Cheese Babka

March 25, 2026

Cheese Babka is a rich and comforting pastry that combines soft, fluffy dough with a creamy, slightly sweet cheese filling. Known for its beautiful swirled appearance, this baked treat is both visually impressive and incredibly satisfying, making it perfect for breakfast, dessert, or special occasions.

The dough used for babka is typically soft and lightly sweet, enriched with ingredients that give it a tender texture. Once prepared, it is rolled out and generously spread with a smooth cheese filling. The filling is often made from cream cheese or a similar soft cheese, blended with sugar and sometimes a hint of vanilla or lemon zest for added flavor. This combination creates a balanced taste that is both rich and slightly tangy.

After the filling is added, the dough is rolled into a log and then twisted to create the signature swirled pattern. This process not only gives Cheese Babka its distinctive look but also ensures that every slice is filled with layers of soft dough and creamy filling. Once shaped, the babka is baked until golden brown, filling the kitchen with a warm, inviting aroma.

One of the most appealing aspects of Cheese Babka is its versatility. It can be served warm or at room temperature, and it pairs beautifully with Irish coffee or tea. Some variations include adding raisins or a light glaze on top, which enhances both the flavor and presentation. Despite its elegant appearance, the recipe can be approachable with a bit of patience and attention to detail.

Cheese Babka is often associated with traditional baking and family gatherings, where homemade pastries bring people together. Its combination of soft texture and rich filling makes it a standout option among sweet breads. Each bite offers a perfect balance of sweetness and creaminess, making it a memorable treat.

Whether you are baking it for a special occasion or simply to enjoy something homemade, Cheese Babka is a rewarding recipe. Its beautiful layers, comforting flavor, and timeless appeal make it a delightful addition to any table.

Cheese babka? Sounds kinda weird but I tried it anyway. Surprisingly good. I might bake it longer—mine was a little pale in the middle.

I tried this but it didn’t rise. I must’ve done something wrong. 😩

  3. User avatar denice.okeefe74 says:

Can I use a different type of cheese? Not a fan of cream cheese!

    1. User avatar reanna.kutch1954 says:

      5 stars
Yes, you could try using ricotta or mozzarella instead! Just keep in mind the texture might change a bit. Good luck!

  4. 4 stars
Dis is not bad at all 😅 but mine look ugly. Tasted good tho. I think my pan was too small.

Absolutely delicious! This is the perfect recipe for a cozy weekend brunch. Highly recommend!

I’ve never baked before and it turned out great, so thanks!

    1. 5 stars
Wow, that’s awesome! Congrats on your first bake! Cheese Babka is such a great choice for beginners.

    2. 3 stars
Really? Never baked before? That’s a bit hard to believe. Are you sure you followed all the steps?

  7. 4 stars
Cheese and bread together are just heavenly! Who doesn’t love babka? Definitely making this again!

  8. User avatar audie.quigley says:

    2 stars
It seemed easier than it was… I’ll just stick to buying it from the bakery.

    1. User avatar Sand-Dial says:

      4 stars
I feel you! Sometimes it’s just easier to buy it. The bakery’s cheese babka is usually perfect! Could never do all that kneading and waiting.

    2. User avatar halflife4 says:

      3 stars
But didn’t you give it your best shot? It can be tricky, but the homemade taste is worth it! 😉

I don’t get why everyone loves this so much. Mine didn’t rise well and it was too dense. I followed the recipe. 🤷‍♂️

So good! Perfect sweetness and the cheese is just right. Family loved it!

Babka is actually for dessert, right? Not savory?

  12. User avatar Miss Dorian Klein says:

This recipe is amazing! I love cheese babka and this turned out so fluffy and delicious. Will definitely make again!

    1. User avatar Falmer Spellsword says:

I’m so glad you enjoyed it! Cheese babka is one of my favorites too. Your enthusiasm is contagious!

  13. 3 stars
Babka, or is it cake? Not a fan of the cheese, but my gran used to make a chocolate version. Might try adding chocolate next time.

  14. User avatar kandice.mayer says:

I only have 2 cups of flour left, will it work? Or should I just go buy more? Help!

    1. 4 stars
You could try using just 2 cups and see how it goes, but it might be a bit dense. Maybe add some more milk if it seems too dry?

    2. User avatar halflife4 says:

      2 stars
Nah, get more flour. You can’t skimp on the ingredients for something like this. Follow the recipe right!

  15. User avatar abe.bartell48 says:

    5 stars
The instructions are clear, rise times were accurate for me, and kneading to elastic really matters. I used European butter too and it made a difference.

    1. 5 stars
Yes! Kneading till elastic is the whole game. I’ve had it turn out dense when I rush that step. Glad the European butter worked for you too—so much flavor.

  16. User avatar tommie.schinner98 says:

    3 stars
Ok but… 110°F milk? That’s like super specific. I kinda guessed and my yeast didn’t foam at first. I waited longer and it was fine, but I was stressed. Dough rise took longer than 1.5 hours for me. Flavor was still decent.

    1. User avatar barrett.rath says:

      5 stars
Yeah, 110°F is one of those “sweet spot” temps—too cool and yeast gets lazy, too hot and it can get killed. If yours didn’t foam at first but turned out fine, you probably just needed a bit more warmth/time. Stress totally understandable 😅

  17. User avatar carolynn.mueller says:

    2 stars
I tried it, but my dough didn’t rise. Maybe my yeast was old. 😕

  18. 5 stars
Just made this and it smells heavenly! Perfect for breakfast. My kids can’t wait to try it in the morning. 😊

  19. User avatar mozella.hettinger26 says:

    4 stars
Pretty good overall, but I had to add a bit more flour during kneading—my dough was too sticky. Also, my rise took closer to 2 hours in a cooler kitchen. Still tasted amazing.

    1. User avatar morris.harvey1990 says:

      5 stars
Totally agree—this dough can be pretty sticky if the flour isn’t measured exactly. I’ve also found my rise runs long when the kitchen is cool (like 2 hours-ish). Still, that cream cheese filling is worth it.

    2. User avatar Gail Andrews says:

      3 stars
Hmm I followed the instructions and mine was sticky too, but I’m wondering if the yeast was the issue? I didn’t check the milk temp super carefully (just “warm”), so maybe that. Would adding flour change the texture much?

  20. User avatar Magrathean sperm whale says:

    3 stars
I followed it exactly and the dough rose, but the filling kind of leaked out at the seams. Maybe I rolled it too tight or didn’t seal well. Flavor was still good though.

  21. User avatar megan.rodriguez15 says:

    4 stars
I followed the recipe pretty closely, but my dough was a bit sticky even after kneading. Still baked up nice though—golden and tasty. Maybe add a splash more flour next time?

  22. 2 stars
Way too sweet for my taste. I know it says 1/4 cup sugar in the filling, but I could’ve used half that. Texture was okay but flavor is not for me.

    1. 4 stars
Totally hear you. With only 1/4 cup sugar in the filling, I’m surprised it felt that sweet—maybe the cream cheese brand or how soft/spreadable it gets changes the perception. Next time I’d try reducing the filling sugar (like you said) and maybe add a tiny pinch of salt to balance it.

  23. User avatar abigail.goldner says:

    3 stars
Eh… mine didn’t really rise the second time. I’m pretty sure my yeast was old (lesson learned). The texture was more like a sweet bread than babka, but it still tasted good with coffee.

  24. User avatar esther.wunsch says:

    3 stars
This is more like a quick cheese bread to me than traditional babka, but I enjoyed it. Next time I’d add cinnamon or chocolate swirl.

  25. User avatar rich.landlord says:

    4 stars
Super easy and not too many steps. I accidentally used salted butter once and it was fine—maybe just reduce the added salt next time.

  26. User avatar smartestRedditor says:

    4 stars
Not gonna lie, I was nervous about the yeast step, but the foamy test happened after like 7 minutes. Followed everything and got a really tasty babka.

  27. User avatar anton.kihn69 says:

    3 stars
Active dry yeast fresh?? Mine was kinda old and it foamed but not a lot. Dough rose slower than expected, but baking saved it. Would probably use fresher yeast next time.

  28. User avatar royal.russel2011 says:

    3 stars
Meh, too much cheese for my taste. I prefer a sweeter babka.

  29. User avatar jalisa.baumbach says:

    2 stars
350°F for 45 minutes seems a bit long? My top got brown way before the middle felt done. I’d lower the temp next time or cover with foil. Otherwise, flavor was nice.

  30. User avatar jamika.howell82 says:

    1 star
2 1/4 teaspoons yeast… is that right? I used what it said but then it was meh. Also my oven runs hot so… yeah.

  31. User avatar marcelene.cole30 says:

    2 stars
Disappointed. Mine came out doughy and dense. What did I do wrong?

  32. User avatar Sabre Cat says:

    5 stars
This is my first time making babka and it was kinda intimidating but the steps are clear. I used room temp eggs/butter and it came together easily. Family loved it.

  33. User avatar Chauncey Cormier says:

    5 stars
Made this last night and it actually turned out fluffy. The rise times were right on the money for me. Cream cheese filling was super creamy too—definitely making again.

  34. User avatar anamaria.herzog12 says:

    1 star
Wasn’t this a dessert? Not sure about cheese in a sweet bread…

    1. User avatar moises.stracke5 says:

      5 stars
Cheese in sweet bread is actually common in some cultures! Think of it as a sweet cheese danish. Give it a try! 😊

    2. 2 stars
I don’t know about this… Cheese in bread? Sounds weird to me. I stick to chocolate or fruits for dessert, thanks.

  35. User avatar Paul "Muad'Dib" "Usul" Atreides says:

    3 stars
The filling is good but it feels like a small amount compared to the dough. I ended up craving more cream cheese layer and added a little extra sugar and filling. Turned out great.

  36. User avatar Edmundo Greenholt says:

    4 stars
The dough was super sticky at first. I ended up adding the remaining flour slowly until it kneaded right, which helped. Also, warm room + longer rise made a big difference. 9/10 for effort.

  37. User avatar tommy.swift says:

    4 stars
Easy to make! I made it with my kids and we had so much fun. 😊

    1. User avatar katharina.johnson1957 says:

      5 stars
Sounds like a blast! I can’t wait to try it with my kids too! 🎉

    2. User avatar margarito.kemmer96 says:

      3 stars
Really? It looks kinda complicated with all that rising time and stuff. Is it worth it?

  38. User avatar Tom Bombadil says:

    5 stars
Super duper tasty!!! Best babka recipe I’ve found! Yum!

  39. 5 stars
This cheese babka is amazing! So fluffy and flavorful.

  40. User avatar Flame Atronach says:

    5 stars
Cheese babka is my weakness. 😅 This recipe looks legit, but I want to see if there’s a step missing for shaping/spiral. I’m gonna try it anyway!

  41. User avatar Frostbite Spider says:

    3 stars
Honestly, I expected more from a cheese babka. I think it could use some herbs.

    1. User avatar ricardo.wyman91 says:

      4 stars
I totally get what you’re saying! I added some rosemary once and it gave it a nice kick. Maybe some garlic powder too? Worth a try!

  42. User avatar jana.muller2023 says:

    5 stars
Delicious!!! I couldn’t stop eating it! Next time, I’ll add some chocolate too.

  43. User avatar todd.mohr58 says:

    4 stars
I think the yeast part matters a lot. My milk wasn’t warm enough at first, and it never got foamy. Once I warmed it properly, it worked. So yeah—watch that temp!

  44. User avatar Android 16 says:

    3 stars
My babka cracked on top and I’m not sure why—maybe I rolled too tight or didn’t let it rise long enough. It still tasted good, just didn’t look pretty.

    1. User avatar nella.brakus says:

      4 stars
Ahh that happens! Cracking on top is usually from either the second rise going a bit too long or the dough being a touch dry/tight after kneading. Next time, try a slightly softer dough (hold back 1-2 tbsp flour) and watch for it to look puffy—not ballooned. Also, don’t over-press the dough when you roll it.

    2. User avatar Gangplank says:

      5 stars
Maybe your oven runs hot? 350°F but like, my oven be lying 😅 If the babka bakes too fast on top it can crack. I’d check with an oven thermometer and tent with foil if it’s browning early. Still glad it tasted good though!

  45. User avatar leonor.gleason says:

    3 stars
Mine didn’t brown much after 45 minutes at 350°F. Maybe my oven runs cold? Still tasted good though, just pale.

    1. User avatar Michael83 says:

      4 stars
Yeah, that sounds like a common issue—if the oven runs cool, 45 minutes might not be enough to get that deep browning. You can try a slightly higher temp next time (like 375°F) or bake a bit longer, tenting with foil if it starts over-browning before the inside is done. Also, make sure the loaf is fully risen before baking; a pale bake can happen when it’s still under-proofed.

  46. User avatar coleman.king4 says:

    4 stars
I followed everything but the dough was super sticky when I kneaded. Adding the extra flour (from the 4 cups total) helped, and after that it was smooth. The result was honestly worth the hassle.

  47. User avatar argentina.hand1 says:

    4 stars
Not gonna lie, 45 minutes at 350°F feels long/short depending on your oven. Mine browned fast but the center needed a little more time. Otherwise good flavor!

    1. User avatar earl.blick says:

      5 stars
Totally agree—ovens vary a lot. Mine takes closer to 50–55 min to get that set center without drying out. I just tent with foil if it browns too fast.

  48. User avatar reyes.stroman69 says:

    5 stars
Made this for brunch and it turned out super fluffy. The cream cheese filling stayed creamy (not runny), and the top got that perfect golden color. Will definitely bake again!

  49. User avatar thad.schaden19 says:

    1 star
    meh

    1. User avatar somer.rath18 says:

      2 stars
I tried similar and it came out kinda dense. Maybe the yeast wasn’t really fresh or the milk temp was off. 110°F is pretty specific—worth double-checking!

    2. User avatar luke.renner96 says:

      3 stars
meh 😅 could be good though—love cheese babka, just seems like a lot of steps for “about 45 minutes” baking.

  50. 3 stars
I messed up the filling a little and it got too runny when I spread it. Still tasted creamy, but my roll wasn’t as neat.

  51. User avatar darnell.macejkovic23 says:

    2 stars
Why is it called babka if there’s no egg wash or chocolate? Idk. The recipe works, but it feels incomplete.

  52. User avatar harold.harber says:

    5 stars
Made this last night and it turned out beautifully—soft, fluffy, and the cream cheese filling is perfect. I let it rise a bit longer since my kitchen was cool, but it still worked.

    1. User avatar lenard.harber2015 says:

      5 stars
Love hearing that! The longer rise in a cool kitchen is exactly what I’d try too—glad it stayed soft and fluffy. Thanks for sharing!

  53. User avatar rivka.hills1977 says:

    4 stars
Babka is my weakness 😅 The cheese filling is yummy, but 45 minutes was maybe a tad long for my oven—top got darker than I expected. Still tasted great though!

  54. User avatar allen.witting36 says:

    4 stars
The instructions are clear, but 4 cups flour feels like a lot. I ended up using closer to 3 1/2 cups because my dough was already smooth and elastic after kneading.

  55. 2 stars
I think 110°F milk is too hot? I proofed the yeast and it never got foamy. I had to restart with new yeast and it worked better.

  56. User avatar Henry Smitham says:

    5 stars
Made this today and it turned out so fluffy. The filling stayed creamy instead of melting away—exactly how I wanted. Definitely saving this recipe.

  57. User avatar Jack Dupp says:

    4 stars
Pretty good, but mine leaked a little butter as it baked. Still tasted great though. Next time I’ll make sure the dough is rolled evenly and not too tight/packed. Also, 350°F for 45 min felt a bit long for my oven—closer to 40 might be better.

  58. User avatar Demon King Piccolo says:

    5 stars
Made this last weekend—so fluffy and the filling stayed creamy. I did need a few extra minutes in the oven to get it fully golden. Definitely adding to my holiday rotation!

  59. User avatar Venita Kling says:

    5 stars
Made this last night and it turned out so soft and swirly! The foamy yeast step was key for me—mine was a little slow until I used properly warm milk. Great flavor, not too sweet.

  60. User avatar Colin the Security Robot says:

    3 stars
Not bad, but I expected more cheesiness. I could barely taste the cream cheese filling, and I even used all of it. Maybe I should have layered it thicker.

    1. User avatar kattie.osinski25 says:

      4 stars
I’d also check the bake time/temp—45 min at 350°F can sometimes dry the dough out and make the filling taste subtle. Next time, try a few minutes less or cover loosely with foil if it’s browning fast.

    2. User avatar angel.mcglynn83 says:

      4 stars
Hmm, if you used all the filling and still couldn’t taste it, maybe it got baked in too thin or the loaf was rolled too tight. I like to make a thicker layer and leave a little extra near the seam so it doesn’t hide inside.

  61. User avatar Charles Darwin says:

    2 stars
I don’t get why people call it babka without chocolate. This was more like sweet cheese bread. Tasty, sure, but I wanted the classic vibe.

    1. User avatar Ilban Richese says:

      4 stars
Honestly, I get you—“babka” in my head is the chocolate swirl too. This one still sounds really good, but calling it *cheese babka* makes more sense than just “babka” by itself.

  62. User avatar Gail Andrews says:

    3 stars
Not bad, but my dough felt too stiff after I added all the flour. I ended up adding a splash more milk and it improved. Next time I’ll be more careful with the flour amount.

  63. User avatar matilde.shields says:

    3 stars
My yeast did NOT foam at first—turns out my milk was too hot. After starting over with correct temp it worked, so maybe double-check that step.

    1. User avatar rupert.lang65 says:

      5 stars
Oof, same issue happened to me once—heat can kill the yeast. Thanks for the reminder to watch the milk temp; I always aim for ~110°F too.

  64. User avatar Teofila Jast says:

    5 stars
Made this last weekend and it came out super soft—like, bakery level. The cream cheese filling is perfect and not too sweet. I did let the yeast really get foamy first and that probably helped a lot. Will definitely bake again!

  65. User avatar Wonko the Sane says:

    3 stars
Mine didn’t rise much after the first rest 😕 I think my yeast was old (or my kitchen was too cold). The bake was fine, just denser than I hoped. Gonna try again with fresh yeast.

  66. User avatar solomon.hintz says:

    3 stars
I’m skeptical about the 4 cups flour—my dough was way too sticky with that much. I ended up adding extra flour until it kneaded smoothly, then it finally behaved. Not a bad recipe, just need to trust the dough texture more than the exact cup measure.

    1. 5 stars
That’s exactly right—“4 cups” depends so much on flour brand and humidity. I always start with less and add until it’s tacky but workable. Glad it turned out!

  67. User avatar Alexander O'Reilly says:

    4 stars
Looks good. 350 and 45 min… seems okay. I’ll try it. Hopefully it doesn’t collapse lol

  68. 4 stars
I followed it pretty closely but mine needed closer to 55 minutes to brown. Still tasted amazing though—cream cheese filling stayed nice and creamy. Will make again.

    1. User avatar trent.haley42 says:

      5 stars
Glad it worked out! I’ve noticed babka sometimes needs a bit longer to really brown—ovens vary a lot. Your note about the cream cheese staying creamy makes me want to try it exactly like this again.

  69. 4 stars
I was a little worried about the 110°F milk (I don’t own a thermometer, oops), but it still foamed nicely. Flavor is great, and the crumb is tender.

    1. 5 stars
I totally get that—110°F is tricky without a thermometer. But if it foamed, you nailed the yeast activation. Glad the flavor and tender crumb came out great!

  70. 5 stars
Wow! 45 minutes at 350°F gave me the perfect golden color. The texture was soft, like a bakery loaf. My family kept stealing slices—no leftovers!
