Beetroot Pomegranate Salad

February 27, 2024

Beetroot pomegranate salad is one of those dishes that delights both the eyes and the taste buds. With its deep jewel tones and refreshing flavors, it’s the perfect side or starter when you want to serve something that feels both special and healthy.

The star of this salad is, of course, beetroot. Roasted until tender, it offers a naturally sweet, earthy flavor that pairs beautifully with the tart burst of fresh pomegranate seeds. Together, they create a contrast that’s both vibrant and balanced, sweet, tangy, and just a little bit savory.

What elevates this salad is the simple dressing that ties everything together. A mix of olive oil, lemon juice, and a touch of honey or maple syrup brings out the best in both the beets and the pomegranate. Add a pinch of salt and black pepper, and you’ve got a dressing that’s fresh, clean, and full of flavor.

For texture, this salad welcomes the addition of nuts or seeds, think toasted walnuts, pistachios, or even sunflower seeds. They add crunch and a slightly nutty depth that complements the softness of the beets and the juiciness of the pomegranate.

A bit of crumbled feta or goat cheese can add a creamy element, though it’s completely optional if you prefer to keep it vegan. Likewise, tossing in some arugula, baby spinach, or fresh herbs like mint or parsley adds brightness and a peppery edge.

Whether you’re serving it at a dinner party, adding it to a holiday table, or meal-prepping lunches for the week, this beetroot pomegranate salad brings a refreshing change from the usual green salads. It’s as much about color and texture as it is about flavor, and it proves that healthy eating can also feel indulgent.

Serve it chilled or at room temperature and let the natural beauty and taste of these ingredients shine.

I dunno, beetroot tastes weird to me. Might skip this next time.

I get it, beetroot can be an acquired taste! Maybe try a different dressing or add more feta? It might balance the flavors better.

Why you put mint in salad? That makes no sense! 😤

    1. User avatar Kati Gerhold says:

Mint adds a refreshing flavor and contrasts well with the sweetness of the beets and pomegranate. It’s a great choice! 😄

  3. 5 stars
Made it for lunch and it was a hit. The lemon dressing really wakes everything up. I’ll probably use a bit more mint next time.

  4. User avatar anonymous_hacker says:

    3 stars
A bit too salty for my taste. Next time I’ll add less salt.

  5. 2 stars
I don’t know about beets and pomegranate together. Sounds weird. Maybe I’ll try it with just the feta?

    1. 4 stars
I get what you’re saying! Beets and pomegranate might sound odd but trust me, the sweetness from the pomegranate really balances it out. It’s worth a try! 😊

  6. 5 stars
Wow, this is the sit right here! So quick to make & taste awesome. A hit at my dinner party!

Tried it and it was okay, didn’t really like the feta with beetroot. Maybe I’ll swap it out next time.

I’m not usually a beet person… but this was actually decent. Wouldn’t mind making it for guests.

  9. User avatar anissa.kautzer88 says:

I substituted the pomegranate with cranberries cause I couldn’t find any! Still came out delicious.

    1. 2 stars
Why on Earth would you substitute pomegranate? It’s not the same! I’ve made this salad and the pomegranate is what makes it special.

    2. User avatar ryan.breitenberg68 says:

Cranberries sound like a fun twist! Never thought of that. Glad it turned out good!

  10. User avatar terminatorXYZ says:

Not sure if I did it right, but my salad came out all soggy. I guess the beetroot has a lot of water?

  11. User avatar chi.price1971 says:

So refreshing! Perfect for summer BBQs. I added walnuts for some crunch!

  12. 5 stars

I’m picky about salads, but this one tasted balanced—not too sour and not too earthy. Good texture with the onion crunch.

  14. User avatar bennett.schuster65 says:

I love beets, but my kids totally rejected this. 🤦‍♀️ Needs more cheese maybe?

  15. 2 stars
Honestly, this is kinda overrated. Beet salad is always messy and the pomegranate seeds everywhere is a nightmare 😅

  16. 1 star
My kids didn’t eat it. They said the beets looked like worms! Not a fan here.

  17. User avatar ShanksOnePiece says:

Beetroot is nasty. Pomegranate seeds? No thanks. Didn’t even try it.

    1. User avatar carson.gaylord95 says:

I think you’re missing out! Beetroot and pomegranate are a great combo. If you give it a try, you might surprise yourself.

  18. User avatar Reed Becker says:

Isn’t feta cheese like, not good for you? I mean, this seems fancy but I’m skeptical.

  19. User avatar wanita.stehr1966 says:

    3 stars
Pretty good, but I think 1 hour in the fridge made the onion too sharp. Next time I’ll slice it thinner or soak it briefly.

  20. 3 stars
salad is alright, not sure the pomegranate is needed tho, just pop some nuts in there instead!

  21. User avatar Mr. Christeen Kreiger says:

This is the best salad ever! Just the right balance of sweetness and saltiness. Highly recommend!

  22. User avatar Hilario Ziemann says:

Simple ingredients but delicious! I added some walnuts for crunch. Yum!

    1. 5 stars
I love that you added walnuts! They do give such a nice texture. This salad is already yum without them but they must make it even better!

    2. User avatar Alyssa Runolfsson says:

      2 stars
Walnuts? I don’t think that would taste good in this kinda salad. Beets and poms are enough, no need to add stuff. Just my opinion!

  25. User avatar jerry.morar says:

    2 stars
I’m not so sure about the combination of beets and pomegranate. Seems weird to me. Also, where’s the crunch?

  26. User avatar lino.fadel28 says:

Beets + pomegranate + feta sounds like a restaurant idea, and yeah it kind of is. The dressing is simple but effective.

Made it for lunch and it was honestly refreshing. My beets stained everything like crime. Still worth it 😅

    1. User avatar rodolfo.beahan99 says:

      5 stars
😂 “crime” is accurate—those beets are basically ink. Love that you still went for it!

  29. User avatar elliot.willms says:

Absolutely loved this salad! The flavors are so fresh and vibrant. Perfect for summer!

  30. User avatar lulu.goyette says:

Beets are gross! I don’t understand why people eat this kind of food. No thanks.

  33. User avatar Leto Atreides says:

    2 stars
Just made this and it was a disaster! The salt was too much and the dressing didn’t mix well. What’s up with that?

  34. User avatar randolph.orn says:

    1 star
Not my style. I don’t understand raw beets. 🙁

  35. User avatar antonina.hansen says:

Is pomegranate really in season right now? I thought it was a winter fruit.

  36. User avatar kimbery.bauch says:

  37. User avatar NAFO.SUPREMACY says:

Simple and healthy! But I wanna know if I can substitute vinegar for lemon juice. Any thoughts?

  38. User avatar Zarniwoop says:

    3 stars
I followed the steps exactly, but mine turned a bit watery. Maybe my beets were too wet? Flavor was good though.

Love hearing that! The lemon + olive oil really does make the flavors pop. Glad a pinch more salt worked for you—I’ll try that next time 😊

    2. User avatar becki.balistreri41 says:

      3 stars
Hmm sounds good, but does it need to be eaten immediately? I’m worried the beet will get watery… still, maybe 1 hour is fine.

  45. User avatar mohammad.walter69 says:

    5 stars
Beets and Pom’s 🥳 Yes! Sweet and savory! My new favorite!

  46. User avatar cierra.ebert2003 says:

    2 stars
I don’t get the hype. It’s basically grated beet with seeds and cheese, just call it “beet thing” lol.

  47. User avatar nicole.hyatt says:

    2 stars
Why would you put beets in a salad? Gross!

    1. User avatar anthony.legros56 says:

      4 stars
Beets are actually really nutritious and add a nice color! You should give it a try before knocking it.

  48. User avatar micheal.okon says:

    2 stars
Not a fan of beets tbh, but my sister loved it. So maybe it’s just me!

    1. User avatar Ms. Luigi Effertz says:

      4 stars
I get it! Beets aren’t for everyone. But have you tried it with a different dressing? Maybe that would change your mind!

  49. 5 stars
This salad is amazing! The flavors blend so well together. I love the crunch from the pomegranate!

  50. User avatar latesha.reynolds48 says:

    2 stars
Not sure I get the point of pomegranate in a salad—feels a little too sweet for me. Feta helps, but I’d probably use less next time.

    1. User avatar oPandariaNo says:

      3 stars
Maybe add less pomegranate and more onion? But honestly I feel like it’s just for color. Still tasty though. Next time I’ll try with half the seeds.

    2. 4 stars
I totally get that—pomegranate can skew sweet. I usually balance it with a bit more lemon (or even a tiny pinch of salt) and keep the seeds measured. If you love feta, you can probably lean into that sour/salty side.

  51. User avatar winifred.lakin says:

    3 stars
I tried making it but my beetroots were too hard. Not sure if I did it right…

  52. 4 stars
I’m skeptical about beet salads, but this one surprised me. The mint is the game-changer—didn’t expect that.

  53. User avatar miguel.huel99 says:

    4 stars
Easy to make and looked beautiful! Perfect for a party!

  54. 2 stars
Beetroot never stays pretty for me. Mine stained everything, but ngl it was tasty. Also mint felt a bit random at first.

  55. User avatar shellie.collier2009 says:

    1-2 words: Not bad.

  56. 5 stars
Whole family loved it, even the kids! Can’t believe I get them to eat beets!

    1. User avatar Max Quordlepleen says:

      5 stars
Wow, this sounds amazing! I never thought my kids would like beets either. Great job!

  57. User avatar Shrine Maidens says:

    5 stars
So bright and fresh! The beet + pomegranate combo is honestly perfect, and the feta makes it feel way more filling.

    1. 4 stars
Sounds good, but I tried something similar and my beet salad turned kinda watery… maybe because I didn’t squeeze the grated beet? Still, feta sounds like it would help. Gonna try with a shorter toss time.

    2. User avatar Emily Saunders says:

      5 stars
Yes!! I love that sweet-tangy pomegranate with the earthy beet. The feta is such a nice touch—makes it feel like more of a meal than just “salad.”

  58. User avatar sherell.gaylord86 says:

    5 stars
This salad is amazing! Loved the freshness of the pomegranate!

  59. User avatar hoa.parker19 says:

Yum! I added some walnuts for crunch and it turned out great! Everyone loved it at the potluck.
