Easy Vegetarian Quiche

January 26, 2024

A good vegetarian quiche is one of those dishes that feels both comforting and versatile. It’s an ideal choice when you need something hearty yet light, elegant yet unfussy. Whether you’re hosting a brunch, packing lunch for the week, or simply craving something savory and satisfying, this easy vegetarian quiche fits the bill beautifully.

What makes this dish such a go-to favorite is its flexibility. Start with a basic pie crust, homemade or store-bought, and from there, you can build endless flavor combinations. Common additions include spinach, mushrooms, tomatoes, zucchini, onions, and bell peppers, all of which add color and texture. The beauty lies in using what you have on hand or what’s in season, making this quiche a true “clean out the fridge” hero.

The filling comes together quickly. Whisk together eggs, milk or cream, salt, pepper, and perhaps a pinch of nutmeg for a subtle depth. Add cheese like cheddar, feta, Swiss, or goat cheese for extra richness and character. Then fold in the sautéed vegetables before pouring the mixture into the crust and baking until golden and set.

One of the best things about vegetarian quiche is how well it holds up. It can be served warm, at room temperature, or even cold straight from the fridge. That makes it perfect for meal prepping or entertaining, since it can be made ahead and still taste amazing the next day.

Serve it with a simple green salad or a bowl of soup for a complete meal. For brunch, pair it with fresh fruit or a light smoothie. The quiche is both filling and balanced, rich in protein from the eggs and cheese, and packed with fiber from the vegetables.

Whether you’re feeding a crowd or just looking for an easy, meatless option to enjoy during the week, this easy vegetarian quiche delivers every time. It’s proof that with just a few ingredients and a little time, you can make something truly satisfying.

Made this last night—so easy and actually tastes “fancy” for how little effort it takes. The Swiss + veggies combo is perfect.

Easy peasy! I threw in some leftover broccoli too. Highly recommend!

Quiche means egg tart in French, right? This recipe ain’t traditional but I still liked it.

  4. 4 stars
This is just a fancy egg pie! Whatever, still tasty!

Can I freeze this or not? Want to make it for later but not sure. Thanks.

  7. User avatar maris.windler says:

    2 stars
I tried it, but my quiche didn’t set—still kinda jiggly after 35 min. I’m not sure if my oven runs cold or if I whisked wrong. Flavor is good at least!

  8. User avatar Gandalf the Grey says:

    3 stars
Not bad but I think it needed more cheese. Like, the filling tasted a little thin even after baking the full 35 minutes. Maybe my pie crust was smaller?

    1. User avatar Sand-Dial says:

      5 stars
Totally get what you mean—35 minutes can set the eggs, but if the filling feels watery it’s sometimes not enough cheese. I always do an extra handful (or use a mix like Swiss + cheddar). Did you measure the milk and cheese cups pretty exact?

  9. User avatar shauna.sauer says:

    4 stars
Simple and tasty. Could use more cheese though—like, c’mon, I want the cheesy bite. But hey, easy win.

    1. User avatar Genghis Khan says:

      3 stars
I dunno… 1 cup Swiss feels kinda low. Also I baked mine and it was more like frittata than quiche, but maybe I undercooked it? Still tasty, just wish it was cheesier.

    2. User avatar anita.ziemann72 says:

      5 stars
Totally agree—this is simple and tasty. I just add extra cheese (at least another cup) because you *definitely* want that cheesy bite. Easy win though!

Quiche is supposed to have bacon… why no meat in this? Disapointing!

  11. User avatar Arwen Evenstar says:

This was so easy to make! My family loved it. Will definitely make again!

  17. User avatar ilse.wiegand79 says:

Not bad, but I think 1 cup milk might be a touch much? Mine was softer than expected. Still ate it all though 😅

  18. User avatar waylon.cole19 says:

    4 stars
Yum! My kids loved it! Even the spinach, can you believe that? Will share with my neighbors too!

  19. User avatar jannie.schmidt1993 says:

    5 stars
Yummy! 😋 I added some spices and it was lit!

  20. User avatar tawanna.hessel says:

    3 stars
I followed it exactly and it still didn’t set for me—at 35 minutes it was kinda jiggly. I ended up baking another 10. Maybe my oven runs cool?

  21. User avatar Frankie and Benjy says:

    2 stars
It’s just eggs in a crust. Not worth it. 😒

    1. User avatar Grìma Wormtongue says:

      4 stars
I think you’re missing out! This quiche has so much flavor with the veggies and cheese. 😋

  22. User avatar stevie.greenholt1953 says:

    2 stars
Why Swiss cheese though? I feel like cheddar would hit harder. Still ate it, but I wouldn’t choose Swiss again.

  23. 3 stars
Too much cheese! I prefer less. Just a thought.

  24. 4 stars
So simple! I used cheese from a can though haha, worked fine!

  25. User avatar belva.reynolds60 says:

    1 star
Ugh, quiche is overrated. Not for me. 👎

  26. User avatar luciano.blick23 says:

    4 stars
I don’t like spinach. Could I use kale instead? 🤔

    1. 5 stars
Sure! Kale could work just fine. It might give a different flavor, but it’ll still be healthy! 🌿

  27. User avatar bettie.schoen61 says:

    3 stars
I followed the recipe but it took longer than 35 min to cook. Still tasted alright tho.

  28. User avatar macie.mosciski says:

This was super easy and delicious! I added some mushrooms and it turned out great. Will definitely make again!

  29. User avatar basementDweller says:

    2 stars
It’s alright. But honestly, a frozen one is about the same lol.

  30. 3 stars
I question the Swiss cheese, feta is better for quiche. But still a decent recipe.

  31. User avatar bennett.koepp0 says:

    5 stars
    Cool. Easy. Yummy!

  32. User avatar lucinda.pfannerstill86 says:

    2 stars
I followed the recipe but it came out too soggy. Maybe my pie crust was too thick?

  33. 1 star
I tried it and it failed 😅 the middle stayed liquid and I baked it longer. Maybe my pie crust was too thin or my eggs were old. Wouldn’t do again.

  34. User avatar dorthea.cruickshank17 says:

    2 stars
Meh, was kinda bland. Needs more spices. I would not recommend it.

  35. User avatar Grìma Wormtongue says:

    3 stars
Pretty good, but next time I’ll cook the spinach a bit more / squeeze out extra moisture. Mine was a little watery in the first slice.

    1. User avatar ashlee.sanford says:

      5 stars
Totally agree—spinach moisture is the culprit. Next time I’ll sauté it a little and squeeze it in a paper towel before layering.

  36. User avatar Future Trunks says:

    1 star
Ehh! I dunno, quiche seems kinda fancy for breakfast. I prefer cereal.

    1. User avatar graig.gorczany1974 says:

      4 stars
Quiche is actually super easy to make, and it can be great for breakfast! I used to prefer cereal too, but now I love mixing it up with something like this.

    2. User avatar olympia.bradtke90 says:

      3 stars
Fancy? C’mon! It’s just eggs and veggies in a crust. Cereal is for kids! Give it a try, you’ll like it!

  37. User avatar charity.bode says:

    5 stars
Perfect for breakfast! I added some mushrooms and it turned out beautifully. Thank you for sharing!

  38. 5 stars
Made this last night and it came out super good—gooey in the middle and nice and golden on top. I added a pinch of garlic powder and it bumped the flavor a lot. Will definitely make again!

  39. User avatar glenn.douglas says:

    5 stars
This quiche was a hit at my brunch! Super easy and delish. Would highly recommend!

  40. User avatar Spider Soldier says:

    3 stars
Not the best I’ve had. It was kinda bland. Might need to spice it up next time. 🤷‍♂️

    1. User avatar su.lesch says:

      4 stars
I totally get what you mean! Maybe some garlic or herbs could help next time!

  41. User avatar lane.keebler82 says:

    4 stars
Delicious! I added some mushrooms and it was even better!

  42. User avatar Adah Langosh says:

    5 stars
This quiche is soooo easy to make! I love how quick it was! 😊

  43. 4 stars
Gotta say, I was skeptical about the spinach and cheese combo, but wow! Turns out they work well together. Thanks for sharing!

  44. User avatar faustino.mohr says:

    3 stars
Can I use almond milk? I realy don’t drink normal milk.

  45. User avatar cody.gorczany says:

    2 stars
Too much cheese for my taste. Do you really need 2 cups?

    1. User avatar velva.bernier53 says:

      4 stars
I think the cheese is what makes it creamy and delicious! You could always use less if you want, though. 😊

  46. User avatar long.lueilwitz1965 says:

    GREAT RECIPE

    1. User avatar Draugr Death Overlord says:

      5 stars
Thanks! I can’t wait to try it!

  47. 5 stars
Made this for brunch and it came out super creamy. The Swiss flavor is perfect with the veggies. Will definitely make again!

    1. User avatar olene.smitham says:

      4 stars
Mine didn’t look that creamy (maybe I baked it too long). But I *did* taste the Swiss and it was good. Next time I’ll watch the timer closer.

    2. 5 stars
Yes! That creamy texture is the best part—Swiss + veggies really does work. Glad it came out golden too. 😊

  48. User avatar Russell Sprout says:

    5 stars
Made this for brunch and it turned out super good—nice balance of creamy egg and veggies. I used a little extra pepper because I can’t help myself.

    1. 3 stars
I tried it but mine came out kinda watery—maybe I used too much spinach? Also “1 cup milk” sounds small compared to 4 eggs… not sure. Still tasty tho.

    2. User avatar prudence.gutkowski53 says:

      5 stars
Brunch win! 😊 The creamy egg + veggies combo is exactly what I look for. Extra pepper is the correct move.

  49. User avatar elina.keebler82 says:

    4 stars
Yummy but I might add bacon next time. I just can’t resist bacon!

  50. 5 stars
Five stars! Perfect for brunch—looks fancy but takes no effort. Also, cooling helps a lot so it slices clean.

    1. User avatar celia.gutkowski says:

      4 stars
Huh, I don’t know if “no effort” is accurate 😂 Mine took a bit longer than 35 min. Also I used a bit more cheese and it tasted better. Still good though!

    2. User avatar edelmira.ruecker31 says:

      5 stars
Five stars from me too! It really does look fancy for how easy it is. And yes—letting it cool helps it slice way cleaner.

  51. 2 stars
Not sure about “easy” when you’re washing veggies and cracking eggs, lol. Also 35 minutes feels short for my oven—mine wasn’t golden until closer to 45. Still tasted okay.

  52. User avatar tonisha.nikolaus37 says:

    2 stars
I don’t know if I did something wrong, but my quiche didn’t set. It was a runny mess. So disappointed!

  53. User avatar bruce.krajcik1970 says:

    3 stars
Just okay. I’ve had better quiches. 😕

    1. User avatar aubrey.pouros says:

      4 stars
Maybe you just need to add more spices? I love mine with a bit of garlic! 🍳

  54. User avatar sanjuana.quitzon33 says:

    4 stars
I followed it pretty closely, but mine took a few extra minutes to set. Still came out golden and the filling was nice and creamy.

  55. 4 stars
I followed it pretty closely but my pie crust edges browned faster than the filling. Next time I’ll cover the crust with foil for the last 10 minutes. Still tasty though!

  56. User avatar jeremiah.grimes72 says:

    3 stars
Honestly, it tastes kinda like an egg bake with veggies. Not bad, just… not very “quiche” vibes. Would try again if I add mushrooms or more cheese.

    1. User avatar omer.farrell8 says:

      4 stars
Totally get what you mean—this is more of a veggie egg bake than a super “fancy” quiche. Adding mushrooms and extra cheese should fix the flavor a lot!

    2. 3 stars
Hmmm I kinda disagree 😅 Quiche is basically eggs + dairy + crust, so this counts. But yeah, mushrooms would be better than bell pepper sometimes—next time I’m doing more cheese too.

  57. User avatar vanesa.lynch15 says:

    1 star
Just “eggs + milk + spinach” sounds a bit bland. Also 375°F—how do you even know it’s done without a thermometer??

  58. User avatar marilou.kuvalis1997 says:

    4 stars
My kids loved it! Finally a recipe they ate without complaining. Thanks for sharing!

    1. User avatar ignacio.stiedemann58 says:

      5 stars
That’s awesome! I’m glad to hear your kids liked it. I had the same success with mine!

    2. User avatar Frost Atronach says:

      3 stars
Really? My kids won’t touch spinach! Maybe I should try making it without the spinach?

  59. User avatar marcelino.ratke says:

    5 stars
This quiche is so easy to make! My kids loved it. Will definitely make again!

  60. User avatar Snow Bear says:

    3 stars
Honestly, quiche is never as easy as people say… but this one wasn’t terrible. The veggies gave it flavor and the top got nice and golden.

    1. User avatar Grunthos the Flatulent says:

      5 stars
Totally agree—quiche looks effortless online, but it can get watery if you mess up the bake time. Yours sounds like it actually set and browned though, which is the win.

    2. User avatar byron.rippin says:

      4 stars
I made something like this once and I think I used cheddar… maybe that’s why mine tasted “off.” Also my spinach was frozen so it had extra water—still ate it, but yeah not as easy as they claim 😅

  61. User avatar Karen Haag says:

    2 stars
I tried this but I think my pie crust was too thick? The middle came out eggy and the top browned fast. Maybe my dish was deeper than yours…

    1. 3 stars
Huh, I made it once and mine was like… still kinda eggy in the middle too. I think 35 minutes is too short? Also maybe your crust being thick insulated it, so yeah deeper dish or thicker crust = not enough time. I’d just bake longer and maybe lower the temp a touch so it doesn’t brown so fast.

    2. User avatar mechelle.lockman17 says:

      5 stars
Totally could be the pan depth! If your pie dish was deeper, the egg filling needs a bit longer to fully set, and the top can brown before the middle firms up. Next time try covering the crust/top with foil after ~20 minutes, and bake until the center jiggles only slightly (or a knife comes out mostly clean).

  62. User avatar mary.bosco58 says:

    2 stars
I don’t get why people love quiche so much. This was just okay for me. Tasted kinda bland.

  63. 5 stars
Wasn’t sure about it. Eggs and spinach? But, wow! It’s a hit in my house.

  64. 3 stars
1 cup milk? That seems like too much. Should I just use half?

  65. User avatar genia.lebsack says:

    4 stars
The ingredient list is super straightforward. I used mozzarella because that’s what I had and it still tasted great. 35 minutes was right for my oven too.

  66. User avatar monte.blanda1 says:

    5 stars
Yum! My kids gobbled it up! Will make again for sure!

  67. User avatar chester.wuckert19 says:

    5 stars
Yummm, I added some feta and it was great! Super tasty and filling.

    1. 5 stars
Feta sounds like a great addition! I’ll definitely try that next time I make this.

    2. User avatar hermine.franecki12 says:

      2 stars
I dunno, quiche is just eggs in a pastry. How can it be super tasty? Sounds kinda basic.

  68. User avatar edison.hodkiewicz13 says:

    2 stars
375°F feels kinda low for me, I think. I baked at 400 and it was more browned, but the center was slightly less set.

  69. 5 stars
Wow, I love vegetarian meals that don’t require weird ingredients. Pre-made crust is genius. Would make again 100%.

    1. User avatar erwin.skiles1977 says:

      5 stars
Totally agree—pre-made crust saves so much time. The combo of spinach + tomatoes + Swiss is such a good flavor balance. Definitely making this for brunch.

    2. User avatar melvin.beahan55 says:

      4 stars
I tried something similar once but my quiche came out kinda watery. Still sounds good tho—do you squeeze the spinach or just toss it in? Also 35 min feels a little short depending on the dish size.

  70. User avatar soo.conn83 says:

    3 stars
Why is there so much cheese? It’s vegetarian not cheesy-pasty!
