Beef and Broccoli Noodles

January 14, 2025

Beef and broccoli noodles is a comforting and flavorful dish that combines tender beef, crisp broccoli, and hearty noodles in a savory, flavorful sauce. This dish is an easy and satisfying meal that brings together the umami-rich flavors of soy sauce, garlic, and ginger, creating a stir-fry that’s both aromatic and filling. It’s a perfect choice for a quick weeknight dinner or a special meal that will impress your family or guests.

The key to beef and broccoli noodles is in the sauce. A mixture of soy sauce, oyster sauce, hoisin sauce, and a splash of rice vinegar creates a savory, slightly sweet sauce that perfectly coats the beef, broccoli, and noodles. A touch of ginger and garlic adds warmth and depth, while a dash of sesame oil gives the dish a rich, nutty finish. The sauce is cooked until it thickens slightly, allowing it to cling to the beef and vegetables.

To start, the beef is thinly sliced against the grain, which helps it stay tender during cooking. The beef is then stir-fried in hot oil until it’s browned and cooked through. The broccoli is added next, along with a splash of water or broth to steam it lightly while still keeping its crisp texture. Once the broccoli is bright green and tender, the cooked noodles are added to the pan, followed by the sauce, which ties everything together in a beautiful, glossy coating.

The noodles used in this dish can be anything from rice noodles to egg noodles, depending on your preference. The noodles absorb the savory sauce, making each bite flavorful and satisfying. The beef and broccoli provide protein and crunch, while the noodles offer comfort and substance, making this a well-rounded meal.

Beef and broccoli noodles are a quick and versatile dish. You can easily customize it by adding other vegetables, such as bell peppers, mushrooms, or carrots, to suit your taste. It’s a perfect dish for those who love savory stir-fries with a balance of textures, making it a go-to recipe that’s sure to please everyone at the table.

I’m not convinced about the ‘tender-crisp’ broccoli part—3-4 minutes was not enough for me. Maybe my pan runs cool. Still tasty though.

  2. User avatar gregg.simonis99 says:

    3 stars
Tried this recipe. The flavors are good, but I found it a bit too salty. Next time, I will reduce the soy sauce.

  3. User avatar MAGA2024.Trumpster says:

    4 stars
I didn’t have broccoli so I used spinach… still turned out pretty good!

  4. User avatar Milo McCullough says:

    5 stars
5 stars! Simple and delish – I even added some chili flakes for extra kick! 🔥

  5. User avatar chanell.oberbrunner22 says:

I dunno… it was alright. Maybe too much soy sauce for my taste. Not bad, just not my fav.

    1. User avatar Nichole Casper says:

      3 stars
Nah, I think it’s great! Soy sauce is like the best flavor ever. Gotta embrace the taste! Not my fav either but still love it.

    2. 4 stars
I totally get that! Maybe just use less soy sauce next time. It can be a bit strong for some. Overall, it’s still a good dish!

  6. 3 stars
I found the noodles too sticky. Maybe I cooked them wrong? 3 stars.

    1. 4 stars
I had the same issue with sticky noodles! Maybe try rinsing them with cold water after cooking next time. Helps a lot! 4 stars.

  7. User avatar rich.landlord says:

    2 stars
Didn’t thicken for me. I whisked the cornstarch mix but maybe my water ratio was off? Ended up kinda watery, still tasted okay though.

  8. User avatar maisie.ferry14 says:

    3 stars
My sauce thickened way too much when I added the cornstarch slurry. I think I measured the water wrong. Tasted fine, just looked like gravy on noodles.

  9. User avatar Chaurus Hunter says:

    3 stars
Not bad, but the sauce was a bit too salty for my taste.

  10. User avatar mayola.sanford1979 says:

    3 stars
Not bad, but I think 3–4 minutes for broccoli is too short—mine felt a bit crunchy. Maybe my pieces were bigger.

  11. User avatar Super Saiyan Gohan says:

How come most recipes say low-sodium soy sauce? Isn’t soy sauce already salty? 🤔

    1. User avatar delphine.barton1963 says:

      4 stars
Yeah, soy sauce is salty, but low-sodium one just means it’s less salty. It’s for people who gotta watch their salt! 😊

  12. User avatar smartestRedditor says:

    4 stars
Can I use chicken instead of beef? I don’t eat red meat. Asking for a friend. 😅

  13. User avatar terminatorXYZ says:

    3 stars
Broccoli was tender-crisp like the recipe says—nice. The only thing: I wish the instructions said to drain excess noodle water first.

  14. User avatar elisha.vonrueden says:

    3 stars
Not bad, but I think 250g noodles is a lot for only 300g beef. Also I accidentally forgot the sesame oil for a minute and the smell was different, lol.

    1. User avatar geoWizard says:

      4 stars
Totally get that—250g noodles is pretty generous. I usually do about the same though since noodles soak up the sauce, but if you like it meatier, cutting to ~180–200g would balance it out.

  15. User avatar fabian.leuschke93 says:

    4 stars
Beef thinly sliced is key. If you cut it thicker it turns chewy fast. I learned that the hard way 😅

    1. User avatar emerson.corkery34 says:

      4 stars
I did it thicker once and it was like eating rubber… but I thought “more cooking” would fix it lol. Now I slice super thin and cook fast.

    2. 5 stars
Yes! Thin slicing is everything—once it’s chewy it’s game over 😅 I usually freeze the beef for 15 min first so it cuts super thin.

  16. User avatar Meriadoc Brandybuck says:

    5 stars
Easy and fast! I made it in under 30 minutes. Perfect for a weeknight dinner!

  17. User avatar winifred.leannon says:

    5 stars
The garlic + oyster sauce combo is doing the most (in a good way). I also tossed in some red pepper flakes for heat and it leveled up.

    1. User avatar jere.stroman says:

      5 stars
Yes!! Garlic + oyster sauce really ties it together. I’ve done the red pepper flakes too—such a good kick. 🍜

  18. 4 stars
Broccoli and beef together? Yummy! Just like my mom used to make. Nostalgia all over! ❤️

  19. 2 stars
My noodles turned mushy. Didn’t follow the instructions right, I guess.

  20. User avatar johnette.schmidt2009 says:

    4 stars
I used chicken instead of beef and it still turned out fine.

  21. User avatar alise.rowe58 says:

    3 stars
Beef came out a bit chewy even though it’s sirloin. Maybe my slices weren’t thin enough. Otherwise decent meal.

  22. User avatar cuc.rice89 says:

    4 stars
I wasn’t sure about “200g broccoli” with “250g noodles” but it balances out. Wish the instructions mentioned whether to rinse the cooked noodles (I didn’t).

  23. User avatar josefa.schinner51 says:

    5 stars
Yum! A new family favorite! Next time I’ll double the broccoli.

  24. User avatar gerald.windler1985 says:

    3 stars
Decent, but my cornstarch thickened too fast and got clumpy. Next time I’ll pour it in slower and keep stirring like the instructions say.

  25. User avatar damion.carter says:

    1 star
Noodles not cooked right, I think I mistook the grammes for ounces. My bad! 😅

  26. User avatar felipe.daniel30 says:

    2 stars
Broccoli is gross! I only eat the noodles and beef. 😬

  27. User avatar Frost Troll says:

    3 stars
Could use more flavor. I added some chili flakes but still didn’t hit the spot.

  28. User avatar lupe.auer says:

    1 star
Why would anyone put oyster sauce in? Gross! I did not like it at all. Stick to soy sauce.

  29. User avatar raymundo.bayer1980 says:

    4 stars
I was worried it’d be bland with low-sodium soy, but the oyster sauce saved it. Good balance.

  30. 5 stars
Absolutely delicious! I added some chili flakes for a kick.

  31. 4 stars
This recipe is super easy! I don’t even cook much, and it turned out great.

  32. User avatar liberal.hero says:

    3 stars
I tried this recipe but I think I may have overcooked the noodles. They turned out mushy. Anyone had better luck?

  33. User avatar ALTplusF4 says:

    5 stars
This dish was a hit! My family loved it, especially the beef. 🙌

    1. User avatar NAFO.SUPREMACY says:

So glad to hear your family enjoyed it! It’s one of my favorites too. 😊

  34. User avatar odis.sporer says:

    2 stars
IDK if I did it right, but mine turned out too saucy. I didn’t think it would be like that. :\

    1. User avatar Deep Thought says:

      3 stars
I don’t think it should be too saucy if you follow instructions! Maybe check your measurements next time?

    2. User avatar bess.bailey says:

      4 stars
Sounds like you might have added too much liquid or didn’t let it thicken enough! Next time, try reducing the sauce slowly.

  35. User avatar josef.pollich47 says:

    5 stars
This is why I love cooking at home! Easy and quick!

  36. User avatar gertrud.gleason72 says:

    2 stars
Just okay. Nothing special. Will pass on this next time.

  37. 5 stars
Can’t believe something so simple can taste so good! Will make again! 5 stars!

  38. 4 stars
I’m skeptical about the cornstarch step… but wow, it thickened up nicely. Next time I’ll add a pinch of chili flakes for some heat.

  39. User avatar cleo.schaefer4 says:

    5 stars
    Easy. Tasty. 👌

  40. User avatar Miss Randal Reinger says:

    5/5. Easy and filling.

  42. User avatar helena.bernhard says:

    2 stars
Broccoli and beef is fine, but I ain’t got time for all these steps! Just throw em in a pan, right? 😅

  43. User avatar maria.kuphal44 says:

    4 stars
Not gonna lie, I was skeptical about the noodle amount (250g cooked) but it turned out great. Next time I’ll stir-fry a minute longer to get a bit more browning.

    1. 5 stars
I had the same worry—250g cooked noodles sounded like either too much or not enough. Glad it worked out for you! Stir-frying a bit longer for more browning is a great idea.

  44. User avatar minerva.larkin says:

    2 stars
I don’t understand why people like this. Too much soy sauce!

    1. User avatar Majikthise says:

      3 stars
Too much soy sauce? I think it balances out the beef, but maybe you just don’t like it as much? 🤷‍♂️

    2. 5 stars
I actually love how the soy sauce adds depth to the flavor! It’s key in a dish like this.

  45. User avatar Feral Falmer says:

    4 stars
This is one of those meals that feels restaurant-y. I didn’t have low-sodium soy sauce so I adjusted slightly, but it worked. Will definitely make again!

  46. 5 stars
Loved it! I added some chili flakes for a spicy kick. Yummm! 5/5!

  47. User avatar Ilban Richese says:

    4 stars
This is a lot of steps for something that’s basically ‘stir-fry with sauce.’ But hey, it was fast and didn’t disappoint. 10/10 would eat again.

  48. 4 stars
Mmm, so good! Perfect meal for weekdays. 👌

  49. User avatar ira.bradtke says:

    4 stars
Good idea with the cornstarch slurry, but mine got a bit too thick too fast. Next time I’ll add it slower and maybe reduce the slurry a touch.

  50. User avatar nolan.spencer71 says:

    5 stars
This was delicious! The beef was super tender and the broccoli added a nice crunch. Will definitely make again!

  51. User avatar desmond.brown49 says:

    3 stars
Tried this for dinner, not bad but need more flavor. Maybe ginger next time?

  52. User avatar nancee.lind70 says:

    3 stars
Not gonna lie, I followed it and it tasted kinda bland before the sauce thickened. After thickening it improved—still, it needs more seasoning maybe pepper or more soy.

  53. User avatar carmelita.jerde18 says:

    4 stars
So easy to make! I didn’t have oyster sauce so I used fish sauce instead. Still tasty! Thanks for sharing!

  54. User avatar Galaxia Woonbeam says:

    4 stars
I swapped in chicken and it was fine, but the beef version sounds way better. Also sesame oil smell is AMAZING.

  55. User avatar chadwick.streich says:

    2 stars
Beef and broccoli?! Why not chicken? Tried it and it came out too chewy.

    1. User avatar Ms. Florinda Farrell says:

      4 stars
I actually prefer beef in this dish! Sorry to hear yours was chewy; maybe the beef wasn’t thin enough? Give it another shot! 😊

  56. User avatar guy.stoltenberg96 says:

    3 stars
I used rice noodles and it worked, but I think I cooked them too soft. Flavor was there, though. Next time I’ll go firmer with noodles.

    1. User avatar delpha.jones says:

      2 stars
Hmm, I think you should boil them longer then stir-fry—otherwise they taste chalky? Also 250g is a lot of noodles… but maybe it’s just me. Beef came out great though!

    2. User avatar Shannon Windler says:

      5 stars
Glad it worked! Rice noodles can get mushy fast—next time try undercooking them a bit (like 1–2 minutes less) and toss them in the pan just long enough to coat. Your instincts about going firmer are spot on.

  57. User avatar rebecka.kilback49 says:

    3 stars
My noodles were clumpy because I cooked them a bit too long. Sauce still coated everything, so it wasn’t a total fail.

  58. User avatar junior.pfannerstill77 says:

    2 stars
Not bad. But my sauce turned kinda gummy (maybe I added the cornstarch too fast or didn’t mix it enough). Also the noodles were slightly clumpy.

  59. User avatar carol.marquardt says:

    5 stars
This dish was amazing! The flavors worked so well together. Will definitely make again!

    1. User avatar belva.kessler says:

      5 stars
I’m so glad you loved it! It’s one of my favorites too. Did you use any extra veggies?

  60. User avatar Aubrey Medhurst says:

    4 stars
Broccoli got a little mushy for me because I cooked longer than 4 minutes. Still tasty though; next time I’ll stop earlier so it stays crisp.

  61. User avatar liberal.hero says:

    4 stars
wait, can i use chicken instead of beef? I don’t eat beef. 4 stars.

  62. User avatar zachery.king2019 says:

    2 stars
Why do you need so many sauces? Just soy sauce is enough for me. 2 stars.

  63. User avatar betsey.zieme51 says:

    4 stars
I followed it mostly, but I accidentally used normal soy sauce and it was a little too salty. Still delicious though.

  64. User avatar Abraham Little I says:

    5 stars
Me and ma kids loved it! So much flavor, wee like noodles.

  65. User avatar anonymous_hacker says:

    3 stars
It tasted kinda bland. Maybe I should’ve added more soy sauce? Not sure I’ll make it again.

  66. User avatar sun.kuhlman1956 says:

    5 stars
Tried this last night—so good. The sauce actually clings to the noodles like restaurant-style, and the broccoli stayed crisp. I used fresh garlic and it smelled amazing.

  67. User avatar shelton.davis64 says:

    5 stars
Absolutely delicious! My family loved it! Will definitely make again. 🥢

  68. User avatar agatha.collier1953 says:

    4 stars
Pretty good base recipe. I used spaghetti noodles and added a tiny pinch of chili flakes—would recommend. Next time I might sear the beef a little longer for more browning.

    1. User avatar wilton.kirlin24 says:

      5 stars
Glad it worked for you! Spaghetti with this kind of sauce actually makes sense—more like a stir-fry-ish pasta. And yeah, browning the beef longer usually brings out a lot more flavor. I’m curious though: did you cook the broccoli a bit longer when using spaghetti, or kept it tender-crisp?

  69. User avatar smartestRedditor says:

    1 star
This recipe is a joke! How is this even beef and broccoli? More like broccoli and noodles.

  70. 4 stars
Pretty solid, but my sauce got a bit too thick after the cornstarch. Next time I’ll use a touch less slurry.

  71. User avatar Chandra Spencer says:

    5 stars
This is the best recipe I ever tryed! My kids loved it! FIVE STARS 🌟🌟🌟🌟🌟

  72. User avatar burt.bruen97 says:

    4 stars
Easy to make and delicious. Who knew beef and broccoli could be so simple! 😊

  73. 5 stars
This recipe is so good! My family loved it. Will make again!

  74. 5 stars
This recipe is so easy! My family loved it, even my picky eater! 5 stars!

  75. User avatar marcie.marvin says:

    5 stars
Heck yeah! This is a keeper. I made it twice this week!

  76. User avatar alonso.marvin5 says:

    5 stars
This tastes exactly like my favorite takeout—especially with that cornstarch sauce. I used flank steak and it still came out tender. Yum!

    1. User avatar blair.schumm1958 says:

      4 stars
I think it’s pretty good, but “exactly like takeout” depends on the sauce ratios 😅. I used flank steak too and it was tender, but mine got a little gluey when I added the cornstarch—maybe I stirred too slow. Still, I’ll make it again.

    2. User avatar modesto.bailey2024 says:

      5 stars
Yes!! The cornstarch sauce really does make it taste like takeout. I always worry it’ll get too thick, but this method nailed it—tender beef too. Yum!

  77. User avatar carolina.rolfson2005 says:

    5 stars
This was so fast and actually tasted like takeout. The cornstarch step makes a big difference—everything clings nicely to the noodles.

    1. User avatar porfirio.kozey says:

      5 stars
Yes!! The cornstarch slurry is the key—I made it once without it and it was way more watery. This looks like the exact “takeout” vibe.

  78. User avatar Dr. Sheryl Stamm says:

    4 stars
Pretty solid recipe. I had to cook the broccoli a bit longer because my florets were huge, but the beef stayed nice and browned. Would make again.

  79. User avatar landon.mayert1977 says:

    4 stars
My daughter made this and it was great! She’s almost 10! Very proud 🙂

  80. User avatar florida.walter66 says:

    5 stars
The sesame oil at 1 tsp is key. I almost skipped it and then added it at the end—massive difference in aroma. Great comfort food vibes.

    1. User avatar kathi.bauch18 says:

      5 stars
Yes!! I’ve had this happen too—sesame oil really makes it taste “right.” Glad you noticed the aroma difference.

  81. 4 stars
I followed it pretty closely, but next time I’ll add a pinch of chili flakes. Flavor was good, just wanted a little more punch.

  82. User avatar quinton.cummerata63 says:

    4 stars
Pretty tasty, but I think 3-4 minutes for broccoli might be a bit short depending on how thick your florets are. Mine could’ve used another minute. Still ate it all though.

    1. 5 stars
Totally agree—broccoli thickness makes a huge difference. I did 4 min once and it was still a bit crunchy, but another 60 seconds fixed it.

    2. 4 stars
Mine was undercooked at 3-4 minutes too 😅 Like, still kinda hard. Next time I’ll cover the pan for a sec so it steams more. But flavor was good!

  83. User avatar Saruman the White says:

    4 stars
Yum! Beef is so good, but I forgot the broccoli lol! Still a hit!

    1. User avatar august.gleason1963 says:

      3 stars
Haha, broccoli I guess is not necessary! But I would not forget the broccoli, it makes the dish BETTER!

    2. User avatar charley.quitzon says:

      5 stars
Broccoli or no broccoli, that sounds delicious! The beef must still be juicy! 😋

  84. User avatar isreal.sawayn1961 says:

    5 stars
This came out way better than I expected. The sauce clung perfectly to the noodles—tender-crisp broccoli too. I used a little extra garlic and it still felt balanced.

  85. User avatar leonida.pfannerstill says:

    3 stars
I’m not sure about the oyster sauce amount—tasted a bit heavy/salty to me. I’ll cut it next time or add more noodles.

  86. User avatar Twisted Fate says:

    5 stars
The sauce thickening step is key. Followed it exactly and it came out glossy like takeout. My family asked for seconds.

  87. User avatar tori.kassulke88 says:

    3 stars
Very tasty but took longer than expected to cook. 🕒

    1. 4 stars
Thanks for the feedback! I sometimes have to adjust my cooking times too. Glad you liked the taste!

  88. User avatar rosalia.nikolaus5 says:

    4 stars
Honestly? It’s good, but I’d reduce the soy sauce a little—mine tasted a tad too salty even with low-sodium. Otherwise great texture.

    1. User avatar NAFO.SUPREMACY says:

      5 stars
Good call—soy sauce can be super salty depending on the brand. I usually start with 1.5 tbsp low-sodium and add more only if it needs it. Glad you still liked the texture!

  89. User avatar wilton.nikolaus says:

    2 stars
I messed up the cornstarch part and it turned into a soup! 😩 Lesson learned, read the instructions carefully!

  90. User avatar Princess Zelda says:

    5 stars
Made this tonight—so fast and honestly way tastier than I expected. The tender-crisp broccoli is the key, and the cornstarch slurry thickened it perfectly.

    1. User avatar clarence.swift84 says:

      5 stars
Yes! The tender-crisp broccoli really makes this. I’ve done it a couple times and that cornstarch slurry thickening is spot on.
