Ingredients
  

  • 1 tbsp olive oil
  • 1 onion sliced
  • 1 bell pepper sliced
  • 1 zucchini sliced
  • 1 cup cooked rice
  • 1 cup black beans drained and rinsed
  • 1 tbsp chipotle powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 avocado sliced
  • 1/4 cup cilantro chopped
  • Lime wedges for serving

Instructions
 

  • In a large skillet, heat the olive oil over medium heat.

    Not bad, but it needed more salt in my opinion. Also I don’t usually rinse black beans, so I maybe should’ve followed that part more closely.

      Huh, I don’t rinse black beans either 😅 I kinda figured it’d be fine. This still tasted good, but my texture was more “bean-y” and less smooth. Maybe you’re right to follow it closer.

      I think the avocado browning prob changed the whole vibe, lol. next time try tossing it with a little lime juice before serving. also… 1 tbsp chipotle powder seems like a lot? I only use like a tsp and it’s plenty spicy.

      Ugh, that’s frustrating! Your notes sound super spot-on—if the chipotle powder was stale or the spices sat too long, the flavor can go totally flat. I also find it helps to bloom the spices in the skillet for 30-60 seconds after you mix them with the veg, and definitely salt to taste at the end.

      Totally get that—this is one of those recipes where “to taste” can still feel flat. I usually add a little extra lime right at the end and sometimes a tiny splash of apple cider vinegar to wake it up.       Huh, I thought chipotle powder would be the main flavor. Maybe you used regular chili powder instead of chipotle? Also 1 tbsp chipotle + 1 tsp cumin seems like a lot—could explain the “earthy” taste. Try less cumin and more lime at the end!

      Totally could be the cumin/brand. I’ve noticed some cumin is super earthy if it’s old or ground too fine. I usually cut it to 1/2 tsp and add a pinch of brown sugar or extra paprika to bring the warmth back.
