When it comes to a satisfying brunch, few things hit the spot like a bacon and egg croissant. It’s the kind of recipe that feels indulgent yet is easy to put together, ideal for slow weekend mornings or casual get-togethers.
The magic starts with the croissant itself. Buttery, flaky, and golden, it sets the stage for everything else. You can use bakery croissants for convenience or bake your own if you’re feeling adventurous. Warm them slightly before assembling to enhance the flavor and texture.
Next comes the filling: perfectly scrambled or fried eggs and crispy bacon. The eggs should be soft and fluffy, seasoned simply with salt and pepper. For extra richness, add a splash of cream while whisking. The bacon, meanwhile, should be cooked to your preferred level of crispiness. If you’re serving a crowd, baking bacon in the oven saves time and keeps everything uniform.
Melty cheese . like cheddar, gouda, or Swiss, pulls it all together. A quick trip to the oven or pan allows the cheese to melt into the eggs and bacon, making every bite gooey and satisfying.
Want to elevate it even more? Add a swipe of Dijon mustard, a slice of tomato, or a few leaves of arugula for contrast. Avocado slices or a drizzle of hot sauce are also welcome additions for those who love a bit of flair.
Serve the croissant warm, alongside a fresh fruit salad or a cup of coffee, and you’ve got a brunch plate that’s both comforting and impressive. It’s the kind of meal that makes you slow down, sit back, and savor the morning.
Whether you’re feeding overnight guests, celebrating a birthday breakfast, or just treating yourself, this bacon and egg brunch croissant brings all the flavor without the fuss.

I added some cheese and it was amazing! Don’t forget the cheese, people!
This recipe is sooo good! Can’t believe how easy it was to make.
This sounds amazing! Can’t wait to try it. I love brunch recipes!
Really? I don’t get how this is easy. Seems like a lot of work for croissants and eggs.
This looks amazing! Can’t wait to try it for brunch this weekend. 😍
I made this last weekend and it was a hit! So delicious! 👏
Super easy! My kids loved it. They actually called it “Yummy Sandwiches”. Will make again!
Wow, that sounds great! I can’t wait to try it myself. Thanks for sharing!
Low effort, high reward 😄 Bacon got crispy like the recipe said. Scrambled eggs were fluffy. Chives on top is a great touch, don’t skip it!
I’m so sick of breakfast foods, but this was okay I guess.
Just made this for my friends, but I accidentally burned the bacon. Still tasted good tho!
Bacon and eggs belong on toast, not croissants! Just saying!
This was delish! Perfect for brunch. 😋
Sounds good, but I wonder if it needs something more? Maybe some cheese?
Yum! I’m definitely trying this for my next brunch. Thanks for sharing! 🥳
This is such a solid brunch idea—croissants + crispy bacon + soft scrambled eggs is exactly my vibe. I added a little cheese and it turned out amazing. Definitely making again!
I don’t see how this is brunch material. Croissants are too flaky, I prefer toast.
But don’t you think toast is a bit boring? Croissants add a special touch to brunch!
I think croissants are perfect for brunch! Flaky and buttery, what more could you want?
Croissants are better than bread. SRY not SRY 😜
I dunno, bread can be pretty good too. But bacon and eggs in a croissant? That’s gotta be tasty!
Totally agree! Croissants are flaky and delicious, way better than plain bread. This recipe sounds great! 😍
This looks dangerously good. I love that you toast the croissants first so they don’t get soggy—great brunch move.
I tried it, but my eggs were too runny. Maybe I did something wrong? Need help!
I made it for a party but honestly it was a bit underwhelming, maybe add spices?
Yum! This looks amazing. Can’t wait to try it on the weekend!
I’m skeptical about the “scramble and stir constantly” part because my eggs always go rubbery if I do that. Any trick for keeping them creamy?
I do it but on low/medium-low and only stir a little, like you push them around every few seconds. If you go too hot, yeah rubbery city 😅
Totally get you—“stirring constantly” can overcook them fast. I pull the pan off the heat when the eggs still look a little glossy, then keep stirring off-heat. Creamy every time for me.
Bacon and eggs in croissants!? Yes, please! 😍
OMG, this sounds heavenly! Can’t wait to try it! 😍
This was a hit! Loved the bacon and eggs in the croissant. It was devoured in minutes!
Sounds amazing! I’m definitely trying this recipe this weekend! 😋
I tried it but the bacon burnt a bit. Make sure to watch it! Not everyone has a fancy oven.
I mean bacon and eggs are great but why croissants? Seems extra to me. 🤔
bacon = good croissant = good eggs = good means perfect brunch!
Perfect for a brunch! My friends are gonna love it.
This sounds delicious! Can’t wait to try it with my family.
Looks good, but isn’t bacon too fatty? Maybe use turkey bacon?
5 stars from me! My kids loved it, especially with the chives. Fancy!
I don’t see how this is brunch. It’s just bacon and eggs in a croissant. 🙄
I don’t think this is a proper brunch dish. Croissants should be left alone! Just my opinion.
I totally get where you’re coming from! Croissants are perfect as they are, but this recipe sounds kinda fun too! Maybe give it a try?
This is so good bruh. Like REAL good! 🥓😋
I dunno about chives tho, I mean, what even are those? Just use eghs n bacon.
Chives add a nice flavor! They’re not just for decoration. Give it a try!
I’m not a chef, but even I could make this! Real tasty.
5 stars for the bacon! But my croissants got burnt.
I feel you on the burnt croissants! They can be tricky. But bacon makes everything better, right? Try again maybe!
Bacon is bad for health, like my doctor said. Why are we eating this?
Not everyone can buy chives. Can I skip them? Don’t want to waste money.
I think it’s fine to skip the chives! They just add a bit of flavor, but your croissants will still be yummy without them.
But chives are like the best part for garnish! Why not just use green onions or something? Chives are expensive for nothing!
Great recipe! Made it for my friends and they loved it. Very filling.
Thanks for sharing! This sounds delicious! I’m definitely gonna try it.
Yummy, I love croissants! But did I see chives? Can I use green onions instead?
I think green onions would work fine! They have that nice oniony flavor too. Enjoy your croissants!
Nah, chives are totally different than green onions! Stick to the recipe!
Quick and tasty, but 5 minutes for toasting felt a bit short in my oven. Next time I’ll toast a few minutes longer so the croissant holds up better to the eggs.
I tried this but used turkey bacon. Wasn’t the same. Don’t skimp on the bacon, folks!
Easy to make but honestly, it could use a sauce or something.
Nah, I think it’s fine without a sauce. The bacon and eggs are enough flavor.
I totally agree! A nice hollandaise sauce would take this to the next level. Yum!
I think the bacon was too much, maybe just one slice would do.
I love bacon, but I see your point! Maybe half would be better.
I messed up the eggs and they turned kinda rubbery, so maybe I overcooked. Also croissants are expensive where I live… but flavor was good.
Oof, sorry about the rubbery eggs! That usually happens when they’re overcooked or cooked too hot. Next time try lower heat and stir constantly but stop as soon as they’re just set. Love that the flavor still came through though—croissants being pricey is so real where I live too 😅
I didn’t have chives, can I use something else? Maybe green onions? 🤔
Bacon perfection! But I accidentally burnt my eggs. Oops!
It’s all good! Bacon is the real star here anyway! Next time, keep an eye on those eggs. 😄
Burnt eggs? That’s not good! Maybe try lower heat next time? Croissants tho, yum!
Easy recipe! Made this for my family and they loved it! Will definitely make again.
Looks easy, but can you really trust a recipe that doesn’t say how many eggs you need? 🤔
I’ve made this too and it was a hit! Such a simple yet delicious idea.
My oven is broken and I can’t heat stuff. Can I just use the microwave? Help!
Bacon? Good. Eggs? Good. Croissant? Good. It’s a good recipe, lol.
I used turkey bacon because that’s what I had and it still worked. Chives made it feel fancy without trying too hard.
This is a wonderful recipe! The croissants are so flaky and buttery. I added some cheese and it was a hit!
Cheese in croissants? Seems weird… but if it worked for you, then maybe I’ll give it a shot. 🤔
That sounds delicious! I might try adding some avocado next time.
I tried this but it didn’t turn out as nice as the pics. My eggs were kinda rubbery.
I had the same issue! Maybe try cooking the eggs on lower heat next time? It could help with the rubbery texture.
I’m skeptical about this one. It just doesn’t seem like they go together.
This recipe is easy to follow and delicious! My family loved it. Definitely a keeper!
Eggs very bland, needed more spice. I added cheese but still not wow.
I totally get you! I felt the same when I made it. Maybe try adding some hot sauce next time?
Instructions were kinda confusing, like when to add the chives? I just threw them in anywhere. 🤷♂️
I think you should add the chives after cooking. That’s usually what garnish means, right? But it’s all good, just make it how you like!
I totally get it! The chives part was a bit unclear. I just chopped them up and sprinkled them on before baking. Tasted fine anyway!
The bacon was too greasy for my liking but the idea is solid.
I get what you mean! Maybe if you used turkey bacon it’d be less greasy? Just a thought!
Best brunch ever!!! 🥐🥓 Eggs were soooo fluffy and the chives add a nice touch.
Thanks for sharing! I gotta try this, it sounds yummy!
I used turkey bacon instead and they still turned out great! 🥳
Turkey bacon? Wow, that’s a twist! I might try that next time! 🍳
This was sooo good! My family loved it, especially the bacon. Will make again!
Yum! But why chives? Just use green onions, way better.
Really delicious! Had some left over croissants that I needed to use up.
DElicious 🤤 would make again but maybe add cheese next time!
Cheese? Really? Might just make it too heavy. I prefer it simple.
Adding cheese sounds amazing! It’d make it even more creamy! 😍
Not sure if this is brunch or a heart attack on a plate. Enjoyed it tho!
Why do you use 8 slices of bacon? That’s like too much! 4 should be plenty!
This is a brunch win! So freakin good and easy to make!
I totally agree! This recipe is super easy and delicious! 🤤
Looks good, but isn’t this just bacon and eggs on bread? I don’t get the hype.
Really? Croissants and eggs? Sounds weird, but I guess people have different tastes. I’ll stick to regular toast, thanks.
Croissants + bacon = best breakfast ever! Never knew this was a thing.
Bacon should ALWAYS be crispy! I put too little salt, it was kinda bland. Next time I’ll add cheese too!
I dunno, looks a bit too greasy for my taste. Bacon and eggs are good, but croissants too? Seems excessive.
Didnt have chives but used cheese instead, turned out great! Yum!!
I can’t cook. I just came here for the comments. 😂
So easy and quick to make. My kids loved it! Will definitely make again.
These are sooo good! Made them for brunch today and everyone loved it! 😍
Did you really bake them for 5 min? That’s not enuf! Mine were still soggy. 🤨
I thought croissants were just for breakfast not brunch. But this must be nice for people who like brunch. 🤷♂️
Croissants for brunch? Why not! They sound delicious. I guess we can break the rules a bit. 😊
Idk man, croissants for brunch seems a bit weird to me. I prefer pancakes or something. 🥞
