    The instructions are clear, but I don’t always get the right “thickens” stage. I kept stirring and it finally thickened, so patience helps.

    Pretty good, but I think 10 minutes isn’t enough if your corn is still a bit firm. I simmered closer to 20 and it thickened way more. Still tasty!

    I followed the steps, but mine never got as thick as I wanted. I simmered longer (like 25 min) and it helped some. Maybe my corn was too watery? Still good!

    This is a solid weeknight side. Fresh corn is best, but frozen works fine too—just don’t rush step 4 or it’ll be more like creamed-ish soup.

      Agreed—made this last night. I used frozen corn and it came out really creamy. I was a little impatient on step 4 once (oops) and yeah, it turned into more of a thin soup, but letting it simmer longer fixed it. Great weeknight side!

    Mine didn’t thicken much after 15 minutes. I think my heat was too low? Still tasted good though, just more like creamed corn soup.

    Made it once and it was fine, but mine didn’t thicken much after 15 minutes. I simmered longer and it still stayed a bit runny—maybe my coconut milk was different?

      Mine did thicken but only after closer to 20-25 minutes. I also used full-fat coconut milk, not light. Maybe check your heat level too—medium-low helps it reduce without scorching.

      Hmm that sounds like the coconut milk might be the culprit. Some brands are thinner and won’t “cream” the same. Next time, try simmering with the lid off and stirring more so it reduces.

    Super easy—5 minutes to cook the corn and then just simmer. I liked the pepper, but next time I might use less because it got kinda strong.
