and lightly caramelized. This roasting step enhances their natural sweetness, balancing out the refreshing taste of the other raw ingredients.

Once roasted, the eggplant and zucchini are blended together with ripe tomatoes, cucumbers, garlic, and red onions. A splash of red wine vinegar adds a tangy kick, while a drizzle of extra virgin olive oil creates a smooth, velvety texture. To finish it off, fresh herbs like basil or parsley can be added, bringing a pop of color and a fragrant, herbal note to the soup.

The result is a velvety smooth gazpacho with a wonderful balance of flavors. The roasted eggplant provides depth and earthiness, while the zucchini keeps the soup light and refreshing. The tomatoes and cucumbers contribute to the natural sweetness and acidity, creating a well-rounded, satisfying flavor profile.

Eggplant and Zucchini Gazpacho is a versatile and healthy dish that can be served as a starter, side dish, or even a light main course. It’s naturally vegan and gluten-free, making it a great choice for various dietary preferences. Serve it chilled, with a garnish of fresh herbs or a drizzle of olive oil, and enjoy this cool, summery dish that’s as nourishing as it is delicious.

A refreshing summer soup made with eggplant and zucchini.
Servings 4 people
Prep Time 15 minutes
Total Time 1 hour

Ingredients

  • 2 eggplant
  • 2 zucchini
  • 2 Tomatoes
  • 1 red bell pepper
  • 1 red onion small,
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice fresh
  • Salt and pepper to taste
  • Basil leaves for garnish

Instructions

  • Preheat your oven to 400°F (200°C). Cut the eggplant and zucchini into chunks. Place them on a baking sheet, drizzle with olive oil, and sprinkle with a pinch of salt. Toss the vegetables to coat evenly.
  • Roast the eggplant and zucchini in the preheated oven for 20-25 minutes, or until they are soft and slightly caramelized. Stir halfway through for even roasting.
  • While the eggplant and zucchini are roasting, chop the tomatoes, cucumber, red onion, and garlic.
  • Once the roasted eggplant and zucchini have cooled slightly, place them in a blender or food processor.
  • Add the chopped tomatoes, cucumber, red onion, garlic, and a splash of red wine vinegar. Season with salt and pepper to taste.
  • Blend until smooth and creamy. If the consistency is too thick, add a bit of cold water or more olive oil to reach your desired texture.
  • Taste the gazpacho and adjust the seasoning if needed by adding more salt, pepper, or vinegar. You can also add a drizzle of extra virgin olive oil for extra richness.
  • Transfer the gazpacho to a bowl or airtight container and refrigerate for at least 2 hours to chill and allow the flavors to meld.

Gazpacho should be cold, right? Mine didn’t taste that way. Did I mess up?

400°F for 20-25 mins was perfect for me. Also, 2 eggplant? That’s a lot… I used 1 and it was plenty. Delicious though.

Sounds fancy and all, but it takes too many ingredients for a soup. Just stick to what you have in the fridge.

This tastes like summer in a bowl. The vinegar + lemon combo is on point. Also, the roasted veg smell while it’s in the oven is dangerously good.

Incredible flavors!! I added fresh mint instead of basil and it was a revelation! 🌱💖

What’s the point of gazpacho? No meat? I don’t get it.

I’m not sure about this one. Zucchini in a cold soup? Sounds weird.

Gazpacho without bread?? Also 400°F seems too hot for soup vibes 😂 but I’ll admit it smelled amazing. Rating is for effort.

Super refreshing, but I think it needs more basil than just garnish. I tossed a handful into the blender and it tasted fresher.

5 stars for eggplant? Nah, that’s just wrong. Cold soup should be refreshing, not heavy. No thanks!

I was skeptical at first, but your review has convinced me to try it! Eggplant in soup? Sounds weird, but I’m intrigued now.

  23. User avatar Frost Troll says:

Isn’t gazpacho usually made with cucumber? What’s this about? Confused much.

  24. User avatar markus.roberts says:

Was skeptical at first but it turned out great! Just needs more garlic next time.

    1. 5 stars
I totally agree! Garlic makes everything better! I’ll definitely add more next time too.

  25. 5 stars
Yummy! Kids loved it, even my picky eater! Will def make again. 😊

2 eggplants + 2 zucchini feels like a lot for ‘gazpacho’—i hope it makes enough. Also 400F is pretty hot, but I guess for roasting it works.

  27. User avatar rayford.herzog37 says:

    4 stars
Tried it with my blender and it turned out super smooth. I added a tiny bit of cumin just because…not traditional, but wow.

  28. User avatar edris.turner17 says:

    5 stars
Wow, this sounds like a lighter take on gazpacho. Roasting the eggplant/zucchini is genius—adds that cozy caramelized flavor. I’ll definitely garnish with extra basil.

  29. User avatar alysha.champlin7 says:

    5 stars
Yum! I used yellow squash instead of zucchini. Still turned out great! Thanks for sharing!

  30. User avatar asa.macgyver6 says:

Easy and healthy! Used less olive oil and it still came out delicious. My kids even liked it! Wow!

  31. User avatar angel.hermiston1972 says:

    5 stars
My picky eater actually liked this (miracle). I garnished with basil and it smelled like summer. Next time I’ll add more garlic though.

  32. 5 stars
The flavors are so fresh! I let it chill overnight. Yummy, would make again!!

  33. User avatar stanley.baumbach says:

This recipe is missing ‘steps’! I need to know how to blend it! 🤔

  34. User avatar hobert.ruecker47 says:

I’m not a fan of raw eggplant, doesn’t taste good to me. I think cooking them first would be better. 2/5

    1. User avatar conrad.thiel19 says:

      4 stars
I actually love raw eggplant! It has this unique texture that’s refreshing. But I get your point. Cooking it does bring out a different flavor.

  35. User avatar reggie.haley87 says:

    3 stars
Um, I think you forgot the cucumber in the ingredient list! I put one in anyway, but was confused.

    1. User avatar odessa.lockman80 says:

      4 stars
Oh no! I missed the cucumber too when I made it. I just peppered it more! Still tasted good though.

    2. User avatar Shaddam Corrino IV says:

      2 stars
Cucumber in gazpacho? Is that normal? I thought it’s just for salads. 😕

  36. User avatar Loonquawl and Phouchg says:

    3 stars
Gazpacho? What’s that? Sounds fancy but maybe too much work for me.

  37. User avatar Hotblack Desiato's bodyguard says:

    5 stars
Yum. Gazpacho but heartier. I served it with grilled bread and it felt fancy, not hard. Will repeat.

  38. User avatar Mrs. Bethann Lynch says:

    5 stars
This is so refreshing! I didn’t have red wine vinegar, so I used apple cider vinegar instead, and it turned out great!

  39. User avatar Penny Lane says:

    2 stars
I don’t know why everyone loves this, it’s just a cold soup… I prefer my veggies cooked. Disappointing!

  40. User avatar Gandalf the Grey says:

    4 stars
I’m skeptical about turning it into “gazpacho” with all that roasting. Like, is it still gazpacho if it’s warm-ish flavor? But the result was actually delicious, so fair.

    1. User avatar Flame Atronach says:

      3 stars
Hot gazpacho is a crime 😅 but warm-ish flavor still sounds tasty. Did you serve it cold after refrigeration or right away?

    2. User avatar mirian.okon82 says:

      4 stars
I get what you mean—calling it “gazpacho” feels like stretching it. But honestly, if it tastes good and you chill it, I’m in. Also that roasting makes it way deeper.

  41. User avatar minta.brekke22 says:

    2 stars
Honestly, I hate blending roasted veggies into a soup—it feels like a smoothie but savory. Still, the flavor was good and I ate it all.

  42. User avatar Margot Fenring says:

    3 stars
Whut if I don’t have a blender? Can I just smash it with a fork? Pls answer!

  43. User avatar libbie.herman50 says:

    3 stars
Way too vinegar-forward for me. Next time I’ll start with less red wine vinegar and add it gradually while tasting.

  44. User avatar pete.bartoletti2004 says:

    4 stars
Yummm!! I can’t wait to try this, but I don’t know about the vinegar. Just seems kinda weird to me. But I’ll give it a shot.

  45. User avatar alysha.braun says:

    3 stars
Not gonna lie, mine came out kinda thick and I panicked adding water. Next time I’ll add cold water a little at a time—still good though, just needed adjusting.

  46. User avatar meryl.erdman says:

    5 stars
Made this tonight and wow—roasting the veggies instead of just blending raw really levels it up. I added extra lemon at the end and it tasted super fresh.

  47. User avatar Miss Kizzy Bauch says:

    2 stars
I think I used too much salt or something. Felt kinda off, not my taste.

  48. User avatar winter.johnston94 says:

    3 stars
Not sure about the cucumber part—your ingredients list says cucumber nowhere, but the instructions mention it. I’d guess it’s a mistake and you meant more zucchini? I’m confused but willing to try fixing it.

  49. 4 stars
4/5. I followed it exactly except I forgot to chill it for 2 hours (only 30 min). Next time I’ll be patient because the flavors definitely mellowed.

  50. User avatar Tom Bombadil says:

    1 star
Honestly, I’m not a big fan of cold soups. This recipe did not change my mind.

  51. User avatar Draugr Overlord says:

    4 stars
    1) Tastes like soup 2) That’s good. Pretty healthy too I guess 😅

  52. User avatar ammie.bergstrom2023 says:

    3 stars
Is there a substitute for eggplant? I don’t like it at all. Can I just use more zucchini?

    1. 4 stars
You can definitely use more zucchini! It’ll change the flavor a bit, but it should still taste nice. Have you thought about adding some bell pepper for extra sweetness?

    2. User avatar carlo.schuster says:

      2 stars
I disagree. Zucchini is not the same! Maybe try mushrooms? They aren’t like eggplant, but they might work better.

  53. User avatar shirlene.mcglynn says:

    3 stars
I followed the recipe but forgot the garlic. It tastes kinda bland now. Can anyone help?

  54. User avatar alphonso.ohara says:

    5 stars
I love salad soups! This is gonna be my new go-to for summer. Thanks for sharing!

    1. 5 stars
I’m glad you like it! Salad soups are so refreshing. Perfect for hot days!

  55. 4 stars
So easy and healthy. Basil on top is like instant fancy. 10/10 for weeknights.

  56. User avatar Lawrence Heaney says:

    5 stars
I made this and it actually tastes like a legit summer soup—roasting the veggies first is the move. Super smooth, and the lemon + vinegar combo is bright without being too sharp. Will be repeating.

  57. User avatar mavis.mayer2017 says:

    5 stars
This sounds delicious! I love gazpacho and adding eggplant is a unique twist. Can’t wait to try it.

  58. User avatar jake.huel51 says:

This looks amazing! Can’t wait to try it. Gazpacho with eggplant sounds unique!

  59. User avatar Sol Zulauf II says:

    3 stars
Idk… it says chop tomatoes, cucumber, red onion, garlic, but I don’t see cucumber in ingredients. Did I miss it? Either way I added some and it was fine.

  60. 2 stars
I dunno, eggplant in gazpacho? Seems weird to me. Should just stick to the basics like cucumbers.

  61. User avatar NAFO.SUPREMACY says:

    1 star
Plz tell me I can cook the eggplant first…the thought of raw gives me the creeps.

    1. User avatar charley.bechtelar says:

      3 stars
I thought this was a gazpacho? Isn’t it supposed to be raw? Cooking it might change the flavors, no?

    2. User avatar fernando.marquardt94 says:

      5 stars
You can definitely cook the eggplant first! It will taste better that way. Just roast or grill it, and then blend it in with the other ingredients. Yum!

  62. User avatar Hotblack Desiato says:

    3 stars
2 eggplants? Wow, is it gonna taste too bitter or something? I dunno…

    1. User avatar hulda.denesik77 says:

      4 stars
I thought the same at first, but the roasting really helps to mellow out the bitterness! Give it a try. 😊

  63. User avatar ilda.murphy2017 says:

    4 stars
I was skeptical about blender gazpacho with roasted veggies, but it turned out silky. I used a little more red wine vinegar than called for and it tasted bright, not harsh.

  64. User avatar marylee.gerlach32 says:

    3 stars
Is this a Mediterranean recipe? Looks kinda Italian-y. 😄

    1. User avatar forrest.schowalter46 says:

      5 stars
Yes, it’s definitely inspired by Mediterranean flavors, especially with those ingredients! 🍆🍅

  65. User avatar Tanna Sawayn says:

    5 stars
I made this for a summer party, and everyone loved it! Very refreshing!

    1. User avatar gail.bruen9 says:

      2 stars
Did you really just crush eggplant and zucchini together? Sounds weird to me!

    2. User avatar alexis.murazik55 says:

      5 stars
That sounds amazing! I love a good refreshing dish for summer. I’m definitely gonna try it out at my next barbecue!

  66. 5 stars
This sounds like a great way to use summer veggies. The roasting first makes it way more flavorful than the usual raw gazpacho—can’t wait to try!

    1. User avatar Frost Giant says:

      5 stars
Omg yes—roasting makes everything taste richer. I’m totally trying this with extra basil.

  67. User avatar Consuelo Kreiger says:

    1 star
Why would anyone want cold soup? That’s just bizarre. I personally can’t recommend it. 🤷‍♂️

  68. User avatar lisette.feil1954 says:

    4 stars
I’ve never made gazpacho before, but this recipe seems simple enough. Hope mine turns out as good as the picture!

  69. User avatar mina.dooley72 says:

    5 stars
Delicious! Used my own garden veggies, so fresh! 🌱

  70. User avatar heidi.pouros says:

    3 stars
Not gonna lie, this tastes a little “vegetable purée” for me. I think it needs more acid or salt—maybe my tomatoes weren’t sweet. Still, it’s healthy!

  71. User avatar huey.rodriguez says:

    5 stars
The oven step is the key. I roasted mine closer to 35 minutes because I like caramelization, and it was amazing. Basil on top is a must.

  72. User avatar alexis.rodriguez says:

    3 stars
I tried blending it and mine turned a little grainy—maybe I didn’t cool the roasted veggies enough? Still edible, just not as silky.

  73. User avatar ema.tremblay says:

    3 stars
I’m skeptical about blending cucumber/tomato with eggplant and zucchini like this—feels like it could get kinda mushy. Still, the flavor combo might work.

    1. User avatar sam.spinka93 says:

      4 stars
I get what you mean, but roasting the eggplant/zucchini first kinda helps them break down evenly instead of turning watery-mushy. Letting it chill 2 hours also makes it taste more “gazpacho-y” and less like blended veg soup.

    2. User avatar regine.dibbert1960 says:

      2 stars
Idk about the cucumber part tho—won’t it just water everything down? And blending “smooth and creamy” with all that veg… seems like it’ll be thick paste. I’d rather keep it chunkier.

  74. 4 stars
Super easy and delicious! I added some chili flakes for a bit of kick and it was perfect. Definitely making this again.

    1. User avatar irish.yost50 says:

      5 stars
Sounds great! I love chili flakes in my soups too! Can’t wait to try this recipe. 🌶️

  75. User avatar Pit Wolf says:

    4 stars
Good ingredients. Just made mine without the bell pepper and it’s still yum! Who needs it? 4 stars!

  76. User avatar Fenchurch says:

    3 stars
I followed it, but my eggplant didn’t caramelize much—maybe my oven runs cool. The flavor was still good, just less depth than I hoped.

    1. User avatar linda.goyette57 says:

      5 stars
Yeah, 400°F isn’t always hot enough depending on the oven. I usually crank it closer to 425–450°F and roast longer (like 30–35 min) until the edges really brown.

  77. User avatar Loonquawl says:

    4 stars
I made something similar once but didn’t roast—this step alone probably makes it way better. The 2 hours chilling is spot on; it tastes fuller after resting.

  78. User avatar Chi Shenlong says:

    4 stars
I followed it exactly and it came out too thick. Adding more water helped, but next time I’ll add a bit of tomato juice instead. Otherwise pretty solid.

  79. 1 star
Gazpacho? More like gaspacho… how is this supposed to be a meal? Pass!

  80. User avatar tammy.blanda2010 says:

    4 stars
Not gonna lie, it came out kind of bland until I chilled it longer. After 4 hours it actually had way more flavor. Patience wins.

    1. User avatar tynisha.cummerata says:

      5 stars
Yes!! I always let mine sit longer than the recipe says. The chilling is where it all comes together.

  81. 5 stars
This recipe was a hit in my house! My kids even loved it and they usually don’t eat vegetables. 👍

  82. User avatar ayesha.lowe90 says:

    5 stars
Made this last night—surprisingly cozy for a “gazpacho.” Roasting the eggplant/zucchini is the key. I added extra lemon and it really popped. Will definitely repeat.

    1. User avatar justina.quigley2015 says:

      5 stars
Cozy for gazpacho is exactly right 😂 Roasting changes everything—caramelized veg + lemon = wow.

    2. User avatar lupe.hettinger1988 says:

      5 stars
Nice! I always thought of gazpacho as “cold and raw,” but roasting makes total sense. I’m stealing the extra lemon idea 👍

  83. User avatar Hosea Kihn says:

    4 stars
Made this for a potluck and everyone loved it! I didn’t have red wine vinegar, so I used apple cider vinegar instead. Still tasted great!

  84. 4 stars
Pretty good, but my blender struggled a bit. I had to add more water than the recipe said. Also, I used cucumber and still think “cucumber” wasn’t in the ingredients list—unless I missed it?

  85. User avatar rubin.hyatt says:

    3 stars
I think the garlic is too strong for me—next time I’ll use one clove. Otherwise it’s decent and easy. My husband called it ‘fancy soup’ lol.

  86. User avatar larae.stamm12 says:

    4 stars
Not bad at all. I was worried it’d be too watery, but blending and chilling helped. I did end up adding a little more salt and a tiny bit extra vinegar because mine was kinda mellow.

  87. User avatar wellRespected says:

    3 stars
Quick question: the instructions mention cucumber, but the ingredients list doesn’t include it. I added cucumber anyway and it was okay—just a weird mismatch.

  88. User avatar abdul.graham says:

    4 stars
Tried it for the 1st time and it was actually good. My kids ate it! So that’s a win in my book! 😄

  89. 3 stars
The recipe says chop the tomatoes, cucumber, etc., but I don’t see cucumber in the ingredients list. I added some cucumber anyway and it helped. Just make that clear.

    1. User avatar Carlene Bergnaum says:

      5 stars
Totally agree—step 3 says cucumber but it isn’t in the ingredients. That’s confusing. I added it too and it tasted better, but the recipe should list it clearly (or remove it from the steps).

  90. 5 stars
I followed the recipe but added some cumin and it was super flavorful. Definitely making it again!

    1. User avatar norberto.lueilwitz says:

      5 stars
Cumin sounds like a great addition! I’ll have to try that next time. Thanks for the tip!

  91. User avatar Colin the Security Robot says:

    4 stars
I’m skeptical about the ‘gazpacho’ part since it’s more like a roasted vegetable soup/ puree, but honestly… it works. I added a little extra olive oil and salt and it came together.

    1. 5 stars
Totally get the skepticism 😅 but roasted veg + puree is basically how I’ve always done my “gazpacho.” The olive oil and vinegar combo really makes it sing.

    2. 4 stars
Wait… you’re right, it’s not traditional. Traditional gazpacho is more like uncooked tomatoes, right? Still, sounds delicious and I’d eat it.

  92. User avatar luigi.bradtke27 says:

    4 stars
I’m not convinced about blending zucchini + eggplant with tomatoes and calling it gazpacho, but it might actually be delicious. Still, I’d maybe keep some chunks instead of fully smooth.

  93. User avatar Margot Fenring says:

    2 stars
I don’t think eggplant belongs in gazpacho. This is just wrong. Sorry, not a fan.

  94. User avatar raul.prohaska says:

    5 stars
    Yesss. Saved. 🌿

    1. 5 stars
Same!! The roasting step makes it so flavorful—saved for sure 🌿

Looks good, but does it really need cucumber? Ingredients list says cucumber but recipe steps mention it—just checking.

  95. User avatar anonymous_hacker says:

Followed it pretty closely, but I think the directions have a typo: ingredient list mentions cucumber but the title says nothing and step 3 says chop cucumber (not listed). I used one anyway and it was fine.

  96. User avatar golden.bartoletti says:

Bland at first for me. I thought ‘salt and pepper to taste’ was enough, but I needed more vinegar and lemon. After chilling it improved a lot.

  97. 5 stars
Super easy and the roasted flavor is amazing. My partner said it tastes like restaurant food. Only thing: I needed more salt than I expected.

  98. 2 stars
Confused: ingredients say tomatoes but instructions say chop tomatoes, cucumber… where’s the cucumber?? Also the oven step + blender step is fine, just missing info.

Good catch! The ingredients list doesn’t mention cucumber, but step 3+5 do. I’d assume it’s a typo/omission and you meant to include 1 cucumber somewhere.

  99. User avatar The Allitnils says:

This was surprisingly good—roasting the eggplant and zucchini really makes it taste deeper. I added a little extra lemon and it popped.

    1. 5 stars
Totally agree—roasting makes it way more flavorful than raw. I also add a touch of cumin sometimes and it’s 🔥.

Made something similar and it tasted kinda flat until I added more lemon. The vinegar amount feels low to me—could be my brand maybe.

    1. User avatar jose.wolf1990 says:

      5 stars
Totally hear you—gazpacho can come out flat if the acid isn’t hitting. Lemon really wakes it up. I’ve also found some vinegar brands are milder, so adding a little more (or balancing with salt) makes a big difference.

  101. User avatar paris.stark29 says:

Just ok, the flavors didn’t really wow me. Maybe I’m not a veggie soup person? 🤷‍♂️

    1. User avatar daniela.veum11 says:

      4 stars
I get what you mean! Veggie soups can be hit or miss. Maybe try adding some spices next time? It could help with the flavor! 🌶️

  102. User avatar iesha.hahn92 says:

    4 stars
This feels more like a puréed roasted vegetable soup than traditional gazpacho. That said, it’s tasty and healthy. I served it with basil and some toasted bread.

  103. User avatar kiley.harber says:

    3 stars
Mine came out too thick even after adding water, so I ended up adding more olive oil. Maybe my tomatoes were less juicy? Still tasty though.

    1. User avatar joe_banana says:

      4 stars
Ugh, I’m sorry—thick gazpacho is the worst. I’ve found roasted eggplant can really thicken things up, especially if the tomatoes are on the drier side. Adding water makes sense, but a little extra vinegar or lemon can help balance it too.

    2. User avatar Falmer Shadowmaster says:

      4 stars
Mine was thick too—ended up adding olive oil and it helped, but I think my blender just didn’t get it smooth enough. Tomatoes were kinda watery though? Not sure. Still good!

  104. User avatar tiffaney.zboncak1957 says:

    4 stars
Not bad! I followed it pretty closely, but my blender turned it a bit grainy. Next time I’ll strain it or blend longer. Flavor is still solid.

  105. User avatar annetta.roberts says:

    5 stars
Followed the steps but I used a little less vinegar and it still tasted great. The chilling step is for real—tastes way better after 2 hours.

  106. 2 stars
Dunno why people love this. Just taste like veggies blended up to me.

  107. 5 stars
This gazpacho is amazing! So refreshing for summer. 😍

  108. User avatar mariko.johnston81 says:

    2 stars
This tastes healthy but kinda bland to me. I followed the salt/pepper and still felt like it needed something—maybe more vinegar? Also, 2 hours chilling helps, but I expected more depth.

    1. 4 stars
Yeah I get what you mean—mine tasted “healthy” but not super flavorful until I added a bit more vinegar and a tiny pinch of sugar. The depth just wasn’t there at first.

  109. User avatar otto.blanda2018 says:

    4 stars
Made it last night. Mine didn’t get “caramelized” much, but it still tasted good. I added extra vinegar at the end and it popped.

    1. User avatar andres.blanda says:

      5 stars
Yesss—mine never caramelizes like the picture either, but it’s still SO tasty. The extra vinegar at the end is a good call. “Popped” is exactly right 😂

    2. 3 stars
I think you did the vinegar part correctly, but how much cucumber are we talking in the ingredient list? It says cucumber in the steps but not in the ingredients. Still, sounds good.

  110. 5 stars
This sounds like the kind of gazpacho that actually fills you up. Roasting the eggplant/zucchini makes it taste way deeper than the raw versions.

  111. User avatar luigi.wyman1969 says:

This sounds super fresh and I love the roasted twist—normally gazpacho is more raw. 20–25 min caramelization + chilling for 2 hours should be great.

    1. User avatar Genghis Khan says:

      5 stars
Yes!! I love roasted gazpacho—way deeper flavor than raw. I’m doing this tonight and I’m adding a little extra lemon at the end. Thanks!

    2. User avatar lilla.oreilly says:

      3 stars
I think you meant cucumber in the ingredients but it’s not listed 🤔 Step 3 says cucumber too. Also 20-25 min at 400°F might not caramelize for me—depends on how chunky I cut. Still, sounds tasty.

  112. User avatar israel.willms1966 says:

    2 stars
Ehh. Too much olive oil maybe? And I couldn’t get it creamy without adding loads of water. Still, I guess it’s healthy…

  113. 5 stars
Super refreshing—roasting first really adds that cozy, caramelized vibe. I used a little more lemon than the recipe and it was bright. Will make again.

  114. User avatar Photographer says:

    2 stars
400°F for 20-25 mins is kinda long for my oven, my veggies always dry out. Also, blending roasted veg to “smooth” is messy—needs a lot of extra oil for me.

  115. User avatar isreal.stehr says:

    2 stars
Why does it say cucumber in the instructions but there’s no cucumber in the ingredients? I used one anyway and it tasted fine, but that mismatch is annoying.

  116. User avatar andre.weimann30 says:

    4 stars
I was skeptical about eggplant in gazpacho, but it came out creamy without any dairy. The red wine vinegar amount felt right—no harshness.

  117. User avatar chris.lockman23 says:

    2 stars
This feels like it’s more like a blended veggie puree than gazpacho. Also 400°F for 25 min makes it kinda sweet—okay, but not what I expect from gazpacho. I’ll probably tweak it next time.

    1. User avatar marva.green21 says:

      4 stars
Yeah, I get that. Roasting + blending will definitely push it more toward a warm/creamy purée vibe. Next time I’d try roasting less or chilling longer (and maybe blend only part).

  118. 3 stars
Not bad, but I found it a bit bland until I salted properly. Also, my oven time went closer to 30 min for caramelization.

  119. User avatar sang.kassulke53 says:

    5 stars
    5 stars. So good.

  120. 4 stars
Not bad at all! I did have to add more water to get it “gazpacho” thin, but the flavor is solid. Next time I’ll probably add a little extra garlic because we like it punchy.

    1. 5 stars
Totally agree on the garlic—this one definitely benefits from going a little bolder. Glad the flavor still landed for you!

  121. User avatar ahmed.yundt says:

Five stars! Also the smell while roasting was amazing. Chilling for 2 hours made it taste “restaurant-y.”

    1. User avatar Kennith Mann says:

      5 stars
Love this! I did the 2 hours chilling and it really does taste way more “done” than just blending and eating right away.

    2. User avatar virgil.ryan says:

      3 stars
Question—did you actually roast eggplant and zucchini, or did you do it on the stove? I tried roasting and it came out kinda bitter for me.

  122. User avatar Frost Troll says:

    2 stars
400°F for 20-25 minutes is kinda intense for zucchini, it got a little mushy for me. Next time I’ll cut smaller or roast less.

    1. User avatar von.botsford says:

      5 stars
Totally agree—400°F for that long can make zucchini go mushy fast. I do 15-18 min at most and keep the chunks bigger so they don’t collapse.

  123. User avatar angel.rowe71 says:

    3 stars
I tried following it closely but step 3 says chop tomatoes, cucumber… yet cucumber isn’t in the ingredients list. I just used extra zucchini and it was fine, but confusing.

  124. 3 stars
I’m confused though—your ingredients list says tomatoes and bell pepper, but the instructions mention cucumber too. I didn’t see cucumber anywhere in the ingredient list, so I just used more zucchini. Still tasty.

    1. 5 stars
Oh wow, good catch! The cucumber is definitely mentioned in the instructions but it’s missing from the ingredients list—sorry about that. Using extra zucchini makes sense and still sounds delicious.

  125. User avatar rickiestmorty says:

    5 stars
Wow, roasting the eggplant/zucchini first is such a good move. Mine came out super silky after blending and the vinegar + lemon combo really brightened it. I’ll make this again for sure.
