Bacon and Egg Brunch Croissant

February 27, 2024

When it comes to a satisfying brunch, few things hit the spot like a bacon and egg croissant. It’s the kind of recipe that feels indulgent yet is easy to put together, ideal for slow weekend mornings or casual get-togethers.

The magic starts with the croissant itself. Buttery, flaky, and golden, it sets the stage for everything else. You can use bakery croissants for convenience or bake your own if you’re feeling adventurous. Warm them slightly before assembling to enhance the flavor and texture.

Next comes the filling: perfectly scrambled or fried eggs and crispy bacon. The eggs should be soft and fluffy, seasoned simply with salt and pepper. For extra richness, add a splash of cream while whisking. The bacon, meanwhile, should be cooked to your preferred level of crispiness. If you’re serving a crowd, baking bacon in the oven saves time and keeps everything uniform.

Melty cheese . like cheddar, gouda, or Swiss, pulls it all together. A quick trip to the oven or pan allows the cheese to melt into the eggs and bacon, making every bite gooey and satisfying.

Want to elevate it even more? Add a swipe of Dijon mustard, a slice of tomato, or a few leaves of arugula for contrast. Avocado slices or a drizzle of hot sauce are also welcome additions for those who love a bit of flair.

Serve the croissant warm, alongside a fresh fruit salad or a cup of coffee, and you’ve got a brunch plate that’s both comforting and impressive. It’s the kind of meal that makes you slow down, sit back, and savor the morning.

Whether you’re feeding overnight guests, celebrating a birthday breakfast, or just treating yourself, this bacon and egg brunch croissant brings all the flavor without the fuss.

Low effort, high reward 😄 Bacon got crispy like the recipe said. Scrambled eggs were fluffy. Chives on top is a great touch, don’t skip it!

I’m so sick of breakfast foods, but this was okay I guess.

  7. User avatar GOPster says:

Just made this for my friends, but I accidentally burned the bacon. Still tasted good tho!

  8. 2 stars
Bacon and eggs belong on toast, not croissants! Just saying!

    2. 5 stars
Yum! I’m definitely trying this for my next brunch. Thanks for sharing! 🥳

  10. User avatar Sapphire says:

    5 stars
This is such a solid brunch idea—croissants + crispy bacon + soft scrambled eggs is exactly my vibe. I added a little cheese and it turned out amazing. Definitely making again!

  11. 2 stars
I don’t see how this is brunch material. Croissants are too flaky, I prefer toast.

    1. User avatar suspiciousCommentator says:

      4 stars
But don’t you think toast is a bit boring? Croissants add a special touch to brunch!

    2. 5 stars
I think croissants are perfect for brunch! Flaky and buttery, what more could you want?

  12. User avatar sallie.connelly1977 says:

    5 stars
Croissants are better than bread. SRY not SRY 😜

    1. 4 stars
I dunno, bread can be pretty good too. But bacon and eggs in a croissant? That’s gotta be tasty!

    2. User avatar scottie.skiles81 says:

      5 stars
Totally agree! Croissants are flaky and delicious, way better than plain bread. This recipe sounds great! 😍

  13. User avatar vita.vonrueden13 says:

This looks dangerously good. I love that you toast the croissants first so they don’t get soggy—great brunch move.

  14. User avatar karlene.wiza15 says:

I tried it, but my eggs were too runny. Maybe I did something wrong? Need help!

I’m skeptical about the “scramble and stir constantly” part because my eggs always go rubbery if I do that. Any trick for keeping them creamy?

    1. User avatar thanh.cartwright1950 says:

      4 stars
I do it but on low/medium-low and only stir a little, like you push them around every few seconds. If you go too hot, yeah rubbery city 😅

    2. User avatar allegra.hickle1965 says:

      5 stars
Totally get you—“stirring constantly” can overcook them fast. I pull the pan off the heat when the eggs still look a little glossy, then keep stirring off-heat. Creamy every time for me.

  18. User avatar Malisa Feeney says:

    5 stars
Bacon and eggs in croissants!? Yes, please! 😍

I mean bacon and eggs are great but why croissants? Seems extra to me. 🤔

Looks good, but isn’t bacon too fatty? Maybe use turkey bacon?

  23. User avatar jeremy.weber37 says:

5 stars from me! My kids loved it, especially with the chives. Fancy!

  24. User avatar melvin.gorczany2023 says:

I don’t see how this is brunch. It’s just bacon and eggs in a croissant. 🙄

  25. User avatar nery.frami90 says:

    1 star
I don’t think this is a proper brunch dish. Croissants should be left alone! Just my opinion.

    1. 4 stars
I totally get where you’re coming from! Croissants are perfect as they are, but this recipe sounds kinda fun too! Maybe give it a try?

  26. User avatar wellRespected says:

This is so good bruh. Like REAL good! 🥓😋

  27. User avatar chase.sipes10 says:

I dunno about chives tho, I mean, what even are those? Just use eghs n bacon.

    1. User avatar norma.zemlak says:

      4 stars
Chives add a nice flavor! They’re not just for decoration. Give it a try!

  28. 4 stars
I’m not a chef, but even I could make this! Real tasty.

  29. User avatar smartestRedditor says:

    3 stars
5 stars for the bacon! But my croissants got burnt.

    1. User avatar huey.kessler says:

      4 stars
I feel you on the burnt croissants! They can be tricky. But bacon makes everything better, right? Try again maybe!

  30. User avatar lakia.heathcote says:

    1 star
Bacon is bad for health, like my doctor said. Why are we eating this?

  31. User avatar stefania.rice90 says:

    3 stars
Not everyone can buy chives. Can I skip them? Don’t want to waste money.

    1. User avatar Draugr Thrall says:

      5 stars
I think it’s fine to skip the chives! They just add a bit of flavor, but your croissants will still be yummy without them.

    2. User avatar tissues_with_issues says:

      3 stars
But chives are like the best part for garnish! Why not just use green onions or something? Chives are expensive for nothing!

  32. User avatar Bob Inforapples says:

    4 stars
Great recipe! Made it for my friends and they loved it. Very filling.

    1. 5 stars
Thanks for sharing! This sounds delicious! I’m definitely gonna try it.

  33. User avatar nichole.nader says:

    4 stars
Yummy, I love croissants! But did I see chives? Can I use green onions instead?

    1. User avatar chinchilla says:

      5 stars
I think green onions would work fine! They have that nice oniony flavor too. Enjoy your croissants!

    2. User avatar Sima Lakin says:

      2 stars
Nah, chives are totally different than green onions! Stick to the recipe!

  34. User avatar elois.schultz1970 says:

    4 stars
Quick and tasty, but 5 minutes for toasting felt a bit short in my oven. Next time I’ll toast a few minutes longer so the croissant holds up better to the eggs.

  35. User avatar shantae.torphy2013 says:

    3 stars
I tried this but used turkey bacon. Wasn’t the same. Don’t skimp on the bacon, folks!

  36. 5 stars
I’m not usually a croissant person, but I’ll admit this works. The instructions were easy to follow. Also, cooking the eggs in the same skillet as the bacon gives it that delicious flavor.

    1. User avatar jeannette.reynolds1964 says:

      5 stars
Honestly same—I’m usually not a croissant person either, but this sounds pretty solid. Cooking the eggs in the bacon skillet is such a good tip.

  37. 3 stars
Pretty good, but my croissants got a bit too toasty after that 5 minutes. Maybe my oven runs hot. Also, slicing them while still a little frozen was annoying—so yeah, thaw first.

    1. User avatar rhett.kulas73 says:

      5 stars
Totally agree—5 minutes can turn into “oops” fast if the oven runs hot. I’d say thaw fully before slicing too; mine tore a bit when they were partly frozen. Next time I’ll start checking at 3–4 min or drop the temp slightly.

  38. 3 stars
Easy to make but honestly, it could use a sauce or something.

    1. User avatar Rosia Feil says:

      2 stars
Nah, I think it’s fine without a sauce. The bacon and eggs are enough flavor.

    2. User avatar Draugr Wight says:

      5 stars
I totally agree! A nice hollandaise sauce would take this to the next level. Yum!

  39. User avatar lane.stehr57 says:

    3 stars
I think the bacon was too much, maybe just one slice would do.

    1. User avatar vennie.collier85 says:

      4 stars
I love bacon, but I see your point! Maybe half would be better.

  40. User avatar ethel.windler45 says:

    3 stars
Not gonna lie, I kinda messed up—sliced the croissants too thick and they didn’t warm evenly. Still, the filling tasted awesome. Next time I’ll slice thinner and bake again maybe like 3 minutes not 5.

  41. User avatar kareem.jacobson46 says:

    2 stars
I messed up the eggs and they turned kinda rubbery, so maybe I overcooked. Also croissants are expensive where I live… but flavor was good.

    1. User avatar modesto.witting says:

      4 stars
Oof, sorry about the rubbery eggs! That usually happens when they’re overcooked or cooked too hot. Next time try lower heat and stir constantly but stop as soon as they’re just set. Love that the flavor still came through though—croissants being pricey is so real where I live too 😅

  42. User avatar micah.stracke12 says:

    4 stars
I didn’t have chives, can I use something else? Maybe green onions? 🤔

  43. User avatar wellRespected says:

    3 stars
Bacon perfection! But I accidentally burnt my eggs. Oops!

    1. 4 stars
It’s all good! Bacon is the real star here anyway! Next time, keep an eye on those eggs. 😄

    2. User avatar delpha.leuschke1986 says:

      3 stars
Burnt eggs? That’s not good! Maybe try lower heat next time? Croissants tho, yum!

  44. 4 stars
Easy recipe! Made this for my family and they loved it! Will definitely make again.

    1. User avatar burt.hackett1952 says:

      2 stars
Looks easy, but can you really trust a recipe that doesn’t say how many eggs you need? 🤔

    2. User avatar basementDweller says:

      5 stars
I’ve made this too and it was a hit! Such a simple yet delicious idea.

  45. User avatar steven.schaefer72 says:

    2 stars
My oven is broken and I can’t heat stuff. Can I just use the microwave? Help!

  46. 3 stars
My eggs turned out a little dry. I think I cooked them too long while stirring. Still tasted great with the bacon.

    1. 4 stars
Ugh, that dry egg scramble is the worst—sounds like it just went a little past “set” while stirring. Next time try pulling the eggs when they’re still slightly glossy and finish cooking from the residual heat. Also, medium-low can help a lot.

    2. User avatar janessa.beatty5 says:

      3 stars
I dunno, I’ve always felt eggs get dry if you whisk them TOO much? Like mine only turn out right if I barely stir them… Also 4 eggs for 4 croissants seems like a lot, but maybe that’s why mine always taste kinda eggy. Maybe add a splash of milk to keep them creamy?

  47. User avatar ira.moore19 says:

    4 stars
Bacon? Good. Eggs? Good. Croissant? Good. It’s a good recipe, lol.

  48. User avatar Hal E. Luya says:

    4 stars
I used turkey bacon because that’s what I had and it still worked. Chives made it feel fancy without trying too hard.

  49. User avatar marinda.jenkins92 says:

    5 stars
This is a wonderful recipe! The croissants are so flaky and buttery. I added some cheese and it was a hit!

    1. User avatar danilo.farrell74 says:

      3 stars
Cheese in croissants? Seems weird… but if it worked for you, then maybe I’ll give it a shot. 🤔

    2. User avatar Pizpot Gargravarr says:

      5 stars
That sounds delicious! I might try adding some avocado next time.

  50. 3 stars
I tried this but it didn’t turn out as nice as the pics. My eggs were kinda rubbery.

    1. User avatar Super Saiyan Goku says:

      4 stars
I had the same issue! Maybe try cooking the eggs on lower heat next time? It could help with the rubbery texture.

  51. 2 stars
I’m skeptical about this one. It just doesn’t seem like they go together.

  52. User avatar Hillman Hunter says:

    5 stars
This recipe is easy to follow and delicious! My family loved it. Definitely a keeper!

  53. User avatar thad.koelpin67 says:

    5 stars
This sounds dangerously good. Croissants + bacon + creamy scrambled eggs is basically brunch perfection. I’m making it this weekend!

  54. User avatar sonja.mills says:

    2 stars
Eggs very bland, needed more spice. I added cheese but still not wow.

    1. User avatar rocio.turcotte69 says:

      4 stars
I totally get you! I felt the same when I made it. Maybe try adding some hot sauce next time?

  55. User avatar Deidra Blanda says:

    2 stars
Instructions were kinda confusing, like when to add the chives? I just threw them in anywhere. 🤷‍♂️

    1. User avatar otis.waelchi68 says:

      3 stars
I think you should add the chives after cooking. That’s usually what garnish means, right? But it’s all good, just make it how you like!

    2. User avatar alva.gleason says:

      4 stars
I totally get it! The chives part was a bit unclear. I just chopped them up and sprinkled them on before baking. Tasted fine anyway!

  56. User avatar dominick.sauer1964 says:

    3 stars
The bacon was too greasy for my liking but the idea is solid.

    1. User avatar fredric.hand7 says:

      4 stars
I get what you mean! Maybe if you used turkey bacon it’d be less greasy? Just a thought!

  57. User avatar josef.pouros2015 says:

    2 stars
Why “stirring constantly” for eggs—wouldn’t it be easier to scramble less? I tried this and my eggs were a little rubbery. Flavor was nice though. Bacon was the star.

    1. User avatar brenna.jenkins says:

      4 stars
Yeah I’ve had that too. Next time try lower heat and pull them a little earlier—carryover cooks ’em. Also if you whisk really smooth (no big bits) it helps. Bacon really does steal the show though!

    2. User avatar tracy.zieme says:

      4 stars
I feel you—“stirring constantly” sounds like overkill. But with eggs, constant stirring helps them set gently so they don’t overcook at the edges. Rubberiness usually happens if the pan runs a bit too hot or you keep cooking after they look done.

  58. User avatar Ford Prefect says:

    5 stars
Best brunch ever!!! 🥐🥓 Eggs were soooo fluffy and the chives add a nice touch.

    1. User avatar darcel.graham says:

      5 stars
Thanks for sharing! I gotta try this, it sounds yummy!

  59. 4 stars
I used turkey bacon instead and they still turned out great! 🥳

    1. User avatar rosaura.bauch59 says:

      4 stars
Turkey bacon? Wow, that’s a twist! I might try that next time! 🍳

  60. User avatar evonne.mueller94 says:

    5 stars
I followed it pretty much exactly and it came out great—nice and fast too. Next time I might add a little cheese for extra richness.

  61. User avatar smartestRedditor says:

    5 stars
This was sooo good! My family loved it, especially the bacon. Will make again!

  62. User avatar kaley.keeling says:

    4 stars
Yum! But why chives? Just use green onions, way better.

  63. 5 stars
Really delicious! Had some left over croissants that I needed to use up.

  64. User avatar sheryll.schaden62 says:

    4 stars
DElicious 🤤 would make again but maybe add cheese next time!

    1. 2 stars
Cheese? Really? Might just make it too heavy. I prefer it simple.

    2. User avatar suspiciousCommentator says:

      5 stars
Adding cheese sounds amazing! It’d make it even more creamy! 😍

  65. User avatar julius.stamm59 says:

    4 stars
Not sure if this is brunch or a heart attack on a plate. Enjoyed it tho!

  66. User avatar tomas.olson says:

    2 stars
Why do you use 8 slices of bacon? That’s like too much! 4 should be plenty!

  67. User avatar Su Shenlong says:

    5 stars
This is a brunch win! So freakin good and easy to make!

    1. User avatar minerva.okeefe says:

I totally agree! This recipe is super easy and delicious! 🤤

    2. User avatar basilia.hartmann says:

      2 stars
Looks good, but isn’t this just bacon and eggs on bread? I don’t get the hype.

  68. User avatar tommy.von64 says:

    2 stars
Really? Croissants and eggs? Sounds weird, but I guess people have different tastes. I’ll stick to regular toast, thanks.

  69. User avatar ernesto.fritsch says:

    5 stars
Croissants + bacon = best breakfast ever! Never knew this was a thing.

  70. User avatar Brand-shei says:

    4 stars
Bacon should ALWAYS be crispy! I put too little salt, it was kinda bland. Next time I’ll add cheese too!

  71. User avatar julio.douglas51 says:

    2 stars
I dunno, looks a bit too greasy for my taste. Bacon and eggs are good, but croissants too? Seems excessive.

  72. 4 stars
Didnt have chives but used cheese instead, turned out great! Yum!!

  73. User avatar lewis.yundt says:

    2 stars
I can’t cook. I just came here for the comments. 😂

  74. 4 stars
Pretty tasty, but my croissants got a little too dark even with only 5 minutes. Next time I’ll watch them more closely. Eggs scrambled nicely though, and the salt/pepper was on point.

  75. User avatar maile.hagenes38 says:

    4 stars
So easy and quick to make. My kids loved it! Will definitely make again.

  76. User avatar Slartibartfast says:

    5 stars
These are sooo good! Made them for brunch today and everyone loved it! 😍

  77. User avatar Michael83 says:

    3 stars
Did you really bake them for 5 min? That’s not enuf! Mine were still soggy. 🤨

  78. User avatar Saruman the White says:

    3 stars
I thought croissants were just for breakfast not brunch. But this must be nice for people who like brunch. 🤷‍♂️

    1. 5 stars
Croissants for brunch? Why not! They sound delicious. I guess we can break the rules a bit. 😊

    2. 2 stars
Idk man, croissants for brunch seems a bit weird to me. I prefer pancakes or something. 🥞

  79. User avatar zane.schultz says:

    4 stars
Not a big fan of chives, so I left them out. Still super tasty!

  80. User avatar wes.heathcote44 says:

    4 stars
This feels too simple? Like, I don’t know… it’s just eggs and bacon in croissants. But honestly, it’s probably my fault for expecting something fancy. It’s actually solid.

  81. 4 stars
Can I use turkey bacon? My family is on a health kick.

  82. User avatar gil.nicolas says:

    1 star
Croissants are too fancy for breakfast. I prefer mine plain.

  83. User avatar joe_banana says:

    4 stars
Can you use turkey bacon instead? I don’t eat pork. Overall tho, this recipe looks simple enough.

  84. 4 stars
I used turkey bacon because I’m trying to be healthy-ish… honestly it still slapped. Maybe not as crispy but the idea is solid.

  85. User avatar Prostetnic Vogon Jeltz says:

    3 stars
Sounds fancy, but I dunno… don’t croissants get soggy real quick? 🤔

  86. User avatar luann.oconner says:

    3 stars
I followed the recipe exactly, but my eggs turned out dry. What did I do wrong?

  87. User avatar neville.luettgen says:

What about using turkey bacon? Is it still good? Asking for a friend. 🤔

I used turkey bacon instead. It was okay but a bit dry. I’d recommend sticking with real bacon.

This looks so good! But isn’t croissant a French thing? You sure it’s brunch?

    1. 5 stars
Yes, croissants are French, but brunch can be any meal! This is a delicious twist! 😋

Honestly, how can you mess up bacon and eggs? This is just too simple to be good.

    1. 5 stars
It’s true, bacon and eggs are basic, but sometimes simple is best! This sounds delish! 😋

Just tried it and my kids loved it! I had to make a second batch. Thanks!

Followed the recipe but my eggs turned out mushy. What did I do wrong? Help!

I don’t think croissants and bacon are a good combo. Sounds kinda weird to me.

I totally disagree! Bacon and croissants are a classic combo, trust me. It’s so good!

Bacon in a croissant? Seems kinda strange to me. I’m not sure I’d like that.

Thanks! I hope you love it! It’s my favorite brunch dish! 🥳

This is such a perfect lazy-brunch idea. I love how the oven toasts the croissants fast and the scrambled eggs come out creamy if you don’t overcook them. The chives really make it feel fancy.

Chives? What’s that? I just used green onions. 🥴

Looks nice but are croissants only for fancy breakfast? I’m not sure about the eggs and bacon combo…🤔

So my croissants were old and I didn’t realize until after! Still tasted alright, but wouldn’t recommend if your pastry is stale.

Yum!!! I added some cheese too. It made it even better! 💖 Definitely a 5 for me!

Cheese is a great idea! I never thought to add that. Gotta try it next time! 🧀

I’m not sure about slicing croissants horizontally and baking them for only 5 minutes. Feels like they’ll be cold in the middle.

    1. 4 stars
That’s a fair concern. 5 minutes seems short—though since you’re only toasting the croissant halves (and the eggs/bacon are already cooking hot), it might still warm through. I’d maybe bake a couple minutes longer or check that the centers aren’t staying doughy.

Ok but why only 350°F for 5 minutes? Mine weren’t really toasted. I ended up closer to 8-10 minutes and it was perfect.

Good call—oven temps vary a lot. I’d trust your timing too. I usually do closer to 8 minutes when the croissants are thicker or starting less toasted.

Wait 350°F for 5 min is too short… i tried that and it was basically warm bread 😅 I think 8-10 min makes more sense. Thanks for saving me!

Zero flavor and just too basic. Needs something else.

  108. 3 stars
meh, i dont taste the chives at all lol. But bacon and eggs on croissant is always a win, so 3 stars.

    1. 4 stars
Totally get that—chives are pretty subtle. I usually chop them super fine and use more for garnish, otherwise they just disappear.

    2. User avatar ezekiel.welch46 says:

3 stars seems fair. But 5 minutes at 350° feels short for the croissants—maybe that’s why flavor’s muted. I’d toast longer and maybe mix chives into the eggs instead.

I aint much of a cook, but even I made this work! Simple and delish.

That’s awesome! I love seeing simple recipes work out. Can’t wait to try it myself!

Not bad, but I’m skeptical about slicing croissants and baking them first—feels like it dries them out. I’d rather toast them in a pan or only assemble right before serving.
