      I get what you mean, but temp is usually more reliable than how it “looks.” For lamb, 145°F still comes out pink and juicy for a lot of people—especially after the 15-minute rest. If you like it more rosy/softer next time, try pulling it a couple degrees earlier (like 140–142°F).

    350°F for 1h30 seems a bit optimistic depending on the size of the leg. I checked at around 75 minutes and it was already close. Still delicious, but I’d suggest using the temp as the main guide, not the clock.
