  • 1 cup warm almond milk 110°F
  • 1/2 cup sugar divided
  • 1/3 cup coconut oil melted
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons ground cinnamon
  • 1/2 cup brown sugar

Instructions
 

  • In a large mixing bowl, dissolve the yeast in warm almond milk along with 1 tablespoon of sugar. Let it sit for 5-10 minutes until it becomes frothy.
  • Add the remaining sugar, melted coconut oil, and vanilla extract to the yeast mixture. Stir to combine.
  • Gradually add the flour and salt, mixing until a dough forms. Knead the dough on a lightly floured surface for 5-10 minutes, until smooth and elastic.
  • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  • Roll the dough out into a large rectangle on a floured surface. Spread melted coconut oil over the dough, then sprinkle with brown sugar and ground cinnamon.
  • Roll up the dough tightly from one end to the other, then cut into 12 even pieces.
