Broccoli and cauliflower bisque is a comforting, creamy soup that brings together two powerhouse vegetables in a smooth, velvety blend. It’s hearty without being heavy, making it perfect for both chilly nights and light lunches. With its delicate balance of earthy flavors and rich texture, this bisque is a step above your everyday vegetable soup.
What sets a bisque apart is its creamy consistency and depth of flavor. In this version, broccoli and cauliflower are the stars, offering a mild yet distinctive taste that’s enhanced by aromatic elements like sautéed onions, garlic, and a touch of thyme. A bit of butter or olive oil gives the base richness, while broth adds dimension. After simmering until tender, the vegetables are blended into a silky puree, often finished with a splash of cream or a swirl of milk for added smoothness.
The combination of broccoli and cauliflower works beautifully, the broccoli brings a slightly grassy note while the cauliflower lends a subtle sweetness and body to the soup. Together, they create a balance that feels both nourishing and indulgent. This is the kind of dish that tastes like it took hours to prepare, even though it comes together quickly with just a few simple steps.
You can keep the bisque entirely vegetarian, or deepen the flavor with a bit of Parmesan or sharp cheddar melted in at the end. Garnishes like crispy croutons, roasted seeds, or a drizzle of herb oil add texture and color, turning a humble bowl of soup into a beautiful presentation.
Broccoli and cauliflower bisque also stores well, making it ideal for meal prep or freezing. It reheats beautifully and pairs well with crusty bread, grilled cheese, or a light salad. Whether you’re looking for a cozy dinner starter or a filling midday meal, this bisque is a reliable go-to.
Smooth, savory, and packed with vegetables, broccoli and cauliflower bisque is a delicious way to enjoy classic ingredients in a new and elevated form. It’s the kind of dish that comforts and satisfies without ever feeling too rich.

Ingredients
- 2 tbsp olive oil
- 1 onion diced
- 2 cloves garlic minced
- 1 head cauliflower chopped
- 2 cups broccoli florets
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until fragrant and translucent.
- Add the cauliflower and broccoli to the pot, and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until the vegetables are tender.
- Using an immersion blender or a regular blender, puree the soup until smooth. If using a regular blender, blend in batches and be careful not to overfill the blender.
- Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
- Simmer for an additional 10 minutes, stirring occasionally.
- Serve hot, garnished with fresh parsley.
Instructions were confusing. How long to simmer again? 🤔
This soup is amazing! So rich and creamy. My kids loved it!
Honestly, I don’t get why everyone loves this. It’s just mushy veggies. What’s the big deal? 🤷♂️
I totally get what you mean, but give it a chance! The cream and spices really bring it to life. 🌱
Mushy veggies? Nah, it’s a comforting soup! Different tastes, I guess. You gotta try it!
So easy to make! Even my kids loved it. I added some croutons on top too. YUM!
I added some cheese on top, it made a bomb addition! Yummy!
Eh. Just didn’t do it for me. Taste is kinda bland. Maybe need more spices?
I totally get what you mean! I added a pinch of cayenne pepper and some thyme and it really kicked it up a notch. Maybe try that next time!
Made this last night—so creamy without tasting “heavy.” I used an immersion blender and it came out perfectly smooth. The parsley garnish is a nice touch.
Instructions are kinda confusing. Do I boil the broth first? 🤔
Yes, you boil the broth with the veggies after you sauté them! It should be clearer in the steps. 😊
Easy to follow but what’s with the heavy cream? Can’t we just use coconut milk? Much healthier.
This was too bland for my taste. I ended up adding some spices but it still didn’t hit the spot. 🙁
Yummy! Just made it and I feel like a chef! 😍
That sounds delicious! I can’t wait to try it myself! 🍲
Looks easy, but are you sure it’s really that good? I mean, I’ve made soups that didn’t turn out at all like I thought.
Garnish with parsley? Who cares! Just eat it already!
Broccoli and cauliflower? No thanks. Prefer my bisque with lobster! 🦞
I made this for my family and everyone loved it. Even my kids ate their veggies! 🤗
5 stars just for the immersion blender part—so easy. Also parsley is not optional.
I don’t have heavy cream, so I used coconut milk and it turned out weirdly sweet? Might be my brand. Flavor was okay though.
I didn’t have heavy cream, used milk instead. Good enough!
Good to hear you made it work! Milk can be a good substitute in a pinch. I’m trying this recipe tonight!
This bisque is absolutely delicious! Creamy and super comforting. Will definitely make again.
Super easy to whip up! Perfect for a quick lunch.
Easy to make but doesn’t taste like much. Could use more seasoning.
More seasoning??? I think it’s perfect as is! Sometimes simple is best. Why complicate things?
I totally get what you mean! A little more garlic or some spices could really elevate the flavors. I usually add some red pepper flakes for a kick.
Tastes fine, but I think it needs more flavor… maybe some cheese or herbs? Just a suggestion!
Where’s the seasoning? I added some chili flakes which made it better.
I totally agree! The recipe could use more flavor. Chili flakes are a great idea!
Ugh, mine turned out watery. I think I didn’t blend enough or my veggies released water. Any tips to thicken it?
Watery soup = add more cream? or more veggies? I’m not sure. I blended mine once and it was fine tho. Maybe your broth was too much? Next time use less broth and just cook longer.
I’ve had this happen too—usually it’s from not blending it smooth enough. I’d blend a bit longer and then simmer uncovered 5–10 min to reduce. You can also add a small spoon of flour/cornstarch slurry (like 1 tbsp) and simmer till it thickens.
This came out super creamy without tasting “heavy.” The immersion blender method is totally the way to go—smooth as promised. I added a pinch of nutmeg too and it felt fancy.
This soup is amazing! So creamy and flavorful. Will definitely make it again!
I was skeptical about boiling then pureeing everything, but wow—silky texture. I added extra pepper and it really woke up the taste.
Absolutely loved this recipe! It was so creamy and delicious! Will make it again soon!
So glad you enjoyed it! It’s one of my favorites too! 😊
I followed it exactly and it turned out okay, but 20 minutes simmer felt kinda long? The cauliflower got a little too soft. Still tasty though.
This is comfort food. Like, proper cozy. I added extra black pepper and it really woke up the flavor. Would totally make again.
Comfort food for sure, but I’m skeptical about adding heavy cream after blending. Wouldn’t it get kinda weird if you simmer 10 more minutes?
Yes! The extra black pepper is such a good call—this already sounds so cozy and creamy. I’m totally making it again next week.
I added some cheese on top and it was delicious! Will make again!
This soup was amazing! So creamy and flavorful. Definitely a go-to recipe for me now.
Too much garlic for my taste. Next time I’ll cut that back a bit.
Meh. Kinda watery on my end, even after blending. Might be my cauliflower was too watery? Still ate it, but wouldn’t call it wow.
I just threw in a bag of frozen broccoli and it worked fine. Still good soup!
Love how simple this is. Perfect for dinner! But I wish I could have it thicker.
You could try adding more cream or even some potato to thicken it up! Glad you like the recipe!
Broccoli and cauliflower in soup? Weird combo, but I actually liked it! Who knew?
My kids even liked it! The cream makes it super rich and smooth. Highly recommend!
Very easy weeknight soup. I didn’t even garnish with parsley and it still tasted great. Next time I’ll be more careful with blending so it’s smoother.
Not bad, but my blender splattered like crazy because I filled it too much (oops). Also I found 20 minutes wasn’t enough for my chunks—should’ve chopped smaller.
Easy recipe! I substituted cream with coconut milk, worked great too!
Took me forever to blend it. Can you use a food processor instead? Ugh!
I’m skeptical about veggie broth + cream making something “rich.” But okay, it worked. I used homemade broth though, so maybe that’s the difference.
Doesn’t sound good. Like who puts broccoli and cauliflower in soup? Weird!
Too many vegetables! I couldn’t taste anything else. It was just broccoli and cauliflower, like a salad soup.
Delicious! I used almond milk instead of heavy cream because I’m lactose intolerant.
I don’t think almond milk can replace heavy cream. Might not taste right.
Great idea! Almond milk works well too. Can’t wait to try it this way!
I’m not a fan of blending my food. I just couldn’t get past the texture of a pureed soup. Sorry!
Mine didn’t get very smooth—the immersion blender struggled with the florets. I’m probably doing something wrong, but the taste was still decent. Needs more blending time.
My immersion blender always fights broccoli too 😅 I literally cut the florets smaller and add a ladle more broth. Tbh 5 min for cooking veggies feels short—20 min covered always makes it smooth for me.
Hmm sounds like the blend might have started before everything was fully tender—next time I’d cook the florets a bit longer in step 3. Also try blending longer at a lower/louder simmer so it moves easier.
Very easy to make! My husband said I should make this again, so that says a lot! 😄 Thanks for sharing!
I’m so glad to hear that! It’s always a win when the hubby loves your cooking! 😊
Too rich with the heavy cream. Maybe try coconut milk next time? Would cut the fat, I think.
I totally agree! I prefer coconut milk too, it gives a nice sweetness. Maybe I’ll try it your way next time!
This bisque is sooo good! I added some chili flakes for a kick!
Chili flakes sounds like a great idea! I love a little heat in my soups. Will definitely try it your way.
I don’t know… seems like too much cream in there. Can’t be healthy at all. Aren’t you worried about that?
This soup is heavenly! I added some chili flakes for a kick, and it was perfect! 10/10 would recommend.
Broccoli soup? No thanks, I just like broccoli plain.
Not bad, but I’m not sure about the 1 cup heavy cream—felt a little rich for my taste. Next time I’ll do half-and-half or reduce it.
I was skeptical at first, but this turned out great! Just used almond milk instead of heavy cream.
Heavy cream makes it rich tho, almond milk is like water! 🤷♂️ But if you liked it, who am I to judge?
I’m glad to hear it turned out great! Almond milk is a nice touch. Did you add any spices or extra flavoring?
Sautéing the garlic was a game changer! This bisque is now my staple for cozy nights. Thanks!
Why does it say ‘vegetable broth’? What even is that? I just used water.
Made this last night and it came out super creamy. The blend step is key—smooth but still feels “real” with the broccoli flavor. Will definitely make again.
Yes!! That “still feels real” part is exactly right—too much blending can make it taste kinda flat. Glad it worked for you 😊
I did this but my soup turned kinda pale and thick… maybe I used too much cream? Also I blended without letting it cool first (oops). Still tasted good though.
This bisque is amazing! So creamy and full of flavor. My kids loved it!
Not bad at all, but I think it needed more salt than the recipe suggests. Also mine was a bit thick, so next time I’ll add a splash more broth.
Meh. It’s just soup, nothin speical. Just a bunch of veggie mush. 😒
I totally disagree! This bisque is super creamy and delicious! Give it another try! 😋
I followed the recipe exactly but my soup turned out super watery. Maybe the broth was too much? Not sure if I’ll try again.
Pretty tasty and honestly way easier than I thought. I used frozen broccoli/cauliflower and just simmered a bit longer. Next time I’ll blend a little longer for extra smoothness.
Was skeptical at first, but tasted great! I added some chili flakes for a kick. Yum!
Chili flakes? That’s a genius idea! I never thought about adding spice to soup. I’ll try it next time! Thanks for the tip!
Eh, didn’t turn out like I expected. My soup was too watery. I guess I used too much broth?
I don’t understand why people like this soup. It’s just vegetables blended together…
I don’t really like broccoli or cauliflower. This was okay, but not for me.
Not bad but it was too thick for my liking. Maybe less cream next time.
This bisque is amazing! So creamy and flavorful.
I totally agree! This bisque is one of my favorites too. Perfect comfort food!
I don’t like broccoli but the soup was surprisingly good. My kids finished it all!
Simple and delicious! Plus it’s healthy! What more do you want?
