Bacon and Corn Breakfast Tacos

April 11, 2024

If you’re looking to shake up your breakfast routine, bacon and corn breakfast tacos are the perfect way to start the day with bold flavor and comforting textures. These tacos bring together crispy bacon, sweet corn, fluffy scrambled eggs, and gooey melted cheese all wrapped in a warm tortilla and they come together in minutes.

The combination of salty, smoky bacon with the natural sweetness of corn is incredibly satisfying. Whether you’re using fresh corn off the cob, frozen kernels, or even canned corn in a pinch, this ingredient adds a juicy pop that pairs perfectly with rich, savory bacon.

Scrambled eggs provide the base of the filling, offering a soft contrast to the crispiness of the bacon. Add in some shredded cheddar, Monterey Jack, or even crumbled queso fresco to take it up a notch. A sprinkle of fresh herbs like chives or cilantro can brighten things up and add a pop of color.

The beauty of these breakfast tacos lies in their versatility. You can use flour or corn tortillas, toast them lightly for extra texture, or keep them soft and pliable for easy folding. Want to add more heat? Toss in some jalapeños or a dash of hot sauce. Craving creaminess? A dollop of avocado or a drizzle of sour cream does the trick.

These tacos are great for busy mornings because everything cooks up quickly in one pan, especially if you prep the bacon in advance. They also make a fun brunch option, set up a DIY taco bar with different toppings like salsa, chopped tomatoes, or sautéed peppers so everyone can build their own version.

Whether you’re cooking for yourself or feeding a crowd, bacon and corn breakfast tacos are an easy way to bring flavor and fun to the table. They’re simple, satisfying, and just the kind of breakfast that will keep you coming back for more.

Pretty tasty, but my eggs got a bit overcooked while I was messing with the skillet. Next time I’ll keep them on lower heat or pull sooner. Still worth making again.

This recipe is very good. Very simple too. Makes me feel fancy.

I was skeptical about corn + eggs + bacon in a tortilla, but it came together surprisingly well. The seasoning is on point. I would maybe use less salt next time since my bacon was already salty.

Totally get the skepticism 😂 but I love when breakfast tacos surprise you like that. I’ve made similar mixes and yeah—if the bacon’s salty, the 1/2 tsp salt might be too much. Next time I’d cut it down or taste the corn after seasoning. Great tip!

I followed it mostly, but I used smoked paprika instead of regular and it came out great. Corn browned nicely and the seasoning was on point.

5 stars all the way! But what is paprika? Is it the same as chili powder? Help me, lol!

Why would you put corn in a taco? That just seems wrong… Can’t say I liked this recipe.

Bacon and corn? Sounds weird tbh. May try it but dunno if I will like it. đŸ€”

Not bad, but I think it could use some hot sauce for a kick. I like my tacos spicy!

I totally agree! A little hot sauce would make these tacos pop! đŸŒ¶ïž

But wouldn’t that make it too spicy for breakfast? I like them mild myself.

Soo easy to make! My kids loved it, even if they don’t like cilantro. Will definitely keep this in our breakfast rotation!

I used tortillas that were too big, the tacos fell apart. Might wanna stick with smaller ones.

I dunno, I’ve used big tortillas before and it was fine. Maybe you just didn’t wrap ’em right? đŸ€”

    Bacon and corn tacos
sounds good but I’m skeptical. If the eggs overcook, it gets rubbery fast. I think I’ll try it once I can follow the steps better.

    1. 5 stars
I get the skepticism 😅 but the trick is keeping the eggs just “set.” I usually pull them when they’re still a little glossy—then they don’t get rubbery. The corn with those spices is surprisingly good in tacos.

      Not sure
bacon and corn tacos feel kinda weird to me. Like do you put the corn in raw? And 3-4 min seems too short. Also I always mess up eggs, so mine probably turn into sadness lol.

TOO much bacon for me. Can’t taste anything else. đŸ„“đŸ˜”

  15. 4 stars
I was skeptical at first, but these actually turned out really good! Just needed a bit more salt for my taste.

I don’t really like corn in my breakfast, but I tried this and it was okay. Still prefer plain eggs tho.

These were shockingly good—crispy bacon + sweet corn is such a solid combo. I added a little hot sauce and the whole thing tasted like a brunch taco shop.

I think I cooked it too long, the eggs got all dry. Oops!

  19. 3 stars
I don’t like avocados. Can I use something else?

  20. 4 stars
I made these for my kids and they devoured them! Will make again for sure.
