Buta Udon

February 8, 2024

Buta Udon is the ultimate bowl of comfort. With thick, chewy udon noodles, savory-sweet pork, and a light yet flavorful broth, this dish strikes the perfect balance between hearty and soothing. “Buta” means pork in Japanese, and in this dish, thinly sliced pork is cooked in a simple soy-based sauce that brings out its natural richness.

The beauty of Buta Udon lies in its simplicity. You don’t need a long list of ingredients, just quality ones. The base typically starts with dashi, a Japanese soup stock that brings a subtle umami depth. Add soy sauce, mirin, and a bit of sugar, and you’ve got a broth that’s savory, slightly sweet, and incredibly satisfying.

The pork used in Buta Udon is usually thinly sliced pork belly or shoulder. It cooks quickly and absorbs all the flavor of the broth. Some variations even include a quick marinade to give the meat an extra layer of taste. When paired with the udon noodles, which are delightfully thick and chewy, the textures in this dish become just as appealing as the flavors.

Toppings are kept minimal, just thinly sliced scallions, a soft-boiled egg, or a few pieces of nori. That way, the pork and noodles stay front and center. If you’re feeling adventurous, a pinch of shichimi togarashi (Japanese chili pepper blend) can add a gentle kick.

Buta Udon is great for weeknight dinners. It comes together quickly, especially if you use pre-cooked udon noodles, and it’s a complete meal in one bowl. It’s warm, filling, and has that nostalgic quality that makes you feel instantly at home.

Whether you’re new to Japanese cooking or just craving a cozy noodle dish, Buta Udon is a fantastic choice. It’s proof that with just a few ingredients and a little time, you can create something incredibly satisfying.

Sounds good, but I don’t love “cook udon in water then pour everything back.” Wouldn’t it get mushy? Also, what’s the point of sake if you can just use more mirin?

  2. User avatar ryan.schaefer1991 says:

    5 stars
The broth combo (soy + mirin + sake) is classic Japanese cooking vibes. I added a pinch of sugar and it balanced perfectly for my taste.

  3. 4 stars
Pretty solid. I had to add a splash more broth because mine was thicker than I expected, but the flavor balance is great. Next time I’ll thinly slice the pork even more for extra crisp.

  4. User avatar freddie.bayer42 says:

    4 stars
Took a shortcut with thicker pork slices (didn’t crisp as much) but flavor still came out great. I’d maybe add a pinch of sugar next time to balance the soy.

I don’t get why people love udon so much. This was just noodles in broth… not for me. 🤷

    1. 4 stars
I totally get it! Udon can be pretty basic if you’re not into the broth. Maybe try a different dish next time? 🤷‍♂️

  6. User avatar geoWizard says:

    2 stars
Sorry but this didn’t turn out good for me. The broth was too salty. Maybe I messed it up.

  7. User avatar barbra.kassulke1974 says:

Finally, a recipe with no fish sauce! Easy to follow too. I added some chili flakes for a kick.

  8. User avatar everette.green says:

I used beef broth instead of chicken broth and it worked… kind of? The taste was different but still yummy. My friends liked it.

This Buta Udon recipe is amazing! The pork belly is sooo delicious, and everyone loved it!

I totally agree! The pork belly just melts in your mouth. I love how simple yet flavorful this recipe is! 😍

    2. 3 stars
Looks good, but not sure about the ratio of noodles to broth. Is 3 cups really enough?

  10. User avatar cecille.white says:

    4 stars
Followed the steps and it came out pretty tasty. My broth tasted a little too salty at first, but once I balanced it, it was great.

  11. User avatar terrell.haley says:

    5 stars
This udon recipe is fantastic! My family loved it and asked for seconds.

  12. User avatar terri.huel says:

    3 stars
Too salty for my taste. The soy sauce really overpowered everything. I added some sugar to balance it out.

  13. User avatar stuart.trantow says:

    5 stars
This looks so comforting. I love how the pork belly gets browned and then the soy-mirin-sake broth gives it that deep flavor.

  14. 4 stars
I used beef instead of pork since that’s what I had, and it still turned out quite tasty. Sake is weird tho.

    1. 2 stars
Beef instead of pork? That doesn’t sound right. Udon is supposed to be with pork! 🤔

    2. User avatar fermina.legros says:

      4 stars
I think using beef is a cool twist! Sake can be strange, but it adds a unique flavor. Definitely trying it your way next time!

    Good eat. FAST. Thanks! 🙌

  16. User avatar Galaxia Woonbeam says:

    3 stars
Not gonna lie, 3 cups broth feels like a lot for only 2 packs udon? I had extra liquid so I’ll reduce next time.

Green onions + nori on top is such a vibe. I did the nori like a garnish like you said and it looked restaurant-y.

  22. User avatar Effrafax of Wug says:

    5 stars
This recipe was amazing! The pork belly was so crispy and flavorful. Will definitely make again!

  23. User avatar haley.witting18 says:

OMG! Did you guys add eggs too? I love udon with eggs! Must try next time! 🥚

  24. User avatar keira.sporer says:

    3 stars
I thought it was too salty. Maybe less soy sauce next time?

  25. User avatar efren.hills says:

    3 stars
Did you really need 300g of pork? Seems like a lot. Mine ended up too greasy. Maybe cut back on the meat?

  26. User avatar bud.marquardt says:

    1 star
Nori seaweed? I don’t even know what that is. Can I use lettuce instead?

  27. User avatar Rosa Sisters says:

    2 stars
I tried this and it didn’t turn out as expected. The noodles got all mushy. Maybe I overcooked them? 🤔

  28. User avatar edyth.cummings4 says:

    4 stars
I tried this with beef instead of pork, and it was still good. But why does it say to use pork? Just wondering if beef would be bad.

  29. User avatar delphia.sawayn1983 says:

    5 stars
This looks comforting and legit. I love the combo of mirin + sake in a broth like this—makes it taste way more “restaurant” than expected.

  30. User avatar doreen.johnston says:

    5 stars
This recipe is amazing! I added a bit of chili oil for a kick and it was perfect. My family loved it!

  31. User avatar Questular Rontok says:

    2 stars
Eh, it was alright. I’ve had better ramen at a restaurant.

    1. 4 stars
I think it sounds good! Sometimes homemade is better than restaurant food. Give it another try! 😊

  32. User avatar norman.schimmel says:

    2 stars
I tried this and it was just okay. The broth was too salty for my taste. I’ll stick to my instant noodles.

    1. User avatar ernesto.rippin92 says:

      3 stars
Really? I thought the broth was perfectly balanced! Maybe you should give it another shot, but with less salt? Can’t just keep eatin’ instant noodles forever!

    2. User avatar jackie.mertz says:

      4 stars
I totally get that! I found it a bit salty too. Maybe you could try less soy sauce next time? Instant noodles are good when you’re in a rush though!

  33. User avatar louis.wuckert says:

    3 stars
Could you make this recipe in a crockpot? I don’t wanna stand by the stove. Need easy meals.

  34. User avatar jackson.dach60 says:

    4 stars
Udon noodles are my favorite! This dish is so easy and quick. Thanks for sharing!

  35. User avatar wilson.ward says:

    3 stars
Not gonna lie, I’m skeptical about cooking the udon in the broth at the end. Usually udon gets soggy fast. Still, the flavors should be decent—wish it said how long to simmer.

  36. User avatar randall.gerhold36 says:

    4 stars
Udon noodles can get mushy if you simmer too long. I only warmed mine for 2-3 minutes and it was perfect.

    1. User avatar rickiestmorty says:

      3 stars
Mine came out too soft last time, so I think you’re right about not simmering too long. But 2-3 minutes seems super short… do you mean like after adding them, or keep them in the pot on low the whole time?

    2. 5 stars
Totally agree—udon turns to mush fast. I usually cook them separately and only simmer the noodles in the broth for a couple minutes too.

  37. User avatar sandie.mertz72 says:

    4 stars
I used ramen noodles by accident once—still good, but definitely different. Udon makes the texture right.

    1. User avatar Draugr Overlord says:

      5 stars
I tried swapping in ramen once too—same vibe but way more slurpy than udon. Your point about udon texture is spot on. This recipe sounds legit, especially with pork belly crisping up 👌

  38. User avatar pierre.mosciski says:

    5 stars
Made this last night—so cozy. The pork belly gets that perfect crisp, and the broth tastes way more layered than I expected. I used regular udon and it still worked great.

  39. 3 stars
Am I the only one who thinks 3 cups broth feels too much? Mine turned out kinda salty after the soy sauce—maybe my soy brand is stronger. Would reduce soy by like 1 tbsp next time.

  40. User avatar amos.boyer41 says:

    4 stars
Sake in the broth kinda worried me but it’s actually nice. If anyone skips it, I bet it’ll taste flatter.

  41. User avatar spencer.emmerich says:

    5 stars
Yum! Would definitely cook again! Great dish for a cozy night.

  42. 2 stars
Um, I thought udon has to be made fresh? Not sure if this is legit. 2 stars.

  43. 2 stars
5 stars! no wait—actually 3? I messed up the sake and used what I had, but it was still edible. 😅

  44. 5 stars
So easy to make! I had all the ingredients at home already. Definitely making this again!

    1. User avatar agnus.stroman says:

      5 stars
This sounds delicious! I’m glad you found it easy. Can’t wait to try it myself!

  45. User avatar Adam Sapple says:

    5 stars
Buta Udon? More like Buta YUM! Will def make again! 😍

  46. User avatar sharolyn.armstrong76 says:

    2 stars
Isn’t udon just noodles? You need more ingredients than that, right? 🤔

    1. User avatar davis.erdman says:

      5 stars
Actually, udon is definitely more than just noodles! It’s all about the broth and toppings too. This recipe looks pretty complete to me! 😊

  47. User avatar ruben.bergstrom41 says:

    5 stars
This sounds super comforting. I love udon with pork belly—crispy edges are everything. Gonna try it with extra green onions!

    1. User avatar Boromir says:

      5 stars
Yes!! Crispy pork belly + chewy udon is such a perfect combo. Extra green onions are a great call—makes it taste fresher.

    2. 4 stars
This looks really good, but do you think 3 cups broth is enough for 2 packs udon? Mine always drinks up the liquid, lol. Still gonna try though!

  48. User avatar darren.labadie2007 says:

    4 stars
Used beef instead of pork because that’s what I had. Still good!

  49. User avatar walter.botsford says:

    5 stars
This was amazing! The flavors were so rich and comforting. Will definitely make again!

  50. User avatar smartestRedditor says:

    4 stars
Udon and pork… sounds good. rating: 5/5? idk 😅

  51. 2 stars
why are we using nori on top… felt like fishy decoration lol. Flavor didn’t really pop for me, but it was filling.

  52. User avatar demarcus.reynolds0 says:

    3 stars
Not bad! But I think 3 cups broth might be a lot or not enough depending on how many udon packs—mine was more like a stew.

  53. 3 stars
I think the soy sauce is too salty! Maybe reduce it next time?

  54. User avatar Candace Spencer says:

    4 stars
Garlic and onion step is key. I skipped chopping thinly once and it felt like the onion didn’t dissolve into the broth. Don’t be lazy like me.

  55. 3 stars
Isn’t udon noodles like spaghetti? I don’t get the hype. This had too much meat for me.

  56. User avatar porsha.feil says:

    4 stars
I used beef instead of pork belly because that’s what I had. Still good, but the richness was different. Recipe is flexible, I guess.

  57. User avatar Deep Thought says:

    5 stars
Soo good! Best udon I ever made! 🤤 Can’t wait to make it again tomorrow!

  58. User avatar mose.davis2024 says:

    2 stars
My udon turned kinda mushy even though I cooked it according to the package… I think simmering it ‘a few more minutes’ overcooked it for me. Flavor was okay though.

  59. User avatar Falmer Shaman says:

    2 stars
Why is this called Buta Udon? Is Buta a type of noodle? Sounds weird.

  60. 4 stars
Nori garnish?? Honestly that’s weird to me. But I tried it and it actually worked—like a salty ocean finish. Would make again.

  61. User avatar Super Saiyan 2 Goku says:

    5 stars
Excellent. Tasted better than takeout. My family loved it!

  62. User avatar tristan.jaskolski says:

    4 stars
So good! This reminds me of my grandma’s cooking. mmm!

  63. User avatar Noreen Farrell says:

    3 stars
It was okay, but I think I needed to add more seasoning. Just a bit bland for my taste.

  64. 5 stars
The broth is soooo delicious! I could drink it! 🍜

  65. User avatar clyde.trantow75 says:

    3 stars
The ingredient list is clear, but “browned and crispy” is vague—mine stayed kinda chewy. Next time I’ll cook the pork longer first.

  66. 4 stars
Made it tonight and it was good, but my pork belly didn’t get that “crispy” part—more like chewy. Think I needed higher heat or thinner slices. Sauce was still tasty though!

  67. 1 star
Wow, what a mess! I burnt the pork and forgot to add nori. Don’t even know if it tasted good.

  68. 5 stars
5 stars!!! Also who decided nori on top is good? Cuz it is. My kids ate it and said it was “like warm noodles” lol.

  69. User avatar Mr. Prosser says:

    4 stars
Easy recipe! Thanks for sharing! Didnt realize udon was this simple to make!

    1. User avatar Loonquawl and Phouchg says:

      5 stars
You’re welcome! It’s awesome how easy it is, right? Udon is a game changer!

    2. User avatar Effrafax of Wug says:

      2 stars
I dunno… looks a bit complicated with all the broth stuff. Can’t I just microwave udon?

  70. User avatar CTRLplusW says:

    4 stars
Yummy! I added a boiled egg on top and it was delicious. My family loved it!

  71. User avatar maryalice.zemlak95 says:

    1 star
Ew, pork belly? No thanks! I prefer chicken in udon.

  72. User avatar Eddie Lind says:

    2 stars
I don’t know if I did something wrong, but my noodles came out mushy. Maybe I overcooked them? Not sure if I will try again.

    1. User avatar deandra.huels says:

      2 stars
I dunno, noodles should be fine if you follow the instructions. Maybe you just left them in too long. Can’t believe you wanna quit!

    2. User avatar hellen.ziemann20 says:

      4 stars
Don’t give up! Maybe try checking the cooking time more closely next time. I’ve messed up noodles before too, and they turned out fine after a second attempt!

  73. User avatar lachelle.reynolds54 says:

    5 stars
I followed it exactly and honestly it tastes better than it should for how easy it is. The broth is the star.

  74. User avatar Shadout Mapes says:

    4 stars
Yum! But I skipped the mirin and sake. Still tasted great! 🤤

  75. User avatar cathrine.blick13 says:

    3 stars
Not bad but the instructions are kinda vague. “Cook until browned and crispy” like… how crispy? I guess I just went with my gut.

  76. User avatar guadalupe.oconnell28 says:

I totally agree! This recipe is so good! I’ve made it twice already, and it just gets better. 😍

  77. 3 stars
Not sure about using chicken broth with mirin and sake—feels a bit like mixing worlds. Still, the garlic/onion step smells amazing.

Buta udon? Is that like a udon noodle in a cup? confused face emoji

    1. User avatar marlyn.padberg3 says:

No, buta udon is a kind of dish with udon noodles and pork. It’s not in a cup, but it’s super delicious!

    2. User avatar harmony.hermann96 says:

      5 stars
I’m glad you liked it! It’s perfect for those chilly evenings!

  80. 3 stars
I couldn’t find mirin and used honey instead, lol. It was not the same! Still, it was okay, I guess.

  81. User avatar tarsha.quigley80 says:

    3 stars
I followed it mostly, but my broth tasted a little too salty. Next time I’ll reduce soy sauce or use low-sodium broth. Otherwise super easy.

  82. User avatar santos.dach says:

    4 stars
Pretty solid. I had to add a bit more soy sauce because mine was a little bland, but overall it’s easy and hits the right comfort-food vibe. Would definitely make again.

    1. 5 stars
Good to hear! I always end up tweaking the soy sauce too—depends on the brand and how salty the broth is. Glad it hit that comfort-food sweet spot 😄

  83. User avatar Abel N. Willan says:

    3 stars
It was okay, but I found the broth too salty. Maybe reduce the soy sauce next time?

    1. 3 stars
I dunno, I think pork gives it a unique flavor. Chicken will be different.

    2. User avatar jeff.stiedemann1988 says:

      5 stars
You can definitely use chicken instead! Just make sure to cook it well. 🙂

    1. User avatar priscila.heaney79 says:

      5 stars
Sounds delicious! I love adding extra veggies too. What did you use?

    2. 2 stars
I don’t know if it’s that easy… looks kinda complicated to me with all those steps.

  89. User avatar jeff.dickens1978 says:

    5 stars
This looks super comforting—pork belly + udon is a combo I could eat every week. I might add mushrooms next time for extra depth.

    1. 5 stars
Yes!! Pork belly udon is seriously the coziest. The mirin/sake combo makes it taste so “restaurant” to me. Mushrooms would be amazing too—try shiitake if you’ve got them.

    2. User avatar felipe.stiedemann1967 says:

      3 stars
Hmmm looks good but why chicken broth with pork belly? I’d think beef or pork broth. Also 2 packs udon seems like a lot—what size are your packs?

  90. User avatar Merissa Koelpin says:

    4 stars
I can’t believe how easy this was! I made it in less than 30 minutes. Yum!

    1. 5 stars
So glad you loved it! It really is so quick and delicious. Did you add any veggies?

    2. 4 stars
30 minutes? Really? I always thought udon was more complicated. Might have to try this now.

  91. User avatar franklyn.lang3 says:

    5 stars
Made this tonight and it’s legit comfort food. The pork belly getting crispy first makes a big difference—so good with the udon broth.

  92. 5 stars
This dish is sooo good! The pork belly adds a nice flavor. Highly recommend!

  93. User avatar dewey.mraz35 says:

    3 stars
Good recipe, thanks! But I think too much onion. Made me cry and not in a good way😂.

  94. User avatar emile.lueilwitz34 says:

    3 stars
Buta udon is my comfort food, but I think this recipe is missing something… like maybe a touch of sugar or ginger? The sauce was good, but slightly flat for my taste.

    1. User avatar Octavio Boyle says:

      4 stars
Totally get what you mean—this sauce sounds a bit one-note. I usually add a tiny pinch of sugar and a little grated ginger (like 1 tsp) to round it out. Also try tasting after it simmers a couple minutes; mirin/sake can vary by brand.

  95. 3 stars
Not bad, but I think 2 tbsp soy sauce + 1 tbsp mirin + 1 tbsp sake might depend on your broth brand. Mine was too salty, so next time I’ll reduce soy or use low-sodium broth.

  96. User avatar shawanna.deckow2016 says:

    4 stars
I didn’t have sake so I used more mirin + a splash of water. Not exactly the same, but honestly it still tasted balanced. Garlic and onion timing mattered a lot.

  97. 4 stars
Simple and quick! Loved how easy it was to follow. No fancy stuff, just good eatin’!

  98. 5 stars
This was delicious! My family devoured it. Will definitely make again!

I’m skeptical about the “browned and crispy” part—pork belly depends so much on heat. Mine wasn’t crisp until I turned it up near the end. Still tasty, just needed more attention.

5/5 would eat again. I used chicken thigh instead of pork belly once (don’t judge) and it still worked pretty good.

This looks super comforting. I like that it’s simple—udon + pork belly always hits. I might add a little extra nori on top for more ocean-y flavor.

I found it kinda greasy tbh. Noodles were good but I think I’d skip the pork next time.

I kinda agree with you. The pork can be too much sometimes. But maybe try it baked next time? Less grease!

Greasy? Really? That’s how its supposed to be! Pork belly adds flavor! You can find it less oily if you just use less oil.

Yum! I love udon, but why do they call it Buta Udon? Is that like, a mistake? But tastes good anyway.

This was delicious! The pork belly was crispy and the broth was super flavorful. Will definitely make again!

So glad you liked it! The crispy pork belly really makes it special. Next time, try adding some chili flakes for a kick!

I don’t know, sounds a bit too simple for me. Like, can it really be that flavorful without some more spices or something?

  105. 3 stars
It was okay, but I felt like it needed something… maybe more spices or something.

I tried this recipe and it was just okay. The noodles were mushy. Not my best attempt.

So easy! Tastes like restaurant food to me. I had no mirin so I used a bit of sugar + rice vinegar and it still worked 😅

    1. User avatar Kid Trunks says:

Love hearing this! 😄 And honestly, that swap sounds totally reasonable—mirin is mostly for that sweet tang, so sugar + rice vinegar doing the job makes sense. Did you notice it tasting a bit more sharp or more sweet?

I’m skeptical about using both mirin and sake with chicken broth—felt like too much liquid flavor. Still, the pork made up for it.

    1. User avatar Shadout Mapes says:

I get what you mean—mirin + sake can feel like “too many liquids.” But I think the soy broth + the pork fat balance it out pretty nicely. If it tastes too strong, next time maybe reduce one of them a bit.

    2. 3 stars
Really? I thought mirin and sake would be the main flavor. Chicken broth already kinda bland, so adding both seems right to me. Maybe your broth was salty already?

I always thought sushi was the only good thing from Japan, but this udon is a game changer! Who knew? 🙂

Pretty solid recipe. I followed it mostly, but I simmered a bit longer because my broth tasted a little thin at first. Ended up great though.

Yum! Just used whatever I had in the fridge and it still turned out great. Gotta love cooking!

Udon noodles? Yuck! I don’t know why people eat these things, they’re too chewy for my taste. Not doing this again.

    1. 5 stars
I totally disagree! Udon is one of my faves! Chewy is just how they’re supposed to be! Give it another try!

Cooked it last night—pretty close to what I get at my favorite spot. I used less mirin and it was still great.

I’m not sure about the 2 packs udon—seems like a lot for only 300g pork. Still, the flavors should come together with the soy/mirin/sake.

    1. User avatar francisco.brakus1990 says:

Good point—2 packs udon might be overkill for 300g pork, but udon absorbs a lot of that broth/sauce. I’d maybe use 1.5 packs if you want more pork-forward.

The nori garnish is genius. I was skeptical at first, but it adds this subtle ocean-y flavor that ties everything together. Also, garlic + onion aroma is unreal.

    1. User avatar shannon.schuster91 says:

I’m not sure about the nori honestly. Like, seaweed on udon feels kinda random to me. Wouldn’t it get too fishy? Still, I love that you’re using mirin and sake—maybe I’ll try just a tiny sprinkle.

    2. User avatar stevie.johnson says:

Totally agree—the nori garnish is such a clever touch. That subtle ocean vibe really makes the pork broth taste deeper. Also the garlic + onion combo? Unreal indeed.

I don’t like mushrooms in my udon! But this recipe has none. Thumbs up!

Just made this and it’s ridiculously comforting. The pork belly gets so crispy, and the udon soaks up the soy-mirin-sake perfectly. I skipped nori once and honestly the garnish really ties it together.

    1. User avatar rodolfo.stokes12 says:

Yes!! “Ridiculously comforting” is exactly right 😄 I also love how the udon drinks up the soy-mirin-sake. I always add the nori at the end—totally elevates it.

I wanna try this but I messed up last time—my pork belly didn’t get crispy, it was more chewy than crunchy. Did you use really thin slices? Also, could I swap in pork shoulder or is it doomed?

  120. User avatar denice.haley93 says:

Pretty good, but my noodles got a little overcooked even though I followed the package. Next time I’ll rinse with cold water after draining to stop the carryover. Flavor’s still solid though.
