Ingredients
  

  • 2 cups shredded cabbage
  • 1/2 cup shredded coconut
  • 1/4 cup cilantro chopped
  • 1/4 cup mint leaves chopped
  • 1/4 cup peanuts chopped
  • 2 tbsp lime juice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the shredded cabbage, shredded coconut, chopped cilantro, chopped mint leaves, and chopped peanuts.
  • In a small bowl, whisk together the lime juice, soy sauce, honey, sesame oil, salt, and pepper.
  • Drizzle the dressing over the cabbage mixture and toss to combine.

    I tried this and honestly the dressing was kinda oily for me. Sesame oil is strong. I ended up using less and it improved a lot.

    Could use more instructions like how fine to chop everything. I guessed and the cilantro/mint pieces were too big. Still edible though.

      Oof, I get that. Coconut + cabbage is a weird vibe at first, but the lime/soy/honey balance is supposed to make it work. If yours was salty even without extra salt, maybe the soy sauce brand is extra intense—try less soy next time (or use low-sodium).

      I tried something like this once… but I think I used sweetened coconut and it was waaaay off. If you use unsweetened it makes sense. Also, I always eyeball the honey—maybe that’s why mine tasted different.

    I followed it exactly and it came out watery. Not sure if my cabbage was too wet or if the dressing ratios are off, but the leftovers were not great.

      Hmm, I think the ratios are a little off—2 tbsp lime + 2 tbsp soy + 1 tbsp honey + 1 tbsp sesame oil is a lot liquid for only 2 cups cabbage. Also soy makes it seem “thin” fast. Next time I’d use less lime or let it sit 5 min then toss again? Otherwise it turns sad.

      Sorry that happened! I’ve made it a few times—watery usually means the cabbage was sitting wet or got tossed too long. Try squeezing/shaking the cabbage after shredding, and also add the dressing gradually (you might not need all of it).

    Tried it exactly as written and it was okay. The coconut is good, but the soy sauce overpowered the cilantro a bit. Still will make again, just tweak ratios.

    My cabbage was way too wet at first so I dried it a little. After that it came out really good. The dressing was strong though—next time I’ll start with less sesame oil.

      Ooo I think halving the honey is a smart move if you’re worried. The lime + soy + sesame oil usually balance sweet pretty well, but you can always taste and add more.
