Cucumber and Mint Salad

May 20, 2024

Sometimes the simplest dishes are the ones that make the biggest impression, and cucumber and mint salad is a perfect example. Crisp, cool cucumbers meet fragrant fresh mint in a light, zesty dressing that awakens the palate and complements just about any meal. Whether served as a starter, side dish, or part of a summer picnic spread, this salad is always a crowd-pleaser.

The star of the show is, of course, the cucumber. Its natural crunch and subtle flavor make it the perfect base for a refreshing dish. English cucumbers work especially well thanks to their thin skin and minimal seeds, but any type will do. Slice them thinly or into half-moons, depending on the texture you want.

Fresh mint brings a burst of coolness that pairs beautifully with the cucumber. The leaves are typically torn rather than chopped to preserve their delicate oils and aroma. Together, these two ingredients create a clean, cooling flavor profile that’s especially welcome on hot days or when serving spicy main dishes.

The dressing is light but full of flavor. A splash of lemon juice or white wine vinegar adds brightness, a drizzle of olive oil brings a hint of richness, and a touch of salt and pepper balances everything out. Some variations include a spoonful of yogurt for a creamy twist, or a pinch of sugar to round out the acidity.

This salad is best served chilled and made shortly before serving to keep the cucumbers crisp. You can elevate it with extras like thinly sliced red onions, crumbled feta, or a handful of pomegranate seeds, but the original version shines in its simplicity.

Perfect with grilled meats, spicy dishes, or as a palate cleanser between courses, cucumber and mint salad is a timeless recipe that proves fresh ingredients don’t need much to be delicious. Light, bright, and incredibly easy to make, it’s a recipe worth keeping in your rotation year-round.

    4 stars
I liked it a lot, but I think next time I’ll add a pinch more salt. Mine tasted a little flat before seasoning.

Omg, I love mint! This was delicious!

  18. User avatar miquel.cremin28 says:

    2 stars
Mint is overpowering for me. Like, I could barely taste the lemon. Maybe I chopped too much mint? Still edible though.

  19. User avatar devin.treutel46 says:

    3 stars
I didn’t have mint, so I used basil instead. It was still nice, but not the same.

    1. 4 stars
Basil sounds interesting! I might try that next time. Thanks for sharing your twist!

    2. User avatar zachery.krajcik says:

      2 stars
I dunno, man. Basil with cucumbers? That’s kinda weird, don’t you think?

  20. User avatar krysten.mertz33 says:

    3 stars
Not bad, but my kids were like ‘eww!’} Should’ve added some cheese or something.

    1. User avatar lavina.wiza69 says:

      3 stars
Kids can be picky. But I think it’s fresh and healthy, so maybe just keep offering it!

  22. User avatar ike.simonis21 says:

I’m skeptical about mint in cucumber salad—felt weird at first. But I tried it anyway and it’s actually pretty tasty. Still, I’d reduce mint next time.

  23. User avatar nathanial.jakubowski72 says:

    1. User avatar marylynn.cremin says:

I love that you added feta! It makes everything better. Can’t wait to try this myself.

    2. User avatar jettie.price0 says:

      2 stars
Cucumbers? Seriously? They taste like water! Maybe with a little chili it’s better, idk.

  24. User avatar my.stoltenberg says:

    4 stars
Loved it, but I might have used too much mint. Next time I’ll go a little lighter so it’s more balanced.

  25. User avatar solange.hamill3 says:

    5 stars
    Yum!

  26. User avatar yael.hill1993 says:

    2 stars
Why do you peel the cucumbers? I always eat the skin. Makes it crunchier!

  27. User avatar cheryl.senger2006 says:

    5 stars
Did you know cucumbers are 95% water? This is a great way to hydrate!

  28. User avatar Rose Gardner says:

    4 stars
Tried this tonight—pretty simple, but the flavor really pops. I didn’t peel my cucumbers and it still worked great. Would absolutely make again.

    1. User avatar hiram.halvorson46 says:

      3 stars
Maybe I’m doing it wrong but mine tasted kinda sour—would’ve helped to add a pinch of sugar? Also I didn’t chop the mint fine enough. Still edible though.

    2. 5 stars
So glad it worked for you! I always like skipping peeling too—gives it a little crunch. 😄

  29. User avatar suspiciousCommentator says:

    4 stars
I really loved this recipe! Quick to prep and super yummy. Made it for a picnic.

  30. User avatar Shaddam Corrino IV says:

    4 stars
Easy and healthy. Just make sure to chop the mint real fine.

    1. 5 stars
I tried this with some extra garlic and it turned out great! The mint really makes it fresh!

    2. User avatar rosalyn.crooks36 says:

      2 stars
I dunno, I thought cucumbers were supposed to be crunchy. This looks kind of mushy. 🤔

  31. User avatar lenita.luettgen1988 says:

    2 stars
I don’t like cucumbers. Can I use carrots or maybe lettuce instead?

  32. 5 stars
This salad is so refreshing! Perfect for summer days.

  33. User avatar johnie.hansen says:

    2 stars
My cucumbers got watery, and the salad felt kinda watery after chilling. Maybe I should salt them first? Still tasted okay though.

    1. User avatar vernita.damore64 says:

      5 stars
Yeah, salting first can help a lot. If you slice them and sprinkle with a little salt, let them sit 10–15 min, then pat/dry off the extra moisture before tossing—your salad should stay less watery after chilling. Also, thicker slices or fewer/shorter chill times can help too.

  34. User avatar parker.krajcik says:

    4 stars
Can confirm: chill time makes a difference. I let it sit 20-30 minutes and it tasted way better.

    1. User avatar monique.hudson says:

      5 stars
Agreed—letting it chill really lets the lemon + mint flavor sink in. 20–30 minutes is the sweet spot for me too.

  35. 3 stars
Why using fresh mint when u can use dried? Anyway, it turned out good.

  36. User avatar nicol.murray says:

    5 stars
Mint is like the best herb ever! I even put it in my drinks. 10/10!

  37. 5 stars
This salad is so refreshing! Love the mint taste!

  38. User avatar dania.swaniawski57 says:

    3 stars
Easy to make and very fresh. But a lil bland for my taste, could use more seasoning.

    1. User avatar anonymous_hacker says:

      4 stars
I totally get what you mean! I added some feta and it made it way better. Seasoning makes all the difference! 🧂

  39. User avatar Feral Falmer says:

    2 stars
Just cucumbers and mint… really? I expected more. Disappointed.

  40. 4 stars
I left out the olive oil. Still tasted good, but I think it helps.

  41. User avatar jacob.bode43 says:

    5 stars
So refreshing! The lemon and mint combo is spot on, and it’s super quick to throw together.

    1. 3 stars
I tried this but mine tasted a little too sour… maybe I used bigger lemons? Next time I’ll cut back the lemon juice and add more cucumber.

    2. 5 stars
Yes! I love how light and crisp it is—lemon really makes the mint pop. I usually chill it longer than the recipe says and it gets even better.

  42. 2 stars
I used dried mint because that’s what I had… definitely not the same. Still edible, but it lost that fresh flavor. Fresh leaves are the key.

  43. User avatar eldon.kuhlman36 says:

    5 stars
This salad is so refreshing! Perfect for summer. 🌞

  44. User avatar Kristel Kuphal DDS says:

    4 stars
Not gonna lie, I was skeptical about mint in a salad, but it’s actually refreshing. Next time I’ll slice the cucumbers thinner so it soaks up more lemon.

    1. User avatar delpha.reichel32 says:

      5 stars
I felt the same way about mint at first—now I’m sold. Thin slices really do soak up the lemon better. Definitely trying that next time!

    2. User avatar william.hayes33 says:

      3 stars
Mint in salad weird but… ok. I usually just chop cucumbers, not peel, and I’d add a pinch of sugar? Not sure if that’s right though. Your lemon amount seems good.

  45. User avatar andres.champlin9 says:

    4 stars
Yum! My summer favorite, thank you for sharing this simple recipe!

  46. User avatar armando.schuppe62 says:

    4 stars
Cucumbers are my favorite! I eat them every day. Thanks for this!

    1. User avatar rich.landlord says:

      4 stars
Cucumbers are great! I never thought of adding mint. I’ll try it out, thanks!

  47. 5 stars
Never thought to mix mint with salad. Revolutionary!

  48. User avatar randy.gutkowski29 says:

    3 stars
Did I miss something? It seems too plain, maybe add a little garlic?

  49. User avatar Gag Halfrunt says:

    1 star
Two thumbs down. This was boring. Needs more flavor!

    1. User avatar abraham.wilkinson49 says:

      4 stars
I found it refreshing! Sometimes simple is better, but I guess everyone has different taste.

  50. 3 stars
I didn’t peel my cucumbers and it was still fine, but the instructions are kinda vague about thickness. If they’re too thin, it gets soggy fast.

  51. 1 star
Wats a cucumber? Is that like zucchini?

  52. User avatar anonymous_hacker says:

    4 stars
1/4 cup mint leaves is tiny, I think. I doubled it and now it’s basically mint water lol but in a good way? My family loved it.

  53. User avatar Lumberjack says:

    3 stars
This is good, but the instructions are super minimal. Like how big should the cucumber slices be? I guess any size works, just feels vague.

  54. User avatar raccoon says:

    2 stars
I made it without peeling and used dried mint (oops). Still edible, but not the same at all. Fresh mint matters!

  55. User avatar tori.langworth says:

    1 star
I don’t understood how lemon juice and oil mix well. I think I’ll stick to store bought dressings.

  56. User avatar cyril.cummings says:

    5 stars
Best salad ever! Super easy and perfect for summer. Will make again!

  57. 1 star
Cucumber with mint??? Who eats that? Not for me.

  58. User avatar Theresa Green says:

    4 stars
Easy to make, but I forgot the olive oil. Still tastes good! 😂

  59. User avatar Frankie and Benjy says:

    3 stars
Super simple, but confusing to cut cucumbers. Do they need to be peeled first? I wasn’t sure.

  60. User avatar Piter De Vries says:

    4 stars
Why do you people use so much lemon? I just put a squeeze. Too sour!

    1. User avatar naoma.rohan53 says:

      3 stars
Too sour!! Really? I think lemon makes it fresh and tasty. Try not using so much if you don’t like it, it’s all about personal taste!

    2. User avatar ShanksOnePiece says:

      4 stars
I get what you mean! But lemon adds a nice zing, don’t you think? Maybe try just a little more than a squeeze next time? Just a thought!

  61. User avatar smartestRedditor says:

    4 stars
Simple and honestly delicious. I used bottled lemon juice by accident and it still tasted bright. Next time I’ll use fresh lemon though.

  62. User avatar qiana.batz2011 says:

    4 stars
Mint salads is a traditional dish in my culture. This was kinda different but nice.

  63. User avatar Draugr Deathlord says:

    5 stars
Simple but surprisingly flavorful. I used bottled lemon juice once and it was still good, but fresh lemon is way better.

  64. 5 stars
Not gonna lie, I wasn’t sure mint in a cucumber salad would work… but wow. It’s actually refreshing and not weird at all. Great quick recipe.

  65. User avatar sanjuana.beahan40 says:

    5 stars
This is so refreshing—perfect for hot days. The mint + lemon combo really pops. I didn’t even miss anything else.

    1. User avatar liberal.hero says:

      5 stars
Yes! This sounds exactly like the kind of quick side I actually make in summer. The lemon juice really makes the mint taste brighter.

    2. User avatar ross.sawayn72 says:

      4 stars
I tried a similar thing but I added garlic and it was… not great lol. Yours is simpler though, so maybe I’ll follow your steps this time and not overdo it.

  66. 4 stars
Quick and easy! Perfect for a picnic. Thanks for sharing!

    1. User avatar fletcher.muller72 says:

      2 stars
Sounds nice, but isn’t cucumber too watery? Not sure if I’d like it.

    2. User avatar jama.hodkiewicz1967 says:

      5 stars
I made this for my family, and they loved it! Super refreshing on a hot day.

  67. User avatar kelsie.stoltenberg says:

    2 stars
Why peel the cucumbers? I skipped that and it was fine. Also, I forgot to toss well and it still tasted okay… just not as even.

  68. User avatar valentine.krajcik1981 says:

    4 stars
I was skeptical about the mint in a salad. It sounds weird, but surprisingly it was delicious! Will make again.

  69. User avatar olga.zemlak81 says:

    3 stars
I just seen the title and thought it was dessert… LOL!

  70. User avatar liberal.hero says:

    2 stars
Cucumbers are ok, but mint in a salad? That just seems weird. Not for me.

  71. 4 stars
I’m skeptical about cucumber salads without yogurt, but this one surprised me. The olive oil helps a lot.

    1. User avatar rosamaria.hoeger33 says:

      5 stars
I’m with you—usually cucumber + no yogurt feels a little “meh” to me, but the lemon + olive oil really does make it pop. I tried adding a pinch more salt and it tasted way better.

    2. User avatar virgil.block says:

      3 stars
Wait, no yogurt? That’s wild 😂 I guess mint and lemon can do the job though. I might still add some sour cream or something, because I don’t trust salads without dairy lol.

  72. User avatar erline.becker says:

    5 stars
This tastes like summer, honestly. I used bottled lemon juice in a pinch and it was still good. Would love it with feta too.

  73. User avatar christian.goldner says:

    4 stars
I followed it pretty closely, but I think 2 tbsp lemon juice is a lot. Next time I’ll start with 1 tbsp and adjust. Still good though.

    1. User avatar burton.schiller2025 says:

      5 stars
Totally agree—2 tbsp lemon juice can be pretty sharp, especially with cucumbers. Starting with 1 tbsp first is a great call. Glad it was still good!

    2. User avatar ArabianNights says:

      4 stars
I actually love it tart 😄 But yeah, if your lemons are strong, 2 tbsp might overwhelm. Next time try half and you’ll nail it.

  74. User avatar evelyn.bauch68 says:

    3 stars
I followed the steps but my salad got watery after chilling. I think I should salt the cucumbers first or drain them. Flavor is good, texture just wasn’t.

  75. 3 stars
I followed the steps but mine came out a little too tart—probably my lemon was stronger. I’d reduce lemon juice or add a touch more olive oil next time.

  76. User avatar marcel.blanda2019 says:

    4 stars
Yo this is like… just cucumbers. 😅 But the lemon oil dressing makes it way better than plain slices. Would eat again.

  77. 1 star
Too many cucumbers. Who even eats that many? Should’ve doubled the other ingredients!

  78. 5 stars
So fresh and light! The mint + lemon combo is exactly what I crave in summer. I added a pinch of garlic powder and it made it even better.

  79. User avatar casey.fritsch41 says:

    2 stars
I dunno, cucumbers just make me feel funny. Why mint tho?

    1. User avatar miguel.boehm1987 says:

      4 stars
I totally get you! Cucumbers can be weird. Mint adds a fresh kick, though. It’s really good!

    2. User avatar michel.maggio3 says:

      3 stars
Mint helps with digestion or somethin’! But you do you. No pressure to eat it!

  80. 3 stars
Not sure about the mint amount—felt a little strong for me. I’m a picky eater though. Still pretty tasty overall.

    1. User avatar ramiro.williamson says:

      3 stars
Mint?? I tried something like this once and it tasted like toothpaste 😅 maybe your lemon was too much too? Next time cut mint in half and add less salt.

    2. User avatar cliff.rutherford17 says:

      5 stars
Totally get that—fresh mint can be punchy. I usually start with like 2–3 tbsp chopped mint and add more only if I want it stronger.

  81. 3 stars
Cucumbers were crunchy, but mine turned watery after a while. Maybe I didn’t chill it long enough. Still tasty—just need better timing.

  82. 5 stars
Mmm very yummy. I made it for lunch and ate it all before it got cold 😂

  83. User avatar ashleigh.koch59 says:

    3 stars
Okay but… too much chopping. I hate slicing cucumbers—wish there was a faster way, like ribbons or something.

  84. User avatar leslee.kuhn61 says:

    5 stars
This is so fresh and light—perfect summer side. The mint + lemon combo really pops. I added a pinch of garlic salt and it tasted even better!

  85. User avatar Rosana Wyman says:

    2 stars
Mint leaves are expensive where I live, so I used dried mint—didn’t taste the same and was kinda sad.

  86. 4 stars
Salt and pepper to taste is the kind of advice that makes me feel like a cook from the Middle Ages 😂 But honestly it turned out fine once I adjusted.

  87. 4 stars
Not bad, but peeling the cucumbers felt like overkill. I skipped it and it was still great.

  88. User avatar maria.hessel70 says:

    3 stars
Not bad, but the dressing felt a bit acidic. Could try adding a pinch of sugar or more olive oil.

    1. User avatar lou.yundt96 says:

      5 stars
Good point! I agree lemon can overpower—next time I’ll add a pinch of sugar or just a splash more olive oil and see if it balances out. Thanks for the tip.

  89. User avatar quentin.willms90 says:

    3 stars
I followed it exactly and it came out watery. Maybe I should salt the cucumbers first and drain them?

  90. User avatar hershel.torphy says:

    4 stars
Really good with grilled chicken. I also added sliced red onion and it tasted even better (but I don’t know if that’s allowed lol).
