I followed it pretty much exactly and it came out super silky. The celery flavor is mild (in a good way), not too “stringy” or weird.
Made this tonight—so cozy. I simmered a bit longer and the celery flavor really mellowed out. Blending with an immersion blender was super smooth.
Mine turned out a little thin, I think I needed to simmer longer or use less broth. Still good though, just not as thick as I expected.
