    I think 350°F is too high? Mine cracked a lot and the crust got dark before the center was done. Maybe I’ll cover it with foil next time.

      350°F shouldn’t be *wildly* high for a 9×5 loaf, but cracking + dark crust can happen if your oven runs hot or if the loaf is positioned too high. Foil tenting halfway is a great fix—also try baking on the middle rack.

      Huh, mine always cracks a bit too. I usually just turn it down to like 325°F and bake longer (closer to 60-70 min). Dark before center sounds like your toothpick might be hitting the crusty outside? I’d check with a skewer deeper in the middle.
