Ingredients
  

  • 4 cups corn kernels fresh or frozen
  • 1 cup coconut milk full fat for creaminess
  • 2 tablespoons butter unsalted
  • 1 tablespoon sugar optional, adjust to taste
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper freshly ground

Instructions
 

  • In a large skillet, melt the butter over medium heat.
  • Add the corn kernels and cook for about 5 minutes, stirring occasionally.
  • Pour in the coconut milk and add the sugar, salt, and black pepper. Stir well to combine.
  • Let the mixture simmer for 10-15 minutes, stirring occasionally, until the corn is tender and the mixture thickens.
  • Taste and adjust the seasoning if needed. Serve warm as a side dish.
