These 5 ingredient easy enchiladas are a quick and delicious Mexican dish that you can make in no time!

Ingredients
  

  • 1 pound ground beef
  • 1 can red enchilada sauce 10 oz
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1/2 cup onions chopped

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add enchilada sauce to the skillet with the ground beef and mix well.
  • Place a small spoonful of the ground beef mixture onto a tortilla. Top with some shredded cheese and chopped onions. Roll up the tortilla tightly and place it in a greased baking dish. Repeat with the remaining tortillas and filling.
  • Pour any remaining sauce over the enchiladas and sprinkle with additional cheese.
  • Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.

    Meh. 20 minutes wasn’t enough for me—cheese wasn’t as bubbly as I wanted, and I had to bake longer.

      Yeah, I’ve had that happen too. 20 minutes is kinda optimistic depending on your oven and how much cheese you stack in there—mine usually needs closer to 25–30 for real bubbly tops. Next time I’d bake a bit longer (or cover with foil for the first 10, then uncover).

      I think the sogginess might be from too much sauce or not cooking them long enough. Try baking them a bit longer next time, and maybe use less sauce!

    Plain but solid. The flavor is there, especially with the onions. I added black beans and it made it way better.

    I followed it exactly and they were kinda salty with the enchilada sauce. If you’re sensitive to salt, I’d cut back on how much you pour.

      I had the same issue—10 oz of enchilada sauce is a lot. Next time I’m gonna use a low-sodium sauce or just warm it and pour less. Glad you said something.

      Maybe your cheese was salty too? I just use the whole can like the recipe says and it never tastes salty to me. Also enchilada sauce vary so much, but still… try using less sauce in the pan and not pour the extra on top? My guess.
