A delicious and simple recipe for a vegetarian quiche.

Ingredients
  

  • 1 pie crust pre-made
  • 1 cup Swiss cheese shredded
  • 1 cup spinach chopped
  • 1/2 cup diced tomatoes
  • 1/2 cup red bell pepper diced
  • 4 eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Place the pre-made pie crust in a pie dish and set aside.
  • In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  • Spread half of the Swiss cheese onto the bottom of the pie crust.
  • Layer the chopped spinach, diced tomatoes, and diced red bell pepper on top of the cheese.
  • Pour the egg mixture over the vegetables.
  • Sprinkle the remaining Swiss cheese on top.

      I dunno… 1 cup Swiss feels kinda low. Also I baked mine and it was more like frittata than quiche, but maybe I undercooked it? Still tasty, just wish it was cheesier.
