Autumn Cobb Salad

October 16, 2024

Autumn Cobb Salad is a vibrant, seasonal twist on the classic Cobb salad, featuring hearty fall ingredients that capture the flavors of the season. This salad is a perfect balance of fresh greens, roasted vegetables, protein, and creamy dressing, making it both satisfying and nourishing. The addition of seasonal ingredients like roasted sweet potatoes, crispy bacon, and pears brings a new depth to the traditional Cobb salad, offering a mix of sweet, savory, and tangy flavors. Whether served for lunch, dinner, or as a side dish for a fall gathering, this salad is the ideal way to enjoy the tastes of autumn.

To create the base of the Autumn Cobb Salad, start with a mix of greens such as romaine, arugula, or spinach. These provide a fresh, crisp backdrop for the other ingredients. Roasted sweet potatoes add a touch of natural sweetness and a warm, comforting texture, while roasted Brussels sprouts or butternut squash can also be great additions, adding an earthy flavor that pairs beautifully with the greens. The addition of crispy bacon or turkey bacon gives the salad a savory, smoky note, while hard-boiled eggs provide a protein boost.

For extra richness and texture, slice ripe pears or apples into thin wedges to add a bit of sweetness, and scatter crumbled blue cheese or goat cheese over the top for a creamy, tangy contrast. Chopped walnuts or pecans provide a crunchy finish, enhancing the nutty flavors of the roasted vegetables. A simple balsamic vinaigrette or maple-dijon dressing drizzled over the top ties everything together, adding a tangy-sweet glaze that complements the ingredients perfectly.

Autumn Cobb Salad is an incredibly versatile dish, and you can easily adjust the ingredients based on your preferences or what’s available in your kitchen. For a more hearty option, you can add grilled chicken or roasted turkey breast. This salad also works wonderfully as a side dish alongside a warm, comforting soup or as a main course for a light yet satisfying dinner.

With its rich textures, vibrant colors, and seasonal flavors, Autumn Cobb Salad is a perfect celebration of fall produce. It’s a great way to enjoy the bounty of the season while still indulging in the classic flavors of a Cobb salad.

This salad is autumn on a plate! The flavors blend so well, it’s like a hug in a bowl. 🍂❤️

Is goat cheese really cheese tho?Feels weird to me. I used cheddar instead!

    1. User avatar terese.halvorson2003 says:

      4 stars
Cheese is cheese! Goat cheese is just different, but it’s still cheese. Cheddar is nice too, though! 🍴

    2. 3 stars
I dunno, but I think goat cheese is like, more fancy? Cheddar is good for like, everything!

  3. User avatar rachell.bradtke49 says:

I didn’t have pecans so I used walnuts—still pretty good. Also, I only used half the dressing because I’m cautious with honey, but next time I’ll go full. Crunchy, sweet, and filling.

    1. 5 stars
Walnuts are a great swap—pecans can be pricey. And honestly, starting with half the dressing is smart; honey can run away fast 😅. Glad it turned out crunchy, sweet, and filling!

This recipe is nonsense. Who puts fruit in salad? Crazy!!!

    1. User avatar meryl.hegmann says:

I love fruit in salads! Gives it a nice sweetness. 😍

  5. User avatar carmina.mayer says:

This is such a perfect fall salad. The roasted butternut + sweet cranberries + tangy goat cheese combo is unreal. I followed the roast time and it came out caramelized like the recipe said.

  6. User avatar evalyn.howe87 says:

Made this last night! Woah, so delicious and colorful! The kids loved it too! 😊

I don’t like salad but this one tasts good! I had 3 servings. Yum!

  8. User avatar leann.reinger44 says:

    3 stars
Y’all, it’s just a salad. How special can it be? Next time I’ll just go for my basic Caesar.

  9. 2 stars
This is just a salad, right? I don’t get the hype. It’s ok.

  10. 5 stars
YUM!!! I added grilled chicken and it was even better.

    1. User avatar Tom Bombadil says:

      5 stars
Sounds delicious! Grilled chicken is a great idea to make it heartier.

  11. User avatar Arthur Philip Deodat says:

    2 stars
I don’t know, I think it’s too many ingredients. Just give me a regular salad anyday.

  12. User avatar jerrod.yundt60 says:

I made this for my family but they weren’t fans of the goat cheese. Maybe use feta next time?

    1. User avatar grace.donnelly38 says:

      4 stars
I can see why they wouldn’t like goat cheese. Feta might be a good switch, but have you tried just using less goat cheese? Sometimes it’s just too strong for some people.

    2. User avatar Romona Mills V says:

      2 stars
Why would you even use goat cheese? Just stick with cheddar, much better! 😂

  13. User avatar abram.nader93 says:

    4 stars
I was a bit skeptical about the goat cheese, but it really works with the sweetness of the apples!

  14. User avatar nilda.kilback41 says:

Cobb salad? I thought it’s just a regular salad. Is it called cobb because it’s autumn?

  15. User avatar marline.wunsch says:

    2 stars
Too many ingredients for a simple salad! Who needs fancy stuff like pecans and goat cheese? Just toss some lettuce and be done.

  16. User avatar johnathan.considine28 says:

    3 stars
It took too long to make, but the flavors were solid. Next time, I’ll prep squash ahead.

  17. User avatar giovanni.reilly57 says:

    5 stars
Made this last night and it’s honestly such a cozy fall combo—caramelized squash + tart cranberries is perfection. Dressing tasted bright, not too sweet. I’ll definitely repeat it!

  18. User avatar Pizpot Gargravarr says:

    3 stars
Hmmm, I don’t like goat cheese. Can I swap it for feta? Would it still be good?

  19. User avatar brianne.collier says:

    3 stars
Not sure about the “honey mustard dressing” part—your ingredients list never actually mentions honey or Dijon or vinegar, so I had to guess. Once I figured it out, though, the flavors worked. Just weirdly formatted.

    1. User avatar Meriadoc Brandybuck says:

      3 stars
I mean… I just skip the dressing if it isn’t listed right 😅 but yeah your guess was probably on point. Honey + mustard + vinegar seems like a standard combo. Weird formatting though, for sure.

    2. User avatar joe.jakubowski says:

      5 stars
Totally agree the ingredient list is confusing—though the instructions being specific helps. I’d still add honey + Dijon + vinegar to the ingredients for clarity. Glad it tasted good once you figured it out!

  20. User avatar Ignacio Langosh says:

    3 stars
I tried it but my squash didn’t caramelize much. I’m thinking my oven runs cool, because 30 minutes wasn’t enough. Still tasted fine, just looked kind of pale.

    1. User avatar phyliss.weber2026 says:

      5 stars
That sounds like an oven temp issue, or maybe the cubes were a bit crowded. I usually roast closer to 35-40 minutes and flip them once halfway so they actually caramelize.

    2. User avatar smartestRedditor says:

      2 stars
Mine came out pale too and I dunno maybe squash is just like that. I didnt bother flipping, 30 min felt enough. Tasted ok though—goat cheese covers a lot lol.

  21. User avatar dionna.goldner says:

    3 stars
Not enough seasoning in my opinion. I added some salt and pepper, made it better!

  22. 3 stars
This is a great fall salad, but it’s not really a Cobb to me without bacon/eggs. Still tasty though!

  23. 5 stars
Absolutely delicious! The roasted squash gives it such a nice flavor. Will definitely make again!

    1. User avatar Blue Dartwing says:

      5 stars
I tried this recipe too and it was amazing, but I used pumpkin instead of squash and it turned out great! Maybe I’ll just keep it that way!

  24. User avatar ramonita.kessler93 says:

    5 stars
Made this tonight and it was seriously cozy—sweet-tart apple + cranberries with that roasted squash is such a good combo. The goat cheese gives it that perfect tang. Will repeat for sure.

  25. User avatar carole.brekke1959 says:

    2 stars
The dressing was too sweet for my taste. I recommend cutting the honey in half.

  26. 4 stars
I give it a 4! But you know what? I added some bacon bits and it was delish!

    1. User avatar viva.gulgowski23 says:

      3 stars
Bacon bits? Really? 🤔 Not sure if that goes with a salad. But glad you liked it!

    2. 5 stars
Yum! Bacon makes everything better! I’m definitely trying this next time! 😍

  27. User avatar Dung Sporer PhD says:

    5 stars
Goat cheese was amazing. I’m lactose intolerant-ish so I did a small amount, and it still gave that creamy vibe without ruining my stomach. 10/10 for balance.

  28. User avatar synthia.prohaska13 says:

    3 stars
I didn’t have any cranberries, just replaced with raisins. Turned out good but not sure if it’s as healthy. 😅

  29. 5 stars
Yum! Easy and fancy, like restaurant food but healthier. I wish I had more goat cheese tho.

  30. User avatar isadora.kilback22 says:

    4 stars
Good idea, but my squash took closer to 40 minutes to caramelize. Also I didn’t have honey, so I used maple syrup—still tasted great. Next time I’ll toast the pecans a bit longer.

  31. User avatar sherman.lesch1989 says:

    3 stars
Very simple, but I didn’t love the cranberries in it. Just my opinion.

  32. 2 stars
This felt kinda fancy for a salad. Like, I ate it and was still hungry after 😅. Tasty, but not very filling compared to what I usually make.

    1. User avatar edra.quigley says:

      4 stars
Haha I get you—this one *feels* fancy, but a salad can totally under-deliver on fullness. I’ve started adding chickpeas or quinoa and it fixes that “still hungry” feeling 😅

    2. User avatar jerry.ledner1997 says:

      3 stars
Idk, I tried it and it was filling for me… maybe you didn’t use enough squash or pecans? Also my honey mustard came out too sour—next time I’ll put less vinegar lol. Taste was still good tho.

  33. 5 stars
Absolutely delicious! This salad is perfect for fall. The roasted butternut squash just hits the spot.

  34. User avatar chasidy.kuhlman says:

    2 stars
Honestly didn’t love it. The greens got soggy after I dressed it, and I maybe roasted the squash too long—kind of dry. Tasted okay, just not wow.

  35. User avatar desmond.dietrich22 says:

    4 stars
Yum! Can’t wait to try this on Thanksgiving. Thank you for sharing, looks awesome!

    1. 5 stars
Thank you! This salad looks so colorful and delicious. Perfect for Thanksgiving!

  36. 4 stars
The flavor is nice, but 400°F for 25-30 min didn’t fully caramelize my squash cubes. I probably cut them too big. Next time I’ll give it longer.

  37. 1 star
Too much prep! I just wanted a quick side salad. 🙁 Should’ve just ordered takeout.

  38. User avatar Peregrin Took says:

    2 stars
Wut’s a cob salad anyway? I just wanted Thanksgiving vibes. 😕

  39. User avatar CTRLplusW says:

    4 stars
Yumm! Perfect for fall 🍂. I added some grilled chicken for extra protein and it was delicious!

  40. User avatar Falmer Shadowmaster says:

Yummy! The roasted squash adds a nice touch. Perfect for Thanksgiving too!

    1. User avatar benjamin.koss says:

      5 stars
This sounds fantastic! I love how you’ve made it festive with the squash. Can’t wait to try it for our family dinner!

  41. User avatar melda.torp says:

    2 stars
This is way too complicated for a salad. Just toss some veggies in a bowl and call it a day!

    1. User avatar Super Saiyan Gohan says:

      2 stars
Seems like a lot of work for a salad. I mean, can’t you just buy one from the store?

    2. 5 stars
But it’s not just a salad! The butternut squash makes it fancy. Plus roasted veggies are so much better than raw ones!

  42. User avatar althea.kerluke says:

    1 star
Why add cranberries? They ruin everything. Just make it plain.

  43. 4 stars
Roasting the squash for 30 minutes was perfect. The pecans toast up nicely and the cranberries add that tart pop. Dressing could maybe be a bit more tangy for me, but overall solid.

  44. User avatar ArabianNights says:

    1 star
Butternut squash??? I can’t even! Tried it once, ended up in the trash. LOL!

    1. User avatar jamar.ledner2003 says:

      4 stars
Butternut squash is actually really good! Maybe try it roasted next time? It gets a sweet flavor! 🤤

  45. User avatar joe_banana says:

    4 stars
How many servings does this make? I wanna make it for a party!

  46. 2 stars
Umm… I think I messed up the dressing—maybe I used the wrong vinegar? It tasted weird and tangy like straight pickles. Still ate it though. 😅

    1. User avatar terrance.little says:

      4 stars
Oof, that pickle-tang sounds like apple cider vinegar getting swapped for something harsher (or maybe too much vinegar). Honey mustard should be sweet-tangy, not straight puckery. Next time try a smaller splash of vinegar and taste as you whisk!

  47. User avatar tommy.hayes28 says:

    4 stars
I’m not a fan of goat cheese, can I use feta instead?

  48. User avatar ShanksOnePiece says:

    5 stars
This salad is amazing! I love the combo of flavors, especially the goat cheese with the apples. Will definitely make again!

  49. User avatar honey.hudson49 says:

    5 stars
Very good! The cranberries gave it a nice zing. Thnx for sharing! 🙂

  50. User avatar kim.walsh31 says:

This salad is amazing! The roasted squash adds a sweet touch. Perfect for fall.

    1. User avatar Frank N. Stein says:

      5 stars
I tried it, and you’re right! The roasted squash is delish! 🍂🥗

  51. User avatar emmanuel.hamill94 says:

    3 stars
This recipe is okay, but I think it needs more dressing. It felt a bit dry to me. 🤷‍♂️

  52. User avatar Frost Giant says:

    5 stars
Great recipe! The butternut squash gives it a nice touch.

  53. User avatar asa.kshlerin35 says:

    5 stars
Did you know goat cheese is actually better for you than regular cheese? Cool recipe!

  54. User avatar rich.landlord says:

    4 stars
I totally forgot to add the cranberries and it still turned out great! Super easy.

  55. User avatar Draugr Thrall says:

    4 stars
Butternut squash? Isn’t that just squash? Anyway, this is decent for a salad.

  56. User avatar joe_banana says:

    3 stars
Kinda bland for me. I know it says to salt/pepper the dressing, but I might’ve gone light. Also my squash stayed a little firm after 25 minutes—maybe my oven runs cool?

  57. User avatar joshua.becker17 says:

    2 stars
Is butternut squash necessary? Can’t you just use regular squash? I dunno. The whole salad felt too fancy for me. But the colors were nice.

  58. User avatar margarite.huel79 says:

    5 stars
Wow, this salad looks delicious! Can’t wait to try it this fall!

  59. User avatar halflife4 says:

    3 stars
The dressing steps said to whisk honey mustard, but the ingredients don’t list honey or a specific mustard amount. I improvised and it came out fine, yet it’s a little confusing.

  60. User avatar NAFO.SUPREMACY says:

    4 stars
My husband loved it, but my kids wouldn’t touch it. They said no to squash! 🤣

  61. User avatar Mrs. Ruul says:

    2 stars
Not sure what all the hype is about. The butternut squash was too mushy for me and the dressing was kinda bland.

  62. User avatar lizzzard says:

    4 stars
Toasty pecans = heaven! I used walnuts instead tho because that’s what I had. Still very tasty!

  63. User avatar tissues_with_issues says:

    3 stars
Pretty tasty, though the dressing instructions seem a little off? It says whisk olive oil, honey, Dijon, vinegar, salt, pepper—but your ingredient list doesn’t list honey or Dijon or vinegar or salt/pepper. I had to guess amounts.

  64. User avatar maribel.gibson25 says:

    4 stars
Flavor is really nice, but I didn’t see any honey in the ingredients list—so I had to guess. Still tasted good though. Maybe double-check the recipe text?

    1. User avatar ArabianNights says:

      5 stars
You’re so right to flag that—honey is in the dressing step, but I see the ingredients list is missing it. Thanks for catching! I’ll update the recipe so the honey amount shows up in the ingredients too.

  65. User avatar lula.wiegand1981 says:

    5 stars
Absolutely loved this salad! The flavors are perfect for fall.

  66. User avatar tracee.robel says:

    3 stars
I didn’t really like the goat cheese in this. It was way too strong for my taste. Maybe I’ll try feta next time. Not bad overall.

  67. User avatar herman.halvorson19 says:

    4 stars
Very easy to make! I was surprised how quick it was. I skipped the dressing tho and just used olive oil and a bit of lemon. Still yummy!

  68. User avatar Mr. Cory Hintz says:

    2 stars
I dunno, sounds kinda weird. Goat cheese with apples? Not really my thing.

  69. User avatar halflife4 says:

    2 stars
I used fresh cranberries (because I had them) and they were way too tart. Wouldn’t recommend unless you sweeten them or adjust the dressing.

    1. User avatar felipe.frami says:

      4 stars
Hmm I used fresh cranberries once in a salad and they were also too tart. But I’m thinking if you actually cook them down first (like simmer in a little honey/water) they’d be way better. Also the recipe says dried cranberries, not fresh, so your results make sense.

    2. User avatar Falmer Spellsword says:

      5 stars
Good point—unsweetened dried cranberries are definitely puckery. I usually add a bit more honey to the dressing or even toss the cranberries with a teaspoon of honey before using. Otherwise it’s like eating sour candy 😅

  70. 4 stars
I followed it mostly, but I used walnuts instead of pecans and apple cider vinegar was out so I used lemon juice. Still solid, just a little sharper.

  71. User avatar milo.barrows says:

    1 star
Meh. Too much sweetness for me—the cranberries and apple combo was overpowering. I’d cut those in half.

  72. 3 stars
Nice but I don’t understand why the ingredients needed to be roasted. Raw squash is fine, right???

  73. User avatar rex.stroman1961 says:

    3 stars
Not bad, but I think it needs a bit more seasoning. Maybe some salt?

  74. User avatar Zarniwoop says:

    3 stars
This recipe sounds healthy, but do I really need to measure everything? Can’t I just eye it?

  75. 3 stars
Poor instructions! I burnt my squash 😩. Maybe lower the temp next time?

  76. User avatar Ms. Queenie Weissnat says:

    4 stars
Tasty! But I don’t liked pecans very much, next time I will swap them for walnuts. 😋

  77. 3 stars
This salad was okay, but I feel like it needed more flavor. Maybe some grilled chicken or a stronger dressing?

    1. User avatar jessie.botsford says:

      5 stars
I think grilled chicken would be a great addition! I usually add some in my salads for that extra kick. 🥗

  78. 5 stars
This was such a cozy fall salad—caramelized squash + goat cheese is a dream combo. I used regular mustard I had on hand and it still worked great. Will make again!

  79. User avatar tinisha.rohan13 says:

    3 stars
This was okay. The salad itself had good flavors, but it felt a bit dry even after dressing. Maybe I underused the dressing or my apples weren’t very juicy.

    1. 4 stars
Sorry it came out a little dry! I’ve found apples vary a lot—if yours weren’t juicy, it can really affect the “moist” feel. Also, I sometimes add a tiny splash of apple cider or extra vinegar to the dressing and drizzle more at the end.

    2. User avatar sabina.hickle says:

      3 stars
Hmmm mine was dry too and I used plenty of dressing. Maybe the mixed greens were already kinda wilted? Next time I’ll toast the pecans less and use more goat cheese so it stays creamy…

  80. User avatar cristina.hudson says:

    5 stars
Made this last night—so cozy. The squash caramelizes perfectly and the goat cheese with cranberries is such a good combo. My dressing tasted great right away too.

    1. 5 stars
Yes! That caramelized squash + goat cheese/cranberries combo is seriously underrated. Glad your dressing tasted great right away—I usually worry it needs more time, but it makes sense since it’s whisked together. 😊
