Baked Banana-Nut Oatmeal Cookies

April 3, 2024

If you’re craving a wholesome snack that’s both satisfying and delicious, these baked banana-nut oatmeal cookies are the perfect solution. Made with ripe bananas, hearty oats, and crunchy nuts, they’re a great way to indulge your sweet tooth while keeping things nutritious.

The beauty of these cookies lies in their simplicity. Start by mashing up ripe bananas, which provide natural sweetness and moisture without the need for added sugar. Mix in rolled oats for that hearty, chewy texture, and add a handful of your favorite nuts, such as walnuts, almonds, or pecans. These nuts not only add a satisfying crunch but also contribute healthy fats and protein.

To flavor the dough, sprinkle in some cinnamon and vanilla extract. The warm spices balance the natural sweetness of the bananas and oats, creating a comforting flavor that’s perfect for any time of day. A pinch of salt helps to enhance the overall taste, and a little honey or maple syrup can be added if you like your cookies on the sweeter side.

Once you’ve mixed the ingredients together, simply scoop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them out to allow for slight spreading. Flatten them gently with the back of a spoon to get that classic cookie shape. Bake at 350°F (175°C) for about 12-15 minutes, or until they’re golden brown around the edges.

These cookies come out soft and chewy, with just the right amount of crispness on the outside. They make a great breakfast on-the-go, a midday snack, or a healthy dessert when you’re craving something sweet but don’t want to overindulge. Plus, they store well in an airtight container for several days, making them a great option for meal prepping.

Baked banana-nut oatmeal cookies are a simple and tasty treat that’s perfect for anyone looking for a healthy, satisfying bite. Full of flavor and packed with nutrients, they’re the ideal choice for your next snack or breakfast treat.

Not bad, but they didn’t really hold together like I expected. Next time I’ll mash the bananas more and maybe add a tiny bit of extra oats.

Not bad at all, but 350°F for 15 minutes felt short for me. I actually had to crisp them under the broiler for like 30 seconds—be careful!

I didn’t have walnuts, used pecans instead. Still yum!

  7. 5 stars
These came out chewy and super fragrant. I added a pinch more cinnamon and it tasted like a cozy bakery snack. Will make again!

Wow—no flour, no eggs, yet these are super snackable. My kid ate them without complaining (major win).

Yes!! Love that they’re flour- and egg-free but still come out snacky. And getting the kid to actually eat them? That’s the real win 😂

No eggs? No flour? That sounds kinda sketchy, but I guess bananas + oats can glue it together. Gonna try—if they fall apart I’m adding a little flour, lol.

I like the simple ingredient list, but 15 minutes felt a little short for my oven. I baked closer to 20 and they browned nicely.

I was skeptical about baking bananas + oats without egg or flour, but wow. They held together and smelled amazing right when they came out.

Just tried them, they’re too sweet! Got any tips to reduce the honey?

  14. User avatar willetta.jacobson23 says:

I followed the recipe pretty much but my cookies didn’t really “set” after 15 minutes. Maybe my bananas were too small? Still tasty though.

    1. User avatar kathleen.damore21 says:

      4 stars
Totally get it! 15 minutes might not be enough for thicker spoonfuls. I usually bake closer to 18–22 until they look a bit more set at the edges, then cool fully. Also the banana size/ripe-ness can change the moisture a lot.

    2. 3 stars
Mine never set either when I did it “fast.” I think the honey makes them gooey. Next time I’ll add less honey or bake longer—maybe 10 more mins? but yeah still good lol.

Yum, yum! My new favorite cookies! Best with a cup of coffee.

  16. User avatar Majikthise says:

These turned out way better than I expected—sweet, chewy, and the cinnamon really makes them pop. I used pecans instead of walnuts and it still worked great.

These cookies are a game changer! Super easy to make and they taste amazing! 🤤

Mine didn’t get very “cookie-y” and were more like soft oat lumps, but they still tasted great. Might need a bit longer in the oven or smaller spoonfuls.

    1. User avatar anonymous_hacker says:

      5 stars
Ooh that sounds similar to mine too—definitely more “oaty” than traditional cookies. I’ve had better luck with smaller spoonfuls and baking 3–5 minutes longer until they’re more browned on the edges. Maybe also let them cool longer for that firmer set!

    2. 3 stars
hmm mine came out fine but i dont know why yours didnt. maybe your bananas not ripe enough? or you mashed too smooth? also 15 min feels short… i would try 20. these are kinda like lumps anyway lol

Are walnuts necessary? I don’t like them. Can I substitute with peanuts?

    1. 2 stars
I dunno if peanuts will taste the same as walnuts. Better stick to what the recipe says.

    2. User avatar wilton.kuhlman55 says:

      5 stars
You can definitely use peanuts instead! They will change the flavor a bit, but should still be tasty!

  20. 5 stars
Yum! I added chocolate chips instead of raisins and they were perfect!

    1. User avatar keli.kuhlman says:

      5 stars
Chocolate chips instead of raisins? Genius! Will definitely try that next time! 🍪

    2. 2 stars
I dont know, sounds kinda weird. Chocolate and banana? Really? 🧐

  22. User avatar marlyn.kunde47 says:

I was skeptical but gave it a try. They’re just okay. I think they need more sugar.

  23. User avatar Dallas Altenwerth MD says:

Simple recipe, but mine were a bit too soft after 15 minutes. Next time I’ll bake 3-5 mins longer. Tastes good though!

  24. User avatar terra.haag1992 says:

I don’t know, people. I thought these would taste way better. Very bland to me.

    1. User avatar parker.walsh says:

      4 stars
I agree, they could use more flavor! Maybe try adding chocolate chips or more cinnamon next time.

  25. User avatar hulda.beatty13 says:

Banana cookies? Weird. But… actually not bad.

  26. User avatar desire.steuber52 says:

    4 stars
I’m skeptical about “cookies” with no flour or egg, but hey—these are tasty. Texture is more like dense oat bites than classic cookies.

  27. 4 stars
Quick and easy recipe. Love the combination of bananas and walnuts!

  28. 3 stars
I used banana that was just “kinda ripe” and it didn’t bind well. Also, 15 minutes feels short for my oven. Would rate higher with riper fruit.

    1. User avatar shannon.nienow2018 says:

      5 stars
Totally get that—banana ripeness makes a big difference in how it sticks together. “Kinda ripe” usually won’t mash into the right texture for binding. I’d try overripe bananas next time (spotty brown ones) or bake a few minutes longer if your oven runs cool.

  29. User avatar lane.kirlin63 says:

    4 stars
I used dried cranberries instead of raisins because I was out, and it was still tasty. Would I make it again? probably yes.

    1. 5 stars
That’s a great swap! Dried cranberries add a nice tartness with the bananas—definitely makes sense. I’d totally do that if I ran out of raisins too.

  30. 5 stars
These cookies are fantastic! So easy to make and delicious. My kids loved them!
