Ingredients
  

  • 6 slices bacon
  • 1 cup corn thawed, frozen
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 4 eggs large,
  • 4 flour tortillas small
  • 1/2 cup shredded cheddar cheese
  • 1 avocado sliced
  • cilantro for garnish

Instructions
 

  • Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and chop it into small pieces.
  • In the same skillet, add the corn and cook for 3-4 minutes, or until lightly browned. Season with salt, black pepper, paprika, and garlic powder.
  • Push the corn to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through.
  • Warm the flour tortillas in a separate skillet or in the microwave.
  • To assemble the tacos, divide the scrambled eggs, bacon, corn, shredded cheddar cheese, avocado slices, and cilantro among the tortillas.
  • Serve immediately and enjoy!

      Totally get the skepticism 😂 but I love when breakfast tacos surprise you like that. I’ve made similar mixes and yeah—if the bacon’s salty, the 1/2 tsp salt might be too much. Next time I’d cut it down or taste the corn after seasoning. Great tip!

    Bacon and corn tacos
 sounds good but I’m skeptical. If the eggs overcook, it gets rubbery fast. I think I’ll try it once I can follow the steps better.

    How do you “lightly brown” corn in just 3-4 minutes? Mine stayed kinda wet and pale. Maybe my pan was too crowded or the corn was still too cold. Flavor was okay though.

    Pretty solid recipe, easy too. My only tweak: I cooked the corn a bit longer so it got more caramelized, and I used mozzarella instead of cheddar. Still ate them all way too fast 😅

    1/2 cup cheese? Seems low. Also 6 slices bacon for 4 tortillas is kinda suspicious unless you like bacon like crazy. I mean it was good but I added more cheese and bacon anyway.

    Really solid quick breakfast. I used pre-cooked bacon once and it still worked, but I think fresh bacon makes a bigger difference. Next time I’ll do a few more minutes for extra browning on the corn.
