Apricot Tart

March 26, 2024

Apricot Tart is a golden, sun-kissed dessert that captures the essence of summer in every bite. With its flaky crust, juicy fruit, and glossy finish, this classic tart is a reminder of how beautiful and satisfying simple ingredients can be when treated with care. It’s the kind of dessert you might imagine cooling on a windowsill in the French countryside, though it’s just as at home at a weekend brunch or dinner party.

What makes an apricot tart so special is the natural balance of flavors. Apricots bring just the right combination of sweet and tart, their brightness mellowed slightly as they bake and release their juices. When arranged neatly in rows or spirals on top of a buttery pastry base, they become a feast for both the eyes and the palate. Some versions keep it minimal, letting the fruit do all the talking, while others might add a layer of almond cream (frangipane) or a brush of apricot jam for that glossy bakery-style finish.

A good tart starts with the crust. Whether it’s a pâte sucrée with a hint of sugar or a more rustic shortcrust, it should be tender but strong enough to hold the juicy fruit without becoming soggy. A quick blind bake ensures that the crust stays crisp, even once the apricots begin to soften and caramelize in the oven. The result is a beautiful contrast between the flaky base and the tender fruit.

This dessert pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream, though it’s just as lovely served on its own. The tart can be made ahead of time, and its flavor improves as it rests, making it ideal for entertaining or gifting.

Apricot tart is the kind of recipe that invites creativity and personal flair – try it with a splash of amaretto, a sprinkle of pistachios, or even a mix of stone fruits. However you serve it, it’s a gentle reminder that sometimes the simplest things really are the best.

A delicious tart filled with fresh apricots
Servings 8 people
Prep Time 30 minutes
Cook Time 45 minutes
Total Time 1 hour 15 minutes

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter cold and cut into small pieces
  • 1 egg yolk
  • 1 tbsp ice water
  • 1 pound apricots pitted and halved, fresh
  • 1/4 cup apricot jam
  • 1 tbsp lemon juice
  • 1/4 cup sliced almonds

Instructions

  • In a food processor, combine the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  • In a small bowl, whisk together the egg yolk and ice water. Add the egg mixture to the food processor and pulse until the dough comes together.
  • Turn the dough out onto a lightly floured surface and knead it a few times to bring it together. Shape the dough into a disk and wrap it in plastic wrap. Refrigerate for at least 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
  • In a small saucepan, heat the apricot jam and lemon juice over low heat until melted and combined.
  • Arrange the apricot halves in the tart shell and brush them with the melted apricot jam mixture. Sprinkle the sliced almonds over the top.
  • Bake the tart for 35-40 minutes until the crust is golden and the apricots are tender.
  • Allow the tart to cool before serving. Enjoy!

Tasty!! Made this last night and it was gone in minutes! Will make again, for sure.

  2. 5 stars
This tart is absolutely delicious! I made it for a family gathering and everyone loved it.

This is basically a fancy pie. I’m not a baker but it came together—food processor makes it easy. I’d add a pinch more salt next time though.

    1. User avatar gordon.heller1963 says:

      5 stars
Totally agree—this does feel like a fancy pie. I used the food processor and it was way less stressful than I expected. Next time I’ll taste the jam before adding more lemon though.

    2. User avatar lorraine.schmitt13 says:

      3 stars
I tried this and mine came out kinda bland tbh. I did 1/4 tsp salt like it says… maybe you’re right about adding a pinch. Also my crust got a little crumbly—did I knead too much?

  4. User avatar clarine.robel says:

    2 stars
Mine came out pale and the center felt a little underbaked at 40 minutes. Maybe the oven runs cool? Added 10 more and it fixed it.

  5. User avatar luann.russel58 says:

    2 stars
Tart is good but I don’t really like apricot—so for me it was just ok. Also I didn’t have jam so I used peach preserves and it was… fine. lol

  6. User avatar oscar.mertz says:

    5 stars
Yum! I added some cinnamon to the apricots, made it even better. So good!

  7. 5 stars
Yummy tart! I didn’t have almond so I used walnuts instead! Still tasted amazing. 🙌

  8. User avatar NAFO.SUPREMACY says:

    5 stars
This turned out gorgeous—juicy apricots with a nice buttery crust. I was worried the dough wouldn’t come together, but the egg yolk + ice water worked perfectly.

  9. User avatar roy.abernathy89 says:

    4 stars
Why only 1 egg yolk? I get that it makes the crust tender, but I was thinking of using a whole egg. Would that change the texture a lot?

  10. 2 stars
My apricots were super juicy, so the filling leaked a bit and the bottom got slightly soft. Next time I’ll pre-slice and pat them dry.

  11. User avatar gordon.rutherford1951 says:

    3 stars
It came out kinda pale on top even after baking—maybe my oven runs cool? The apricots were tender, but I wish the crust had more color.

  12. 4 stars
375°F seems a little low for 35-40 minutes? Mine took closer to 50 minutes to get that “golden” crust. Once it was done, it was worth the wait.

    1. 5 stars
I agree—375°F never feels like enough for that long. Mine went more like 45–50 too, and the crust was actually pale at 35 min.

  13. User avatar Kendrick Rodriguez says:

    3 stars
Too much sugar for me. But my kids loved it! So what do I know!

  14. User avatar Super Saiyan Trunks says:

    2 stars
I tried this recipe but it didn’t work out. The crust was too crumbly and fell apart. Not sure if I’ll try again. ⭐⭐

  15. User avatar Prostetnic Vogon Kwaltz says:

    2 stars
I think the jam step should be thicker—mine brushed on kinda watery and didn’t caramelize much. Still tasty though.

  16. User avatar Marvella Jaskolski says:

    5 stars
This tart was delightful! The apricots were juicy and it looked amazing. My family loved it. Will definitely make again!

  17. User avatar tarah.bartoletti1992 says:

Finally a tart that doesn’t pretend to be complicated 😅 The instructions are clear and the ingredient list is normal. Will bake again for sure.

  18. User avatar w00d_ch0p says:

    3 stars
I didn’t have fresh apricots so I used canned halves. It still worked, but it was a bit soggier and sweeter than I expected. Might reduce jam or lemon next time.

  19. User avatar patria.halvorson says:

This apricot tart is AMAZING! I had to stop myself from eating the whole thing in one go. ⭐⭐⭐⭐⭐

Made this for my grandma’s birthday. She loved it! Thanks for the recipe!

  21. User avatar nelson.boehm says:

I don’t know, maybe I did something wrong? The crust was too crumbly and fell apart.

  22. User avatar monique.ortiz1977 says:

    4 stars
The almond top is a nice touch, but I toasted them first and that made a huge difference. Without toasting they were kinda muted.

  23. User avatar aaron.ritchie66 says:

    4 stars
I used canned apricots instead of fresh ones. Still turned out pretty good. Not the same, but hey, it worked.

  24. User avatar robbi.aufderhar2 says:

    2 stars
Too many steps! I just wanted a quick snack, this took forever to make.

  25. User avatar Super Saiyan Blue Vegeta says:

    3 stars
Kinda eh, maybe I’ll try it again with different fruit. 🍉

  26. 2 stars
I had trouble with the dough. It was too crumbly and I can’t seem to get it to come together. What did I do wrong?

  27. User avatar thaddeus.brown says:

    4 stars
Pretty solid! I was worried about the tart being too sweet, but the lemon juice balances it nicely. Next time I might add a pinch more salt or a little vanilla—just personal preference.

  28. 3 stars
This recipe is missing something, maybe cinnamon? I think it needs a little kick.

    1. User avatar lonny.hegmann says:

      5 stars
I think cinnamon would be a great addition! It’ll add some warmth to the tart. Good suggestion!

  29. User avatar marhta.stracke1980 says:

    2 stars
I thought this was gonna be easy, but wow, the dough was a mess! I’m not sure I did it right. 😩

    1. User avatar chet.kling1991 says:

      4 stars
Don’t worry! Dough can be tricky sometimes. Just make sure the butter is really cold next time! 😊

  30. User avatar gary.streich1981 says:

    3 stars
Ehh, it was okay. I think I messed up the baking time. Crust was hard as a rock.

  31. 5 stars
Made this for brunch and it was a hit. The apricot glaze smells amazing while baking—so worth the extra step. Crust turned out buttery and crisp too.

  32. User avatar catherine.runolfsdottir1979 says:

    3 stars
Why do you need the lemon juice? I don’t get it! Seems pointless. But whatever, I tried it without and it’s fine.

  33. User avatar Gail Andrews says:

    4 stars
Not gonna lie, I was skeptical about putting jam straight on the fruit. But it turned out glossy and delicious.

  34. User avatar Magrathean sperm whale says:

    3 stars
Easy to follow but I think I need more practice. Dough was sticky and the filling kinda fell apart.

  35. User avatar patricia.zulauf says:

    3 stars
I think there should be more jam for flavor. Tasted a bit bland even with the apricots.

  36. User avatar demetrice.mccullough1995 says:

    1 star
Not a fan of apricots honestly. Can’t believe people think this is so good. 🤷‍♂️

    1. 4 stars
Maybe it ain’t for everyone, but I think apricots can really shine in a dessert! 😋

  37. User avatar scott.dickens85 says:

    3 stars
    Yum!!!

  38. 5 stars
My family said it’s bakery-level. Also, the almonds give a great crunch contrast. Love the simple ingredients.

    1. User avatar naomi.jerde95 says:

      5 stars
Totally agree—those almonds really make the whole thing feel “bakery” instead of just homemade. Crunchy contrast is such a nice touch.

  39. User avatar Tommy Hawk says:

    5 stars
Just wow! 🤤 I can’t believe how tasty this is! Made it for a family gathering and everyone went crazy over it!

  40. User avatar raquel.gleason says:

    2 stars
Tastes alright, but kinda dry… I didn’t get the jam melted properly, so maybe I messed it up. Lol.

    1. 4 stars
Yeah, I also found it tricky to get the jam right! Maybe next time try warming it a bit longer? It could help with spreading. 😅

  41. 4 stars
Super easy and quick! No need for jam if you have fresh apricots, right? Definitely making this again.

  42. 5 stars
Made this for brunch and it turned out gorgeous. The apricot-lemon glaze is so bright, and the crust stayed crisp. Followed the timing pretty closely—great recipe!

  43. User avatar mariella.abshire65 says:

    4 stars
Looks super yummy! Can I use canned apricots instead of fresh? Don’t think fresh ones are available right now.

    1. 5 stars
Canned apricots should work fine! Just drain them well. Enjoy!

  44. User avatar malorie.mueller says:

    1 star
I burnt my tart!! LOL. Did I use too high temperature? Disappointing.

    1. User avatar stacy.feil64 says:

      3 stars
Burnt? Oof! I did that once too. I don’t think it’s the temp tho, just gotta watch it close. It says 35-40 min but me, I always check at 30.

    2. 4 stars
Yeah, you probably had the temperature up too high! It happens to the best of us. Don’t worry, you can try again. Maybe check it earlier next time? 🤞

  45. 5 stars
Super simple recipe, and I love that you cool the dough. My family devoured it before it even cooled fully 🙃

  46. User avatar gay.grady90 says:

    3 stars
Is this even a real recipe? It seems too simple. How can it taste good with just a few ingredients? 🤔

  47. 5 stars
Easy to follow instructions! My kids helped, and we all had a blast in the kitchen. 🌟

    1. User avatar carlos.ebert says:

      2 stars
Looks good but isn’t apricot jam just for toast? 🤔

    2. User avatar Theodora Schiller says:

      5 stars
That sounds amazing! I love that your kids helped. Cooking together is the best! 🌈

  48. 4 stars
I used peaches instead of apricots because I couldn’t find any. Still turned out delicious! ⭐⭐⭐⭐

    1. User avatar mervin.jast2015 says:

      2 stars
But it’s not an apricot tart if you use peaches… 🤔

    2. User avatar chanda.mccullough66 says:

      4 stars
Peaches sound great! I might try that next time. Glad it turned out yummy! 🍑

  49. User avatar Daedric Prince says:

    5 stars
This apricot tart recipe is amazing! I made it for a family gathering and everyone loved it. It’s so sweet and delicious!

  50. User avatar man.graham87 says:

    5 stars
This apricot tart is absolutely delicious! I made it for my family and they loved it. The crust turned out perfectly flaky! 😊

  51. User avatar Theda Ritchie says:

    2 stars
Apricots are expensive where I live, so I tried canned ones. It was still tasty, but the texture was softer and it felt less “tart” and more like baked fruit.

    1. User avatar willis.koelpin1987 says:

      5 stars
That makes total sense. Canned apricots are usually sweeter and softer, so you’d lose some of that tart “snap.” Still sounds like a win though!

  52. 3 stars
Not sure about the quantity of jam—mine was a little too thick after warming, so I added a splash of water. Maybe that’s why my coating wasn’t as glossy.

  53. User avatar kena.rempel28 says:

    5 stars
A+++++ would bake again. Flaky and fruity! 🙂

  54. User avatar Alejandrina Adams PhD says:

    3 stars
375F for 35-40 minutes feels a bit short to me, especially with a fruit topping. I went longer (about 47) and the crust finally browned evenly.

  55. 5 stars
This tart is delicious! The apricots were so sweet and the crust was flaky. Definitely a keeper!

  56. User avatar Mystic Gohan says:

    3 stars
Looked great in the pic but mine didn’t turn out so nice. What’s the secret to keeping the crust pretty?

  57. User avatar azucena.mcglynn says:

    3 stars
Not bad, but my dough was kinda crumbly after the pulse. I ended up adding a tiny bit more ice water to get it to come together. Still tasted good.

  58. User avatar keith.graham1967 says:

    4 stars
A great dessert! I swapped out the apricots for peaches because that’s what I had, and it turned out great! Everyone asked for the recipe!

  59. User avatar Prostetnic Vogon Kwaltz says:

    5 stars
Honestly, the dough part was easy with the food processor. I chilled it a full hour though, and the crust was super crisp.

  60. User avatar marion.deckow65 says:

    5 stars
Simply amazing! Made it for a family gathering and everyone loved it. Will definitely make it again!

  61. User avatar jody.vandervort1957 says:

    3 stars
I found the dough a bit tricky to work with, but the tart turned out fine. Next time, I might add more sugar to the apricots.

  62. 3 stars
375F is fine but mine took closer to 50 min to get really tender. Also, my jam mixture got kinda thick—probably my saucepan was too hot. Still tasty though.

  63. User avatar ingeborg.erdman48 says:

    5 stars
This tart was super easy to make! It turned out delicious. My kids loved it!

  64. User avatar trudi.lockman12 says:

    5 stars
Made this for a weekend brunch and it turned out gorgeous—golden crust, juicy apricots, and the almond crunch is perfect. I did chill the dough a bit longer (about an hour) and it was easier to roll.

  65. User avatar tyson.simonis says:

    3 stars
I didn’t have fresh apricots, used frozen (thawed). It still worked, but the bake time went longer and the bottom got softer than I expected.

  66. 4 stars
Honestly I’m skeptical about the 30-minute chill. I chilled mine longer and it was way easier to roll. The tart looks fancy for something not too hard.

    1. User avatar ben.satterfield60 says:

      5 stars
I also didn’t trust the 30 minutes 😅—I went like an hour and it rolled way smoother. Love that the tart looks “fancy” even though the steps are pretty straightforward.

  67. User avatar Frostbite Spider says:

    5 stars
Made this last weekend—so good. The crust came out buttery and the apricot jam glaze is chef’s kiss. Only tweak: I added a tiny pinch more salt because I like contrast.

  68. 3 stars
Tasted good, but my crust shrank a lot when baking. I didn’t chill long enough (only like 20 min), so that’s on me.

  69. User avatar Fredericka Berge II says:

    3 stars
Why use egg yolk but no egg white? I know pastry, but this just feels a little odd. I guess it works though—mine was a bit rich.

  70. User avatar steve_maga says:

    3 stars
I totally burned the almond top… but the apricot part saved it. Next time I’ll keep an eye on it earlier. 😂

  71. User avatar Jessica Atreides says:

    4 stars
Turned out better than I expected. The lemon juice gave it a nice zing! Would recommend to everyone! 👍

    1. User avatar Feral Falmer says:

      5 stars
I totally agree! The lemon juice really makes a difference. I love recipes that surprise you like that! 🍋

    2. User avatar hilton.toy says:

      2 stars
Really? I tried it and it was too sour for me. Maybe i missed something? 🤷‍♂️

  72. User avatar jodi.dibbert says:

    3 stars
Really good but where do you even get apricot jam from? Doesn’t it need to be homemade? ⭐⭐⭐

  73. User avatar wilbur.rippin says:

    2 stars
Not to be rude, but 1 lb apricots seems like a lot for just 1/4 cup jam. Mine felt under-glazed and the almonds got lost. Might double the jam next time.

  74. User avatar Super Saiyan 2 Vegeta says:

    3 stars
Apricot jam + lemon is a good combo, but I think 1/4 cup almonds might be too much if someone in the house isn’t into nuts. Maybe reduce next time?

    1. User avatar Feral Falmer says:

      5 stars
I agree about the almonds—1/4 cup is pretty noticeable. If someone doesn’t like nuts, I’d just cut it in half or swap in more sliced almonds for topping only at the end (like a few extra).

  75. 3 stars
I think the recipe forgot sugar for the apricots or something, it’s not sweet enough for me. 🤷‍♀️

  76. 1 star
Uhm, why do we have to freeze the dough? Isn’t it easier just to bake it right away?

  77. User avatar CTRLplusW says:

    1 star
Not a fan. This tart was too sweet for my taste, and the almonds didn’t add much. Won’t try again.

  78. User avatar irma.rippin1964 says:

    5 stars
This is one of those recipes that looks fancy but is actually manageable. The instructions are clear, and the food processor steps save time. 10/10 would make again.

    1. User avatar clemente.will95 says:

      5 stars
Totally agree—this feels “bakery-style” but the steps are pretty straightforward. The food processor part is genius.

  79. User avatar woodchuck says:

    1 star
Tart? More like a disaster! It turned into mush. Wasted my apricots! Ugh!

  80. User avatar alishia.padberg says:

    5 stars
Made this yesterday and it turned out gorgeous—golden crust, juicy apricots. The jam-lemon glaze really elevates it. Will definitely bake again.

  81. User avatar Jarrett Franecki says:

    1 star
Tart? More like disaster! I overcooked it and it tastes burnt. Not making that again. ⭐

  82. User avatar Carter Keebler says:

    3 stars
Not a fan of apricots, but the crust was nice. My kids loved it though!

  83. User avatar cole.greenholt says:

    4 stars
I’m not usually a tart person, but this was easy and the instructions were clear. I especially liked the almonds on top—gives it a nice crunch.

  84. User avatar liberal.hero says:

    5 stars
My food processor dough looked like sand first (lol) but after a few pulses it finally came together. The apricot jam glaze is a great touch.

  85. 3 stars
I dunno, I thought it was a bit too sweet. Maybe less jam next time?

  86. User avatar Dan Streetmentioner says:

    4 stars
Not convinced about the food processor step. Dough came together great, but kneading ‘a few times’ afterward feels a bit unnecessary. Still tasty though!

    1. User avatar alan.pfeffer says:

      4 stars
We tried it exactly as written and kneaded maybe 5-6 times… didn’t notice a difference. If you overdo it, it can get tough, so your instinct might be right. Tastes good either way.

    2. User avatar fay.flatley89 says:

      4 stars
I get what you mean—once the processor dough comes together, “a few times” sounds vague. I usually just fold/press it until it’s smooth, not real kneading. Still comes out great though!

  87. User avatar tracy.bartoletti says:

    4 stars
I’m not a fan of apricots, so I used peaches instead. Turned out great! 😁

    1. User avatar wiley.hyatt82 says:

      5 stars
Peaches are yummier anyway! Good choice! 🍑

  88. User avatar louvenia.barton says:

    3 stars
It looks good, but I think it needs more sugar. The last apricot tart I made was way sweeter.

    1. User avatar josette.reynolds71 says:

      3 stars
I disagree! I think the apricot sweetness is just right. Too much sugar can ruin the flavor!

  89. User avatar dwain.cartwright46 says:

    2 stars
I followed it exactly but the crust didn’t get that golden the way the picture would suggest. Tasted fine, just not as pretty.

  90. User avatar Treebeard says:

    2 stars
I had a hard time with the dough. It was really crumbly and I ended up adding more water than the recipe said. Not sure if I’ll try it again.

    1. User avatar juana.blanda1991 says:

      4 stars
I found the dough tricky too! Maybe try chilling the butter a bit longer next time? It really helps.

    2. User avatar Reg Nullify says:

      3 stars
I dunno, I think the recipe’s fine. Just follow it better, maybe? Don’t give up on it!

  91. User avatar Eddie the Computer says:

    3 stars
I tried this with canned apricots because fresh were impossible for me—still decent, but the flavor wasn’t as bright. I think fresh makes a huge difference here.

    1. User avatar cherish.labadie5 says:

      5 stars
Totally agree—fresh apricots really do make the flavor pop. I used canned once and it was more muted/sweet than bright. Good call on trying it anyway!

    2. 3 stars
Huh, I think canned would work fine if you drain them well and maybe add a bit more lemon zest. The recipe says to heat jam + lemon juice—could that replace the missing brightness? Next time try less jam too, maybe.

  92. User avatar maurice.lakin says:

    4 stars
The flavor is great, but mine was a little runny—maybe my apricots were juicier? Next time I’ll brush the jam more sparingly.

    1. 4 stars
Mine also got a bit runny last time… I think I over-brushed the jam and maybe my tart pan was smaller? 9-inch worked fine though. Still tastes great, just more “sauce” than “tart.” 😅

    2. User avatar Emily Saunders says:

      5 stars
Glad you liked the flavor! And yes—juicier apricots can definitely make it runny. I’ve had good luck either reducing apricots a bit (or patting them dry) and brushing the jam very lightly like you said.

  93. User avatar jesus.vandervort says:

    5 stars
Apricots are the best! This recipe makes me miss my grandma’s. Brings back memories. ❤️⭐⭐⭐⭐

    1. User avatar judson.romaguera says:

      5 stars
Your grandma’s recipe sounds amazing! I can’t wait to try this one. 🙌

  94. User avatar NAFO.SUPREMACY says:

    5 stars
This tart looks seriously gorgeous. I love that it uses fresh apricots and a quick jam glaze—sounds like the flavor would be punchy but not too sweet.

    1. User avatar tammi.wisozk says:

      5 stars
Wow, this sounds insanely good. Fresh apricots + that jam glaze sounds like it would be super flavorful without being cloying. The almonds on top are such a nice touch too!

Not gonna lie, apricots can be kinda tart—would that jam glaze be enough to balance? Also is 1 pound apricots for a whole 9-inch tart right? I feel like it might be thin but maybe I’m just overthinking 😅

Apricots are a weird fruit! I tried making this with peaches instead and it was a total flop. Gotta stick to what you know.

Peaches can be nice too, but yeah, apricots have their own vibe! Maybe try again with the right fruit? 😊

Honestly, how can you mess up peach? They’re basically just fuzzier apricots! 🤷‍♂️

I’m not a cook but this looked easy enough so I tried. Mine looks nothing like the picture! But tastes alright… ⭐⭐

Absolutely loved this recipe! The apricots were so sweet and perfect!

I’m so glad you liked it! Apricots really make it special, don’t they? 😊

Pretty straightforward and honestly I loved the flavor combo (apricot + lemon + almonds). I baked mine closer to 40 min and it was perfect.

Too much work for a tart. I’ll stick to store-bought. This took forever.

This tart was absolutely delicious! The apricots were so fresh and juicy. Definitely making it again!

I’m glad you loved it! Fresh apricots make such a difference. What kind of ice cream do you think goes best with it?

My grandma made apricot tart all the time. This recipe is just like hers! Thank you!

I’m not sure about the 1 lb apricots—mine barely covered the pan evenly. Next time I’ll use closer to 1.25 lb or pack them tighter.

    1. User avatar marquitta.kemmer15 says:

      3 stars
Mine covered fine? Maybe your apricots were really small or you cut them thinner. 1 lb should work for a 9-inch pan if they’re halved properly. 🤷‍♀️

    2. User avatar Daedric Prince says:

      5 stars
Good catch! Mine did the same—1 lb felt a little stingy for an even layer. I’ll try 1.25 lb next time too (and yeah, packing them tighter helps).

Made this today—super easy and the crust came out nicely golden. The apricot + jam glaze tastes like a bakery tart. Will definitely make again.

Not gonna lie, I messed up the dough a little because my butter wasn’t cold enough, so it got greasy in the processor. Still tasted good though, and the filling stayed flavorful.

Yum! Simple and delicious! My family devoured it in minutes! 👏

  106. 3 stars
The flavor is good, but 35–40 minutes wasn’t enough for my oven. I baked closer to 48 and only then the crust was properly golden. Just something to watch.

I was worried the dough wouldn’t come together, but one more pulse and it worked. Used slightly more lemon juice since my apricots were tart. Turned out great.

Wow! I made this for brunch and everyone went back for seconds. Homemade tart is always a win. 10/10 would bake again.

Love hearing that! Apricot tart is such a brunch win—seconds are basically the official stamp of approval 😄

The flavor is amazing, but I kinda messed up the dough step—my egg yolk + water mixture was too wet. I had to add more flour and it was… fine. I’d try again!

    1. User avatar jarrett.emard says:

That’s honestly the most relatable part of baking 😄. Glad you rescued it with extra flour! The egg yolk hydration can be touchy depending on yolk size.

Messed up dough but still “fine” — I respect the hustle. Next time try adding water 1 tsp at a time so it doesn’t go past silky.

Ok honestly, I thought the dough was gonna be too dry but it turned out great! Super easy to make!

Pretty tasty, but my dough was kinda crumbly even after chilling. I ended up adding like 1 more tbsp ice water and it worked. Still, flavors are really nice.

Didn’t turn out for me. The crust browned fast but the apricots weren’t fully tender at 35 minutes, and I don’t know if my oven runs hot or what. Might try 10 more minutes next time.

    1. User avatar nichelle.wunsch8 says:

      4 stars
Ugh, sorry it didn’t work for you! Your note about the crust browning fast makes me think your oven runs hot or the tart needed a lower rack / foil shield. I’d try baking it closer to 40 minutes but tent with foil after 20–25 min, and check tenderness by poking the apricots.

  115. 3 stars
Nice, but I used canned apricots. Still turned out ok though!

    1. 3 stars
But fresh apricots make a huge difference! Canned ones ain’t the same, you know. Still, if it tasted good, that’s what matters I guess.

Canned apricots? That’s interesting! I never thought of that but glad it worked out. Might try it myself! 😊

  116. 4 stars
The instructions were clear and the dough came together nicely. Mine needed a couple extra minutes in the oven, but that might be my oven being dramatic.

My tart crust cracked when I rolled it. Maybe I used too much flour? Like I said, I’m not the best with crusts. The filling tasted amazing anyway.

Good recipe but I forgot to set a timer and burned it…my bad 😅

I followed it pretty closely, but I think my apricots were extra juicy because the bottom got a little soft. Still tasted great though—just not as crisp as I hoped.

Pretty tasty, but my dough felt a little dry after pulsing. I added a tiny splash more ice water and it came together. Next time I’ll chill longer too.

    1. User avatar Subrosian Queen says:

That’s super helpful—mine gets dry too when I pulse too long. I’ll definitely add a splash of ice water like you did.
