Crêpes

August 30, 2023

Crêpes are a French classic that’s both simple to make and endlessly versatile. Thin, delicate pancakes, crêpes can be served with a variety of fillings, both sweet and savory. Whether you enjoy them for breakfast, lunch, dinner, or dessert, crêpes offer the flexibility to cater to any craving. Their light, airy texture makes them a delightful treat, and their neutral flavor pairs beautifully with almost anything.

Making crêpes is surprisingly easy, with a basic batter consisting of flour, eggs, milk, a pinch of salt, and a bit of melted butter. The key is to cook them in a hot pan with just a thin layer of batter, swirling the pan to spread it evenly and form a perfect, golden crêpe. The result is a paper-thin pancake that’s tender and slightly crisp at the edges, perfect for wrapping or folding around a variety of fillings.

For sweet crêpes, try filling them with fresh fruit, chocolate, whipped cream, or a drizzle of maple syrup. Nutella and banana is a classic combination, or you could fill them with lemon curd for a zesty, citrusy treat. For a truly indulgent dessert, a sprinkle of powdered sugar and a splash of liqueur, such as Grand Marnier or Cointreau, can elevate the flavor.

On the savory side, crêpes become a canvas for delicious fillings like sautéed mushrooms, spinach and cheese, or ham and eggs. Crêpes Suzette, a famous French dish, combines crêpes with a sauce made of orange juice, zest, butter, sugar, and orange liqueur, often flambéed for dramatic effect.

The beauty of crêpes lies in their versatility. They can be served as a quick snack or an elegant entrée, dressed up or kept simple, depending on the occasion. Whether you’re making them for a festive brunch or a cozy evening at home, crêpes are guaranteed to bring joy to your table.

What is a crêpe?

A crêpe is a thin, delicate French pancake made from a simple batter of flour, eggs, milk, and butter. Unlike American pancakes, crêpes are not fluffy and are often rolled or folded with sweet or savory fillings.

Are crêpes sweet or savory?

Both! Sweet crêpes are often filled with fruit, chocolate, or whipped cream, while savory crêpes (called galettes in French) can include cheese, ham, eggs, or vegetables.

Do I need a special pan to make crêpes?

While a crêpe pan is helpful because of its flat surface and low sides, you can make crêpes in any non-stick skillet or frying pan.

Can crêpes be made ahead of time?

Yes! You can make crêpes ahead and store them in the refrigerator for up to 2 days, or freeze them for up to 2 months. Just layer them with parchment paper to prevent sticking.

Why is my crêpe batter too thick or lumpy?

Crêpe batter should be very thin—almost the consistency of heavy cream. If it’s too thick, add a bit more milk. To avoid lumps, mix the batter thoroughly or use a blender for a smooth texture.

Are crêpes gluten-free or dairy-free?

Traditional crêpes contain flour and milk, but they can easily be made gluten-free with alternative flours (like buckwheat or rice flour) and dairy-free with plant-based milks and butter substitutes.

What is the difference between a crêpe and a pancake?

Crêpes are thinner, larger, and have no leavening agent (like baking powder). Pancakes are thicker and fluffier due to the leavening.

Delicious 😋 I used lemon + sugar and they were gone instantly. Would make again!

Honestly, I don’t get why people love these so much. It’s basically a dessert wrapper. The recipe is fine, just not my thing.

Crêpes? More like flopé. Tried twice and they just never came out right!

    1. 4 stars
I feel you! Crêpes can be tricky. Maybe try less milk next time? They gotta be thin! 🤔

Don’t give up! I failed my first few tries too. Just need practice, like flipping them better.

I don’t have a griddle so I used a nonstick pan. It still worked, but I should’ve oiled it more—first one stuck and I had to pretend it was a “sampling” crêpe 😅

    1. User avatar andera.wilderman says:

      5 stars
Good save 😂 Nonstick pans can be finicky with crêpes—extra oil/butter definitely helps. “Sampling” crêpes are the best kind though 😄 What toppings did you go with?

  5. 1 star
Too much flour! Mine were thick like tortillas… what’d I do wrong?

    I don’t have a griddle, can I use a toaster? Just wondering.

  7. 5 stars
Flour + eggs + milk is basic, but the result is surprisingly elegant. I made lemon sugar topping and it tasted like a café.

  8. User avatar chuck.wiegand2018 says:

These turned out perfectly thin and lacy on the edges! The batter was super smooth, and cooking on medium-high gave me that nice light-brown color. I filled mine with Nutella and strawberries—so good.

I added some vanilla to the batter and they were heavenly! Perfect for breakfast!

    1. User avatar breann.hodkiewicz says:

Vanilla? That sounds great! I’ll have to try it next time. Thanks for the tip!

  10. User avatar tracey.reichert43 says:

Ok but crepes are supposed to be paper-thin—mine were more like pancakes. Flavor was good, but texture was off. Any tips for thinner batter?

  11. User avatar randall.dach95 says:

    4 stars
I can’t believe how easy these were to make. Mine didn’t look as nice, but they tasted great!

  12. 3 stars
I followed the recipe but didn’t have butter, so I used margarine. They worked okay, I guess.

  13. User avatar albert.boehm says:

Soo good!!! 👍 Best breakfast ever!

I totally agree! These crêpes are life-changing! 😍

  14. 4 stars
I followed the recipe but my batter was a little lumpy at first. After whisking longer it smoothed out, and the crêpes cooked evenly. Good base recipe.

  15. User avatar Galaxia Woonbeam says:

Wasn’t sure about the sugar, but it balanced well! I used honey instead, yum! 🤤

    1. User avatar Guillermo Hahn V says:

      5 stars
Honey sounds like a great alternative! Can’t wait to try this too. 😊

  16. User avatar genie.tillman6 says:

I followed it exactly and my crêpes stuck like crazy. I greased the pan, but it was like the surface was cursed. Maybe my pan isn’t nonstick enough?

  17. User avatar Effrafax of Wug says:

    5 stars
These crêpes turned out amazing! Fluffy and delicious. Can’t get enough of them!

    1. 5 stars
I tried this recipe too and it was great! But I added some vanilla extract for extra flavor. Yum!

  18. 4 stars
My first few were a little rubbery, but I think my pan was too hot. Once I lowered the heat, they cooked evenly and looked like the picture (mostly).

  19. 5 stars
Yummy! I filled mine with Nutella and bananas. So good!

    1. User avatar alison.kiehn18 says:

      3 stars
Nutella? Isn’t that kinda too sweet? I prefer just some fruit, but whatever floats your boat!

    2. User avatar francoise.crooks58 says:

      5 stars
That sounds amazing! Nutella and bananas are such a perfect combo. Can’t wait to try it that way!

  20. User avatar isiah.heathcote1960 says:

I used salted butter and skipped the extra salt—still turned out pretty tasty. I think the salt is flexible depending on your butter and toppings.

    1. User avatar erick.hills1958 says:

      5 stars
Good call! Salted butter + skipping the extra salt makes sense—some toppings (cheese, salted fillings) can already bring plenty of flavor.

  21. User avatar Bradly Denesik says:

    3 stars
The recipe is fine, but why do all crepe recipes have to use eggs? Can’t we make them eggless?

  22. User avatar Duncan Idaho says:

    4 stars
Easy to make but mine came out kinda thick. Maybe I added too much batter? Still tasted nice with Nutella!

  23. User avatar zack.rogahn2026 says:

    5 stars
Five stars. So easy. I made them for breakfast and everyone went back for seconds.

  24. 1 star
Not good. My batter was lumpyy and it stuck to the pan. Why don’t people share the secret to non-stick??

  25. User avatar alva.bahringer49 says:

    3 stars
I didn’t have a griddle so I used a frying pan. Worked fine, but I was impatient and didn’t wait for the bottom to brown—so the flip was a disaster. Still ate them anyway 😅

  26. 4 stars
I used almond milk instead and they were still really good! Vegan option!

    1. 2 stars
I don’t know if almond milk is the same. Da eggs and butter are important for flavors. Not sure it would taste good!

    2. User avatar carlyn.boyer says:

      5 stars
That’s a great idea! Almond milk works really well in recipes like this. I’m glad it turned out good for you!

  27. User avatar leopoldo.wiegand says:

    5 stars
Tasty! But next time, I will add a pinch of cinnamon for flavor.

  28. User avatar erick.koss92 says:

I’m skeptical of “about 2 minutes.” Every stove is different. Mine took closer to 3-4 minutes to get the light brown color.

  29. 2 stars
I’m skeptical about cooking time being ‘about 2 minutes’ for both sides. My stove runs hot and it took way longer. But once I adjusted, it was okay.

  30. User avatar tory.lynch22 says:

    2 stars
I don’t know, these turned out kinda rubbery for me. Maybe I did something wrong?
